    Michelle- LOL! Yeah my Dh wouldnt like it either if i handed it to him with the husks on LOL!

    You cook about 2 to 3 minutes, i dont wet it or anything, just lay it on the plate in there and once you get it out of the microwave peel off the husks everything comes off pretty easy-

    We had our AMEX credit card number stolen once, nothing like what you're describing, though.  You know, every time you go out to dinner and pay with a card, you lose control and are at the mercy of the server.  That's just one little example. 

    More than anything, it is a pain in the a$$.  Our bank, being such diligent folk...lol...has shut off our card temporarily on more than one occasion when we have started a long road trip - they see gas purchases in unusual states, not our "usual" buying pattern.  The good news is that they always text us and send us an email when it happens, asking us to call them.  But at that moment when you are trying to make a purchase, it's unnerving.

    Oh Debbie! What a flippin' mess!!!!



    I had someone hack my e-mail account a few months back and whoever was doing was able to send e-mails from my account and make it look like they were coming from me.... Sent e-mails to everyone in my contacts list including people I used to work with asking if they wanted to improve their sex life and offering to sell them viagra!!! Totally embarrassing! I tried changing my password but, within a day they had my new passord! I finally closed that account and had to get a new one! What a royal pain!



    I would think that airline tickets would be purchased for a particular date from a particular airport in your name.... Couldn't the credit company have the police there on that date and see who checks in for the flight and arrest them?



    If they do find the SOBs who did this, I will gladly assist you in hanging them by their ding dongs!!

    Our bank did the exact same thing when we were on vacation a few weeks ago.... I went to pay for groceries the first day there and my card was declined... Same reason, they saw unusual charges coming through as we made our way to the beach and the grocery store bill pushed us over some threshold... They locked all of our accounts down until we called....



    I guess we're supposed to notify them if we are leaving town or something? Who would have thought?!



    Thank goodness my sister was with me and could pay!

    Seaside- Although its not funny, i had to laugh at the thought of co workers getting emails to improve  there sex life, how imbarrasing, bet they got a kick out of it!  I agree are we suppose to let the banks know we are leaving town? Guess it wouldnt hurt but feels like a invasion of our lives, and then how do we know when we call the banks they wont send someone out to rob our home while we are gone LOL!

    A few years ago my DH was in the hospital to get 80% of his colon removed, he was in serious condition and when i started getting phone calls from people asking if chuck was in a foreign country and in the hospital, i found out emails were going out of his email acc saying he was in the hospital in another country? And needed 2000. Dollars to get back home, this went out to his coworkers as well as family, That caused a big mess as well. 

    Michelle- Nice your bank lets you know by emails or phone calls, i will have to let my Dh know to set somthing up like that, we take a lot of trips and dont want to have to worry about that again.

    Its 8 pm here and a beautiful night, im going to take a walk and enjoy this beautiful evening!

    I can look back now and smile but, I kept saying to myself WHY would someone do this? There was really no financial gain... Truthfully it was just being mean to someone because you can!



    The thing that does make me giggle a bit when I think back on it was.... My elderly father's e-mail addy was in my contacts list so he got the viagara e-mail, seemingly from me... He called to see if it was really me that sent the e-mail! Really Dad??? Think about it and let me help you.... Hell NO!!

    Yes, your right they do it for kicks most of the time, but i think with what happended with our account they bought the tickets to cash them back in for cash, if you buy full insurance on a ticket you get your money back, i hope they try and then get arrested when they do.

    Back from Italian festival and have a lot of reading to do!  Boated to opposite end of lake and met up with friends, stayed at their marina, and funny thing is we never took the walk over to the festival.  First night there, they all cooked for us on the grill....there was sooo much food....had grilled swordfish, bass, and fish-kabobs, steak, and smoked ribs, not to mention all the salads and extras.   These people know how to cook! We were spoiled for the whole weekend.  Rained like crazy the next morning so we sat it out in a diner for brunch, then hit the water when the sun came out, then 3hr boat ride home.

    I love making eggplant parm. its one of my families favorites.  i have been trying different options to frying it to try and cut down  the calories.  I like to drizzle it with some olive oil and grill it till softened then layer with sauce and moz cheese and sometimes some portabella muchrooms.  Its definitely not a crispy eggplant that I love but is very good with the smokey flavor of the grill

    About the bacon....I get some from the amish store that is amish made and the best bacon ever.  Once you have had a really great bacon, there is no going backLaughing

    about husking fresh corn (and I like it cooked in the husks)...

    simply split the top of the corn and vigorously pull down exposing 1/3 of the corn .. break off the bottom and pull up and the rest of the husk will easily come off.  the threads will come off easily with a certain twisting action that is hard to describe.. i leave the pesky clingy threads on and they come off if boiled.

