    I'm in Port Charlotte. Cell phone coverage is back...sort of.....

    Meals have been beef jerky and Cliff Bars that I brought with me, then MREs and today, the VFW (that's what I was told) brought by pork loin and roasted corn for us! :-)

    llimae, I loved your jellybean story. Made me smile as I’ve done the same thing. Unfortunately, it’s harder for me to put chocolates back on the shell than jellybeans.

    Special and Eric, I hope things improve soon in Florida. I know lots of people are working hard to get power back on and debris cleared, but everyone must be very tired.

    chisandy, I wish you and Bob an easy fast as well. I used to do a complete fast with my DH, but I can’t manage without water now that I have Sjogren’s.

    wallycat, I hope your procedure went well.

    I had no time today, so dinner was Japanese fried rice and chicken. Tomorrow I’ll make brisket, roasted new potatoes, green beans, and a hearts of palm salad.

    National Night Out tonight in TExas, Ariz, & other hot places (so the police don't have to suffer with bullet proof vests at 100 degrees) Unfortunately when we held NNO in August with the rest of the country, we always had a great turn-out. Not so much on a school night - and after our community pool has closed. Anyway my dinner was a litlte bag of Flamin Cheetos and two Mint Milanos.

    minus - she is indeed special - both of my kids have servant's hearts and always jump in to help - DS is a firefighter/paramedic, so it is in his DNA too. Years ago in Virginia, right after we had moved down to FL and he was up there in college and doing volunteer firefighting, he was on his way to work and passed a motorcycle versus car t-bone accident that had just happened - on a side highway. There were no emergency personnel on scene yet so he pulled over and ran to the motorcycle rider to check him, the people in the car were ok. He didn't have a clear airway so he got on that, and once he was breathing decently, he started checking for broken bones, etc. and came upon a gun in a shoulder holster. By this time more help had arrived, and they realized this was an off-duty police officer. He ended up winning a volunteer firefighter of the year award from the county because he interceded so quickly and potentially saved his life. The interesting part of that story is he told us all about the incident, but he didn't tell us about the award until it came up in conversation a long time afterward. DD is going back to help in Sanibel this weekend with her boat - ferrying Sanibel residents back to the island so they can retrieve valuables from their homes. Your dinner made me laugh - who can argue with Flamin' Cheetos and Milanos - it sounds ideal.

    eric - yay for the VFW feeding you guys. You're so close I feel like I should cook and come see you and feed all of you. Have you been given any idea of how long you will be there?

    We arrived home yesterday about 4pm. First time in several years that we didn't drip with sweat as we carried things inside the house. The temperature is quite nice this morning, in the 60's. My amazing 83 year old dh was up at 6:30 this morning and off to the golf course for a 9:30 tee time with his men's group. He has so much more get up and go than I have.

    Dinner last night was a subway sandwich that tasted delicious. I am thinking that I will buy catfish fillets for dinner tonight. Sides will be a vegetable and salad. I stepped on the scale this morning and was not surprised at the weight gain. I will not be buying cookies or ice cream today.

    Wally, hope your procedure went well.

    Special, your daughter is indeed a special person.

    Wishing everyone a good Wednesday. I will be busy with the work of moving back into the house after a four month absence.

    I go in around 9:30 this morning, crossing fingers.

    The new prep is MUCH more tolerable, thankfully.

    So first, "they" tell us it doesn't matter when we eat as long as there is a "window" for it; now they are saying it matters. UGH. (Also found a study that indicates that amyloid plaque may be protecting the brain not causing AD), but do scientists ever switch gears...anyone remember the low fat freak-show?

    10 years for follow up. WOOHOO.

    I will say my blood pressure was sky high they actually started the drip a tad sooner 😳

    I've been working 12 hour night shifts, after changing from 12 hour days, so I'a bit confused on days of the week. :-)

    Minus, thanks. I wish I could turn myself inside out, LOL...I can only take so much credit otherwise I'd have to "blame" myself for my breast cancer, LOL. Glad I can wait a decade (provided nothing icky crops up) and maybe they'll have a better way by then!

