I feel like such an idiot. I went to the supermarket and asked the kid that worked there where EVOO was. He didn't know what that was so I thought I had to go to a place like Whole Foods for it; they didn't know what it was either. I just typed it in on google and it came up with Extra Virgin Olive Oil. What an idiot I am. I should have known by the caps that it was an acronymn.
Thanks for the recipes. Going to try the beets today. I'm also going to try making cream of squash soup with a recipe I found on the internet. Will let you know how that is.

The weather here today is perfect. Low 80's no humidity and sunny. Tonight I am going to make chicken Madeira with some pasta and sauce on the side. I haven't made it in months and with the heat we've had I haven't been cooking inside all that much either. I am really looking forward to it.
Debbie- I steamed the asparagus with a little butter and garlic so it will still a little crisp. Where fish is hit or miss with me, I don't want my veggie to take on the taste of the seafood. Your zucchini potato recipe sounds great too!

Kay to make you feel better, the other day my husband got a text from our 18 year old nephew. (My husband is not a texter.) He says to me, why would he sign it with a D? I looked at the text and said, "no it is a smiley face." "No it's no,t it's a D." I turned the phone sideways so he could look at it right side up, . To quote "thats just dumb, no one does that!"

LOL@kay- thats funny a friend of mine said the same thing, when i wrote out a recipe for her she said she asked the store person what eve-voo was LOL!

For lunch i had a spinach salad with some of my beets, artichoke hearts, feta cheese, avacado, and red onions, with balsamic viniagrette- it was tastry and felt healthy

Hi everyone - just woke up from a nice little afternoon siesta, compliments of the British Open announces. Those guys can lull anyone to sleep...lol
So I didn't end up eating the lobster last night, it smelled a bit fishy and I am really sensitive to offensive odors these days. Geez, it's more like morning sickness every day! I ended up eating a small square of the leftover pizza from Sunday. Then later I had a mini ice cream sandwich. I really wasn't all that hungry, and the ice cream was soothing to my heartburn flareup.
You ladies need to watch Food Network, especially Rachel Ray. Your EVOO stories are too funny! And that little :P is like a smiley face with the tongue sticking out. Intended to be a funny emoticon. There are a couple of websites that have translations for these symbols.
I managed to get 3 loads of laundry washed and folded today. And I took a package of chicken out of the freezer. And did my nails. Now, not sure what's happening to that chicken and other than maybe getting it in a plastic bag with some Italian dressing, I'm leaving it up to DH. My gittyup and go got up and went about 3:00! Other than a little tired and occasional heartburn, I'm feeling pretty good. Actually, surprisingly good.

Michelle- Sorry your stomach has been upset, but glad that you are feeling pretty good considering everything you are going through. Ice cream always sounded good to me when i was going through my treatments, must be because its cold and just plain good LOL! Hope your blood counts stay normal like last time for you so you wont need the shot this week!

I made chicken tonight, coated with mayo that was mixed with parmesan cheese. garlic powder and paprika and baked at 425 for 20 minutes it was good, its simple and my DH loves it. made brussell sprouts to go with it.

Woke up this morning feeling fine! I think that's a line from a Herman's Hermits song from the mid-60's. Some of you may remember them! I have to give credit to my chemo team for coming up with the pre-med cocktail that is keeping most of the nausea at bay. I had just a bit on treatment night, none yesterday, just a little fatigue that made me take an afternoon nap and still let me fall asleep around 10:30. All in all, I'm still doing WAY better than I expected, especially at treatment #3. I was worried it would kick my butt. And it still might do so with the fatigue. That's OK, I know what to do for that!!! So happy not to have to go back yesterday for Neulasta, too!
Last night DH grilled chicken with bbq sauce from one of our favorite KC bbq places. And he made a spinach salad with goat cheese, cured olives, cukes, tomatoes and Italian dressing. He's really "the man" these days!!!
Debbie - your chicken recipe sounds good and simple! We'll need to resurrect these oven dishes when fall rolls around. And glad to help with the "cool grandma" image!

Ladies.................anyone who likes Zuccihni I have a fantastic recipe...............In italian it is called cucuzza.................If anyone is interested let me know.............its with garlic, basil, onions, tomatoes,....................all in 1 pot............Its great especially now that zucchini is so plentiful, and cheap to buy ............you can put it over angel hair, or linguine, and it is a meal...................yum.

Thanks Laurie. I still have a few red spots from the shingles but they are going away. I actually had my exchange surgery 3 weeks ago. My new boobie prizes are looking good. Just waiting to get off restrictions. I feel fine. Off to job fair in a few hours. Wish me luck
Found a great vietnamese peanut sauce yesterday. Really easy too. Served it last night.

