    Michelle- What a mess with your car, Just what you need right now! Funny how our DH get better right before they are planning to golf LOL!  Sorry that #4 is kicking your butt! Hope you get much needed rest.

    Laurie- Good to see you back here posting! 

    Even though i live on the ocean I buy the frozen cod at safeway and I really like it, dont like there frozen salmon or mahi-mahi but the cod is delicious, i alsways blacken it which gives it a really good taste too.

    Tomorrow is going to be a busy day for me since my dad and his wife, and her 2 grown kids with there familys, are coming thiursday and friday and will be here till monday!!  ( Arghh)

    I'm making, lasagana cupcakes, spinach salad, garlic bread, a fruit salad that has a lot of fruit then you toss with peach pie filling. macaroni salad, Adult cheese sandwiches- zuccini oatmeal bread- pouchettes, a chocolate birthday cake,  roasted broccioli-  They will probably all want to go to the casino every night and eat and I will be stuck with all this food! LOL!

    OMG, Debbie!  That's a lot of cooking!!!  You'd better corral these folks at the dinner table for a few meals because you will have worked your tail off!  What are pouchettes?

    Wow Debbie!  That is a lot of cooking!  I agree with Joyce, I would love to help you eat that food.

    Today is grocery shopping day with the boys.  My husband has a meeting and won't be home until late so I need to come up with an idea for a nice easy dinner for me and the boys for tonight....

     I'm sitting here catching up on Hell's Kitchen episodes.  LOL, lots of drama in the kitchen!  Can't believe a supposed chef screwed up aboutt 25 scallops before she got them right.  How hard is it to sear a scallop?

    Wow Debbie that is a lot of cooking,I'm thinking once they see all that great food they wont be able to resist.

    Michellle, I have a Murano also and love it!  But the other day at the grocery store when I went to unlock it, the car horn starting going off and I could not get it to stop even after starting the car!  So, I just started driving down the road with horn still blowing, and finally after about 5min it went off, but then when I stopped at our family business and got out, it started going off agiain, my DH came out and was like WTH? well...it finally went off on its own and didnt happen again. the more fancy gadgets they give us the more that can go wrong!

    Yesterday was rainy all day and I totally just blew the day doing nothing, not like me, and couldnt even put together a dinner,  made a really lame toss salad, thatnk goodness my DH will eat just aboout anything and not complain.  tonight i better get my act together and come up with something!

    Wow, that is a coincidence on the car troubles.  I only want my car to take me where I want to go without any drama.  I don't need an expensive, fancy car, just one to get me from point a to point b.  I sympathise with the troubles. 

    Debbie, that does sound delicious.  I would definitely help you out with the leftovers.

    Had leftover hot roast beef sandwiches last night with garlic red potatoes, gazpacho, and broccoli.  I love gazpacho, but the recipe I have makes so much that it takes forever for just DH and me to eat it.  No one else likes it.  I even offered some to both my sisters, but no one would take me up on it.  Oh, well, DH and I love it.

    kay - I keep looking for gazpacho recipies. I had a really great one that I lost in a computer crash.  Still looking for one as good.  Would love to try yours.

    Kay I agree- we need some gazpacho recipes!  I haven't made it in a couple of summers.  I used to use tomato juice as the base if I remember right.  But one time, a woman I know made me gazpacho and she actually pureed fresh tomatoes and strained the seeds out for the base- it was heaven.

    With my husband gone for the evening- we skipped fish tastic Wednesday- or should I say post poned till tomorrow.  I bought a pizza dough and me and the boys made a pizza.  They were not receptive to topping ideas tonight- eggplant?  fresh tomato?  mushrooms?  peppers?  Nope- just cheese.  They had fun making it and are now plopped down in front of Blues Clues eating it while they  watch the cartoon- I know bad mom right?  They are super psyched and it gives me a break for a few minutes.

    Carberry picturing you driving down the road honking gave me a good laugh- that would be me!

    LOL!  OK ladies you are all invited!! Michelle, yes thats the recipe i use from the food tv channel for the pouchetts I use nuetella on half and raspberry jam on the other half, they are to die for and pretty easy to make too!  I love hells kitchen, hey did you ever watch bitchin kitchen?

    IM pretty much done with everything other than a few things i wait till last minute, Havnt cooked the lasagna cupcakes yet but they look good and was easy to assemble- Will let you all know how they turned out!  Oh and I forgot to mention cheesy potatoes like the ones cracker barrel makes only mine is better HA!

