Debbie - Still hanging in with minimal SEs.  Just a little more fatigue this time around, I might be wearing out a spot on my new sofa...lol.  Happy that the nasty chemical taste is almost gone.  I just keep drinking whatever tastes good.  No red wine, burns going down.  But I can drink red wine Sangria, so OK, I can adapt!!!   And surprisingly, I still have some hair.  It's not growing, but it's not going either!  I expected to be hairless by now, but I still have head stubble, arm hair, the slightest leg hair stubble, really strange.  Well, maybe I'll have a "head" start when it starts to grow again!

Michelle- Sorry you are feeling so tired, im surprized by the engery that you have had through this, i hope it gets better for you, wow, that is strange that your hair is not ALL gone by now, are you on TC?  Head start ? LOL! No pun intended right ha! Also have you been using regular utensils? I used the plastic forks i couldnt handle the real silverware/  they were the good quality plastic not the junk ones that  bend easy. I love sangria. the only problem is they were so good and didnt taste strong and would drink to many of them and before i knew it, i was tipsy!

Debbie - Not on TC, on AC with Taxol coming after the next AC.  Yeah, I'm quite the comedian...lol!

No plastic silverware required which has surprised me.  I have some good stuff, too.  But my regular silverware doesn't bother me, so far.

I've always been a "high energy" kind of gal, so I think that has helped keep me going through this.  I'm resting when I need it, but I'm still trying to do as much "normal" stuff as possible.  Not gonna let this chemo thing interfere with my life any more than necessary.  Today I am going to my mom's to help her shower, then I'll take her to lunch and maybe for a manicure and pedicure, depending on how I feel after all that.  I was noticing her nails need help, and I don't think she can do it herself so a little treat for both of us will be nice.

Yes, those Sangrias can be sneaky!  Because I take metformin for my diabetes (it works on the liver), I am pretty careful to stick to no more than 2 drinks.  Can't get into too much trouble with that restriction!

So last night DH grilled some delicious boneless pork chops. He actually scouted the 'net for a recipe for garlic butter in his effort to replicate the grilled garlicky pork chops that were his favorite at a KC restaurant called Stroud's, which is actually known for its fried chicken. He continues to surprise me with his interest in cooking!!!

Michelle- You are such a good daughter to your mom, she is lucky to have you- Hope you have fun at the salon. Yummmmm! the garlic butter pork chops sound so good, made my mouth water, i will  make my pork chops like that next time, I made sandwiches the other day and made garlicy fries to go with them,  they  were so good, i used to eat these at Gordon Biersch restraunt when i lived in hawaii- Heres what i do:

Peel and slice how ever many potatoes you need per servings,  and cut into desired thickeness,  about medium thick- meanwhile, mince about 4-5 garlic cloves ( i like alot and usually do about about 6 or 7- put garlic in small saucepan with some evoo or canola oil cook on low for only about 2 minutes, swirling, remove from heat and add 1/4 chopped flat leaf parsley, let cook- cook potatoes in deep fryer or oven untill crisp- ( i cook mine in a 325% canola oil) for 3 minutes, take out of oil and bring the oil up to 375% put fries back in and fry another 2-3 minutes until crispy, put in large bowl add sea salt and toss with the garlic mixtures- If you like garlic you will love these.

making fried rice with left over pork chops for dinner tonight-

Debbie - thanks!  I do try to take good care of her.  It turns out that I was feeling a little "off" this morning so I put off taking mom out until tomorrow.  I recovered about noon today, and my big accomplishment was to hang out in the lake.  Actually, it's a little better because I have to drive for PT tomorrow, and it makes more sense to pick her up right afterwards.  Then we can eat lunch and get the girlie things done.

There was a Gordon Biersch in Kansas City and I am quite sure I've tasted those garlicky fries.  Thanks for the recipe!

Michelle-Just got back from having dinner with friends and seen that my last post was not here. it makes me upset when i post a post and it dissaperas(sp) lol after a few drinks i cant even spell dissapereas right ha! ok, well what i said earlier was that I;m sorry that it caught up with you, and that you are tired. hope you get some much needed rest/ its good that its going to work out better for you tomorrow, so sounds like you are going to have a busy day- Hope you are up to feeliong good enough to do all these things tomorrow, without any problems.

So i made fried rice for dinner, and Dh calls and says, a wine vendor and his wife want to take us out to dinner. this of course was at the last minute, but of course i said ok, (wont have to cook tomorrow Yeah)  had a good time, the wine vendor ( George) wanted to invite my husband ( Chuck) to a Golf tournament this weekend, it was in Sonoma, california, playing with the NFL and that they would put him up in a ranch, and pay for everything, im like, oh honey, you gotta do it, (thinking i might be able to go) Ha! and he had to turn them down saying he was going to be to busy this weekend, wow, what an offer of a lifetime, and he couldnt go, he could of if he really wanted to, but didnt think he was good enough to play golf agianst these celebrities, oh well, but what a great offer he had.

