    Minus, Homemade always seems to be better.

    LaGuardia had only one runway open today so I didn’t arrive until 11 pm. Since the small airport I flew out of is open only six hours a day we flew to another airport and sat on the tarmac for a while. Dinner tonight was pretzels which I am glad I threw into my bag at the last minute.

    Planning an early birthday dinner of lasagna and garlic bread for hubby. His birthday is actuallu on Sunday but he has to work, so gonna celebrate a little early

    Happy Birthday to DH, M0m.. :-)

    Last night I baked a couple of 4 pound pork roasts. The oven was carefully guarded by the two dogs and they were quite attentive while I was carving the roasts. :-)

    They were rewarded for their efforts with some of the fatty pieces.

    Eric, I would have been competing for the fatty pieces of pork. lol.

    We had ideal travel weather and no excitement. To our great relief, everything is good with our camper home. We are settled in.

    The weather isn’t supposed to be great for our first farmers market tomorrow. Rain showers are in the forecast, probably a continuation of the rain that’s falling now.

    Our first home-cooked meal was last night. Chili with canned pinto beans and coleslaw. We’ll have a repeat tonight. It’s chili weather. We may have old-fashions instead of martinis.

    It was good to read posts and catch up with my dinner friends.

    Maggie, enjoy the babysitting.

    Mommy, happy b-day to your DH. Mine will (hopefully) have his June 2nd…holding my breath.

    Eric, will you be freezing or canning any of that pork?

    I made air fried red potatoes (microwaved first, let cool in the fridge for resistant starch, then air fried them this early evening), kielbasa sliced with zucchini (coins) and cooked stove top with a pat of melted butter. Very good. Leftovers tomorrow.

    I’m glad you made it to Minnesota uneventfully Carole. It’s been cool here too and chili sounds very good.

    Tonight is pork tenderloin with pineapple, peppers and brown rice.

    m0mmy, Lasagna is a great birthday meal. The leftovers are always good, too. Happy Birthday to your DH.

    Eric, It’s good the oven guard dogs were rewarded for their vigilance.

    Carole, Glad to hear that you arrived safely and had no issues settling in. Chili weather must be a nice change from the heat. Hopefully tomorrow’s weather will be better than forecast.

    Wally, You make good use of your air fryer.

    Nance, Your pork tenderloin meal sounds like a delicious combination.

    Dinner tonight was pan fried tilapia, peas and watermelon cubes. My grandson lessened to like it. He finally went to sleep two and a half hours later than his bedtime but that’s OK since it’s still too early for me to fall asleep.

    Carole, Glad to hear your trip up north was good. So glad we are getting some rain, we need it. Haven't had much rain lately and fire danger has been high here in NW Wisconsin and Eastern MN.

    Dinner tonight was chicken meatballs, peas and blueberries. My grandson ate the chicken meatballs and berries but the dog got most of his peas.

    Lol at dog getting the peas. DH grew up in a family where the children had to remain at the table until they ate all the food on their plates. His brother and sister would drop peas on the floor and hide them under the rims of their plates. Dh quickly downed everything so he could go out and play.

    We had an amazing opening day at the farmers market on a dismal day. People came in droves and seemed to be in a spending mood.

    We took our cocktails next door to Mary and Lyman’s deck to socialize with a gathering. I ate enough of the assortment of food that I skipped dinner. Dh had a bowl of chicken and wild rice soup that Tamra gave us and a slice of sour dough bread we were given by our neighbor at the market.

    i was seven or so and my mom told me I would sit at the table until i ate the boiled brussels sprouts. They finally relented around 4am. ;-)

    Carole, I'm glad the trip went well and it was easy to settle back into the "north place".

    The local farmers' market just opened.

    Our friends are up here for the long weekend and they LOVE blueberry pie. So my first effort at a blueberry pie is in the oven. Tomorrow we will find out how it turned out. :-)

    Carole, It’s great that you had a very successful day at the farmer’s market in spite of the weather. The sourdough bread was another perk.

    Eric, Enjoy the blueberry pie.

    The return flight today was uneventful even though there was heavy rain. I enjoyed the time with my grandson and had good bagels for breakfast three days in a row.

