    Don't forget the pigs head!  I don't remember what she did with the brains and eyes but the rest of it got put in a big pot with water to cover and apropiate spices and cooked until the  meat fell off the bone.  I was only 12 the last time she made it.  The meat was shreded and packed loosely into loaf pans.  The broth was cooked down until there was just enough to cover the meat.  It would gell when it was chilled and make the best lunch meat.

    we used to make scrapple when we'd butcher a pig.  Like chabba said, it was cooked until everything fell off the bones, then my grandma added spices (especially a ton of sage, salt and pepper) and then mill ground corn meal (polenta) stirring until REALLY thick.  Then she'd put it in empty milk cartons and chill it.  For breakfast we'd slice it and fry it.  That was the best breakfast EVER.  After I married (and grandma died) we never butchered pigs anymore, but on occasion I'd buy a pork shoulder and make it.  Now, unfortunately pork doesn't agree with me or hubby and he's developed an allergy to corn - so no more scrapple.

    DH and I ate scrapple somewhere in PA one year.  We didn't particularly like it, but it might have been different from yours, gardengumby.

    All the supermarkets and grocery stores in south Louisiana sell hogshead cheese.  My mother used to make it when my father butchered a hog.  She still loves it, especially the home-made.  It's kind of a country person's pate!

    Today after playing golf, dh and I went to the West Forty restaurant in Park Rapids, which has lunch specials every day.  We ordered the roast beef and gravy with mashed potatoes and carrots and told the waitress we would share the meal, to bring us an extra plate.  Instead they divided the meal into two platters in the kitchen, and each platter was ample for a meal, especially since we ordered side salads extra.  We knew from last year how much food was loaded onto a plate when you ordered the special.

    I had to smile at your mention of BLTs, Lacey.  Yesterday dh and drove to Brainerd, MN, and biked a portion of the Paul Bunyan Trail.  We stopped at Merrifield, a little town, and had lunch at a place that was a bar/grill.  We ordered Extreme Blts, not realizing they were TRIPLE deckers!  On Texas toast.  They were delicious but must have had a half pound of bacon on each sandwich.  And the serving of French fries was absurd.  I've never had a tastier BLT but we weren't hungry for dinner last night, just had a snack.

    Tonight I'll cook some pork medallions that were thawed for last night.  I'll do a pork piquant with lemony sauce and capers, a really good WW recipe.  I also need to cook some broccoli and cauliflower that are aging in the refrigerator.

    Hi everyone- first of all- kind of grossed out about cooking a pigs head, lol!  We never did anything like that!  My weekend was so relaxing it was wonderful.  I read an entire book and slept in, got a pedicure and swam in the pool.  Saturday night a girlfriend came over and we ordered a pizza and drank wine pool side until midnight.  Sunday night dinner was a wonderful turkey sandwich I made and last night was left over stuffed eggplant as DH was working late.  Tonight I am just going to bake some chicken with carrots and zucchini and serve with rice.

    Eric- Your post on DD driving made me smile.  My Dad did the same thing.  He taught me to drive on an old pick up truck, no power steering etc- high beams on the floor- remember those?  He had me go on a hill and would not let me drive on the main road until I could master the clutch and not roll back at all.  The irony was after I mastered that truck I don't think I was allowed to drive it again for many years? 

    Lacey- We did get so lucky that the storms missed us this weekend!

    I hope everyone is doing well.  Debbie- So glad you checked in- how is Chuck and your Dad feeling?

    Laurie and Eric - my dad also taught me in a straight-stick pickup truck.  But he didn't think it was at ALL funny when I started to laugh as I jerked across the parking lot.  Driving was seriously business.  He made me so nervous that I went and signed up for drivers ed.

    Enjoying the stories about learning to drive....I learned on a 1953 stick on the column....no power anything. It was a monster and my friends and I lurched a lot that first summer. I can still picture us giggling. Managing stopping and starting on the hills was a riot....and very anxiety provoking if a car came up behind me while I tried to master the stick, clutch, brake, gas challenge!



    Carole, that sandwich sounded great. I have yet to satisfy my yen for a BLT, but may try a new restaurant in town that is bound to have them.



    Tonight we (dh) grilled halved chicken breasts with my new favorite marinade...teriyaki with extra garlic, fresh ginger and chili pepper sauce for some spice/heat. Marinated some summer squash and onions in that flavor too. But the highlight of the meal was grilled beets with a drizzle of fig infused balsamic. Yum!


    Susan, thanks for the ninja tip. I do worry about all those high blades and washing it w/o slicing my hands. Waring has a good one that I am talking to the mfgr about...have to pack up and return the Breville tomorrow.


    Fascinated by all the butchering prowess in this group! Never even got close to learning those techniques from my family. I'm impressed, ladies....and maybe a bit grossed out, too. ;/

    I have no idea what is for dinner.  I took out a pound of burger which I will make something with I suppose.  I need to go to the grocery store and come up with my meal ideas for the week.  We are headed out for a bike ride and then for a swim before DH gets home.

