    Good morning everyone.....had a busy two days.....with some more on the way, but I'm almost rested up again.  Now and then I get a couple of 14 hr. days to put in, but I am just thankful that I can. 

    As part of my long day I was doing some cooking.....happened to find a recipe to try....I always take things to a gathering that I have never made before.......as you find out that way if something is any good or not.....thought I would leave the recipe here. 

    People  ( I came a little late so first bunch of people had already filled their plates ) seemed to have glowing comments.....and turns out I really thought it was great as well.  It's one of those things you'd probably rather take when there is a  crowd....just so you don't eat too much yourself.

                                                  FROSTED SALAD

    2 sm. pkgs. cherry Jello   2 cups boiling water.  1 sm. ( 6 oz) can frozen lemonade. 1 can cherry pie filling.  1 ( 8 oz ) can crushed pineapple

    1 ( 8 oz. ) cream cheese.  1 cup sugar.  1&1/2 cups Cool Whip.

    Dissolve Jello in boiling water, add lemonade, pie filling and pineapple.  Pour into 13 x 9 in. glass pan and refrigerate until firm. 

    TOPPING:

    Combine cream cheese, sugar and Cool Whip; mix well and spread over Jello.

    It was exactly the kind of thing I like --- with the twist of putting lemonade in it.  I'll be making that again.

    The recipe sounds good and way too much to fix for only one person (me...)   I have an ambrosia recipe that one can have most ingredients on hand and whip up quickly:

    Ambrosia

    20 ounce can Pineapple Tidbits, drained

    11 ounce can Mandarin Oranges, drained and cut in half

    1 cup Miniature Marshmellows

    1 cup Flaked Coconut

    1/2 cup chopped pecans (optional for nut allergies)

    1 cup Marachino Cherries

    12 ounces (2 containers) Vanilla Yogurt

    Mix together and refrigerate.  

    ************* 

     Not that I always have all ingredients on hand, but easy to get and you can double or triple the recipe as needed.    With summer menus, this goes well as a "salad" or dessert.

    Gram....so glad you put in your Ambrosia recipe.  My brother-in-law makes this and as he is a bachelor and does not know what to do with leftover marshmallows......he tosses the whole bag in.  The first couple of bites are so good.....then I go into marshmallow overload......so I have never asked him for the recipe.  Now, I think Dh and I can enjoy what I know is a great salad.....but we both take only very sm. amts. of BIL,s as we don't want to have only marshmallow flavor. 

    I think I'll put in a couple of my other favorites for you later. 

    Rained cats and dogs ( sure not what I need at my house ) as we got back from Marion and my appt. with my Oncologist there.  Another clean bill of health.  I am so thankful that I remain well and doing fine.

    Good morning everyone as we await more storms.  The southern ( we actually consider ourselves on the very southern inner tip ) as well as mid western part of Illinois I really getting so much not so nice weather.  It will I think rain here soon.  How is it for you Jo.  I hope you are all going to have a good day and accomplish much despite any storms. 

    Memorial Day is coming up this week-end.  I'm thinking to do this cake and thought I'd leave the recipe with all of you too.

                                         PEANUT BUTTER SHEET CAKE

    2 cups flour,  2 cups sugar,  1 tsp. baking soda,  1/2 tsp. salt, 1/2 cup oil,  1 & 1/2 sticks oleo margarine, 1/2 cup peanut butter, extra crunchy,  1 cup water,  1/2 buttermilk, OR 1/2 cup milk with 1 tsp. vinegar ( makes buttermilk ), 2 eggs, and 1 tsp. vanilla

    ICING:

    1/2 cup peanut butter note: I plan to use a bit more than that as I so love peanut butter, 1/3 cup milk, 1 stick oleo, 1 tsp. vanilla, 1 box powdered sugar

    Mix together and set aside 2 cups flour, 2 cups sugar, 1 tsp baking soda, and 1/2 tsp. salt.  Bring to a boil:

    1/2 cup oil, 1 & 1/2 sticks oleo, 1/2 cup peanut butter and 1 cup water.  Add hot mixture to flour mixture and mix, then add1/2 cup buttermilk, 2 eggs and 1 tsp vanilla.  Spread in 9 x 13 in. pan, ( greased and floured).

    Bake at 350 degrees for 40 minutes.  Remove from oven, cool slightly and frost.

    For icing

    Bring to a boil peanut butter, milk, oil, and vanilla.  Add powdered sugar and mix well.  Pour over warm cake

    P.S.

