The eye of round beef roast is in the oven and is filling the kitchen with appetizing aromas.  This is my first time to try this recipe.  28 min. (4 lbs at 7 min per lb) at 475.  Then 2 1/2 hrs. in oven without opening oven door.  The side veggie will probably be green beans sauted in EVOO and spinkled with Italian cheese.

Hope the birthday girls all have great birthdays!

Happy birthday girls! Hope your day has been fabulous!

Shopping all day in 90 degrees (hello summer!) with the last stop scheduled to be Costco. Pulled into the parking lot and found about a dozen cars. My friend and I looked at each other and said "this is weird", when a guy getting into his car yelled to us that the power was out in the store. So, no rotisserie chicken for dinner. I think we will go to the local Mexican joint because I am too tired and too hot to cook. A frozen Margarita sounds mighty good to me!

Happy Birthday to all the birthday girls!  I hope you all had an amazing day and will have a wonderful dinner :)

Carol- I hope your roast turns out perfect- I love it that way.  Perfect every time.

We had a busy day running errands and getting stuff done this morning.  This afternoon the neighborhood kids ran wild riding bikes and playing soccer and street hockey.  Easy dinner tonight of cheese burgers.  I feel like we have had them too much.  But I took them out a couple nights ago and we had pizza instead with all of this back stuff so we need to eat them.  I am going to wait and hit the grocery store Friday and do a play date tomorrow instead.  The boys have been great while I have been laying low, they deserve it.

    Lacey, Debbie, Seaside --

Happy birthday!!! I came on to wish you happy birthday, but I see all of you are already 'half in the bag'!  Laughing at your champagne and cupcakes party.

Laurie, the roast did turn out perfect.  It's amazing.  That's easiest recipe possible.  The oven does all the work.  I do have a big chunk of leftover roast.

    Nancy,

Had to laugh on your 'well, that's weird' moment as we had one similar many years ago when we went on vacation to Myrtle Beach.

The beaches there can be crowded and there are lots of attractions and water parks. We joked about why the heck would someone come here to vacation at the beach to go to a water park when you have the world's biggest natural one right outside your door?

Sooooo... toward the end of our week we headed down to the beach just as we had everyday before and there were very few people... So we're thinking wow, this is weird, why is it so empty? Turns out there was a shark sighting! They had helicopters with search lights going up and down the beach for an hour or so and then gave the all clear!

Needless to say we spent that day on the beach but not in the water. And the following day (our last day there) at the water park...lol!

Ok, re-read my post and totally hope I didn't scare anyone away from enjoying the beach!! It is my most favorite place on Earth!!

Thanks for all the birthday wishes, ladies!

At Rosa Mexicano, we had their great guacamole, a caesar salad, and marinated shrimp on brown rice. I had this same dish last August and the surrounding red sauce was more of a fresh tomato sauce as I recall, which I preferred to what I had tonight. We were too full for dessert, but the waitress brought me a scoop of ice cream with a candle in it. Perfect!

Seaside, that is exactly the size cupcake I should allow past my lips! And the size of champagne! ;). And no fears here...we will be looking for the fins at the Nat'l Seashore beach this summer, where they just spotted a great white. Always exciting....when we see the seals we know the sharks are not far. No body surfing on those days.....;)

I am actually still up waiting for the Bruins to deliver my post birthday win. Konking out....how must they feel??!! This is painful!

Carole,I must try that beef roast method. I'd forgotten about L and M sharing it some time ago....so now I will write it down.

Michelle, I hope your chemo went well today...

Chemo went well but I have to go back on Friday for a transfusion.  That is actually a good thing because I should have extra energy for the duration of the trip.  We are leaving Monday morning.

Sounds good Michelle!  Thinking of you.  X

I have my DD with me at work today!  Yikes!

Michelle, glad the treatment went well.  Forgive my faulty memory.  Where are you going on this trip?

Dinner will be leftover roast beef in some guise and a repeat of the brown rice/broccoli casserole I cooked a couple of weeks ago.  Haven't decided what kind of cheese to grate for the dish.  Maybe gruyere or maybe pecorino.  Also have a chunk of smoked gouda.  Cannot resist the big chunks of cheese at Sam's.

Salad will be sliced tomatoes and fresh basil.

Carole - we are driving to Kansas City to visit our friends.  Not looking forward to that drive but DH loes road trips so he wins...lol

I have the transfusion tomorrow morning which should give me an energy boost.  Tonight's dinner is Popeye's Chicken with mashed potatoes and cole slaw.

Interesting that my blood sugar seems to be OK with this less than healthy diet.  Fasting reading was 106 and it was 96 when they did my labs before chemo.  I managed to not lose any weight nor gain any.  Crazy!

Michelle- Have fun on your road trip and it seems you have great reults all around.  Enjoy the energy boost from the transfusion.

Carol- I always buy a large roast when I cook it that way so we can make pepper steaks subs as left overs.  I love it just as much as the roast dinner.

DH is working late tonight with bike week and beer sales.  I am pooped from a very long play date today so we are ordering pizza....again.  I have agreed to let the boys have a sleep over in DS1 room and they are very excited.

Bobo- brought your kid to work?  Yikes is right!  Hope all went well!

