A recipe for Brownies. I made these for Lori just a week ago and they are delicious. My friend Bev gave me this recipe, and she was dx with TNBC..chose only a double mstectomy and goes natural all the way. She has 10 Rhode Island Reds so gets about 9 eggs every day!! Those girls are really producing! lol!!
Banana Brownies
1/2 cup Agave
- 2 large eggs ( I used cage free organic eggs)
- 2 egg whites
- 1 tablespoon Coconut Oil (I used grapeseed oil as I didn't have Coconut Oil, and with grapeseed oil you use half as much as is called for in all recipes)
- 3 tablespoons Cocoa (I used the Hershey's 100% cacao, special dark)
- 1/2 cup Spelt flour
- 1 can (15 ounces) Black Beans ( I bought the organic Black beans, but I bet dried ones would be even better)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon Salt (I use Redman's sea salt with all the minerals)
- 1 teaspoon vanilla
- 1 cup Walnuts, chopped
- 1 large ripe banana, mashed
Place the rinsed black beans in a food processor and break them down. Pour the puree into a bowl and add the Agave, eggs, coconut oil, vanilla and ripe banana. Mix well. Sift all the dry ingredients together and add to the mixture. You can add the walnuts at this time or save them to sprinkle on the top of the batter before baking. I used half of the walnuts in the batter and sprinkled the other half on the top before baking. Pour mixture into a greased 9x13 pan.I used the grapeseed oil to grease the pan. Bake at 350° for approximately 40 minutes or until an inserted toothpick comes out clean.
Makes 40 brownies. Serving size 1 brownie.

OMG fairy, My dentist just told me that absessed teeth are sign of iodine deficiency. Are you taking it? She brought this up when we were discussing taking out my root canal. Whatever you do, do not do a root canal! It is safer to pull the tooth. She said all that metal deep in the jaw leeches into the body and leads to breast cancer. It amazes me how much I keep coming across the links to bc and iodine deficiency. I had a couple of really bad, gushing periods when I was young, always when I had been travelling in a car of plane for hours. Then I read that this was iodine deficiency. My kids were born with jaundice. Iodine? My sons had ADD. Iodine? All the dots are beginning to line up.

Vivre, too late.....the tooth has already had a root canal, bummer! I am on antibiotics but wondered if there was anything else to do, I am thinking its going to be yanked, crap!

vitamin B12 and Folate increase certain cancer rates. I know I had supplemented well over the RDI for B12 while on taxol to curb neuropathy. Frightening.

My osteopath says the B12 Folate causing cancer is bunk. Have any of you heard this from your neutropaths or no? I would like to hear... I told her I stopped taking it, and she wants me back on it. (insert SCREAM here).
Vivre, thank you for the NAC-N-Acetyl-Cysteine. Quick Web search says it gets rid of Mercury?? (That would be fish, but RADS??) interesting. Did the friggin zap us with Mercury!? ick.

No, I SOAKED the beans but I did not COOK the beans, and YES they were "crunchy" and tasted "green" to me, and I did not like it! I ate raw beans!!!!! OK I AM A BEAN novice!!! Thank you for the brownie recipe Nan, I may try that one! !!!

How NAC (N-Acetyl-Cysteine) Works To Detoxify
N-Acetyl-Cysteine is currently the dietary supplement of choice for building up cysteine or conserving the body's store of Glutathione, Cysteine and other Sulfhydryl anti-oxidant resources. This is very crucial for the body's life functions, as NAC helps the body neutralize toxins, heavy metals, such as mercury from dental amalgam fillings, cadmium and lead from paint and cigarette smoke. The Sulfhydryl balance has also been linked to enhance resistance to viral infections.
NAC is a chelator of heavy metals. In other words, NAC binds to toxic heavy metals such as mercury and lead, and removes them from the body. This is a slow process, but most chelating agents, such as EDTA, are generally given intravenously. NAC is one of the most effective oral chelating agents. Taken regularly over a period of time, NAC will remove many toxic heavy metals from the body. Toxic metals can accumulate in the body over time from many sources such as drinking water and possibly even from tooth fillings made of silver-mercury amalgam. These heavy metals catalyze free-radical reactions. In other words, they initiate free-radical reactions without being used up during the reaction. So these heavy metals continue to cause free radical damage as long as they are present in the body.
NAC has been shown to antidote acetaminophen (Tylenol) poisoning, mercury poisoning, and even arsenic poisoning. Mercury is especially important because of the increasing evidence linking mercury amalgam dental fillings with the onset of degenerative diseases such as Multiple Sclerosis. NAC chelates, i.e. "grabs" heavy metals and removes them from the body.
NAC has been shown to be a protective agent in many diseases and conditions in which free radicals play a role. This includes cancer, AIDS, cirrhosis, as well as pollution damage from smoking or other chemicals. Rats given NAC were completely protected against cigarette smoke caused DNA cross-linking.
NAC helps with mercury toxicity and other conditions
Cancer research has shown that NAC dramatically reduces the ability of a tumor to invade surrounding tissue. In one study, NAC decreased the number of metastases by 80% when cancer cells were pretreated with NAC. NAC can be used for colon cancer prevention. A preliminary double-blind placebo-controlled study of NAC enrolled 62 individuals, each of whom had had a polyp removed from the colon. The abnormal growth of polyps is closely associated with the development of colon cancer. In this study, the potential anticancer benefits of NAC treatment were evaluated by taking a biopsy of the rectum. Individuals taking NAC at 800 mg daily for 12 weeks showed more normal cells in the biopsied tissue as compared to those in the placebo group.

