    I made chicken parmesan, you slather on mayo mixed with parmesan, garlic powder, and paprika then top with bread crumbs bake for 20 minutes at 425% made asperagus with a artichoke and cream sauce- then I made my favorite I havnt had for awhile was, oatmeal choc chip cookies I make the reicipe that is on the oatmeal box top but omit the raisons and add 4 tablespoons of dark coco powder and a dark chocolate candy bar chopped up with some roasted macademia nuts, I have already eaten about 10 of them feel a bit nauses now!

    Oh My Debbie those cookies sound heavenly but I bet you do feel a bit ill even if they were worth it. Thanks for the info about Chantilly meringues - sounds lovely -hopefully not hard to mess up. But I have lots of recipes where I end up with egg whites ...I know should be putting them to more good uses but this sounds lots more fun.The artichoke creme sauce sounds lovely.

    Well, might not get on tomorrow - I'm making my sister's recipe of Mango chicken made with curry and lime juice and butter and then after that bakes on the chicken you pour the juices in with cut up mango and chutney on the stove till it makes a surpy sauce and serve over rice with snow peas and red peppers.

    Italian chicken in spicy tomato sauce (Chicken Diavolo)
    ----------------------------------------------------------------------------------

    Ingredients:
    • 1/2 teaspoon red pepper flakes
    • 2 tablespoons flour
    • 2 (8-ounce) roasted or rotisserie chicken breasts (bones, wings and skin removed)
    • 1 cup bottled marinara sauce
    • 2 teaspoons minced garlic
    • 1/2 cup chopped fresh parsley (optional)

    Directions:
    1. Mix pepper flakes with flour. Roll breasts in mixture, pressing to make it adhere. Set aside.

    2. Bring marinara sauce, garlic and parsley to a simmer in a nonstick skillet over medium-high heat.

    3. Add chicken, cover with a lid and simmer 2 minutes. Turn chicken, recover and simmer 2 more minutes, until warmed through. Serve on individual plates over basil linguine. Makes 2 servings.

    Nutrition information:
    Per serving: 365 calories (21 percent from fat), 8.7 g fat (2.1 g saturated, 2.8 g monounsaturated), 128 mg cholesterol, 45.2 g protein, 26.9 g carbohydrates, 4.4 g fiber, 534 mg sodium.

    Ingredients:
    • 4 ounces basil-flavored linguine
    • 2 teaspoons olive oil
    • Salt and freshly ground pepper

    Directions:
    1. Bring 3 to 4 quarts water to a boil in a large pot over high heat.

    2. Cook pasta (6 to 7 minutes if dried, 2 to 3 minutes if fresh).

    3. Drain, leaving about 2 tablespoons water in pot.

    4. Add olive oil. Return pasta to pot and toss well.

    5. Add salt and pepper to taste. Makes 2 servings.

    Nutrition information:
    Per serving: 251 calories (19 percent from fat), 5.4 g fat (0.8 g saturated, 3.4 g monounsaturated), no cholesterol, 7.4 g protein, 42.6 g carbohydrates, 1.8 g fiber, 3 mg sodium.

    The shopping list:
    To buy: 2 (8-ounce) roasted or rotisserie chicken breasts, 1 small bunch fresh parsley (optional), 1 bottle red pepper flakes, 1 small bottle marinara sauce, 1/2 pound basil-flavored linguine.

    Steamers.....yummmmmmmmmmmmmmmmmmm! Haven't eaten them since I was a kid but I really loved them back then.

    Catching up on my reading, as you can tell. I had an emotional meltdown that lasted for a whole month prior to a BMX, I just couldn't handle being at this site for awhile. My BMX was Friday (5/20/11). It's not wonderful of course, but not nearly as bad as I originally anticipated. I'm not cooking 10-course dinners, but simple meals I can do (gotta feed my hypoglycemic Pack Rat on schedule when he's here! LOL). The hardest part about eating right now (and the most pain I'm experiencing post-op) is being able to open my mouth big enough for a forkful or spoonful of food; I think maybe the anesthesia breathing tube gave me a (temporary I hope!) case of TMJ. Left side hurts like hell when I open my mouth even for a small bite of food and my jaw "cracks" and "pops" painfully if I'm not REALLY careful.

    Lena glad to hear you made it through and doing well. Yes the crying/meltdowns stopped once I had my surgery. Hope you don't have TMJ but my gut says they had your mouth propped open for so long your jaw is just sore.

