    I made a salmon salad and stuffed a "baked" potato. Tomorrow, I'll have Italian sausage. May make it similar to Carole, in baked beans with a veg.

    minus, Prepping items for your weekly meals on Sunday is a good idea. I’m not that organized.

    Wally, I’ve never tried it but Italian sausage with baked beans should taste pretty good.

    Dinner tonight was pan fried tilapia, zucchini/tomato with Italian seasoning and sautéed baby potatoes.

    The combo worked very well. I had some leftover caramelized onions from our frozen burgers that I added. Looking forward to leftovers.

    @maggie15 I’m doing well, just so busy and tired. Thanks for inquiring and tagging me. I haven’t been on for a while. Took a digital holiday over the weekend to regain my brain energy. Love not being online sometimes.
    Been Taking care of my DH as he continues to recover from colon surgery, what a process for him.. and winding down the semester with grading.. you remember the drill. Looking forward to not teaching this summer.
    Made a wonderful new pasta and asparagus dish, used red lentil spaghetti pasta and dropped the asparagus into the pasta water with a minute to go. Was a crisp spring meal with a side of sautéed mushrooms in olive oil and garlic. All that was missing was garlic bread, next time.

    Carole, It's relaxing to have a day where you takeout rather than cook.

    Wally, Those onions also sound like a good addition. You use your leftovers quite creatively.

    Rhonda, Good to hear from you. You certainly have a lot on your plate. I hope your DH continues to progress in his recovery. End of semester is really busy but a well deserved relaxing summer is in sight. Your spaghetti and asparagus meal sounds delicious. I have had brown and green lentil spaghetti but not red. I’ll have to try it.

    Dinner tonight was chicken breast in a sun dried tomato and shallot cream sauce with green beans (for me) and mashed potatoes (for DH.)

    Rhonda, good to read your post. Healing vibes for your dh. I remember well looking forward to summer when I was a teacher.

    Dinner last night was steak fajitas with refried beans, sauted yellow bell pepper and onion, grated cheese and home-made guacamole. One of my favorite meals. I've learned through trying different methods that the best way to cook the thin ribeye is to sear it on both sides, slice into strips and add to the sauteed vegetables at the end to warm it.

    I have leftover spinach/baked bean from the Italian Sausage meal so will poach or scramble some eggs, to finish off the side. May thaw a sockeye unless DH votes for something else, for tomorrow.

    My PA-onco visit to discuss labs this afternoon. I haaaaaaaaaaaaaaaaaaate going in for medical stuff, even though my favorite retired onco reviewed my labs via email and I already know what to do, LOL, I still freak out. Like a nutty Pavlovian response to going to an appointment; any medical appointment. If someone is skilled in rewiring brains, please help me unsnarl my thinking. The Lexapro is helping somewhat with the anticipatory grief for my DH (now on hospice), but the medical appointments for myself….as the rap song goes, "can't touch this…."

    Carole, DH will not eat steak that is the least bit pink, very common in the Irish older generation, so I use a grill pan to cook the steak well done before adding it to the vegetables. He has a hard time getting chefs to “ruin” a good steak in a restaurant.

    Wally, I hope your onco PA appointment went well. It’s hard to know what will rewire an individual’s brain but shock worked for mine. Nobody (almost) dies from stage 2 bc treatment but for six months I didn’t know whether I’d be the exception. I have way too many medical appointments but my attitude now is a watched pot never boils. Based on your posts you seem to be dealing with your DH’s situation so give yourself lots of credit for that. ❤️

    Dinner tonight was Tuscan garlic shrimp on farfalle.

    Wally, I admire the way you use up and alter leftovers. I feed some unknown hungry creature out in our side yard. Our house sits on a 2-acre lot.

    Dinner last night was a Betty Crocker special. Tuna casserole. I "winged" the recipe. Our side was halved Brussel sprouts blackened in butter.

    Today is Wednesday my exercise-and-go-out-to-lunch day. Dh will be expecting dinner as usual. I will thaw catfish fillets.

    Carole, Tuna casserole is my favorite comfort food. I hope you enjoyed your lunch out.

    Dinner tonight was hot chicken salad and a baked potato for DH. Like Wally I find the microwave easier for stuffing and twice baking but I used the oven to warm up the kitchen.

    I gave dh the choice of pan-seared or breaded and pan-fried catfish fillets. As I expected, he chose the latter. Our side was steamed broccoli flavored with lemon juice and butter. Condiment was dh's tartar sauce.

    We were going out to dinner for oysters but the weather forecast is discouraging for venturing out. I will make a chicken and rice dish instead.

    My lunch yesterday was disappointing. I ordered soft-shell crab, thinking it was the right season. I was served two small crabs, breaded and fried. They were not as good as anticipated. Dh says it's a little early. It was a pricey lunch.

    It seems that all the restaurants are passing along their credit card fee when customers pay with plastic.

