This morning we are packing the car and then heading west to Kansas City to visit our work friends and Rick's golf buddies. We will be gone for about 11 days so no cooking or cleaning. I am looking forward to catching up with everyone.

On the road to Charleston W. VA to visit DH's last remaining aunt who has just been placed in hospice. Kind of sad, she's a very sweet and funny 92 year old lady. But I have to say, after her husband died, she lived her life to the fullest.
We are in Kentucky right now and it is beautiful. Don't know what the food opportunities will be, but so far, it's been unimpressive.0 -

Long busy day. We spent the morning at a park with friends and skipped nap time, doh! But I did have to lay down with the heat pad and watch some cartoons with the boys. Stupid back! Home made sauce and meatballs for dinner via Michelle's recipe. The house smells amazing.

My feet hurt, and I'm tired after a very busy day. Must have trekked back and forth between the house and camper at least 100 times. Now I'm sipping a vodka martini that is taking care of all my pains!
Dinner tonight will be warmed up leftovers from home cooking and restaurant meal Sat. night.
Tomorrow morning we roll down the hurricane shutters, turn the hot water heater to Vacation, set the A/C on 82 degrees, turn off the water into the house, saran wrap the toilets, and.... drive away!
For the first 30 min. rolling down the highway, I wrack my brain to figure out what we forgot to do. Last year we forgot to empty the ice bin in the house refrigerator. Had to call my sister and ask her to go to my house and empty it. Otherwise, water all over the kitchen floor.

Debbie: PET/CT results were cautiously optimistic. Tumors appear to be shrinking so we'll do 3 more rounds of the same chemo then re-assess. Thanks for asking. I think about you a lot. Hope Chuck is improving daily and you've been able to spend some quality time with your Dad.

DH's aunt is so excited about seeing us. She really is a sweetheart. And as you can see, still feisty! We had some pretty good Chinese takeout last night. The granddaughter in the video works at a pizza/microbrew joint that we'll probably try sometime today.

Got outta work late last night, home at 9:30, was starving, so did some quick wraps with ham and vegies on a whole wheat wrap.

Tonights dinner is chicken cor don bleu with sauce, green beans and rice. My back is feeling better and now I am getting sick. Feeling frustrated.

Just checking in - we are just east of Indianapolis and we'll be in Kansas City tomorrow afternoon. I hope everyone is having a good evening. We ate at oCharley's and we got a piece of pecan pie to go...dessert in about an hour.

We had a good day's travel and are at the Sam's Club Casino rv park in Tunica, MS. Dinner was stuffed peppers out of the freezer, purple carrots and a salad of cherry tomatoes and mini cucumber.
Breakfast and lunch was McD's!
Laurie, chicken cordon bleu sounds so elegant! Did you ever post that recipe?

Wow Michelle- Seems like you are making great time! Enjoy your visit with old friends.
Carol- I think I shared the cor do bleu recipe before? Butterfly the chicken breast so it is large and flat. Take a few slices of boiled ham and a slice of swiss and fold into a pocket face down on the breast. Fold the edges over and secure with toothpicks- however many it takes! Then flour, egg and bread crumb it. I use a mix of panko and regular crumbs. Then egg and bread it again. I then fry it very quickly just to brown it on all sides and put in the oven for about 1/2 hour. I make the sauce by doing a butter/flour roux add chicken broth, a splach of milk and some black pepper. Let thicken and keep stirring.
Dinner tonight was excellent if I do say so myself;)

We're at the Casino Queen Rv Park in East ST. Louis, IL. We can see the St. Louis arch from our site. It's such a pretty sight. Unfortunately, it's so hot that we're inside the 5th wheel in the coolness provide by the A/C.
We're watching the hockey match but the action is so fast I have difficulty following it. DH is from a Chicago suburb, so we're rooting for the Blackhawks.
Dinner tonight was brats steamed in amber beer and small boiled potatoes.
Tomorrow we should arrive at dh's sister's house in Decatur, IL, about noon. There we will endeavor to back this long rig into her driveway.

Had a lovely and delicious meal at a new restaurant in town, The Farmhouse. We had participated in their kickstarter campaign before they opened some months ago, along with our next door neighbors, and it took us three months to find a date we could all go. Very much worth the wait! We had an amuse bouche of white gazpacho; fresh greens salad; bread choices of sour dough, olive, or whole grain; fried soft-shelled crab over avacado puree; sea scallops on a cauliflower and mushroom puree; beef tenderloin over mashed potato with a reduction of something that was delicious! The desserts (if you can imagine us even having any!!!) were unbelievable...moist chocolate cake; butterscotch pudding with a crunch topping; creme brulee with a side of fresh fruits; rhubarb tart with a minty sauce, and something else I forget. Good lord was it good...if too much! To explain our gluttony,...... we were given this tasting menu for our kickstarter contribution. Never expected it to be THAT abundant! No complaints, however.
Tomorrow morning we head to CT to spend time with my stepmother, then on to NJ to stay the weekend with DS1 and family. DH is DJ-ing at his 50th HS reunion in NJ on Saturday night. I think I'll stay behind and watch the final Bruins/Blackhawks game.

Dinner tonight was cereal. Cherrios to be exact. LOL. Ate a late lunch, went to support group at 6. Wasn't hungry before. Got home at 9 (stopped for a coffee with a friend from group after) wasn't going to make anything, so, cereal! LOL

We had killer sub sandwiches from the little deli across from my surgeon's office. I had an after-work check-up that went late, since he had an emergency procedure to do ahead of me.
I don't seem to have the energy for cooking after work, that I used to, so the subs were sure a great option. Num!!! (not great for my attempted weight loss however haha)0 -
Love reading about all the good meals everyone is having! I'm trying to cut back after our lengthy trip...lol! Tonight we're having kids over for grilled pork chops in a citrus maranade, fresh corn on the cobb, cucumber, onion and tomato salad, and fresh SC peach cobbler laced with NC blueberries. I try and make it healthier with an oatmeal crisp topping, but how can a stick of butter be that healthy...lol!
Next week we're having friends over for a low country shrimp boil (fortunately one of the friends is handling that part as I've never done one) and it should be lots of fun. I'm going to make the fresh cobbler and pineapple upside down cake for dessert (my contribution). Any ideas for an appetizer?
Carole..it sounds like your trip is off to a great start! We went through St. Louis as well and I took photos of the arch as we were driving...hope they turned out on my 35 mm camera.

Carole, I should have waved to you as we passed East St. Louis and downtown. We were on our way back from West Virginia. It was a lovely trip and we had such a good time with DH's aunt. We were surprised to see her so vivacious as it was not at all what we expected, but apparently some new medications have caused her to improve quite a bit, which made us very happy. I only hope if I ever make it to 92 that I'm a fraction of the woman she is.
There was no food preparation in W VA, so we had most meals out. Mostly fast food breakfasts (Biscuit World anyone?) and lunches, but we went to a local pizza and beer joint that was really really good. The hand tossed crusts had garlic and sea salt in them, the toppings were fresh and varied and the beer was excellent. Not much more you can ask from a pizza joint. We had a capicola, roasted garlic and roasted red pepper, a gorgonzola and steak, and a "Hot Momma", which had roasted hot peppers and garlic on it. They were all great, even the steak and gorgonzola, which is a little unconventional for me where pizza is concerned.

Tonight we're having a very mundane barbecued pork steak, probably a salad of some kind and corn off the cob.