    Debbie- I never made chicken parm that way, it sounds really good, I'll have to copy and paste and give it a try!

    Nothing exciting for dinner tonight, salsa chicken.  My son was up all night sick and I am going for easy.

    Michelle- We are going on our first family camping trip inthe camper this weekend.  Any tips on camper friendly cooking?

    Hope your recovery goes well and you're feeling better and better Lena.  My surgery is scheduled for July 27 (MX with DIEP).  Enjoy your camping trip Laurie.  I've never been, but always wanted to give it a try.

    Simple chicken fajitas and rice tonight.  It was okay.  My dd and dh thought it was good, so maybe it is my lack of taste buds.  Enjoy your night everyone.

    Laurie - when we camped, I tried to keep things as simple as possible.  One morning's breakfast would be the little individual boxes of cereal - you could add the milk right in the box and just toss it afterwards.  On another morning I would make my own version of Egg McMuffins - with sausage or bacon or ham, just depending on what we felt like.  I remember making pancakes on a Coleman stove with a 2 burner griddle.  And when we camped Labor Day weekend at Lake Ossipee, the kids would gather blackberries for the pancakes...yummy!

    We cooked hotdogs on sticks or long forks over an open campfire, usually on arrival night.  Sometimes DH would get home late from work, we'd drive to the campground and get set up, then  everyone was ready to eat.  I worked, too, so I didn't have time to prepare food in advance.

    We did a lot of cooking over the campfire using foil packets.  We bought a cooking rack so we could either place packets right in the fire coals or cook on that rack.  We kept it in a big paper bag so it wouldn't get everything greasy...couldn't do a good cleaning until we got it home.  Here's a link to the rack

    We would cook burgers, steaks, chops, kebabs...simple stuff...with the foil potatoes and a salad or fresh veggies that we found along the way.  And of course, you must have the cast iron frying pan! And we had an old fashioned coffee percolator that I still have to this day.  It made the best coffee ever.

    My advice - keep things as simple as you can.  Foil, paper plates, drink boxes, etc.  Before we bought a popup, we would go camping with 3 kids in a small car like a Pontiac Sunbird and I was always amazed at how little we truly needed to get along nicely for a long weekend!  Of course, that was before cell phones and portable video games.

    Michelle- For our first trip we are staying close to home.  Going with friends to a place in Epsom about 20 minutes from home.  It will be the first time my youngest doesn't sleep in a crib and we are bringing our dog.  Usually my brother takes our dog if we go anywhere but he will be away the same weekend so we figure we will try it.  If it's awful, we aren't far from home to run the dog home and ask a neighbor to help out. 

    We are doing the same, heading over when my husband gets out of work to set up and get ready for the next day.  I am thinking of making chicken salad for the set up night so it won't involve cooking.  We're bringing either the big grill in the back of the pick up or the small charcoal grill- don't know yet.  I am going to make a batch of pasta salad ahead of time to go with it so we just have to grill the prepped meat.  My hopes is that I will be busy this week prepping, but will get to relax while hubby grills and enjoy the weekend.  It's going to be quite an adventure!  We bought a 24 ft travel trailer (used) last summer but with my surgery etc we never made it any where, so we are all kind of excited!

    Corn on the cob-  I have never grilled it, many of you said it comes out great.  How do we do it?  Wet it husk and all and grill it?  For how long?

    Laurie - you can wet it and grill it.  I found it easier to remove the husk and wrap it in foil because I didn't want to deal with each kid's hot husks just as we were ready to eat.  It was just easier to remove the husk, wet the ear of corn and wrap it up so it would sort of steam.  The "how long" part is tricky...how hot is your grill or fire and how "cooked" do you like it and how big are the kernels.  My daughter and I debate this all the time.  I like my kernels to stay crispy, she prefers them a little softer.   When I cook corn at home, I wrap it in waxed paper after wetting the cob, then I nuke two ears for 4 minutes.  Simple.

    Michelle- Thats how I do it at home too.  I have a little micro wave inthe camper, maybe I'll just do it that way.  I hadn't tought of peeling a hot roasted corn cob!

