    Lol Eric and I don’t blame you, they’re so good. Went back for more this morning to take home, I got the burrito and taco plate. Ate the shredded beef taco, considered getting a couple more knowing I’d be sad when it was gone but didn’t, and now I’m regretting it. Dinner will be plenty of the leftovers.

    Our retired vet friend called to tell us his wife was just diagnosed with grade 3 breast cancer. He went on to say the report said that there was no apparent node involvement.

    Right now, they are waiting to meet with the oncologist and breast surgeon to discuss treatment options.

    DH decided against attending his meeting last night so I did cook. I used a new recipe for a sheet pan chicken thighs dish. The veggies were fennel, apple and onions all tossed with olive oil and sprinkled with salt. I kept the onions separate. Seasoned the chicken thighs. It turned out good and I will make it again.

    The salad was romaine, pear, and blue cheese dressed with a bottled poppyseed dressing.

    Eric - so sorry to hear about your friend and the Stage 3.

    My SIL had a double lumpectomy today - two lumps with 'abnormal growth' in the same breast. Something I didn't know about was the prior placement of a "Savi Scout" by each area of involvement. She said that hurt more than the ULS biopsies. But of course - one lump was really close to the chest wall. Surgeon wouldn't make any other guesses until the pathology is back next week.

    Nancy, what a scare you & your DH had--not the most pleasant of introductions to a hospital stay (not that any, other than for childbirth, is pleasant). Glad they were able to cardiovert his A-fib and hope they've got a treatment plan going forward. (If he doesn't have an Apple Watch, sounds like it'd be a good early Christmas present--all of them from Series 4 onward have the Cardiogram app that can detect A-fib).

    Illimae, I've never had Palmini "rice," preferring the cauliflower kind of ersatz rice. Last night I made "365 Hearts of Palm "linguine" cacio e pepe. Can't fool my eyes or my palate: the "noodles" were roundish, short, and of a texture not even approaching that of pasta. (More like zucchini). The only faux pasta that comes close to real al dente texture (IMHO) is shirataki (konjac root). I will take my hearts of palm as they are, not masquerading as anything starchy.

    Eric, so sorry to hear about your friend's wife's bc. "Grade 3" or "Stage III?" What kind--invasive ductal/lobular or DCIS/LCIS? Even though they're non-invasive, the latter (Stage 0) can often be Grade 3. Hope they caught it early and the pathology is favorable.

    Friday night we went to the Palm with the kids. Bob & I split a 4-lb. steamed lobster, which he supplemented with a filet mignon. I barely made it through the tail--I gave him one giant claw. Including the sides, lots of leftovers. He worked all day & evening Sat., so for brunch I made myself a lobster roll on a keto bun and for dinner had leftover Costco chicken & Caesar salad. My Sun. brunch was a veggie-and cheddar omelet; Bob came home early enough so for dinner he had his leftover filet and hash browns, I made more lobster rolls (his on a classic Martin's potato roll) and we both had the remaining Caesar salad and creamed spinach. Mon. brunch was another lobster roll (this time with lettuce & a slice of one of our last homegrown tomatoes on a keto hamburger bun); dinner was the last of the leftover chicken, plus some green beans almondine & mushrooms I put together. Yesterday was a BLT for brunch and that faux cacio e pepe for dinner.

    Meanwhile, yesterday afternoon Bob called from work to ask me to buy some Pedialyte, because of lower-GI distress. He admitted it started Sunday afternoon but didn't tell me till yesterday. He chugged some Vitamin Water and half a liter of cherry Pedialyte and went off to bed. My brunch today was black coffee and guacamole toast with an egg. A couple of hours later, Montezuma took his revenge on me, too. I called to see how he was, and he's fine (had lasagna for lunch and Italian wedding soup for early dinner). We both agreed that despite not having any of the usual COVID symptoms we should both test, I hung up & went first: negative. He came home and tested: also negative. So there went one theory that he caught it at Union Health on Thursday--because with symptoms starting Sunday and today potentially being day 6, he'd have tested positive by now. So we figured it was norovirus (or another GI bug, only one that doesn't hit "above the waist"). It couldn't have been foodborne, or else we'd have gotten sick at the same time.

    I sipped Pedialyte & water all day, and by tonight felt well enough to have some instant keto bone-broth coconut-chicken soup. Might nibble on a slice of white keto toast. But no need to go "full-on-BRAT:" I hate raw bananas (we have a ripe one I bought to attempt to put into a lunchbag with stubbornly-green tomatoes), and the applesauce & plain white rice are too carby (and unappetizing). I figure that between brunch, the soup, and the sugar in the Pedialyte I've had enough calories for the day.

    Geade 3. "They" do not think it had not spread.

    Right now that's all that's known, so they are in that Twilight Zone that is the beginning.


