    Love the pic, Eric! YUM on your duck.

    I've got tri-tip steaks in the crockpot. DH will (naturally) want bbq sauce, so I'll shred the meat.

    For Easter we had a spiral ham, mashed potatoes ( after I ruined a scalloped version), sweet potato casserole, a Mediterranean ( cold) green bean salad and deviled eggs. My brother brought wine, and our friends brought an Hawaiian Wedding Cake. The cream cheese icing was the best.

    Tonight I'm getting a migraine so I rescheduled my labs and Dr. appointment from tomorrow and took medication. Not sure if its from rich foods, salt or the coastal weather changing. Or just all of it. I think tomorrow will be quieter than I was planning it to be. IYKYK...

    I enjoyed reading everyone's various menus.

    Reader, hope the migraine headache has eased and gone. Your well-planned dinner must have been enjoyed.

    I recently sampled a frozen pizza at Costco, roasted vegetables on cauliflower crust. I was curious about the crust. The pizza tasted good so I bought a box with two medium pizzas. I cooked one a few nights ago with a little enhancement. Kalamata olives and extra parm. DH and I both liked it. My dinner last night was the leftover large slice. I cooked turnips for dh, much to his liking, and also prepared a frozen chili meal that was in a gift box.

    We had more snow last night and a wintry mix for me to drive in. Hopefully it will melt soon.

    Last night was chicken enchiladas casserole served Christmas style. We ate it all.

    Tonight was pork dinner leftovers for DH and canned soup and rye toast for me as my acid reflux was vexing me.

    On a positive note I passed my stress test. Kudos to you Wally.

    Wally it has both red and green sauce. DH likes red, I like green so it’s a compromise.

    Congratulations, Wally and Nance. I wondered about Christmas style, too.

    Dinner last night was a large romaine salad with favorite additions and bowls of freshly cooked brown rice and red beans with sausage from the freezer.

    Congratulations on the 19 years.

    I made duck broth and canned it. The jars are now cooling off on the countertop.

    Meanwhile, as soon as the oven gets up to the proper temperature, I will be baking sourdough.

    I too like the Christmas enchiladas, although I prefer green only.

    Dinner tonight was a pork loin and Bob Evans mashed potatoes. The store was out of the individual size potatoes so I have lots of leftovers of both.

    I had a breast ultrasound last week. Fortunately the results showed no evidence of more recurring cancer. The low dose CT I had last month shows that the lung nodule that my pulmonologist has been monitoring since it appeared after cancer treatments is still stable & not growing or changing. Unfortunately it also showed coronary artery issues. Some new damn thing. Now scheduling a Nuclear PET so the cardiologist can see where this new issue has come from.

    Christmas style is a great regional name. I’ve made the dish before but didn’t have a good moniker for it.

    Nance, Great news on the stress test results. I hope your stomach settles so you can have that chocolate bunny (or some other treat.)

    Carole, You seem to have a well stocked freezer.

    Eric, I have never made duck broth but it sounds like a good idea.

    Dinner tonight was leftover beef stew for DH and chicken salad (with dill, Minus) in a wrap for me. I had an interesting breakfast: a bagel sandwich with almond butter, banana slices and smoked bacon. I ordered it because of its name (t-rex from a place called Bagelsaurus) and while it actually tasted good I would get something more traditional the next time.

    The t-rex sounds good to me! Except for the bacon, similar to my whole grain toast breakfasts.

    I wouldn't know how to use duck broth. Same as chicken?

    Dinner was mainly for dh. I'm never hungry after eating lunch out. Wednesday is lunch with the exercise friends. I had thawed a shoulder pork chop. I cut it into strips and made a stir fry with the pork, part of a bag of coleslaw mix, red bell pepper and leftover brown rice, sprinkling with soy sauce, fish sauce and sesame oil. I sauteed yellow onion slices in a separate skillet. The result was quite good. I have discovered that I like a stir fry with rice. Dh was quite happy with his dinner.

    I read a recipe in my email this morning for a skillet chicken dish with orzo and marsala wine. I may make it for dinner, again mainly for dh. I have a lunch date today with two long-time golf friends, one of them dealing with grief from the loss of her dh. They had been married 60 years.

    Lamb chops last night. Tonight, baramundi. DH found it in the bowels of the garage freezer. I love baramundi but cannot find it locally any longer so a nice treat.

    Minus, Yay for the good imaging results but sorry about the new issue that showed up. More testing is no fun.

    Carole, Chicken and Marsala is a good combination. I agree that one real meal a day after breakfast is plenty.

    Wally, How nice to find something in the freezer that is no longer available. Enjoy.

    Thanks for the good wishes everyone. I may not post every day but I do read and think about all of you.

    I was going to have French Toast for dinner with a loaf of Italian Sourdough, but lay down for a nap mid afternoon and just woke up at midnight. These irregular sleep schedules are obnoxious. Luckily I live alone & am retired so it isn't critical. Just weird.