I tried to do dried beans, and just hated it, they tasted so "green".
I know, the first couple of times I made them, they were awful -- but that's simple to remedy -- once you know how long to soak and cook them, they are delicious and SO healthful AND cheap!
I've been phasing out canned beans for the last 6 months or so and now buy dried beans in bulk from www.bulkfoods.com. (Not organic, but I rinse them very well -- I'm still looking for a source for bulk organic beans.)
My favorites are any white beans (cannelini, navy, etc.), black beans, lentils, and adzuki (super-nutritious!). I also love chickpeas in salads and wraps (and in curry dishes -- YUM) so I just bought some in bulk there too (I tend to go through cans of them a LOT, and I know all that BPA exposure isn't good, so I'm going to be cooking my own from now on).
Meg, I LOVE hummus too (in fact I was just thinking this afternoon that I want to try making my own organic three-pepper hummus)... great dip for all the fresh veggies I'm eating now! Somewhere I've saved a recipe for hummus that uses sprouted chickpeas rather than cooked... need to try that (let me know if anyone wants the recipe and I'll go find it).
I've been thinking about buying a pressure cooker just for the sake of cooking dried beans. Apparently, there are some beans you don't even have to soak beforehand if you pressure-cook them, and all of them take WAY less cooking time. My one hesitation is how many nutrients would be destroyed through pressure-cooking (they claim it retains the nutrients better than other forms of cooking, but that sounds like marketing to me).
About the folic acid thing, I've stopped taking folic acid supplements for now, but I don't worry about the high amounts of folic acid I get in all the leafy greens I eat/drink. I figure there must be a protective compound in leafy greens that protects you from the potential harm of just excessive folic acid alone.

Definitely buy a pressure cooker for cooking beans! I don't think there are any beans that absolutely have to be soaked if you use a pressure cooker, although I always soak mine. I like them cooked tender, plus I believe the wives tale that if you change the soaking water once or twice, they become easier to digest...no sense taking chances on THAT! LOL. Even chickpeas only take 25 minutes (that's once you get it up to pressure, which can take a while depending on how much water you have in there). And I think the pressure would at least keep the water soluble vitamins in tact. Not very much steam really gets out of that pot. Besides cooking beans, the only other thing I use the cooker for is applesauce....which is a whole 'nother wonderful comfort food that should never come from a can :-)
I like to saute up some onions, chunky cut carrrots and celery, whole peeled cloves of garlic. Then season (usually cumin, cayenne, blackening seasoning, salt) Then add vegetable boullion and water (I am sure you could just use plain water and more salt and it would be fine) and put the soaked beans in and lock on the lid. Turn the burner up and bring to pressure, then turn the burner down a bit, and let it go for 20-25 depending on what kind of bean you are using. It usually all takes about an hour, with just about 10 min worth of my time. So easy! I usually discard the celery as it comes out pretty mushy, but the carrots and garlic come out yummy! Then you have beans around you can throw them in all kinds of dishes. Cooked beans also freeze well for a good long time.
Be careful with trying to cook acid foods (like tomatoes) with dried beans...sometimes the skins of the beans toughen up (thereby becoming much trickier to digest) and there is no amount of cooking that will make them tender. If you are using any tomato product in your beans, be sure the beans are practically done before you add it.