    Joyce- LOL!   It does make you hungry ready all these recipes!

    Kay- Your dinner sounds good cant belive no one else in your family would eat that!

    Chabba- & Laurie, With all the good fresh tomatoes and herbs this time of year gazbacho sounds good I have some pretty good recipes I will post too.

    Carberry- LOL! How imbarressing, especially going through town with your horn honking, too funny!

     GAZPACHO SOUP

    Ingredients

    • 6 ripe tomatoes, peeled and chopped
    • 1 purple onion, finely chopped
    • 1 cucumber, peeled, seeded, chopped
    • 1 sweet red bell pepper (or green) seeded and chopped
    • 2 stalks celery, chopped
    • 1-2 Tbsp chopped fresh parsley
    • 2 Tbsp chopped fresh chives
    • 1 clove garlic, minced
    • 1/4 cup red wine vinegar
    • 1/4 cup olive oil
    • 2 Tbsp freshly squeezed lemon juice
    • 2 teaspoons sugar
    • Salt and fresh ground pepper to taste
    • 6 or more drops of Tabasco sauce to taste
    • 1 teaspoon Worcestershire sauce (omit for vegetarian option)
    • 4 cups tomato juice

    Method

    Combine all ingredients. Blend slightly, to desired consistency. Place in non-metal, non-reactive storage container, cover tightly and refrigerate overnight, allowing flavors to blend.

    I garnish with some cream fraiche or sour cream, finely diced cucumbers and red onion and top with home made croutons and then drizzle a little evoo over the top.

    I know.  My kids are so picky.  I did not do nearly as good a job as Laurie or Sherrill when they were little getting them to expand their taste buds.  My gazpacho recipe is very similar except the only thing I seed are the green peppers:

    6 tomatoes

    2 green peppers (need to slice these, and throw away seeds and stem)

    2 cucumbers

    1/2 large Bermuda onion

    Put all ingredients above in the food processor.  I do it on the lowest setting because we like it chunky.   Combine in large bowl.  Add 1/2 cup EVOO, 1 cup tomato juice (you can add more if there's not enough liquid), 1 tablespoon kosher salt and 3/4 teaspoon chili powder.  Stir well.

    Nice light summer dinner tonight.  It was hot today.  Tomato/mozzarella salad and some fruit for desert.

    Now I had to buy a giant thing of basil leaves for the salad.  I have to use the rest up.  My DH suggested pesto sauce.  We only had it once before and I wasn't crazy about it, but someone suggested using something in place of the pine nuts.  Can you refresh my memory?  Or any other suggestions for the basil?

    Starving ! Starving!  Gonna have to try that Gazpacho soup soon. You ladies are awesome.  Anyway I am about to whip up my dinner  now.  I just made an old fashioned ice box cake with chocolate and banana pudding for my dessert ( not healthy I am sure, but sure comforting) . Having stuffed cod, seasoned rice and mixed veggies for my main meal. I  am throwing threw together a mussels marina for my appetizer. I have been craving mussels for some reason lately and had them last week also. Also prepared myself some peaches soaking in wine and cinnamon to top off with some heavy cream later when the insomnia kicks in.

    @ Kay    got this off the Internet last month because my kids don't like the pine nuts either.

     Basil Pesto Recipe without Nuts
    Ingredients

    • 1 bunch of basil
    • 3 garlic cloves
    • 1 cup extra virgin olive oil
    • 3 oz grated Parmesan cheese
    • Freshly ground pepper (black pepper)
    • Salt to taste
    • 4 cup ice cubes

    Discard the basil stems and pluck the leaves aside.

     Take a large bowl and place the ice cubes in it.
    Now add 2 quarts of cold water into it and place a strainer just atop to get ice water. Take a large saucepan and add 3 quarts of water to it and bring it to boil. Add garlic to the boiling water and cook for mere 30 seconds.
     Take out the garlic with slotted spoon and add basil leaves to the water. Cook the basil leaves for 15 seconds and place then instantly in the ice water. Cool off the basil leaves for over a minute and drain well.
    Place both cooked garlic and basil leaves in the food processor and grind well. Add olive oil and grind again until finely blended. Add salt and black pepper and mix it well.
     Now drizzle generous amount of Parmigiano-Reggiano (Parmesan cheese) and savor your basil pesto without nuts!