    I had a sardine sandwich on sourdough for lunch and will make a frozen pizza for dinner. I woke at 4:30am for the second half of the prep and feel sleepy; drugs didn't help; sure beats being hyper-stressed, LOL.

    Mazel tov on the "young gut," Wally. Cyathea, Bob doesn't observe Yom Kippur because he's Catholic. In fact, he barely observes Lent (I like to kid him that what he gives up is Mass) except for meat only once a day and no meat on Fridays.

    I managed to last until services were over at 6:15, as the sun was beginning to set. Instead of the usual challah, wine & grape juice, the sisterhood put out mini-bagels, cream cheese, lox, fruit and various Danish-pastry coffee cakes. I did cheat, with half a mini-bagel and a small piece of apricot coffee cake. Bob got home at 7:30 (having brought home smoked prawns from Calumet Fisheries), so we went out to Moody's Pub for burgers al fresco. All their tables are outdoors--they have a tri-level beer garden. Tonight was probably the last night till spring we could comfortably do that--it was 70F, but by this time tomorrow it'll be raining and in the 40s. So I'll pan-sear the sable fish tomorrow night, with the prawns as appetizers. I had my cheeseburger on a keto bun I brought from home, but even though I told them to hold the fries, they still charged me for them (and would not let me substitute extra tomato slices). But it is what it is, and there's a reason they've been open for 70 years, when myriad restaurants all around them came and went. (During the winter, they do only takeout--nobody wants to sit indoors, even though it's safe now, because the dining room is dark, dreary, and--well--Moody).

    Good news on the colonoscopy, Wally!

    DH and I enjoyed our pan seared catfish fillets last night. The side was steamed broccoli flavored with lemon juice and a little butter and s & p. DH mixed up his tartar sauce.

    Tonight will be salmon, creamed spinach and salad.

    Our group has dwindled. I wish Nance and Lacey and others would return. I miss them.

    Thank you, ladies. I'm glad it is over. If anyone has a good coping mechanism for "doctor anxiety," I'd love to hear it.

    Leftover 'za tonight. We are doing some light shopping and I may buy some mushrooms (not sure what they have) to pan fry to make it a side.

    Hello friends! Apologies for being so remiss in posting. I have no excuse really. I read your posts every single day but my meals seem so crashingly boring I can't bring myself to write about them. I'll try to do better.

    Last night was a bit more exciting. Yesterday was DH's birthday so for lunch we went to a new local eatery that specializes in Chicago style eats - Chicago dogs, Italian beef sandwiches, etc. (Thinking of you Sandy.) I had a Chicago dog (Vienna) with all the fixings and it was really good. Looking forward to trying their other things. They also plan to have craft beers as soon as their liquor license comes through. It's nice to have something like this so close instead of the run of the mill fast food joints that abound. Anyway, for his birthday dinner, DH wanted German food so I fixed Rouladen, sweet and sour cabbage, fried potatoes and applesauce. I did the Rouladen in the instant pot for the first time and it was a bit of a disappointment. I followed a recipe and it ended up being pretty chewy and not nearly enough seasoning. The pressure cooker always seems to require extra seasoning, so I should have adjusted. I'll probably make it again with adjustments in both seasoning and cook time. DH was happy though and would never complain anyway.

    Special - I was so relieved to hear that you and yours are ok and I couldn't agree more about your special kids. The devastation and need is so great right now I honestly don't know how people manage to cope. I'm sure many aren't and it's heartbreaking. Eric is doing good work too.

    Welcome home Carole! I'm sure its a good feeling and I'm glad that you didn't have a hurricane to contend with. Every time you post about your catfish meal I want catfish. I have some "nuggets" frozen that I could fix but there is a barbecue joint near me that has some of the best fried catfish I've had. DH hates it so he can get barbecue instead. (This is what I find us doing more and more instead of preparing home cooked meals.)

    Minus - LOVE those Flaming Cheetos! My GF DSIL just turned me onto a GF snack - Hippeas (sp?) They taste like Cheetos but are made from chickpeas. They're pretty good! Plus they have a fair amount of fiber. (I'm sure the salt content is bad.) If only they made a flaming hot version . . .

