So...whats for dinner?

Moon, bet you are done with your sugery now---hope you feel much better soon, and your recovery is smooth sailing.Hot Hot Hot and so very humid in Central IL today. Have my post rads check up with my MO at 2:30. Sure she will be pleased, as I look about normal now--just a little red under the boob and the armpit, but otherwise, good to my eyes.
I'm making Lauries Mexican chicken again ---really kinda like how fast and low mess this dish is.

Tonight was a whole chicken cooked in a dutch oven.
I made a rub with equal parts of (all dried) sage, thyme, cumin, rosemary and cilantro, plus a couple of minced cloves of garlic and enough olive oil to make it all into a paste and rubbed most of it onto the chicken.
I cut a couple of potatoes, carrots and an onion into large chunks, added them to the dutch oven with the chicken and put the rest of the rub on the vegetables.
Put the covered dutch oven into a 350F degree oven for an hour. Remove the cover and continue cooking until it's done. I used a rapid read stick in thermometer to decide when it's done.
Moon. I hope you are doing well.
Viv. How's Iggy doing?

Eric, that chicken sounds fabulous!

Now I am hungry for chicken! Just got home from D.C. last night for my vaccine visit, and off to DD's place in the Keys today with her dog after a dental visit this afternoon for my new crown. A six hour drive with an anxious 50-lb. canine - fun! She only has a fridge, microwave and an electric skillet, so I am taking a few make-aheads for us to eat, and some groceries.
viv - hope all is ok and things are improving. I know we are all concerned about Iggy and you and your family.
moon - hope you are doing great!

Moon: hope you are recovering well and continue to do so.
Eric: the right house will come along - if its meant to be it will be.
Well between working full time, tending to the garden, and watching the World Cup - every game - there is little room for life OR cooking. I have been very naughty these days with shop bought lasagnes etc and bagged salads. But I figure its only for one month out of every 4 years I can be naughty.
Hope everyone is doing well - hugs xxxxxxxxxxxx

got a cooking bee in my bonnet the other day - made lentil soup, gazpacho, smoked salmon chowder, smoked chicken wings, and barbecued salmon. My favorite, to be honest was the gazpacho - in fact I think I'm going to go have a bowl of it now.

Moon I hope you are feeling well
It is such a beautiful evening. Everyone seems to be in love or very happy. I found my landlords bringing a blanket and two pillows out to the hammock and getting ready for a nap together. He is 78 and she is 68. They might have had a glass or two of wine, I suspect. My neighbors on the other side are laughing with their toddler.
I am making veggies from the farmer's market
Black bean burgers, fresh corn gazpacho, and risotto primavera with asparagus, green peas, some sugar snap peas from my garden and parmesan cheese for my daughter tomorrow
The "concert" is Saturday to celebrate the summer solstice.
I think that I won't practice today.
I can get by in our pitiful group of players
such a slacker and so much more wanting to enjoy the weather for today at least
Happy Summer everyone.

Just popped in to wish everyone is well.
I am doing fine. Dr wondered how I managed to walk on my old knees..so I asked him so that means I really needed this, huh. He laughed. Just got a pain pill. Doing really fine now.
Much love to all

Moon, glad the surgery went well and that you are being taken care of kindly by Pharma.
Sweet dreams!Today I ventured over to the new Wegman's, which gets a lot of hype for being such a great supermarket. I knew one from my mother's NJ neighborhood, so I was not totally unfamiliar....but as used to happen there, I was overwhelmed with the size of the place, and underwhelmed with the "deals". I did get a lot of produce, however, and their organic produce looked a bit better than what I usually see in my smaller town stores. I decided to try their gazpacho for dinner, and just finished it. Pretty good! I left none for DH since he always gets dinner at his HBS meetings, and he just came in looking starved. Apparently the pre-program meal was pretty bad nutritionally, so he ate little (I am impressed!)and presented himeself here like little Oliver! Well lucky him....I had made a big pan of ratatouille, and bought a loaf of sour dough bread at Wegman's today. So he is happily chomping away on that.
We are heading to the lake in the AM. The weather forecast is beautiful. Today it was gorgeous here. Even the pollen wasn't bad...am hoping it has also passed at the lake since I count on my outdoor walks there.
Hope your drive to the Keys has been tame, Special. Enjoy your visit with DD!

Viv, hope things are improving for Iggy.
Eric, ditto to Nance's comment about your delicious sounding chicken dinner.
When we got home from NJ, I found a lot of bd cards, and a package which was from my sister. She sent me a pewter necklace and earrings set of gingko biloba leaves (my favorite leaf shape). She mentioned that it was a survivor tree (I was totally unaware of that). What a sweet gift idea!