    You can take a bunch of basil and stuff it in the cavity of a chicken and roast it.  I think you can use walnuts instead of pine nuts in pesto.  You could make a basil-infused olive oil (one cup of olive oil, two cups of basil leaves) or basil jelly.

    Hi Daydreamer!  The dessert sounds really yummy!  DH and I just watched Paula Deen and her son make a layered fresh peach dessert with crushed ginger cookie crumbs, cinnamon and whipped topping.

    Welcome!!! And wow... your dinner sounds really great!  Especially the peaches!! I just picked some up today at the famer's market.  Had one for lunch and, holy cow, was it good!!! So juicy!!!  I always thought I didn't like mussels until this past year... Turns out I love them... what I didn't like was all of the really badly over-cooked mussels I had eaten in the past!

    You all have me craving some cod!! I think tomorrow!

    daydreamer- How did you do your cod?  I have some in the fridge for tomorrow night.

    Basil- I love to grill some chicken in whatever- Italian salad dressing herbs and oil etc and then I dice tomato, garlic EVOO and a bunch of diced tomatoes and basil for a topping.  Yum!  I am actually going to do it one night this week for dinner.

    Cilantro?  I planted herbs and the only one not doing ANYTHING is the cilantro?  Am I missing some tip?  The rest look great and are so big I can pick all I want, the cilantro looks tired, not leafy and is just plain yuck?

    Gazpacho- I never blended the veggies before- I always left them chunky.  I 'll have to try it when the garden tomatoes some in, in a couple of weeks.

    I have always had a healthy appetite, I could sit with the biggest of men and match them spoon for spoon. Not a cheap date either. Love my seven course meals sitting at a table with family, friends for hours, shooting the breeze as we go thru each course and then some.  I thank the Italian Grandparents for that. Never gained a pound. Until my first DX  then food became an issue, didn't or couldn't eat much at all and most of my favorites just seemed so unappetizing for some reason, still gained over 40 pounds. Must have been the hormonals.This time around my appetite is back with a vengeance most days. Must be the steroids. Going to have to watch the weight gain. I love peaches. Will do a Paula Deen search and try and find that recipe.

    Off to my meal.

    I have heard of people using walnuts in place of the pine-nuts, as Michelle mentioned!  Also you can freeze basil in a couple different ways for use in soups, stews and sauce later!

    Peaches and ginger cookies in a dessert sounds like a match made in heaven!  How are you feeling today?  I hope that the worst is behind you!

    Went blueberry picking with my Mom this week... Going to freeze some but, going to have to think up what I want to do with a whole lot of berries!! The picking was easy and I think we got carried away!

    Cilantro absolutely cannot take any kind of heat!!! It will refuse to do anything (and bolt if it does decide to grow) If temps are over 70 degrees... I learned this the hard way last year!  Fortunately mine bolted  and then went to seed... We just gathered some of the seed and replanted in late August/ early September... The cilantro was ready just as the tomatoes and peppers were ready for salsa!

    Edited to add:  The seeds from the cilantro plant are coriander and can be use din cooking too!  Saw this and I may try planting my cilantro this way in the next couple of weeks!

    For all of you who are asking how I am doing...I am doing nothing...LOL!  I seriously sat on my butt all day long, paid some bills and took care of some administrivia for my mom, and got myself showered, dressed, ate, and made the occasional bathroom trip!!!  Seriously, I couldn't have done much less if I tried.    So I have listened to all of my friends Tongue out and rested.

    I hope the weather clears up a bit tomorrow, I'd like to get in the lake and get things moving a little.  I feel just fine, so long as i don't try to do too much.  I am having labs done early this cycle, actually on Friday.  I'll be curious to see where my RBC is sitting.

    Thanks everyone for keeping tabs on me!  Sometimes I forget that I am really assaulting my body right now!

    i love gazpacho... and make it almost every 3rd day this time of year.

    So about Walmart.. when I was there I purchased a whole chicken (Tyson)... I won't even tell you about it .. it was so bad.  I actually took back the raw chicken so they could have Tyson look at it.

    Glad to hear that you are taking things a little easy!  Lord knows you are to the stage in treatment where resting so that you can make progress with your treatment is necessary!  Don't consider it a luxury but, an absolute requirement so that you can be in tip-top shape to do battle with this crazy beast!!