    Laurie- Not sure why I called it chicken parmesan its not the traditional recipe but it is chicken with parmesan ha! Camping sounds so fun right now, my husbands idea of camping is in an rv or a cabin with all the a!menities, my ex and I used to camp all summer outside I love the smell and taste of outdoor food cooking,

    I was on a vegetable kick tonight, made roasted tomatoes with parmesan, roasted broccoli with garlic and parmesan, and roasted red peppers with garlic and red onion and had a sweet potato to go with it with lots of cinammon

    I went to Hampton Beach and Newburyport today for some alone time.  The weather was beautiful and I did enjoy myself.  But I found myself toe-writing in the sand "breast cancer sucks"... When I am with my DH or anyone else in the family, I can be distracted and we don't talk about it.  But when I'm alone, it's always there.

    I did treat myself to lobster stew (which was really more like bisque but with chunks of lobster) and a small coffee ice cream cone.  I think I like my lobster stew with a milky/creamy base rather than a bisque.  It was still good.

    Then I got into a battle of wits with my sister because I took my mom to see her dying brother, and dared to mention it to my sister.  Since SHE has lived in the area her whole life and visits my two aunts every single week, you'd think they would know that he is in home hospice.  No, I let them know and then take "crap" because I didn't take my mom to visit my sisters on the same day after the brother visit.  I told her I didn't need this crap, that life was too precious and I wasn't going to put up with it.  Anyways, there's more to the story but the bottom line is I'll get my mom there when I have time, and I don't need her asking me why I didn't go while I was in town.  I'd already driven about 150 miles that day.  Apparently my aunt was asking the question and my sister said don't shoot the messenger.  I told my sister that some questions are better ignored and she didn't need to pass that negative crap on to me.  I won't be volunteering any infornation any time soon. 

    I caught my granddaughter's cold and I am grumpy!!!

    Michelle- I had tears running down my face visiong you writng that in the sand you certainly have too much to deal with Im sorry your sister dosnt "Get it" but Im sure she loves you so much how can she not? Do you think she is feeling a little jelious right now? I hope things get better between you both ((hugs))

    Debbie - I don't think it's an issue of my sister not getting it.  We haven't been close for more than 25 years, and she's one of those persons who can just be toxic.  Yeah, she used to be jealous of my boobs...lol.  In our family, you were either well endowed or flat as a pancake.  There is absolutely no reason for her to be jealous of me at this point.  I have seen her once in the last 5 years, and that was last year when I visited with my mom and was insistent that we get the four siblings (my mom, two aunts and brother) together for lunch while they still could physically do it.   She helps out my one aunt who is even more toxic.  It's just one of those unfortunate family situations - I get most of us have one somewhere. 

    Anyways, enough of that!

    I made lago's Chicken Chive and Spinach burgers for dinner last night.  Very yummy!  And my husband liked them so much, he wanted the leftover patty today in a salad pocket, with yet MORE spinach.  Have to say, they taste as good cold in a sandwich as they did last night!  And a good way to incorporate more veggies, love it!  Will definitely make these again, maybe even with ground turkey.  Thanks lago!

    Michelle- So sorry you are feeling a bit down about things and overwhelmed by your sister.  I could picture you sitting on that beach.  It's awful when we have family that can't be supportive or act like family.  My father can be quite difficult too and is a thorn in my side a lot of the time.  I always say screw him!  But lets face it I still care which is why it stings.  I hope your sister can find a reality check and instead say thank you for taking your Mom.  If she can't good for you for watching out for you!!  (((hugs)))

    I did my food shopping today for our first camping weekend and have been loading the camper slowly each day with random things- like crayons and dish soap etc.  I got home from the grocery store and realized I had been so focused on the weekend, I really haven't planned anything for dinners before or after oops!  Once again my oldest requested steamers at the grocery store, so to surprise my husband I bought a steak to go with it.  I NEVER buy steak and he loves it of course.  So we'll have that with corn on the cob, baked potatoes, caesar salad and garlic bread.  Since I don't really eat the steak I need lots of sides!

    I'm sorry you have a toxic family, Michelle. I do/did too. The only one I've even talked to in the last two decades almost has been my mother, and my relationship with her is unstable too. The only way we seem to "get along" at all is living 1500 miles apart and only talking on the phone at intervals of weeks or months. Even with this infrequent contact, we actually still manage to fight close to half the time. To keep this on a food note, I'll mention that my mother was tied for #1 with my grandmother (father's side) as "best cook in the family."   Other than the tuna casserole, though, I never got any recipes.