    We will have leftover sockeye tonight. I sauteed red cabbage and made some puy lentils for sides.

    I'm picking up the BBQ lunches I ordered for the dental office. Only 14 people work there, so I should be able to carry it all myself. I'm surprised this place calls it "catering" when you have to schlep it yourself.

    Dinner was leftover rotisserie chicken from the freezer and StoveTop Stuffing. Biggest mean I've had in a week.

    Carole, It's such a disappointment when a pricey treat turns out to be a disappointment. Restaurants shouldn't serve out of season meals. In its fish and chips description Legal Seafood says that the fish species depends on what is fresh and in season. Interested customers should ask the server what is in the kitchen on the day.

    Wally, You are so kind to treat the medical personal who provide good care. I think that 14 servings catered should qualify for delivery.

    Nance, I'm jealous of your sweet corn on the cob. It's still unseasonably cold here so I probably have a long wait for some.

    Minus, I find any dinner with stuffing very filling.

    The credit card surcharges are getting out of hand. Service departments at car dealer ships and dentists (including mine) are doing it with 3% on some pretty big bills. I use my checkbook there but many restaurants won't accept personal checks either.

    Dinner tonight was chicken and mushrooms cooked with some Italian seasoning mix that came with pasta. It was pretty good but I'm not sure I could replicate it.

    The skillet dish with boneless chicken thighs and Mexican rice was a success, especially the flavored rice. Side was a romaine salad with additions.

    Tonight may be takeout from a nearby restaurant with great burgers and onion rings for dh. We haven't done takeout from the restaurant before, so not sure whether it's a good idea. Friday could be a busy night.

    It's overcast this morning and more rain is in the forecast.

    The people at the dental clinic are priceless….what this dentist did for Don's necrotic jaw is nothing short of kindness and skill…and compassion…. I will continue to spoil them. I figured they were getting sick of cookies, so lunch was the next one up. I'll try and think of other things to do for them.

    I made mac and cheese today.

    Wally, Lunch is a great idea. When I was working I packed the same easy to fix lunch every day since I’m not a morning person. The few times when there was something else for lunch it was a real treat.

    Dinner tonight was steak enchiladas and refried beans. The small ribeye I pulled out of the freezer cost $7.99 a pound. Those were the days.

    Maggie, I was just saying the same thing….I paid 5.79/pound for chuck roast….and back in the day, tenderloin was 9.99. UGH.

    The takeout meal worked out. The food was ready when dh arrived to pay and pick up. The rainy weather may have cut down on the Friday night diners at the restaurant. I used the air fryer to reheat the fries and onion rings. The burgers were very good as anticipated.

    Does anyone use a meal delivery service like Door Dash? We have not.

    Tonight will probably make use of frozen cooked linguini.

    Carole we use Door Dash regularly. We used to use grub hub because of the free delivery with Amazon Prime but quit because of poor service. As you would expect some foods travel better than others. Delivery is an extravagance but one we’re willing to pay for on occasion.

    Tonight is not delivery but sloppy joes. Normally we’d have fries with that but I don’t have any potatoes so it’s mac and cheese instead.

    Oh Maggie - $7.99… remember the day. Rib eyes here today were $20.99/lb.

    I've never tried food delivery (except pizza many years ago) although I'm sure Houston has every possible option.

    Last night was sliced rotisserie chicken on pumpernickel bread and fresh coleslaw. I took some leftover meatloaf out of the freezer for tonight but may change that to hot dogs since I purchased some fresh buns today. My "steal" at the store was buy one-get one free Rao's Pizza plus a coupon for an extra $2.00 off.

    Domino’s delivers but that’s it. If I were getting a pizza I would take out from somewhere better. There is no grocery delivery, either. Two supermarkets will do your shopping but you need to pick it up.

    Minus, That’s a great deal on Rao’s pizza.

    DD drove up with my grandson to stay for a few days. We hadn’t seen them since last Sept since our flight to his first birthday celebration was canceled during the Feb blizzard. He loved watching me cook while DD held him. He likes to watch her cooking but it’s hard for her to do that and keep him at a safe distance.

    Dinner tonight was chicken meatloaf cockaigne, sautéed zucchini and microwave baked sweet potatoes (GS doesn’t care.)

    Maggie, what a treat to have your DD and GS visit. When he's older, you can teach him to cook.

    Milk Street cooking show on PBS was about pizza yesterday. I learned some tips about cooking pizza on a stone in the outdoor grill. I love watching the pizzas come out of wood-fired ovens in Italy. They look soooo good. I'll have to try the Rao's frozen pizza this summer.

    Dinner was Raos with Italian sausage removed from the casing and the linguini from the freezer. Side was large romaine salad with additions and favorite dressings. A big mound of fresh-grated romano to enhance the pasta.

    Minus, you seem to be getting your appetite back.