Home again. We logged our hours through 14 states, averaging 450 miles per day. Last night, I just threw together a little pasta, tomato [kid shared hers], olive oil, garlic and basil. Tonight I pulled out some samosa meat and cooked up some lentils and basmati rice. Tomorrow, will have to venture to the stores to restock the fridge. Boy do I miss that second fridge! I need to reduce the number of mustards and other condiments I have collected over the past year.

Michelle, hope your road trip is uneventful. This was our first trip with internet in the car. What a difference that makes!

Pleased for you, Michelle that the American diet agrees with your numbers! Enjoy your boost tomorrow and have an enjoyable and safe trip!

    Welcome home Susan!

I expect that you had a really productive day at work, BoBo. LOL! I hope DD at least had fun! Leftover flank steak with reheated stuffed mushrooms tonight....oh and not to forget, a piece of Trader's whole wheat bread smeared with cherry jam.

    That was just a craving!

Anyone like Meditterean food?  Made falafals (from scratch) tonight.   My man loves them...taste great with cucumbers & pickled beets.

Have not been here for a long time...guess I should come back.

I love falafals! It is on my list of items to learn how to make well. I bought some chickpeas from the Indian market, but so far they have only turned into chana masala and soup. How do you get all those pesky skins off?

Welcome back Isabelle! You may have been away, but not forgotten. :)

Susan, I once removed the chickpea skins (one by one....obviously had nothing better to do), and it produced the smoothest hummus I ever made.

Will the rain pease stop!! It cost me a chunk of change this afternoon. The front doorbell rang and I found a young woman with her umbrella and clipboard, fundraising for an environmental group. This gal was from Texas, new to Boston, and mistakenly thought she would be ringing doorbells in summer weather....so she was in summer clothes, obviously freezing and wet, yet cheery and committed to her cause. I gave......

luvrving - if you are heading out for a trip after your transfusion consider asking (or just doing it yourself!) for pre-meds of Tylenol and Benadryl.  Just like pre-meds before chemo many docs give this combo to keep you from a low grade fever and/or hives reaction to the transfused blood.

    Hello all!

Dinner tonight was a BLT on toast.  Trying to wind down the fridge contents before our trip.  I still have two weeks but DH is gone this weekend, DD is gone for 10 days, I will be gone for three days for my vaccine trial in D.C. the last week of the month - I get back and we leave two days later - yikes!  I need to start getting organized NOW!

All of your trips sound wonderful.  Hope everyone travels safely & has a wonderful time.  My son flies to Paris next month & I sure want to cancel a chemo or two and go along.  Sigh.  Michelle - glad to hear the continuing positive news.

I had a PET/CT today so I treated myself to dinner out instead of driving home in rush hour traffic.  Grilled rainbow trout, French green lentils, spinach sauteed w/spicy pecans, homemade rosemary bread.  Great reward!

Happy Birthday, Seaside, Debbie and Lacey! Hope it was fun.Luvrving, I love the cheap kraft neon Orange mac and cheese too. One day I eat it for lunch plain, the next add a small can of tuna and small can of peas for a real old fashioned casserole. That's my guilty secret! Lol

Today I went with my daughter to look at wedding dresses. We ate at a new Hawaiian place nearby. Not too bad, nor too expensive. The curry crusted chicken was aeesome, and, didn't really need the sauce it was flavored so well. I had Bologo beef, kind of Korean beef and onion also good. It came with Miso vegetable soup, that was great. Favorite part? A small lettuce salad with an orchid on it. Lol, we don't get a lot of those here in the Midwest! LOL. Much love.

    Hi everyone!

I am thinking steak on the grill for dinner tonight since the rain has stopped and the sun has come out.  I FINALLY hit the grocery store today.  I was sore by the time I got home but it was much needed.  I got a pork loin to make pulled pork for tomorrows Bruins game.  The weather is supposed to be decent so I am anticipating pop up company :)  Going for the easy and tasty route!

I bought DH an out door stone fireplace kit for Fathers Day so I am thinking that will be our (his) weekend project.  He is very excited as he has wanted one for years and I have always said they were too pricey.  A local business that sells stone, mulch etc had a sale on them- 2 left.  They were asking 500 down from 640- I offered 360 and they took it!  They have a new line coming in and want the last two gone.  Yay!  Plan is to put it together tomorrow and watch the game outside.  Lacey lets pray for no OT and a win!!!!

Sounds like fun Laurie, having the outdoor fireplace...it helps to extend our time outside when the nights are cool, and the kids will love some marshmallows.  Great gift!

No dinner here as we did a late lunch. Somehow all of my DH workers had issues today and either took the whole day off of left early, so he could not get out to lunch.  I bought some fish sandwhiches and fries on my way home from work at 2 and we had lunch at the feed store, standing at the counter waiting on customers.  The fish was awesome.

Should probably do some cooking this weekend to make up for all the crap we ate during the week. To add to the mac n cheese conversation....If I was on death row and they offered me a last meal, it would be mac n cheese (of any kind) We never did get to the restaurant in NYC called "smack" where you make up your own version and they put it in a deep skillet and put under the broiler...mmmmm. on my bucket list.