Moon... I hope you are recovering well.
Good morning to all.. I hope you are all doing well.
Iggy finally went home last night. The list of things to do /precautions is long, but he is home.

lacey, the Ginko Biloba tree surely is a survivor. They are actually living fossils, their DNA being unchanged for 250 million years, the time the first genus was traced back to. I learned that on a horticultural walk recently.
Viv, so glad that Iggy is well.
PS. I just sprayed my entire left shoulder, arm and hand with Dove hair spray thinking is was sunscreen.

Glad Iggy is home, now.
Moon - so good the surgery went well. Take good care of yourself and rest!!

Viv....that's great news!!!

As my chemo has damaged my taste buds about Ihe only thing I can stomach is tinned macaroni cheese or tinned spag bol. Normally I wouldn;t even look at it.
I yearn for sausages and chips.
Does anyone know if my taste will ever come back to normal?
0 -
I don't know, Boo. I was on a medication that made everything taste like lemon-metal. It went away after I stopped. I used plastic spoons and just drank ensure for the calories. If you are able to say what kind of chemo you were on maybe one of the ladies will chime in. I just wanted to say Hi and welcome.
I have never heard of tinned mac and cheese or spat, is that like spaghettios?
0 -
Welcome BoobyDoo - fellow Brit here - although now living in Canada. Originally from London. I know what tinned mac and spag bol is. Bedo I believe its the same as spaghettios. My taste buds went on a long walkabout when I was on chemo.... mine came back. The only thing I could taste was red apples - they were the only things that still tasted as they should.

Moon - how was your day? How many trips down the hall did they require? Are the meds working? I know knee surgery is not a walk in the park.
Boo - welcome. My taste is gradually coming back - 6 months PFC (post final chemo). For most of a year NOTHING tasted right. Some things will never be the same, but maybe that's good & I won't be a snacker any more.
Bedo - so glad you're hanging out here again. You understand my weird meals. I'm about to have popcorn for dinner at 10pm. Breakfast was two home grown tomatoes and some cottage cheese. Lunch was raw carrots, cauliflower & radishes dipped in Ranch dressing w/black olives on the side. Oh - and a biscuit with blackberry jelly.
Tazzy - the Okanagan Valley is just beautiful. My first husband's grandmother lived there on the Washington side.

Boobydoo, most people tastes come back. Give it time. Sorry you are feeling yucky.
Minus, I walked the hall 2x. They had me practice the stairs, and sitting and standing. Wore me out. Pain is being handled. Pain has also been my companion for many years So it now a different kind of pain. My ortho asked how I managed to walk at all on my old knees. I told him it wasn't easy! LOL
Much love

Moon, glad to see you back.
I am attempting chicken pot pies for the first time. Dough is done, working on filling . I am using Pioneer woman's recipe with a few variations. Kids tried filling with some bread, they were happy. All is good.

viv - glad to hear Iggy is on the mend. Pot pies, yum! I love them and miss eating them and need to develop a gluten free recipe for the crust, and a dairy free one for the sauce.
0 -
Viv pot pies yum I will make them with butternut squash, mushrooms and Swiss chard. Someday
Minus. Your meals sound lovely. I have recently become addicted to refrigerator pickles and red onion with vinegar and hot water and a bit of honey poured on top. It has to sit for a day or so in a closed container.
The weather here is still beautiful and the sugar snap peas are 4 feet high with peas coming and many many white flowers which will turn into peas. A fellow gardener gave me new yummy lettuce. I love the summer!
Oh, played at the Summer Solstice Festival today. We stink! But they clapped! And people smiled and said "very nice" when I walked off the stage. People are so kind...

I have a date with an officer and a gentleman next week. I am not worthy.
Debbie, kisses and hope you are doing well.

Viv, yay for Iggy....and your adorable kids who are so helpful and creative in the kitchen!
Bedo....good things on all fronts!
Just returned from getting some flowers to plant on our deck so when DS2 and co. stay here next weekend (with new serious GF...aka "Chicago girl") they will have some color to enjoy. It is pretty freezing here! But good weather for my long walk today.
On the way back from the nursery, we stopped at a Common Man diner style restaurant. It was loaded with the participants in Biker Week. Most of the ones we saw were really overweight, smoking as soon as they left the diner, and not wearing helmets. I found that sort of personal russian roulette rather interesting. Anyway, once we stopped staring at the risk-takers, food-wise we shared a way too dressed caesar salad, then DH had a fish taco with sweet potato fries (he worked really hard around the property all day!:), and I had a turkey club (aka expanded BLT
, which I couldn't finish.... and went for broke with a take-out order of two desserts....cherry pie and carrot cake. We have started to watch the first series of Orange is the New Black, so will probably have a dessert break in between one of tonight's episodes.
Tomorrow is planting day....as well as exercising these extra calories off. I've been feeling pretty cavalier since losing the most recent three lbs. LOL I obviously don't know how hard taking off the last four will be!!
Happy summer solstice all.....