    Added. I was MIL's house today packing things up. I left Snowflake at 6:30am, got to her house around 11am, packed and loaded with test daughter's dad's help, met the termite company and air conditioning company folks, and then met with the real estate agent (same one who handled our house sale). We finished up around 7pm, when it got dark, and will go back to pack more stuff tomorrow.

    I just got back from the city with load 2 of the stuff from MIL's home. There was a lot of delicate stuff that couldn't be boxed, so I could only load the trailer "one layer deep", which uses only about 1/4 the capacity of the trailer.

    Dinner tonight was "fend for yourself". I hadn't eaten anything today, so I ate some dinner the moment I got home at 5pm and that was before anyone else was hungry. Now everyone else is hungry and I'm full. :-)

    Dinner last night was a rice stir fry with diced cabbage, carrot, celery and cooked leftover chicken. DH did the stir fry (I had everything prepped) and I made a romaine salad. The meal was good and all the stir fry eaten.

    Tonight will be ribeye and baked potato.

    Last night was whitefish en papillote with julienned peppers (four color), mushrooms, fresh parsley, dill, & tarragon; a Caprese with the last ripe homegrown tomato, over arugula and English cucumber; and green beans almondine with garlic & mushrooms. Deglazed the pan with white wine and whisked in butter to pour over the green beans.

    Brunch was ATK's recipe for a 2-egg French omelet with cheddar, topped with chives. Not sure about tonight--maybe defrost something or have a can of sardines over arugula. (Eating alone, as Bob is working late).

    Tonight was sausage and eggs on toast for MIL. She likes eggs over-easy and I was able to show her how well a dutch oven does for cooking "over-easy" eggs without having to turn the eggs over.

    Sharon and I had ham & cheese sandwiches.

    My ex-DH called this morning to see if I wanted a patty melt if he drove across town. Just saying - this hole in the wall makes the best patty melts in the world - so of course I changed my plans. (Mae - it's Angie's on Hempstead). HUGE patty melt & perfect fries. I was so full it was all I could do to partially stay awake this afternoon. So of course I'm not tired tonight.

    Tomorrow is a public safety meeting with our City Council representatives, the Chief of Police, the Chief of the Fire Department, the Commander of HPD North Division, etc. Lunch will be served, but I can't even imagine what that might be.

    Dinner was leftover pork loin with a squeeze of Sweet Baby Rays BBQ sauce, cheese tortellini, and Brussels sprouts. I browned the cut side of the sprouts and then finished the cooking with a half cup of evaporated milk (less fat than cream or half and half but still very good). DH said if he wasn’t on Coumadin he could have had a whole plate of just the sprouts. The tortellini was an odd choice, but I needed something quick because I’ve exhausted my freezer stash of quinoa and rice. I’ll restock the freezer over the weekend

    I was expecting a light lunch at the City Council/Police/Fire meeting. Instead it was huge 'loaded' baked potatoes - toppings added by personal preference. So I had butter/sour cream/cheese/scallions on the potato & opted to have the delicious pulled pork on the side. Since this was around 1pm I certainly won't need any dinner.

    Sharon did all the cooking today. Pancakes for breakfast, chicken tacos for lunch and, for dinner, spaghetti with sauce from a jar that gets augmented with lots of vegetables, some hot peppers and mushrooms.

    MIL and her cat are settling in nicely. I got MIL's cabinets set up and MIL is putting stuff away.

    MIL's cat, Duffy, is (I think) trying to get the dog to play....dog is laying down, cat goes nose to nose with the dog, cat then lets out a loud meow, turns around looks behind him at the dog and then runs down the hallway, dog doesn't move, cat repeats this several times over the next hour or so.

    Wow...24 hours with no posts. Dinner tonight was an onion-garlic-sweet potato mix cooked in an air fryer.

    Dinner last night was a pizza from nearby Domino's. It was delicious. Love their thin crust. Tonight it's back to cooking.

    Sat. night at Regalia, we split a house salad and tuna carpaccio. Our entrees were veal: scallopine Marsala for Bob, parmigiana for me. (It's been years since I had it). Our sides were grilled asparagus and cauliflower Calabrese. Yesterday's brunch at Big Jones was a crawfish/andouille/chevre omelette for me, and gumbo ya-ya and a Benedict (on popovers) for Bob. We both had butter lettuce as our sides. Last night's dinner was Regalia leftovers, plus a Halo Top ice cream bar and later keto granola. I basically OD'ed on fiber and "sugar alcohols," and have a touchy tummy again (though not like last week), so I doubt I'll eat dinner. Debating even handing out Halloween candy, just strewing it on the porch and replenishing the supply as needed. Or I'll just wear a pink mask with my pink sweats & UGGs and tell everyone I'm "AARP Barbie."

    Cleaning the fridge after 3 days eating out last week. Yesterday was guacamole with lots of chopped tomatoes on HEB Rosemary crackers. Today was an egg salad sandwich on rosemary/olive oil sourdough. I'll probably hit the grocery store tomorrow since I have a coupon for $5.00 off my total purchase in addition to 7 or 8 other coupons. If not, I'll make spagetti ala vongole.