Oh Debbie, he so should have said yes.  Who cares if he's not good enough?  It's not like he'd be rubbing elbows with these guys ever again!!!  I don't think my DH could turn down such an offer, and I'd probably nag him to death to be able to go.

So, I am up way, way too early this morning.  Got the 4 am bathroom call and then couldn't get back to sleep.  I tried for an hour, then gave up. Oh well...

Your post is funny, by the way... looks like your fingers were having just a little trouble...LOL!!!  The wine must have been yummy Wink

just found this thread and had to jump in.  I wanted to use up some hamburg last night so made a meatloaf, but didnt want to turn on oven so I wrapped it twice in foil and put on the grill. I have a gas grill that has a low setting, so just put it out there, closed the lid and left it for about 45min.  Was delicious! Did a cold brocoli salad with raisins and (turkey bacon), red onion and sweet dsg.  Tonight its gonna be 95 degrees so going out on the boat to stay cool, no cooking for me, just wine and snacks.

Welcome, Carberry!  Cooking meatloaf on the grill is an excellent idea!!!  Which Finger lake are you on?  I used to live in Pulaski, so I am somewhat familiar with the area and we did a couple of wine tours many years ago.

Hey everyone, other than the answer "going out to eat" what is your favorite hot weather dinner?  We like chicken waldorf salad with a plateful of fruit.  Light, cool and refreshing!  I usually buy the store deli chicken salad and then add in apples, nuts, and some grapes or cherries.

Off to PT now, then picking up my mom, taking her to lunch and getting her "beautified" (hair and nails).  And I will indulge in a pedi, too!

Hi carberry, and welcome- Great idea on the meatloaf and your salad sounds good.

Michelle- I love chicekn waldorf salad, i usually buy a whole roasted chicken so i dont have to cook it, i think i will try that this weekend.

Good idea for the hot weather food- here are a couple recipes i do in the summer the first one is a no bake cookie for those with a sweet tooth but dont want to turn on the oven and there good and easy to make. the second one is a mango shrimp salad that is really good, sometimes i add papaya's instead of the mango's

    No bake cookies-

    3 oz semi sweet chocolate

2 cups of crispy rice cereal

2 (5 inch by 2 1/2 inch each) of graham crackers broken in small pieces

Line cookie sheet with waxed paper- put chocolate in a microwave safe bowl, heat on high for 1- 1 1/2 minutes or until melted. stiring once-add cereal and  crackers stir until coated and with fingers make round mounds, drop on waxed paper lined pan refrigerate 30 minutes to set up, then keep in airtight container at room temperature

    Shrimp mango salad

    Ingredients:
    • 3/4 pound cooked shrimp
    • 1 large mango, deseeded, peeled and cubed
    • 1/4 cup sliced green onions
    • 1 tbsp fish sauce (optrional)
    • 1 tbsp soy or tamari sauce
    • Juice of 1 large lime
    • 2 tbsp water
    • 1 tbsp brown sugar
    • 1 tsp minced jalapeno pepper
    • 4 cups arugula
    • 4 small vine-ripe tomatoes, cut into wedges
    Preparation:
Place shrimp, mango and green onions in a medium bowl. Whisk fish sauce, soy/tamari, lime juice, brown sugar and minced pepper. Pour over shrimp and mango mixture. Cover and refrigerate for 10 minutes.

I only have a quick moment and will come back later to post my favorite summer recipe, which I think I have posted before?

But while I remember I wanted to share the fact that if you are out of tartar sauce you can make your own, the same with thousand Island dressing.  Tarter sauce is mayo, relish and lemon juice, mix to taste and to sight.  For 1000 island it's mayo, relish and ketchup, mix to taste and sight, ie the right color.

This is the second week in a row I forgot to buy tartar sauce at the store, and it's Wednesday fantastic fish night at my house again so I have to whip some up!

    debbie6122 Member Posts: 2,935

Great idea Laure- I have made mine from scatch as well, i always make my own 1000 island dressing b/c i dont care for the store bought-  Make my own horsey sauce too, with horshradish, sour cream, worcheshire sauce, lemon juice and sometimes add a teaspoon of sugar if i put it on a chicken/bacon sandwich.

Here is a good macroni salad i make a lot- simple ingredients, as i dont care for macaroni salad that has too much going on-

ditilini pasta- (they are real tiny small tubes)

a couple stalks of celery- diced

    1 small red onion, diced

mild cheddar cheese- diced in small cubes

salt, pepper, celery salt, garlic powder

    mayonnaise (enough to coat pasta)

boil pasta according to directions, rinse in very cold water and drain for a good hour- mix all ingredients together, cover and chill for flavors to marry- the key to this is making diceng so you dont have big chunks-  After pasta absorbs the mayo, you may have to add more.