    Carole - I did stir fry with rice several times a week last year but guess I burned myself out. Lots of small sized packages of leftover chicken & pork & beef in the freezer for stir fry. Guess I'd better get those dinners going again.

    I had a delicious soup of the day and a small Caesar salad for lunch yesterday at a nearby restaurant with two friends. The soup was crawfish and corn bisque, and it was so good that I ordered a bowl portion to take home for dh. I also heated leftover oysters from my Wednesday lunch for him, using the air fryer. I may have already mentioned that the air fryer is great for quick reheating.

    So.. We each had a substantial lunch. I didn't cook dinner. Instead, we had leftover potato salad and crackers and cheese with pepper jelly.

    I may cook the chicken and orzo dish tonight or have something else. It's "empty the freezer" time since we plan to head to MN on May 21.

    All of your meals sound better than mine. The crawfish corn bisque soup sounds delightful. My uninspired phase is turning into a . permanent condition.

    Been busy with just mundane things that I my hubby had to remind me that I just passed 13 years since my diagnosis last month and had totally forgotten about it.

    Eric, those doggies are so cute!

    Just going to be hot dogs and beans. Was busy today with going to my paternal grandmother's grave as its the anniversary of her passing in 1993 and I missed going at Easter because hubby was working and other errands.

    I never remember my cancer calendar dates except for 2009 being the year and the season being spring. The 5th wheel camper was parked beside the house and ready to go on a summer's travel. It had to be unloaded and returned to its building. I'm not one who remembers dates. The first year I was totally wrapped up in myself, surgery, recovery, trying to get back to a "normal." BC.org was a big part of the process. My dh was very supportive.

    On the food subject, I have wood-fired pizza envy and moussaka envy. Years ago, I made moussaka but haven't for a long time. I'm sure I would enjoy those Greek potatoes, too. The moussaka reminds me that I was once a member of a recipe book club. The moussaka recipe came from a book titled How Not to Miss the Cocktail Hour, my kind of meal planning.

    I didn't cook the chicken and orzo skillet dish last night, despite having bought mushrooms, one of the ingredients. Instead, we had a grilled ribeye and Bob's mashed potatoes. Brown gravy for dh. I plan to cook the chicken dish tonight. I paid extra for shitake mushrooms instead of baby Bellas.

    Good morning everyone :)

    I recently made turkey chili, half pureed and half chunky for the fam. Does anyone else feel bombarded by random well intentioned but questionable nutritional advice from loved ones? I've been told to eat cabbage everyday [I like cabbage but there's a limit], I've been told to avoid all sushi and fish/shellfish because of parasites [I googled Tuna and it has almost no parasites], I've been told to do a raw diet to "reset" my GI track, I've been told to avoid raw veggies and fruit [I could never], and so on. I asked my breast surgeon and she told me to eat healthy, avoid caffeine, and exercise. The receptionist who scheduled me also told me to avoid vitamin E but couldn't tell me why when I asked????

    Next on the list is a baked veggie egg dish. I'm not sure what to call it, casserole? It's thinly sliced veggies [I use a mandolin] red peppers, mushrooms, spinach leaves, onions, zucchini and squash, and whipped eggs. Everything is alternately layered in a cake pan, topped with cheese and baked.

    Auntienance-I'm not sure if any of these are available in your area but Asian, Hispanic, and Caribbean food marts usually carry chicken feet but they don't always come cleaned with skin removed, which is a deal breaker for me so you may want to check.

    Minustwo- Sorry about your recent developments. Sending you positive thoughts.

    Maggie- How did I forget about avocado? LOL. They grow year round in my local. Thanks for the reminder. I'm going to try your chicken recipe.

    I find reading everyone's posts soothing, so thank you. I'm still navigating this site [I swear the post view order changes or maybe I'm just tired], but I am grateful for this site :)

    I saw chicken feet recently at my supermarket. There was a small package of them. A first for me. I did not buy them.

    The duck "disappeared", and the duck broth is on the shelf. I saw a "expires today" whole chicken in the store at $2 for a 6-1/2 pound "monster" chicken, so I brought it home and baked it right away…..more chicken and more broth .:-)

    I have around 4 dozen jars of chicken and turkey broth on the shelf, plus the 8 jars of duck broth. Since we can't tell the difference between turkey and chicken broth, either one gets used when something needs chicken broth. We also use the broth when cooking rice. I haven't figured out what to do with the duck broth, but will experiment.

    I started all this when dad was on a very low fat, very low sodium diet and anything but fruits and vegetables were "off limits". Mom was in her late 80s at the time and the "open, heat and eat" meals (I hope) helped them.

    I treat unsolicited advice similarly to the tabloid front page "lose 31 pounds in 3 days" diets. Even the advice from MDs gets crosschecked by me as I'm not convinced that they get a lot of nutrition education in med school.

    I remember a few cancer dates. I guess they will never be forgotten and I guess that's good. If I forgot, it would mean I didn't care.