    Oh yeah.  My Pack Rat came over tonight so I made chicken parm and spaghetti for dinner. Mostly I've been nibbling fruit and nuts, having soup and oatmeal, and microwaving leftovers (meat loaf, spaghetti) because I'm mostly too tired and spacey to cook. Uh huh, maybe it's because I just had surgery and pain pills make me sleepy? LOL Other than tonight's chicken parm, I've only cooked one "real" dinner in the past week...hmmm Sunday night I think. Chicken with mashed potatoes, gravy and creamed corn. There weren't any leftovers from that, though, we ate all of it. But, there's leftover chicken parm from tonight and one more container of leftover meat loaf, plus plenty more oatmeal, soup, fruit and nuts to nibble on, plus sandwich stuff too, so I'm sure I have way more than enough "easy" food to make it till the drains come out. Yup, that's why I did a big grocery shopping trip before surgery, and put all the important stuff out on the kitchen table and counters so I wouldn't have to reach upper cabinets or dredge up heavy stuff from the under-sink cabinets.  Eating for now is on the coffee table in the living room. Kinda reminds me of old times in my last apartment when I ALWAYS had to eat on the coffee table in the living room because that was the only place I had room!

    Well today is my birthday!  Last night my husband informed me he would "take care of dinner."  So it will be interesting to see if he cooks or orders something.  He said I shouldn't have to cook for my birthday thought I was silly that I made my own cake this morning.  But it is so much cheaper than buying one!

    We were finally granted good weather here in NH and we spent it outside going to my sons t ball and the park.  Then we came back and had a picnic lunch on our lawn and played in the sprinkler.  It had been so cool and rainy here I told my husband we should open the pool late this year, what an idiot I am!  The past 2 days have been in the 80's and sunny, wish I could go for a dip- but the sprinkler is nice too!

    Thank you and Lago- chocolate is my favorite!  I made myself a chocolate cake with chocolate frosting, yumm!

    Hubby surprised me by showing up with take out from my favorite restaurant, that we never go to anymore because it is not kid friendly.  Stuffed eggplant and pasta with the best salad with a house dressing.  He got a big gold star in the middle of his forehead!!

    Your post of being at the beach and writing in the sand how much this all sucks REALLY struck a cord with me!  As you can see from my sign-in name, the ocean and the beach really holds a special place in my life!  It is the one place that I feel as close to "who I truly am" as possible! 

    I was diagnosed in May of '09... Summer that year, which is when we usually go the the beach, was occupied by endless doctors' appointments and treatments!  Never made it to the ocean!  Which made last year so important!! We were able to go and, I must admit, I was truly overwhelmed by emotion to the point of tears when we first walked the beach!   It was like getting a warm embrase from an old friend and saying.. "Yes, I had a rough year, BUT I'm still here!!"

    The power of the ocean is truly amazing in it's ability to both humble you, and yet, somehow give strength!! I hope that, in your day at the shore,  it gave you a small bit of strength that you will need to get throught the next steps in your journey! 

    As for toxic people in your life, especially family members, I have learned to just let it go.. Often they MEAN well but, for whatever reason, they just can't walk the path with you! 

    Here's hoping that you have have so many FRIENDS to walk along side you that, one or two less than supportive family members, will fade into the background!

    Laurie - Happy Birthday!  Celebrate, celebrate!!! 

    Seaside - we have a lot in common when it comes to the beach.  I discovered my lump at the end of May last year when we were staying at a beach cottage in Kauai, celebrating our 30th anniversary.  I went to Hampton Beach this week because I was afraid I would not have the energy to go again once I start chemo, so this summer would be lost.  We will have the lake, but an ocean lover knows it's not the same.  We do have good weather in the forecast through Memorial Day weekend, so I may just go one more time.  It's only an hour drive.  And it is "peace" for me, too.   Hopefully treatment will wash away breast cancer the way the incoming tide smoothed the words right out of the sand!

    Well, it appears my sister heard my message and she brought my aunt to visit my mom yesterday.  What a miracle, there is hope yet!!!  I don't expect much from her - but I do expect her to visit mom once in a while because she lives so close to her.  Baby steps!

    My sister has not been my "friend" for so long that I don't think that will ever change.  But I have all of my sisters here, along with some very dear friends that I left behind in the KC area, my diabetic blogger friends, and my dear friends who live about an hour from us.  I can mentally push the "ignore" button on a family member who is not supportive!

    Thanks to all of you for your words of wisdom, friendship and support.