    Seaside - too funny!

    Carberry - the Italian festival sounds so good.  I think there is one in Boston's North End the last weekend in August.  I really want to go and it's the weekend before chemo, so I should be up for it. 

    Grilled swordfish...might make for a good dinner tonight!

    Apple - thanks for the tip.  I'm guessing that husk is pretty hot if you micro the corn still fully dressed!  I need to find some corn today.  DH couldn't care less, but I love it.

    Carberry,  I found this alternative to frying the eggplant on line:

    Slice the eggplant into 1/4 inch thick slices. Lightly salt the slices and put in a colander to release excess moisture for about 1/2 hour. Lay on paper towels to soak up any extra moisture.

    Preheat oven to 450°. Brush eggplant lightly with olive oil on both sides and place on cookie sheets. Bake for 20-25 minutes, turning half way through until eggplant is golden brown.

    Debbie, sorry about the mess!  That is horrible that people will do that.  We've had the credit card put on hold as well and it's embarassing when you're trying to purchase something.  In our case, it's always been just some unusual purchasing for us, never had anyone steal our cards.  Hope you get your new cards quickly.

    Had leftover eggplant parm yesterday with a spinach salad.  It was good.  I LOVE dinners that you get 2 meals out of.  Some leftovers, the family balks at, but anything with tomatoe sauce usually goes over very well.

    i saw this interesting recipe (in Gourmet mag) for french fries from eggplant..

    you cut the eggplant into fry shapes (rectangle sticks)  soak them in cold water so they do not absorb oil, then coat them with rice flour and deep fry.  .,. or sautee in 1/2 inch oil.

    I haven't tried them.

    Interesting.  I got two more eggplants today from the CSA.  I think I'll try that out.  Thanks for the recipe, Apple.

    Had steak, corn on the cob, and gaspacho for dinner tonight.  Think we'll have fish tomorrow.  Might try to make some stewed tomatoes for the fish.  I got a lot of tomatoes from the CSA too.  Anyone know how to make stewed tomatoes?

    Carberry- Sounds like you had a lot of fun on your trip- The food sounded great. I wish we had different ethnic stores here but we dont thats got to be one of the bonus of living in a city like NY!

    Kay-Great tip on the eggplant!

    I'm making cod for dinner with sauted veggies, asperagus, artichokes, some peppadews and when its all cooked i throw in some baby spinach towards the end and sprinkle some parmesan cheese on- YUM!!

    Debbie - I am feeling OK, just a little tired even though I haven't done much of anything.  I managed to get to the grocery store today and that was enough activity...lol.  I'm planning to drive to the beach tomorrow to meet my daughter and grandkids.  The drive won't be a problem, the big challenge will be the walk from the parking lot to the water.  Then I can relax and enjoy!

    Kay - my grandmother used to make canned tomatoes, which is just about the same as stewed tomatoes.  I remember she had a pot of boiling water and dipped the tomatoes in it for a minute or two, then plopped them into ice water.  That made the skin separate from the flesh and they were easier to peel.   Once you've done that part, you can cut them into chunks and season them any way you wish and cook them to your desired consistency.  Or you could check out this recipe:

    So I bought some halibut for dinner tonight, plus some boneless chicken and some Italian sausage.  DH decided he wanted to cook the sausage, so we had that with grilled mushrooms, peppers, onion and zucchini, plus corn on the cob. The corn was just ok. I need to go find a good farmstand near the house. I've checked out two places with "produce stands" and both have disappointed me.  I'm fussy about my corn!  And now I need to freeze either the chicken or the halibut.

    debbie   cod and fresh veggies sounds awesome, I cant  really get DH to eat much fish or veggies unless there is some sauce to smother everything in, kind of negates the health benefits. and  BTW i dont have stores avaailable either, we are upstate in farm country, takes me twenty minutes to nearest store of any kind, have to plan my errands for all in one day to asave on gas.

    Kay    thank you for the eggplant tip, will use that method when the grill is under snow. Ha...dont want to  think about that right now.

    the frozen cod I've been buying from Walmart has been tasting fantastic..

    I know,  Walmart - probably they feed it pesticides.