    I just REALLY read this and it was my thought that a sheet cake usually refers to a longer, and wider pan, rather shallow......and so rather than the 9 x 13 referred to in the recipe, I think I would use the bigger ( sheet pan ) pan for sure.

    That cake sounds very interesting Jacki.

    When you are talking 'sheet' cake, how high should it be when baked?

    And........if you don't mind teaching an old Aussie chook, exactly how much is a 'stick' of butter/etc,.

    I found a biscuit/cookie recipe a few years ago and never made it as I couldn't find out how much this mysterious 'stick' weighed.

    Thanks in advance, looking forward to having this chasm in my knowledge banks completely filled.

    Sheila, a stick of butter is 1/4 of a pound, which converts to 113g.   Hope that helps.   OR it is 1/2 cup, 8 Tablespoons.  Hugs for all, Nancy

    Hi Sheila,  the cake won't be high when baked as a sheet cake pan in fairly shallow --- maybe and inch to inch and a half or so.  I don't know how to convert.  Can you tell, I am a big peanut butter lover.....have some almost every day. 

    Gram.....thanks for putting in those measurements for me.  You probably noticed that this recipe is similar to the Texas Sheet Cake Recipe which is done with cocoa instead of peanut butter, and then there is a Texas White Sheet Cake.  I'm not highly detailed so I stick to what seems easy for recipes --- else wise I'll get lost halfway through something.

    Weathered last night storms, though some tornado activity took place in a couple of the small towns around us.  Dreary today, but will hopefully clear up well.

    Hope everyone else is safe and sound.  Spring in Illinois ( as well as many states this part of the country ) is a bit un-nerving to get through.  Will be checking back later.  See you then.

    Sheila, this may make you chuckle - and others also:    Many years ago I was in India and had some stomach upset.   A call for Room Service, asking for "crackers" and ginger ale - meaning soda crackers, or biscuits as the brits and aussies call them.   Crackers means fire crackers...

    Yes GramE, we used to call fireworks 'crackers' back in the day, when we were allowed to have them, they're illegal here now.  We even called our 'Guy Fawkes' celebration.......cracker night.  

    Thanks for clearing up the 'stick' issue for me ladies, I will write it down in my recipe folder.

    I am trying very hard not to think about the little dog that was picked up by a tornado two weeks ago. Its front legs were broken and it crawled all the way back to its house..............such a courageous little fella with a big love for his family.

    Joycek....I'm with you.  Our animal friends are so loving......they do not know all the negative attributes and attitudes that befall people.  Without guile, they are able to embrace everything and everyone......love for all and love for life is the banner they wear.....and they are so humble. 

    I am sorry to hear about Cally, but I feel they are in general more accepting of their leave-taking too.  I also feel less sadness for those leaving this earth if they have had a good home and have known the love and devotion of their master/caregivers/family.  I work at our local no -kill facility and it is always joy to see the frightened, abused animals leave to a good home with head held high, happy and looking forward to their life with great enthusiasm again.  They always respond to the love we have to give and go back to the sweet, loving creatures they were. 

    I'm also convinced that our animals go where we will go and wait for us....so while their lives usually are far shorter than ours, we will see them again.  Spiritually, I don't feel your ever totally separated from anyone you have truly loved...including your best furry friends.

    Morning gals!  Jackie, I can't find your recipe for Spaghetti Salad!  Could you pleeeeeeze post it again?  And the Frosted Salad recipe reminds me of the one from Weight Watchers...I think it was the Key Lime Pie recipe, with 2 pkgs of sugar free jello, about 1/2 C. Hot water, 2 pots of low fat key lime yogurt, and then lo-fat cool-whip.  Still one of my favorites!  I put it in a graham cracker crust.

    I was ready to wring my computers neck yesteday!  I got up and could NOT get online!  After almost 2 hours, 3 phone calls, I finally found someone that knew what was going on!   Doesn't that make you crazy?  This is Qwest that I'm talking about, but I KNEW that it HAD to have something to do with THEIR lines.  

     They DID have an outage, but when it came back on, something happened to MY jack, & I had to unplug the 3way converter, & just plug my modem into the wall-jack, THEN the last gal walked me through re-setting Qwest and finally the "Int" light came on.  I was soooooooooo happy!  So she cancelled the repair ticket for Wednesday...which would have cost me at least $89 she said. 

    Oh well...drove me nuts!  I wanted to get back online, because I was bidding on a Nebulizer, and I finally won it after all! 

    Joyce!  I think it's great that you remember your Cally that way!  We had our Chevy for 14 years, and there is just no explaining the love we have for our pets!  We have Lacee, our "other Daughter" and she is just so beautiful!  Our Daughters' "rescued" her from a pet shop, Ha!  They gave her to us thinking that that would keep us home more....and yes it did!   We used to go to the Casino & stay overnight, but we won't leave her to do that anymore...Wink

    Ok.....here is my recipe for Spaghetti salad.

