    Yeah I live in NH. LOL glad my reminder was helpful. My birthday is coming up fast too and I have to get my car actually inspectable first! LOL. My Pack Rat is taking care of that one for me... and oh yeah time to get the studded snow tires off and my "real" ones on, too. That's actually going to be a week from hell: 6/6 -- post surgical followup and appointment with a physical therapist...6/7 car registration...6/8 eye doctor, 6/9 my birthday, and car inspection. Fun huh? ---NOT---

    But my Pack Rat told me he's getting me a CHEESECAKE specially made for my birthday. I LOOOOOOOOOOVVVVVVVVE cheesecake! YUMMMMMM! I'm not that big a sweets-eater; I only get in the mood for sweets very occasionally, but CHEESECAKE is my favorite. Short of when I was on chemo and ate several slices during the 4 months of hell in 2009, I normally only eat it only once or twice a year though (unfortunately, it's as fattening as it is delicious :-P), and when I do, it's when I'm eating out and I order a single slice for dessert. I've never gotten a whole one though, and I didn't have any in 2010 because for most of it I was on a diet!  Well now I'm REALLY glad I finished losing that 30 pounds and learned how to eat so I can occasionally indulge like that, so now I have "room" to eat a piece of cheesecake every day for a week. I don't care how carefully I'll have to eat for the week AFTER.  YUMMMMMMM.

    Laurie- HAPPY BIRTHDAY!  Sounds like you had a good day, and what a sweet thoughtful husband you have to bring you one of your favorite dinenrs home to you.

    Seaside and Michelle- I agree the ocean is so healing, when I first found out I had BC my husband took me to hawaii (waikiki) thats where we met 20 years ago, went before starting treatment and it helped me feel like I could conquer anything, then after mx and treatments we moved to oregon 3 minutes from the ocean I walk along the beach alot and feel such a calmess.

    Lena- Our birthdays are close to each other mine is on 6/12 only will be eating chocolate cake instead of cheesecake

    We share a Birthday... Mine is June 12th as well!!!  A fine date, indeed!!

    We had some pretty rough storms come through last night.  My son had no school today (ironically, today was a scheduled "make-up day" because they had too many snow days!)  due to lightening stricking the bus garage and causing a propane leak.  Still many without power today.  Lucky for us, we never lost power!  What a crazy Spring this has been!

    Happy Birthday Laurie!  Sorry this is a little late.  Very nice that your DH got you a nice dinner.  Hope the chocolate cake was good too.  That's my favorite too, but I like it with vanilla icing.

    Memorial Day recipes!    Another one I found online I haven't tried yet but looks good

    Roasted tomato potato salad
    -------------------------------------------

    Servings: 16 (1-cup)

    Ingredients
    • 1 pint grape or cherry tomatoes
    • 2 pounds new potatoes, unpeeled
    • 6 green onions (white and green portions), chopped
    • 3 cloves garlic, minced
    • 3 tablespoons olive oil
    • 1/3 cup fresh-squeezed lemon juice
    • 1 teaspoon ground cumin
    • 1/4 teaspoon ground coriander
    • 1 1/2 cups chopped Italian (flat-leaf) parsley

    Directions
    1. Preheat oven to 400 degrees. Arrange tomatoes on a jelly roll pan and spray with nonstick cooking spray. Bake 15 to 20 minutes or until tomatoes have burst and are roasted; set aside.

    2. Cook potatoes in a large pan of boiling water 15 to 20 minutes or until just tender. Cool and cut each into about eight bite-size pieces.

    3. Place potatoes and onions in a large bowl. Whisk together garlic, olive oil, lemon juice, cumin and coriander; pour over potatoes and toss to coat.

    4. Sprinkle with parsley and add roasted tomatoes. Stir gently. Serve at room temperature.

    Nutrition info
    Per serving: 87 calories (30 percent from fat), 3 grams total fat (trace saturated fat), no cholesterol, 13 grams carbohydrates, 2 grams protein, 10 milligrams sodium, 1 gram dietary fiber.

    Tijuana T-Bones
    --------------------------------------

    Ingredients
    • 1 1/2 cups Pace® Chunky Salsa

    • 2 1/2 teaspoons ground cumin

    • 4 beef T-bone steaks (about 8 ounces each), 1/2-inch thick

    • 2 tablespoons fresh lime juice

    • 1/4 cup chopped fresh cilantro leaves

    • 1 can (about 15 ounces) black beans, rinsed and drained

    • 1 large avocado, peeled, pitted and chopped (about 1 1/2 cups)

    Directions
    1. Stir 1 cup of the salsa and 2 teaspoons of the cumin in a 3-quart shallow, nonmetallic dish or gallon-size resealable plastic bag. Add the steaks and turn them over to coat with the marinade. Cover the dish or seal the plastic bag and refrigerate for 1 hour, turning the steaks over a few times while they're marinating.