Vietnamese Hoisen Peanut Sauce
--------------------------------------------------Ingredients
• 1 cup (8 oz) hoisin sauce (if sauce is thick, add about 1/4 cup warm water to reach desired consistency)
• 1/4 cup smooth peanut butter
• 1 Tbs rice vinegar
• Garlic powder to taste (or fresh sauted in peanut oil)
• 1 minced Thai chili, or more for desired spicinessDirections
1. Stir in ingredients in non stick sauce pan.
2. Reduce heat when starts to thicken. Keep stirring.
3. Done when all is mixed up.0 -

I'd like the zucchini recipe Ducky! I have a zucchini I have to cook from the CSA too. The cream of squash soup came out pretty well. DH liked it. And that was the first soup I ever cooked that didn't come from a can. I only thought it was okay. I think I put a little too much nutmeg (I was only supposed to put a dash). I think I would have liked it more without such a strong nutmeg taste. And the beets came out well! Thanks for telling me how to make them.
I also made some more gazpacho (sp?) from the tomatoes, peppers and cucumbers we got from the CSA and that came out well too.
Glad I gave everyone a chuckle with the EVOO story. I gave myself a chuckle with it too.
Have a great weekend everyone. I'm heading on vacation Sunday. Can't wait! Even got a reprise from the last chemo to put off until I get back, so the vacation is timed perfectly not to have any SE's.

Kay...........here goes........depending on how many zucchini you use...........judge this.
3 zucchini (adjust recipe for how many you doing)
1-2 cans of whole tomato's
1-2 fresh (summer tomatoes)
4 cloves garlic (minced)
Basil leaves (fresh if you have it)
small onion
Saute garlic and onion till soft (don't burn)
add fresh tomatoes......and canned tomatoes (crush canned tomatoes with your hands)
slice zucchini in thin slices (like you would slice a cucumber)
add to mixture in the pan.............cover, and let simmer with the lid on..............when its mostly cooked.......take off the lid, and let it simmer till your happy with its texture......
DON'T FORGET SALT AND PEPPER TO TASTE..........ENJOY

Lago - the peanut sauce sounds yummy. I might try that later this year, after chemo. I love Thai food in general but I'm afraid that it would hurt to eat it right now.
Kay - have a fabulous vacation! DH and I are talking about going away for a few days after I finish chemo and before the radiation marathon. It will be October and there will be cheap airfares, especially to Florida. He does like to drive, though. So we could just drive south on 95 until we find the weather that suits us!

oops forgot to put the ingredients with this recipe
its a zuccini pizza- the original recipes calls for the zuccini to be sauted in butter and evoo- after cutting in rounds, but i lightly bread this and then sauted them in the evoo and butter, then you top with pizza sauce, mozzarella cheese if you want to you can add pepperoni or any other toppings you want- Since we are all talking about zuccini's thought you might like this.

Debbie - no, I can eat highly seasoned food, just not stuff with "heat" like the crushed red peppers. Actually, to some extent, the more seasoned the better in order to overcome the funky metallic taste. DH has made those grilled pizzas a couple of times and I can eat it with no problems.
Speaking of DH, he went off to play golf this afternoon...yeahhh!!! It is his one love, and he has done so much in the last few months that I was thrilled when he asked me if I'd mind. I told him I'd mind if he didn't go. Apparently the play is very slow; he called me quite a while ago and said he didn't think they'd get all 18 holes in. And the later it gets, the less likely we'll be eating something we cook, unless I take matters into my own hands I am getting hungry.

I'm laughing at the golf comments! We actually live on a golf course, my husband loves golf but this summer I think he has only been out twice. We've been so busy on the weekends it has fallen by the way side. Poor guy.
Tonight I am grilling everything, or should I say my husband will be. I made chicken shish-cabobs (sp?) with zucchini and squash (from my Dad's garden) and mushrooms. I cut up some red potatoes and wrapped them in foil to cook on the grill and I'll make a simple salad to go with it. It is humid here and I have no desire to turn on the stove! But hey it's healthy and easy!

Laurie - your "kebobs" sound yummy! I think we are grilling pork chops as soon as hubby emerges from his office. I'll make some cole slaw and steam some broccoli to go with it.
Yeah, not a great day here. The sun just came out so I suspect it's pretty steamy out there.

I did buy some zuccini and squash at the store today, hubby dosnt care for either one so i have to make him somthing different usually i open a can of green beans for him. which he is fine with. so i will make those tomorrow