    Italian Spaghetti Salad (16 oz. ) vermicelli noodles ( thin spaghetti ) 1pkg. dry Italian seasoning mix ( 16 ozs. ) liquid Italian dressing pkg. dry Italian seasoning mix 1 tomato, diced 1 gr. pepper, diced 1 sm. onion, chopped note: the small, thin spaghetti makes a lot so I changed some of the numbers here and they are as follows: 2 pkgs. dry Italian seasoning mix 1 ( 8 oz ) bottle of liquid Italian dressing along with the 16 oz. one 2 tomatoes, diced 1 very lg. green pepper 1 med. onion I also did not use any of the liquid salad dressings that were sparked up.....like Robusto etc. The plain dressing gives it more than enough flavor and not too much tang. Cook spaghetti as directed on box and I rinse a bit under cold water. Add the rest of the ingredients and refrigerate overnight so the flavors can wed.

    You can put some McCormicks Salad Supreme in it and use some diced celery if you have it.  I just usually make the basic salad since I often want  to not have to make a grocery list to get things.

    My computer was behaving badly this a.m.  Must be a little contagious.  When reading something on the first scroll......even though it was slowly, it would just keep scrolling and sorta lurching when it did it.  I finally rebooted and it seems to be working ok right now......but I think later I will do a some scans etc.  Just to make sure it is clean etc. 

    Hot today as was yesterday.....but I am noticing it already this a.m.  We may have to break down and turn on the air conditioner.....but I'm sure going to try not too.  I don't like air-conditioned air --- well, I don't entirely mind it.....but I think after having the house shut up all winter.....I like breezes blowing through and the winter's mustiness all aired out etc.  Also, it is early yet and we did so well with out I heaters and keeping our gas usage cut in half.....that I don't want to zoom it up by turning on the air early. 

     Anyway....I'm going to work out at the Shelter today.  I skipped this past week.  Just had too much to do.....and so I feel like a rat.

    Want to talk about hot weather?    Yesterday it hit 101 degrees and right now it is 97 degrees and not even summer yet...    I am in the Washington, DC area, across the river in Virginia.

    Ok ladies I saw your post and also saw a recipe. I wanted to share what I invented before having cancer and what I have done about it since. I also wanted to share that I have loads of easy recipes to go with so anytime you need to know what is for dinner pop over and look soemthing up. When I had my surgery I could not or was afraid to move my arms for fear of ripping a stich and using bags to do everything was a huge help and as a chef I had always used them but invented The Bag Holder to have a container to help me to everything that a bowl or plastic containers did. I hope you love it, share it and show some support. I was a TCH girl and currently in the neratinib trial with 4 weeks left. Since I thought I would be dead by now I moved quick and wanted to make things hapen, do any of you feel that way. Praying for a cure each day> www.thebagholder.net  see me on face book too:)

    Good morning ladies.....and it is a beautiful morning though quite warm.  It really feels like summer outside and while we haven't turned on the air conditioner, we do have all our fans on to circulate the air and keep it from seeing harsh.  Due to rain later so we will see.  I hate it when we have to close everything up and never enjoy a breeze of fresh air.......but hey....how wonderful that the houses here all come with a/c.  As a kid....no one had it.  You just had to suffer thru the hot months....which to a kid didn't seem very hot at all.  Sigh !!!!  Sure does now.

    Gram--how about you???  I know in the city can seem so hot with too much concrete etc. around you. 

    We are in the woods here so often we are several degrees cooler than in town.   

    Today is Marilyn Monroe's birthday so I'm going to leave a quote here from her.  I think she was a very smart lady actually.....the quote is quite thoughtful and I find it quite true.  I hope you enjoy it.  Pretty thought-provoking.

    Weather report:    Monday it got up to 101 degrees.   Memorial Day parade - kids in marching band were dropping like flies.  many others also. Today (Wed) the heat index was 102.    Just a tad too hot for this time of year.    I enjoyed the ac.

    Gram that sounds awful.  I am not a big fan of hot weather at all....add humidity in and I wilt just as fast as anything.  Sure hope things cool off.  We are headed fairly quickly into some big heat and humidity......I love summer, but cringe at the thought of  ( though deeply appreciative ) that time when we have to close up the house and live in a/c for the rest of the warm/summer season.  Sometimes we can turn off the air for a few days and open the doors again....but never enough to suit me.