    2. Stir the remaining salsa and cumin, lime juice, cilantro, beans and avocado in a 2-quart bowl and set it aside.

    3. Lightly oil the grill rack and heat the grill to medium. Remove the steaks from the marinade. Discard any remaining marinade.

    4. Grill the steaks for 12 minutes for medium-rare* or to desired doneness, turning the steak over halfway through grilling. Serve the steaks with the salsa mixture.


    Tip
    : *The internal temperature of the meat should reach 145°F.

    Hope everyone had a great holiday weekend- Mine was uneventful, town was backed up with cars back to back and we decided to stay home, ate to much this weekend I suppose I was a little depressed sitting at home with no familily and friends around and missing my mom and sister on this memorial day! Hope ya all had fun!!!

    Made breaded porkchops that were good and made a new recipe i had never tryed before with carrots and it was gross so wont share that one with you LOL!

    Debbie - sorry your weekend was less than thrilling.  I did have a very nice one.  I spent two days with my youngest daughter, shopping and hanging out at her place.  Her roommate cooked us a nice steak dinner on Saturday evening.  And on Sunday we went to the Kittery, ME outlets, shopped, and ate yummy fried clams.  On Monday I was back at my older daughter's house and we all went to a house party for the afternoon/evening.  These people had a most beautiful salt water pool with fabulous landscaping.  And the wife is a fabulous cook...freshly made sangrias, and some really yummy food.  And the weather was just perfect.

    Michelle- Sounds like you had a great weekend!  So happy you got to enjoy time with your family.

    Debbie- I am sorry that your weekend was so quiet.  I hope you get to see your Mom and sister soon.

    Our camping adventure went great.  It was very busy with chasing the boys around but fun too.  Late night with our friends was a blast and we stayed up too late, but we caught up on sleep once we got home.  We all shared our food with each other, the three families so every meal was a feast!  Nothing fancy but all of it wonderful.  We made smores at night and the kids were in heaven, I just ate the chocolate!

    Yeah, perfect weather here too. Out for pizza with my Pack Rat Saturday night but still mostly eating microwaved leftovers. Drains came out Friday afternoon and I can shower again but I'm still feeling mostly lazy -- or is it really just "natural" fatigue that happens to anybody who plants container gardens less than 2 weeks out from a BMX?. At least my jaw is finally easing up. Hope to be able to do salads again in a few days. LOL

    ...Sangria...?  Did someone say Sangria? mmmmmmmmmMM! :-) 

    ....tomorrow I might have to cook dinner, though. If so, Italian Rainbow! :-)

    Ok ladies I saw your post and also saw a recipe. I wanted to share what I invented before having cancer and what I have done about it since. I also wanted to share that I have loads of easy recipes to go with so anytime you need to know what is for dinner pop over and look soemthing up. When I had my surgery I could not or was afraid to move my arms for fear of ripping a stich and using bags to do everything was a huge help and as a chef I had always used them but invented The Bag Holder to have a container to help me to everything that a bowl or plastic containers did. I hope you love it, share it and show some support. I was a TCH girl and currently in the neratinib trial with 4 weeks left. Since I thought I would be dead by now I moved quick and wanted to make things hapen, do any of you feel that way. Praying for a cure each day> http://www.thebagholder.net/  see me on face book too:)

    Laurie - glad your camping adventure was a big success.  I hope you had the same great weather that we were enjoying - it was wonderful!

    I got a call from our lake house landlord and we can have the keys next Monday.  Yeahhhh!!!  It's a miracle!  DH is packing up the truck on Monday and will be arriving on Thursday.  We'll be able to move right in (and not wait until the 15th).  The new sectional sofa delivery is scheduled for the 9th and the cable installation is set for the 10th.  The planets and stars have aligned and everything has come together.

    I am going to the oncologist tomorrow for what I hope is the final planning session before starting chemo. I am going to request that I start the Monday after we move in (I think that's the 13th). At this point, I would prefer to wait until I am in my own space rather than experiencing my first side effects at my daughter's house. A couple more days is not going to make a big difference in the big scheme of things.   I truly don't want my grandkids to see me on the bad days.

    Sounds like most everyone had a great weekend.  Wonderful to hear.