    This morning we headed to the park with friends at the playground of the school where DS1 will be going this coming year.  Afterward they had story and craft time at the school.  The program was amazing.  The people were  very involved and organized and both boys were on their best behavior (for once).  Afterward me, the boys and our friends wandered the school and looked at classrooms etc.  DS is very excited to go to big boy school, which makes me happy.

    On the BLT note- did I mention I stopped and got one on Friday?  Can't wait for tomatoes from the garden for a tomato sandwich with cucumbers on the side- YUM!

    Tonight was supposed to be pork chops, but my butcher is diddling and I won't have my pig until Friday. I had already invited hte kids to have dinner with us, so in typical susan-fashion, I overdid. Made 80 meatballs today. A pot of sauce is bubbling on the stove. Will serve over pasta with a large salad.

    The meatballs are the result of.... got several large cuts of beef, which I then had to grind, and since I had ground meat, I really should grind those dry pieces of pork from the freezer, oh and I have a pound of ground venison, oh, meatballs. Why do I do this to myself? It is 86 degrees today, and I don't know how much hotter in that kitchen. I just never learn!

    Oh Nancy I am jealous!  We won't get ours for another month!  The cucumbers right now are about 2 inches- they will come first.

    So all I could come up with for dinner is Salisbury steak and gravy, baked potato and corn on the cob.  DH is running late so kids are eating pasta- we will eat together later.

    Dh is going to be late again tonight.  DS1 is having a tuna sandwich, DS2 chicken nuggets.  I will search for food with DH when he makes it home and come up with something for both of us.

    I hate not having a real dinner.

    Hello and hugs to all.  Not much is the way of dinner making at my house - DD had tonsils out yesterday and is not doing well.  One (or both, plus the antibiotic) is making her vomit - not good after tonsil surgery! So she is also in pain because she can't keep the pain meds down.  The doc called in a scrip for Zofran - shades of chemo....  Hopefully it will do the trick, it did not work for me at all.  DH is not home from work yet, but has tomorrow and the weekend off.  This is only day 2 of nurse duty and I am already exhausted!

    Special K- So sorry about your DD.  DS1 had his out a little over a year ago at age 4.  Pancakes were a huge hit with him and easy to swallow.  He ate a lot of them and it helped to absorbe the meds etc.  Worth a try?  I hate to say it but it will get worse before it gets better- day 4 for him was hard.  When the scabs come off :(  I will share as much/little info as you want from my experience.  It is so hard watching your child suffer .

    Special K - wow, you have your hands full. I know it's not easy but the ABT on an empty stomach is probably making it worse. Can she keep anything down? I know you know to watch for dehydration. Pinch the skin on the back of the hand and watch to see how quickly it returns to normal position. I have difficulty tolerating once a day ABT; they give me a stomachache and not even having had tonsils out. Hopefully the Zofran will work for her. Moms - what would kids do without us? I had to make a flying visit to my sick DD on July 4th - a little over an hour away. Brought strawberry limeade and french fries from Sonic and went to Dr. with her next day for moral support. Hope you get some Special K time for yourself. Can DH spell your with DD? Mine was good at fetching things, not so good at cleaning up things. LOL.

    Hoping we hear from Michelle soon.

    Hello everone...busy, busy week here.  My Dad has been diagnosed with large cell carcinoma of the lung.  sees the oncologist next week.  Not sure what they will recommend or if Dad will agree to any treatment.

    Best friends Mom passed away.. wake was on Wed night. And a very, very good friend from long ago contacted me ( we guessed about 26 years) and we got together after work tonight...beer and lots of laughs about our crazy antics when we were young.

    Speaking of BLT's...I ordered one from a deli near my workplace for lunch today...and it was peppered bacon with lettuce and a spicey tomato jelly, instead of sliced tomatos and I was pleasantly surprised at how good it was.  i still prefer real tomatos, but this was different.

    Sticking close to my e-mail as DD is traveling to Italy, India, and Hong Kong for her job and some fun.  She is presently in India, staying in a palace that her company arranged for her. Wonderfrul opportunity for her, but giving me some gray hairs as she is travelling alone.

    I just got a nice basket of blueberries from the farm, my DSIL picked them the day she drooped them off. I ate a BIG bowl. Probably not a great idea because I am still having gastric issues. Ahem. But they were SOOOO GOOD! guess I may have to freeze them for a bit. LOL.

    SpecialK, I hope your DD recovers soon. Not an easy gig for either of you with her being so sick.I can relate since I had my tonsils out at age 27....no picnic for sure. Hope the meds provides relief!