    Wally - I empathize with your doc anxiety. Today was my mammogram - always anxiety producing - but especially this time because I had discovered a lump near my armpit (opposite side from the bc breast). After a diagnostic mamm and subsequent ultrasound, it turned out to be a lipoma, which I had suspected but as you know, once you've had breast cancer every little thing is magnified. After agonizing about it for days, I feel like I've been released from jail.

    After my appointment, we stopped at Costco (always a mistake with my impulse buying DH lol).. So tonight will be some Costco everything seasoned frozen cod fillets, which I'll airfry and some stovetop mac and cheese and something green - probably broccoli.

    Tonight was a hungryroot bowl, lentils, brown rice/quinoa blend and sautéed shaved Brussels sprouts. Dessert was the last slice of an assorted cheesecake pack (4). Yum!

    Hello all, I too get remiss about posting but thoroughly enjoy reading about your meals, as well as general stuff. Whoever finds that antidote for scan/doctor/blood test anxiety let me know too 🙄

    Tonight I made a crockpot pot roast. A big piece of chuck on top of carrots, potatoes and onions from a local farm. DH and I are on an applesauce kick so that was the side. We were both pretty happy with it all.

    Hello, Nance! Loved reading your post. As always, I thought about you as dh and I drove through your former home town on our way south. I would never post if I waited until I had cooked something interesting and different. I, too, go through periods when I read and don't feel motivated to add to the conversation.

    Last night we had the baked salmon dish I have made numerous times. I topped the thick fillet with a mixture of plain yogurt, mustard, and dill and cooked it at 450 degrees until it reached 125 interior temp. The side was creamed spinach, one of my favorites, and a tossed romaine salad.

    It was a good meal and looked appetizing, too. I will be planning meals with the goal of losing some extra weight. Yesterday I thought of my father, who was a great gardener and supplied us with vegetables for many years, when I paid $2.50 a lb. for yellow squash. I feel bad for people with limited income when I check out at the supermarket with a few bags and spend $60 or $70.

    Nance, good to see you here. Ha, my meals are often very boring. I still enjoy reading people's postings because when I go through a streak of uneventful meals, I feel less alone, LOL. For example, yesterday was the leftover frozen pizza and a side of sauteed shiitake, maitake and oyster mushrooms.

    Tonight will be heated through frozen sausage pasta (heading to sequim for shopping).

    I had just "come to life" (awakened) and walked outside to see the sunshine. I was in my sleeping attire of gym shorts and T-shirt and wearing flip-flops when Xavier Becerra, secretary of the Dept. of Health & Human Services walks up and shakes my hand.

    Well as is typical around here, last night's fish dinner did not materialize. We were both not so hungry due to a late lunch and decided on cheese and onion omelets for dinner. Tonight DH informed me that he was craving corn chowder so the fish will be pushed back yet another night. I went to Fresh Thyme today to get some Sweet Tango apples (my very fave) which were on sale and also picked up some cooked lobster claws, also on sale. So DH will have his corn chowder and I'll add some lobster claw meat to mine (remember he is crustacean adverse.) Yum.

    Coincidently, a new Total Wine just opened next door to Fresh Thyme. Since we had never been to one we decided to stop. Wowza! That's an impressive amount of liquor! I'll probably be back to Christmas shop since we and our friends and family are of an age where we tend to give each other consumables instead of more "stuff". They had a lot of consumables to choose from!

    The kids and grand-dog are coming for a belated birthday celebration for DH on Sunday. At least I know what that menu will be: Baked rigatoni in a tomato cream sauce, a blood orange, red onion and blue cheese salad (wow - colorful!) and garlic bread.

    Carole - depending on how you go home, you may go by my new home too. I'm located between Interstate Highways 64 and 70. You are always welcome to stop instead of just waving lol.

    I really wish I liked salmon better. I loved it smoked but otherwise not so much. It's always so available and so many ways to fix it. I don't hate it (like DH) but I don't love it either.

Carole - I know you're glad to be home. Eric - what a fortuitous meeting (LOL). I can't go back to catch the rest of the posts since this "REVISED" BCO won't let me hit 'preview' and look back - but hi to all.