    Hi everyone!  Well, despite my fatigue, I went to the beach today - met my daughter and grandkids, and her friend and her 3 kids.  OMG, 6 kids!  You know I had a few in my sights from time to time.  And then...oh my...my 2009 Murano decided to have some kind of bizarre computer problem.  Everything is automatic, and I have the push-button starter and all.  Well, when I got back to the car, the windshield wipers were running, barely, and the battery was dead.  So strange!  So I had to call AAA for a jump and the car will need a visit to the dealership.  Boo hiss!

    We are going out to dinner with my son and his girl tonight.  I almost said no because I'm beat, but then I decided that eating out involved me riding in the car and sitting still in a restaurant.  It seems like a better idea than anything involving cooking and then cleaning up at home. 

    AC #4 is definitely kicking my butt from a fatigue perspective!

    OK, guess I'd better go do a little something about makeup.  This is gonna be the 5 minute version!

    Sorry to hear that your day at the beach had to be marred by car trouble!! Hope that your energy levels return soon BUT... also hope that you will enjoy some well deserved downtime to re-gather your strength!! Nothing wrong with taking some time for yourself!



    Here's to dinner out... And I know somewhat how you feel where (ok, not exactly how) but, you just are so tired you don't feel like going but, you are right... ride in the car, have dinner served to you and, if you are just too tired, call it an early night!

    Michelle- that is awful about your car!  I hope it's all covered by warranty etc but still- what a pain in the neck, yuck.  Your day sounds fun and super busy, I am tired for you!  I fon't know how you do it, but I am happy for you that you can.  I hope you enjoyed your dinner out with your son. And enjoy the good sleeping weather we are going to have tonight!

    Tonight my youngest had his meet and greet at the soccer field with his new team which starts in two weeks.  It was pouring rain and was at 6.  6!?  Right in the middle of dinner time etc so for once we got take out.  We NEVER get take out.  But it was yummy, we got a pizza from our favorite place just down the street from where we live and some chicken for the kids too.  It was nice to not have to cook after being out in the rain at such an odd hour of the night.  Having two little ones we never leave the house in the evening unless it is something very specific- silly but true.

    Hay apple I tried the walmart cod too. I was pleasantly surprised it was pretty good.

    we had it .. Walmart cod tonite.. they have two grades  big and small basically.  Tonite we had the small and it was still excellent.   I haven't even been able to find cod recently.. (I live in KS).   I usually avoid walmart if I can.. it's so very corporate and really many of the items are more expensive than those in smaller stores.. Anyway I thought I'd be having ratatouille tonite and was going to buy an eggplant to supplement my endless zuccini.. but unfortunately they had NO vegetables.. they were exchanging coolers I think.

    i was bummed - still spent 80 bucks on school supplies and such.

    As a Mom of a boy who was into sports, I can sympathise!!!



    Those sports practices/games don't really follow any type of protocol as to what is a decent time.... Seems like everything is ALWAYS scheduled at dinner time or, as was the case with me being the Mom of a hockey player, at the crack of dawn early on.... The older he got, the later the prctices/games so dinner hour looked really attractive compared to 5:30 am...lol...



    Sometimes it gets a little crazy but, it all goes by so fast!!!

    My SIL does her grocery shopping at Walmart... Going to hve to give the fish a try!!



    Boy, oh boy... Those school supply lists can just empty your wallet!! Just catches you a bit by surprise!

    Yes, fortunately, the car is under warranty and we have AAA coverage.  And they came within about 20 minutes of my call, not bad at all.  This is the second time that the battery has mysteriously been dead-the first time we bought a new one.  But now I think there is something wrong with the car's brain! 

    I promise that tomorrow I am doing absolutely nothing.  I did rest all weekend because DH wasn't feeling great and we were both lumps.  He's feeling much better and his neck's range of motion is fully normal.  I know because he's taking Friday off to play golf with JoyceK's DH! 

    Dinner tonight was good - I finally got my fluffy baked potato and I was happy.  DH ordered French onion soup and it tasted good, too.  So many things are sort of blah or too spicy right now.  Need to remember the soup is on the "really tastes good" list.  I think it's the salty stuff that's working best right now. 

    Apple - some things at WalMart are good, but their fresh veggies and fruit have never impressed me. We had one just off I-70 at Blue Ridge and another one at I-70 and Adams Dairy Parkway, and I never shopped for groceries much in either of those. Our closest "grocery store" here in Salem is also a WalMart. I went once and that was enough. I do like their facial wipes, and you can't beat their $10 / 3 month prescriptions.  I give them props for starting that trend.