    Carrie, so sorry to learn of your Dad's dx. I hope if he decides on treatment, it is gentle on him. How "fun" to get together with a friend from years past. Those kinds of re-connections are priceless! What a wonderful experience for your DD....tho of course it is always a mother's worry to have a daughter traveling so far independently. Kudos to her!! I bet you will see some nice gifts from Hong Kong! :)



    Yesterday I started PT for my shoulder pain ( brought on by my stretching and exercise program;). I learned that my poor posture has mainly caused my shoulder to move improperly, making it vulnerable to such tendon problems with all the stretching I now do. Today I awoke feeling I'd been hit by a mac truck after starting the new stretching program set up by the PT. DH insisted he felt awful too and that it was just the lousy, cold rainy weather. I hope so since I want to get back to BOTH my regimens tomorrow...and the weather seems better here in NH where we landed tonight. I have been happy with the results of my training sessions and reupped now for the paid sessions....still very reasonable to see a medically attuned trainer weekly and have a great gym available daily at $60 for two months.



    Interesting BLT variation, Carrie. I have yet to get my fix...the new restaurant we tried last night had none on their menu, and I settled for a very unexciting cod, broccoli and rice plate. :(



    Monica, love that you got a glut of blueberries. Enjoy! And freeze if they get to be too much fiber.



    Susan, your "meatball" event cracked me up! Hope the pig gets delivered soon. :)



    I need to get to bed, but when we drive up here at night (I am the night driver) I need time to unwind. Such a nightowl!!

    For dinner last night I made chicken cordon bleu, but used pastrami instead of ham (as that's what I had on hand).  For the sauce I sauteed some red onion and mushroom, added pinot gris with a little bouillon.  After the chicken was cooked I added a little alfredo sauce that I had left over from a couple nights ago.  It turned out to be most tasty Laughing.  (though you should have seen me pounding the breasts flat - my rolling pin is still packed in the POD, so finally I got creative with the bottom (curved part) edge of a kettle).  For sides had rice (which I toasted in a little butter prior to cooking) and a green salad.

    Carrie, that's depressing news for your dad and family.  I hope his outlook has some hope with treatment.

    Susan, I'd love to have a half dozen or so of those meatballs!  Last night I saw the biggest meatballs I've ever seen.  At an Italian restaurant in town called Necce's.  The appetizer menu had two large beef and pork meatballs in a marinara sauce.  A woman at the next table apparently ordered the meatballs for her entree.  They were HUGE and looked good.  Dh and I may order that sometime and each take a meatball with a side order of pasta.

    I ordered an asparagus lasagne thinking I would get a dish with fresh asparagus.  Instead I got a small square baking dish that had lots of melted cheese and alfredo sauce and some flat pasta pieces that seemed home-made and just bits of green that might have been the asparagus.  Tasty and super rich but not what I expected.

    Tonight's dinner will be chicken breasts pounded thin and breaded and browned in small amt of EVOO and butter.  Fresh flat beans purchases at the farmers' mkt on Wed.  Steamed in chicken broth with new potatoes.

    It's COOL here in northern MN.  Today's attire is jeans and long-sleeved tee and a windbreaker for outdoors.  I love it.  Tonight's temp. may be a record-breaker at 41 degrees.  We'll have to get out a fleece blanket.

    Had my hair trimmed and the roots colored today at a salon Park Rapids and the young woman did a great job.  Not always the way it turns out with a new stylist who doesn't know my hair quirks.

    I, too, am worried about Michelle.  I wish her daughter would come on with some encouraging news.

    I agree- I want to Ditto Lacey's post.  Lacey I love that you are a night owl like me.  I always check to see if you post before I go to bed.  :)

    Garden- That was quite the visual of the chicken pounding!  You had me laughing!  When I don't want to deal with pounding chicken I butterfly it :D 

    Carol- Sounds like your trip is going so well!  Glad your hair turned out great and the meatballs sound so yummy.  I am hungry right now.

    I too hope Michelle or her daughter post soon to let us know how she is doing- I am getting worried.  She is not posting on Facebook either.

    Today I re-did an old girls skatboard for DS1.  It was pink with flowers- I spray painted it black, put Spider Man decals on it and am not putting a clear coat seal on it.  Total cost-$8.  He will be so excited when it is done!  Then I have to make over another old board fr DS2 tomorrow.

    Last night we finally ate dinner around 10- turkey sandwiches with lettuce, tomato, onion and pickle.  DH says he will be home for dinner tonight.  Because of the rain I am going to do shake and bake pork chops- I had planned on grilling chicken for Caesar salads- ohwell.

    today was Costco shopping, so tonight we're going to have a Costco rotisserie chicken, potato salad, green beans and a bottle of wine.  :)

    Hope everyone has a great weekend.  I'm planning on sleeping in tomorrow, then some house cleaning and off to visit friends.  The townhouse we're renting is going on the market next week, so I want to get it all spic and span for pictures and showings.  It was bad enough living in our own house when it was on the market - I hadn't planned on living in a rental that's on the market.  Frown  But our new house should close in like three weeks, so I think it'll be to our good if the townhouse sells quickly (so they let us out of the lease early and we don't have to pay for two places for 4 months.)