Tonight was leftover night at our house.  We had pizza left over from yesterday (reheated on the grill), and hubby made a spinach salad.  He put red bell peppers in it...now if I could just get him to remove the little grocery store produce sticker before he cuts it up...lol...two days in a row I got a sticker in my food!!!

I'm tired tonight after spending the day with my mom and driving about 100 miles round trip to get everything accomplished.  I ended up taking her to visit her two sisters because we were 5 minutes away when she got her haircut.  They are all over 80, so I really did my good deed for the day.  It was too funny, they wanted to see my bald head so I ripped off my wig and they just giggled like school girls!  My aunt said she had never seen a "chemo bald" head before!

Looks like it's going to be party central at our place this weekend.  I've gotten the calls from the kids asking if they can come to the lake and hang out - it's supposed to be almost 100.  They are promising to be "self-sufficient" but we'll have burgers and dogs on hand, just in case!

    Hi All,

Had a really great time at the beach and am still trying to get things back in order here! Will try to go back a few pages to catch up when I can.

Dinners that we like when it's so darn hot as it is now.....

Caprese Salad - Good tomatoes, basil, fresh mozzarella and a bit of olive oil, salt and pepper

Fresh melon - Watermelon, cantelope and honeydew

Corn on the cob - Butter, salt and a big ol' napkin is all you need!

Greek Panzanella Salad - I think it's Ina Garten's recipe but could be Giada.... not sure and too lazy to check...lol

Of course we don't have all of that on the same day but, you get the idea!

Michelle-What a cute story, about your aunts giggling, they sound so cute.

Seaside- Hi, so glad you had a great time, and glad you are back safe.

  • LuvRVing
    LuvRVing Member Posts: 2,409

Yes, welcome back Seaside!  I hope you made lots of new memories!!!  Great suggestions for summer dishes, I had almost forgotten about caprese salad.  Hubby loves it and I have basil growing in a big pot so that will be on the menu this weekend!  I drizzle a little balsamic vinegar, too.

Debbie - well, it was one of my better visits with the old aunts.  One of them can be pretty darn moody.  She is a diabetic who doesn't take care of herself, she has numerous other health issues and is just generally a miserable person.  So you never know what you're gonna get when you visit.  And to top it off, we walked into her place from the other sister's apartment (they adjoin) and she was napping.  I tried to yell out and then gently touched her to wake her up and I scared the crap out of her.  But then she actually laughed about it, so the visit got off to a pretty good start.  My sister, who does nothing for my mom, does everything for her and they had been out in the morning for groceries and lunch.  My sister had left by then.   So auntie was a little tired, but generally in the best mood I've seen her in a long time.  So yes, it was pretty cute.

It's going to be close to 100 today, the grandkids are coming.  I need to go to the grocery store for food and refreshing treats.  And I need non-carbonated things for me to drink.  Yesterday was a bad food and drink day for me.  It seems that everything was burning on the way down, and I had fried clams for lunch - a big mistakey-boo-boo.  My tummy was unhappy the rest of the day, and then no matter what I ate or drank I was uncomfortable.  I finally had a sugar-free Italian ice and got some relief.  My esophagus is really irritated from the chemo and I'm going to have to avoid carbonated beverages (including my favorite Diet Coke) and anything with a high acid content.  Now I know why mac&cheese and mashed potatoes become a favorite food during chemo...lol.  Ice cream is heavenly, too!  I'll figure it out - eggs, yogurt, melons, Ranch dressing instead of Italian, just need to think about it for a minute or two!  Learn and adapt!

Hope everyone has a great day and stays cool and comfy, wherever you are!

Joyce - you are correct.  I've heard from both daughters and there will be at least 7 or 8 of us frolicking before the day is over!  I'm heading to the grocery store for food, looks like it will be dinner lakeside tonight!

luvrving  We are on Seneca Lake, right in the heart of wine country. We practically live on our boat in the summer, my DH works so hard, it is our "get away from the world" place.  But, because of this I dont cook alot in the summer, we live on simple finger foods that i prepare ahead of time.  Last night I made a fresh salsa with chopped tomatos, red onion, peppers, black beans, with red wine vinegrette dsg with fresh basil. dip with tortilla chips.

I love the chicken salad, I made some with cranberries, celery and tarragon mayonnaise served on a wrap.  Make a big bowl of this, have wraps and rolls on hand and let everyone make their own sandwhich.

BTW  I love the family stories...kind of helps us relate to the "normal" in all of this mess.