    As you can see, I do more "catch as catch can" than I do organized meals. Wednesday I boiled up a pan of macaroni. Half was served with a new "Mushroom" envelope - sauce & shrooms to microwave for 60 seconds. Thanks to you all for the tip, i froze the leftover pasta. Last night was fresh sauteed asparagus and salmon steaks poached in the microwave with white wine & dill. Tonight was a huge green salad with some of the left over asparagus added & Ranch dressing.

    The pricey yellow squash were delicious last night. I steam them (cut into chunks) until they're barely tender, pour out the water, then finish with some butter and browning. Our meat was chicken cutlets from a boneless chicken breast. I spead the cutlets with a little mustard, breaded the top side with seasoned bread crumbs and baked in 400 degree toaster oven. The condiment was Major Grey chutney, dh's favorite with chicken, which he does not like as much as I do.

    Nance, dh is not fond of salmon but he doesn't complain when I cook the version I described. His complaint is that salmon is dry but it isn't when not overcooked.

    What a cool experience, Eric!

    Tonight will probably be pork chops and tossed salad. Possibly sweet potatoes.

    Eric, amazing! But you certainly earned that illustrious handshake, ultra-casual outfit notwithstanding.

    As predicted, we had smoked prawns as appetizers Thurs. & last nights. Thurs. night I pan-seared sable fillets (salt, pepper, & lemon juice), insalata Caprese over arugula (using our dwindling stash of ripe tomatoes), and sauteed snap peas with garlic/ginger stir-fry oil and toasted sesame seeds. Last night it was walleye, Jerusalem salad over arugula, and baked small purple sweet potato (salt, pepper, cinnamon & butter). Not sure about tonight--Bob's working late. Had avocado toast & an egg for brunch today. Maybe throw together a Greek salad with sardines.

    I didn't realize the bone in pork chops were so large until I took them out of the package. I pan fried them with light breading. We shared one and one is left over. Not sure how it will be eaten. The sides were smallish baked sweet potatoes. I ate half of mine. Also a delicious tossed romaine salad with a perfectly ripe avocado.

    My weight is edging downward on the scale much to my satisfaction. I have cut down on my food consumption and am not feeling hunger.

    Today I will cook a package of Camellia small dry white lima beans with some sliced smoked ham hock. And rice, it goes without saying. Side will be tossed salad or a Betty Crocker salad with canned pineapple slices. We had one recently and the leftover pineapple is in the refrigerator.

    Carole: I'm sure old enough to know, but what is a "Betty Crocker" salad? All I can think of is pineapple slices with a scoop of cottage cheese? And maybe a maraschino cherry on top? My Dad wouldn't eat cottage cheese (or sour cream or milk) but my Aunt Hazel used to make that.

    Wally - I have a bag of shredded cabbage & was wondering what to do besides coleslaw. Hmmm - and I have some green lentils...

    Sauteed thin carrot 'coins' last night with onion, garlic, splash of vinegar, pinch of sugar, tarragon & dill. This was my second time to make this recipe. It was delicious the first time, but surprisingly boring last night in spite of the extra garlic. Served with leftover salmon steak. Today I'll boil some ramen noodles, add chicken broth & some of the leftover carrots.

    Kosher-style hot dog on a keto bun with mustard & sauerkraut for dinner last night, plus a couple hours later a grilled cheddar sandwich on seeded keto bread. This aft. Bob brought home quiche and salad--sad to say, I ate the crust. Bad Sandy.

    ..demobilizing. In Miami tonight, home tomorrow. All I need to do is fuel the rental SUV, turn it in and get on a plane tomorrow morning.

    Dinner tonight was sea bass at the Rusty Pelican..too tired to tell if it was good.

    Minus, the pineapple salad is slices of canned pineapple over lettuce with a dollop of mayo on top and grated cheddar cheese. Actually quite tasty. Old-fashioned type of salad, hence Betty Crocker.

    The white lima beans were very good with little chunks of ham hock. The white rice developed by LSU that doesn't spike the blood sugar didn't cook to my satisfaction. Had a bit too much crunch to it. I followed the directions on the package. I like my brown rice better.