    Sorry Debbie that you  didn't.  I spent the weekend in the hospital.  I'd been running fevers for a whole week and they hadn't figured out why.  Finally did.  I am allergic to one of my new chemos (most likely Taxol, very smaller possiblility Herceptin).  I really hope it is the Taxol. I am going to be very upset if I can't take the Herceptin.  Going to see onc tomorrow to come up with a new plan. ......sigh...... I was looking to the end, now looking to starting over another chemo.  The allergic reaction damaged my lungs.  Good news is the onc figured it out quickly enough that the damage is reversible with heavy steroids.  Bad news lungs have to come back to normal before I can do anything again.  Extremely frustrating.

    DH made a great dinner.  Lemon garlic chicken, roasted broccoloi with garlic and pine nuts, and risotto with spinach and mushrooms.  It was delicious.  Bad part:  way too many dishes.  But it was good enough to make it worth while.  Have a great day everyone.

    Laurie- Well I got a good laugh after reading your post to me, I hope I dont see my mom and sister soon because they both passed away,LOL!  You couldnt of know that so dont feel bad, I laughed out loud about it. LOL! Glad you had a good time on your camping trip.

    Michelle-Your food tastings always sound so good, sounds like you had a wonderful time shopping, dining and visiting with family and friends, my friends have a salt water pool it is so much nicer than the cholrine. Congrats on getting the keys finally! I agree I wanted to be home durring my tx's makes it a little more comfortable.

    Lena- Glad your feeling better with the drains out (yay) Im sure your just tired from doing so much to fast 

    Shelclaire- Thanks for the recipe I will check it out after I send this off ((((((hugs))))))))))) Hope you are doing better

    Kay- Sounds like your weekend was way worse, Im sorry you havnt been feeling well, I will be praying for the healing of your lungs and being able to take the herceptin. big, big hugs!! Your husband sounds like a wonderful chef and a caring husband.

    Shrimp was on sale at the grocery store today so I got some.  I am going to try to make s hrimp scampi tonight.  I've never made it before so I'll search for a recipe online.  If anyone has one they want to share I'de appreciate it!

    Well, let the games begin...chemo will start on 6/15.  I have quite the doctor schedule starting 6/13, with port placement, echocardiogram, chemo training, actual chemo day, then Neulasta the following day.  Oh my, now I know what everyone says about doctor visits ruling their lives!!!  At least we'll be fairly settled in our new place.  I might even be able to make my favorite chicken soup on Sunday before the craziness gets started. 

    Laurie - I don't usually use a recipe for scampi, I just sort of wing it.  Olive oil, butter, shallots (if you have them or onion), lots of garlic, lemon juice or white wine and pepper.   If you do a quick search on foodnetwork.com, you'll likely find a recipe with these ingredients that will give you some measurements.  The whole thing will take about 10 minutes, so time your pasta accordingly. And enjoy!

    Michelle, I "wing it" with the shrimp scampi too! I almost always have garlic, butter, olive oil and shrimp on hand. Laurie, I agree w/ Michelle ...it is really quick to make, and you can adjust the ingredients to your taste. Ps: Michelle, good luck w your treatment. ((Hugs))



    it has been hot as hell the past few days and last night my air conditioner decided it wanted to stop working! Someone did come out today to fix it, thank the Lord, so tonight will be better sleeping than it was last night.

    Leftover lemon chicken, risotto and bakes broccoli with pine nuts.  And it was just as good as last night.......and lest dishes.   Great.

    Shrimp scampi sure sounds good though.  I'm going to have to try that some time soon.

    They tried me on Herceptin today, so we play the waiting game to see if it is going to do anything.  They really think it was the Taxol, so I'm very hopeful I'm able to stay on it.  Fingers crossed.  Onto Taxotere if the Herceptin works okay.

    thanks everyone!  I did wing it, butter garlic, lemon, onion, white wine and shrimp.  I thought it was ok, the hubby loved it.  Kids ate the shrimp and just a little of the pasta, I think it was too garlicky for them.  But I gave them an A for effort and let them split a pb and banana.  Don't know if I'de do it again though.  But at least I am trying new things right?

    Michelle- good luck with your appointments and everything that you are lining up, talk about overwhelming!

    Sherrill- I agree, it has been soooo hot here.  We went from 50's and raining to 90 in, what a day?  My husband called home to say hi around 4 and I told him I was dyeing in the heat, he sais I was exaggerating.  Then he got home!  Hopefully he'll put in the a/c's tonight!