    Dinner tonight was meatloaf, butternut squash and mashed potatoes from the freezer.

    We had Bob’s mashed potatoes last night with crockpot chicken thighs cooked with cream of celery soup.

    Tonight will be steak fajitas with refried beans.

    Baked beans, frozen grass fed burgers (costco) and spinach….last night and leftovers tonight.

    Luckily my mother didn't make us clean our plates. However she did insist that we TRY two bites of everything that was served. You'd have thought we were being killed from some of our responses. Brussels Sprouts was one and now they are some of my favorites.

    Since we had the traditional barbecue on Saturday, DH was out to help a guy with something and I had Momofuko soy and scallion ramen and what was left of a Taylor Farms sunflower crunch salad. Pretty tasty actually. 😋

    It’s amazing how tastes change when you become an adult. When I was a kid I hated asparagus, now one of my favorite veggies.

    Carole, I made mashed potatoes with just butter and seasoning and froze it flat in individual serving freezer bags. After thawing overnight in the fridge they microwave up well with a splash of milk added. Yum on the steak fajitas.

    Reader, Your dinner sounds like a nice change from the traditional barbecue.

    Dinner tonight was shrimp in mushroom avocado sauce for me and pan fried tilapia for DH. To prevent wasting food I cooked both items that were due to expire tomorrow.

    Europeans never (old days) coddled kids…you ate what was served. I'm lucky I ate whatever was plated and enjoyed it.

    My DH's memory has taken a nose-dive. Not sure if there are newer brain lesions, residual effects of the treatment/radiation, the fact that he'll be 86 June 2nd (if he makes it) or the morphine he is on before bed. Can't stop sobbing. Such a vibrant and smart man….I'm grateful I can be here to help him, even though there are times he is unkind (I realize it is the disease).

    Wallly - so sorry to hear your DH's progression. It's just not fair.

    Maggie: Asparagus is now one of my favorites too. But to be fair, when I was a kid it was canned & slimy - not fresh.

    Steak fajitas postponed until tonight. DH wanted to go to nearby Clancy’s for Monday meatloaf special. I had a salad from the salad bar with the delicious blue cheese dressing and walleye bites. Our transportation was the golf cart. Safe because we don’t have to drive on a busy highway.

    Carole, Clancy's Monday meatloaf special seems to be one of the highlights of your summer up north.

    Dinner tonight was leftover shrimp for me and tilapia in tomatoes with jalapeño on rice for DH.

    No cooking last night. We ate leftovers instead. Chili and hotdogs for dh. And freshly made coleslaw. Chicken and mashed potatoes for me.

    Thank you, folks. I talked with hospice and suggested another Prolia shot, incase high calcium is causing this nightmare…and it is a nightmare.

    Udon noodles with broccoli and canned clams/mussels. Last minute, I threw together and it wasn't horrible.

    We are supposed to go out with our neighbor friends (the nice people) for dinner tomorrow. Hope we can do that.

    Cheerios & a banana this afternoon. Think I'll have an individual Bob Evans Mashed Potatoes tonight. Or nothing

    A neighbor brought me some fresh green beans, a cucumber & some tomatoes from his garden. YUM

    Carole, The foods you mentioned reminded me I have to think about making some summer dishes.

    m0mmy, Having your main meal in the middle of the day is a healthy option.

    Hi Everyone,

    Maggie-thank you for the guidance-very helpful :)

    My dentist lectured me on processed sugar while working on my newest cavity [I have a sweet tooth] so lately I have been trying to create deserts without processed or artificial sugar or chemicals. So far I made a dark cherry, date, and vanilla bean parfait which was delicious. I made dark chocolate brownies that were horrible! I used honey and dates and they were still so bitter it was like eating chalk. The dates also made them really dense. I'm not crazy about the after taste of Stevia. Any ideas for natural sweeteners that can stand up to unsweetened dark chocolate?

    Next up is a kale-peanut butter coconut cream dish with chicken breast. It usually has pimentos or spicy peppers but I plan to replace them with mini sweet peps as the hubby dislikes spicy food. I saw someone make it as a side on the food network but I plan to tweak it a little and make into an entree version. I think I'll also add garlic and roasted vidalia onions. I'll let you know how it turns out.