That is good to know! Meg and Suzanne, which pressure cooker do you have? I bought a Cuisinart electric one that I knew I would absolutely LOVE, except for the fact that it has non-stick coating... I'm trying to move away from Teflon type stuff now (I haven't tossed my Teflon cookware yet until I can afford new cookware, but I was afraid that non-stick coating would leach into food more quickly under pressure/high temps), so I very sadly decided not to keep it. I've read good things about Fagor and Kuhn Rikon (stainless-steel stovetop pressure cookers) but I'm still researching.

Spring: Here's my recipe for lentil salad
1.5 cups dry lenils
Cook in enough water for 25-30 minutes until just tender
Vinaigrette:
1/4 cup olive oil
1/4 cup red wine vinegar
1 tbsp lemon
1/4 tsp. cinammon
1/4 tsp salt
1/4 tsp pepper
1/2 tsp cumin
1 tsp curry powder
1 tsp dijon mustard
1/8 tsp ground cloves
1 red pepper (diced)
2 green onions (thinly sliced)
1/2 cup corinthe raisins (ie. Zante currants)
Mix all together then add to the lentils - refrigerate for 1 hour
Enjoy!

Fairy, try a drop of 100% Tea Tree Oil, neat. You can use your finger to rub it on and around the affected area. Tastes horrible but should kill quite a bit of the bacteria and alleviate the pain.
Hope you feel better soon. Toothaches are such a drag.

Fairy-my dentist said that the my root canal needs to come out. She insists that they are the root of many health problems, no pun intended. Steph,from the yahoo iodine group said she finally had hers removed and there was icky black gunk underneath. Bacteria infested that she says was the reason for her health problems. There are many cases sited in this book, where removing the root canal resulted in people getting better from all kinds of illnesses. I am just so paranoid about this thing now that I am actually having dreams about the darn thing.
Spring, thanks for finding more about the NAC. I had never heard of it before. It sounds like something that is really beneficial. I guess I will be off to find it this week.
Great recipes everyone. I am not sure about the whole pressure cooker idea. I remember my grandmother use to use one a lot, probably for beans. I also remember my mother cooking up something in one and the next thing we knew, there was a loud boom, and the ceiling was covered with tomatos! So I have been afraid of those things ever since.

..oh yeah, vivs comment reminded me that with the pressure cookers, you can can/jar your own veggies and fruits. Keep an eye on the cooker and that the psi is under normal levels (can't remember, want to say around 110-150 psi is the right range) or it can explode if it gets to the red zone. Love pressure cookers and you can cook meals in about ten minutes and retain most of the nutrients. Gotta get one - Ill get one based on the recs from you girls.

Pressure cookers. Vivre cracked me up with the BOOM and the tomoatos on ceiling! LOL. I am going to try cooking beans the regular way first and see if i get into it, then will tihnk of pressure cooker... Sounds like it could be a good thing if you were really into the BEANS!!!

Vivre, yikes! I don't blame you for being pressure-cooker-shy after that experience!! I've been reading about how that was a common problem with older pressure cookers, but the ones made today have numerous safety features built in so that can't happen. I admit, the one and only time I've tried it, I was a-skeert to open the lid, and spent a few minutes building up the courage to do it, fearing an explosion, but it was very unexciting and anticlimactic! LOL
Spring, I've made an adzuki bean casserole before (with leeks, squash, carrots, and other yummy organic veggiess) and it was soooo good! (They're also called aduki beans in some areas.) I found out about them from a British television show called "You Are What You Eat." (If I'd been eating my whole life the way this show advocates, I bet I never would have gotten cancer!)
PS73, I realized that I need to look into canning when we were getting way more organic produce every week (from a local organic farm) than we could possibly eat. I ended up giving a lot of it away or composting it... if I knew how to can, my husband and I would be eating organic vegetables all winter long! I definitely want to start canning next year when I start my first real vegetable garden!

Haha Vivre...the same thing happened to my grandmother! And so I was terrified, too! But Crunchy's right, the new ones are very safe...but I understand split peas can cause big trouble!
Maybe it's a testament to the wonderful-ness of pressure cooking, that our grandmas were willing to risk life and limb to use them! :-)
Adzuki beans are really nice (also sometimes called Aduki) small red beans with beefy flavor and texture. Nice to use instead of kidney beans (which I don't like too much...)

I learn so much here! Today I went to Whole foods and Trader Joes. I got Organic Adzuki beans, Organic Red Lentils, and organic veggies - came home and made a bean, legume and veggie stew! it was good! Thank you! Cooked the Adzuki beans, a lot!

Quick tip, my mom taught us to cool down the pressure cooker before opening it by running water over it to avoid the kaboom. A bit scary but it works.