Bedo - WRONG. The officer & gentleman will have to work VERY hard to be worthy of you. You are such a vibrant, interesting soul. Still - have fun!!
I love the summer too. My son was here for 3 days last week helping me get quotes on a new roof & gutters. He always wants to go eat cheap "tex mex" at the strip malls when he comes to town - comfort food w/lard from his childhood. We compromised w/one cheapie and one more refined. The latter had the best crab enchiladas I'd ever tasted. Velvety soft sauce. Of course it was $17 for two enchiladas. For those of you who don't live in Texas (& maybe Arizona?), three meat enchiladas w/rice & beans usually costs under $7.00 at the local dives. He said his beef enchiladas were no better than the dive for twice the price.
Oh well, it was an occasion to remember the death of my baby brother 20 years ago - two days before his 40th birthday, so we toasted his memory with a margarita or two. My brother never married & my son has many of his favorite things. Good memories.

...spent 12 hours in 108F degree (43C) temperatures trying to remove a drain plug so I can change the oil in DD's car. No luck, so I took it to a car repair place. No luck there, so I drained the oil by pumping it out the dip stick tube.
As an engineer I know why this is happening (electrolytic corrosion between steel and aluminum), but that doesn't help me with fixing it. I will have to remove the oil pan from the engine (means lifting the engine part way out of the car) to fix it.
Mandatory fun.
0 -
viv so glad Iggy's home. BEDO, Minus is right, you are worth more than you think!
Eric, I hope you can fix that car without giving yourself a stroke. My DH finally gave up on his Concorde with 318,000 miles on it. Now if he'll just get it out of the driveway! LOL.
May I say hospital food is still not very good. O yuck. Breakfast wasn't bad but the rest was pretty ugly. Made the mistake of ordering spaghetti. Um. No.perhaps if it wasn't whole wheat pasta.... Meatloaf wasn't bad. That was ok..The pizza was the best but I ate half the crust with all the veggies. It was a little 6 inch deep dish..so half was enough. The yogurt parfait was my big splurge cause they kept me to 5 carbs. That was 3 because of the fruit. But it had blueberries and strawberry pieces. Yum. So i had to watch it. But they gave me the stupid Sugar Free jam and syrup. I'd rather not eat the bread than that. LOL don't feel much like eating here at home cause I finally have had to use the bathroom and much more often then others on pain pills! LOL just got to make it through the first week. Then we'll see. Supper tonight was ham sandwiches. I don't know if they do it elsewhere, but here in WI, they sell baked ham at most grocery stores. You buy a pound and you get 6 free rolls. My DH bought that and added a slice of swiss cheese. That went down pretty easy..
Much love.

Moon, the ham sandwich definitely sounds the best of your week! Hope you can get some good rest at home, and start that healing process to gain mobility!
Minus, your dinners and time spent with your son sounded lovely and meaningful. Loved the sound of that crab enchilada! Also, if I lived by myself, I would definitely follow the meal plan you describe!
I love to eat oddly, but can only do it when my more traditional meal eating DH is not joining me.
Eric...I second the BE CAREFUL message! But I know how satisfied you must feel when you get something like that accomplished. Man vs. Car!
Tonight we had grilled teriyaki marinated chicken thighs and drumsticks. They marinated for several hours and were really good! Had spinach/ mushroom salad and also ratatouille (just love whipping that out of the fridge when we need a "side").
Tomorrow we clean the place to be hotel ready for DS2 and his friends and head down the highway in time to attend our stretching class which we have missed for two weeks. Stiff bodies here! But I have gotten my long brisk walks in and really feel energetic and strong these days...now that the virus has passed.

I don't know how much of it is "man vs. car" compared to "I saved the $90 per hour labor charge". Most things I can do as quickly as the labor estimator books claim, so it's a good deal for me since I already have the tools. That stupid drain plug is not in the book and none of the other repair places will touch it except as a $950, plus parts, oil pan replacement.
Back in the day, I couldn't afford to pay those kind of costs. Now that I can afford it, I just don't want to pay those kind of costs.
With the heat, I just eat salty things, bananna chips, move slowly and drink lots of water.
Dinner last night was grilled burgers with a salad and tonight was a fend for one self night.
Moon I happy to hear, for two reasons, that the knee replacement is going well. The first is, of course, that it is about your knee. The second is that my mother in law will be have a new knee on July 3.
Minus, here in Arizona Mexican food is equally cheap. The "gourmet" places are more expensive, but still very reasonable.
I see the same unhealthy behavior thing at one of the local hilltops. It's a very challenging walk to the top, even for those that hike it all the time...and I see folks at the top, still huffing and puffing, light up a cigarette and consume the whole thing in under 30 seconds.
Bedo, I agree with Lacey, you are worthy. You have done many amazing things. Besides, thinking otherwise will make you less attractive....trust me on that. Please.
Viv, I haven't made pot pies in a very long time. You've given me a good idea. Thank you.... And again, I'm so very glad Iggy is home.
Off to bed for me. I have a 5am wake up tomorrow.
Eric