Thanks for the welcome backs! We had such a great time at the beach! We went with my sister and her family and rented half a house right on the beach..... The beach where we go is so sparcely populated that we can set up our canopy and chairs and leave them up for the week!!!

Lots of early AM and evening walks on the beach... A big cooler packed with nice cool drinks (some were even for the kids...lol)..... Swimming... Playing Bocci when the tide went out until the sunset..... Ahhhhhh.... wish I was back there now!

Seems as though I brought the heat back with me! It's going to be a real scorcher here!!

    Michelle,

Sorry to hear that your throat and stomach aren't cooperating..... I think you may be right with some of the blander food...... Ice cream always tastes so good and will sometimes help to settle my stomach...

Hope your lake day with your family is a blast! Couldn't ask for a better place to be this summer than on the water!

    carberry,

I have a chicken that I'm going to cook in the crockpot.... The leftovers have chicken salad written all over them!

    carberry,

The finger lakes region, as is all of upstate NY, is just beautiful in the summer and fall!!! Great Wineries AND a beautiful lake.... What more could anyone want?!

Ooh Carberry, tarragon mayo sounds pretty good.  Just got back from the grocery store and I'm having a lunch that is working for me - chicken salad, cole slaw, and watermelon.  But an interesting thing at the store...apparently my sense of smell has been heightened to a level I've never experienced.  I thought I would die walking past the seafood section and then I noticed I was smelling people who seemed to need a shower...lol.  Ugh, that's gonna make things interesting!!!

I've never, ever really noticed smells on people before unless they were really obviously gross.  This was more subtle but it was an odor I recognized, like when my mom wasn't showering, just "sponge bathing."  Hubby is on to me, though.  By the time I got back from the store, he had emptied the fridge of any leftovers with potential to spoil in the next few days.  Good man!!!

Upstate NY is definitely gorgeous this time of year.  But oh my, the winters are insanely long!!!

Seaside- Your vacation sounded like you had a great time. I have heard of Bocci but not sure what it is?

Michelle- I went through the same thing with smells to going through treatments, but what is weird it has stayed with me even after tx's are over, im always asking DH if he smells something gross, especially when we go to safeway, hmm... interesting, wonder if anyone else is experiencing that too.

Making a cole slaw with apple and fennel today and bq  chicken maybe some baked beans i havnt decided on that yet.

When i was going through chemo my sister made me chicken pot pie and it was delicious.  But after that a friend had made me chicken pot pies to freeze and have when I didnt feel like cooking, well, after several treatments, my DH heated one up and the smell sent me over the edge....reallly dont think I could eat one today 5mo. after chemo.  Lost alot of my taste during chemo and I think taste and smell go together.

I dont really get a true smell when trying new wines either...but I drink them anyway! ha ha cant let a good wine go to waste.

    Debbie,

In bocci there is a target ball called the pallino. Then, in the game we have, there are two balls each of red, yellow, blue and green. We play teams of two people. Someone first throws the pallino and then, alternating people from each team, you roll or throw the colored balls trying to get as close as you can to the target ball.... The team who is the closest earns a point for each ball that is closer than the other teams closest shot. First team to 15 wins..... I'm sure the bocci purists will scream but, this is just how WE play!

It's really fun and best part is it only requires 1 hand so the other hand is available to hold a drink!

  • debbie6122
    debbie6122 Member Posts: 2,935

Seaside- It sounds like a really fun game, i will have to ask my friends if they know what it is, i think the closest thing i have come to playing that sounds almost similar if im not mistaken, if corn toss, which is a lot of fun, and you cant go wrong if you can hold a drink like you said LOL!

Carberry- Same here, foods i ate during chemo now trigger unpleasant memories and smells, my daughter ate mcdonalds while she was having chemo now she cant even stand going anywhere near a mcdonalds anymore.

    Debbie,

My husband pointed out that the real spelling is bocce... and, yes, however it's spelled, it's fun!

    Michelle,

hope you had a good time in and around the lake yesterday and aren't too pooped today! It was just incredibly hot here yesterday... I pretty much just stayed inside until evening and even then, it was still pretty hot and muggy!

I was googling around yesterday trying to come up with something that would taste good in this heat and found this blog http://framed-mylifeonepictureatatime.blogspot.com/ . She has lots of great sounding recipes that she has collected from various souces and she also has a very engaging writing style.... Thought you all might be interested! There was even a recipe for chocolate merlot truffles with tarregon, if you're feeling adventurerous!

Not sure what we are having tonight but, I do know we will be having salad.... The lettuce in my garden is getting ready to bolt from the heat and I noticed my first 2 zucchinis are ready.... Picked my first ripe cherry tomatoes yesterday, too!!! You can tell i'm a vegetable garden newbie because this all so exciting to me!!Lol