    I'm not participating in trick or treat this year. One of my neighbors is having a huge open house for kids from everywhere. Sad to say, her signs brings a ton of older kids into the neighborhood. I prefer the little ones.

    I did have a soft-boiled egg & dry toast for brunch, along with an espresso. After nearly 4 hrs. of candy-distribution-duty, I was actually hungry. So I heated some Kettle & Fire bone broth mushroom bisque, topped it with a few drops each of dry Madeira and black truffle oil. Second course was grilled Swiss & extra-sharp Cheddar on keto (0 net carb) bread. As to the candy, I'm down to a handful of mini-Tootsie Pops and milk chocolate Lindors & Ghirardelli squares, plus an untouched bag of Dove dark "pumpkins." Not a fan of lollipops or milk chocolate, so those are safe from me. And as long as I don't open the bag of Doves...

    Lots of tricks or treaters were expected so earlier today I made a crockpot version of mushroom bisque. I used a delicious Polish mushroom package of mixed type, broth, lots of garlic and onion, dry sherry and creme franchise. Quote nice but we agreed it's a once in a while dish. Very rich and earthy.

    I made an oven dish for dinner with pork chops, thin-sliced potatoes, sauerkraut and apple. I tried to make just enough for dinner and nearly succeeded. The dish was very good.

    We haven't "done" Halloween for many years after a couple of years of buying candy and being stuck with it. We don't live in a subdivision and are located well off the street.

    Tonight will be pasta with the linguine in the freezer.

    I bought a 10 (weight) ounce bag of candy "just in case", but no one came by, which doesn't surprise me as there are only 3-4 houses per mile of road.

    Dinner last night was the "planned over" spaghetti that Sharon had made.

    I think one more trip is all that is needed to get all of MIL's stuff up here. Her house will then be empty and it will be easy for the contractor to come in to get the house ready for sale.

    She is *loving* it up here....no traffic, no vehicles with sirens going by the house, no aggressive pan handlers and someone to talk to besides her cat.

    The only issue we have had was our dog sneaking over to eat her cat's food and then needing to "go outside" every few hours...even at night. MIL put the cat food up where "kitty" can get it, but not our dog and now the dog doesn't wake us twice at night.

    Dinner ended up being shrimp scampi instead of vongole. Since I was gone most of the day I cheated and used an 'envelope' of Campbell's scampi sauce. Turned out to be quite good & not a lot of sodium.

    DH is invited to a lunch after his golf today so he may not be hungry for dinner. Not sure what I will come up with for a light meal.

    Last night was definitely a heavy meal. Linguine with meat sauce and no side. Which meant we ate big helpings.

    I'm sorry to see this forum come close to disappearing. I have enjoyed coming here since 2009.

    Carole - I agree. I miss those who are not posting - but I do understand their frustration with the BCO systems. URGH!!! I'm still hanging in there, but to be honest I have quit going to the Active forums and trying to help new people who are reaching out. And I'm not recommending this site to anyone I learn has breast cancer. SIGH!!!

    I live in a grocery store 'desert'. Well - technically there are a couple of smaller stores but their produce sucks, their meat is worse, and people get robbed in the parking lots. So I usually drive the closest Kroger. Kroger has quit delivering print ads to my zip code. I used those ads to make my grocery list every week & I've made enough waves that supposedly they will be mailing me weekly print ads. (do you think they really care since they are buying up the Albertson's group now too??) Anyway - w/o the ads to inspire me, I've just run into a store to get milk or bread and put gas in my car the last few weeks. Bill was $13.00 last week. Yesterday I finally pulled together all my coupons (including one for $5.00 off if I spent $50) and completed a major shopping trip. Since I was too challenged to keep running track of the dollar costs I put in the basket while looking at my extended list, I just replenished lots of things like cheese & canned goods. Oops - $100.

    Dinner tonight will be sushi - California Roll. Since I have to monitor a neighborhood vote for several hours tomorrow night, I picked up a "Home Chef" pepperoni & mushroom flatbread pizza that was on sale. I've never tried their deli items before so it will be a test.

    I miss you guys. I read all the posts, I just hate this site more and more. It got me through so much when I was first dx; loved this thread and then they changed everything and made staying signed in ridiculous. Who needs to sign in for every post??!!!!! I've certainly complained on the tech threads. Sigh. As an aside, Eric, congrats on getting MIL moved in and how lovely that she has family so accepting of including her in their fold. Brings a tear to my eye. We should all be so fortunate.

    Hope everyone is feeling good/better. I am scared to try and go back on this thread incase something crashes here, so apologies if I don't mention you by name. DH and I had our booster (we both got oral sores, which is a thing it seems). Dh also got his flu shot; I got my flu shot yesterday. The booster didn't destroy me nearly as much as the first 3, so that was nice.

    AuntieNance, hope your DH is doing OK.

    We are finally getting rain!! And there was snow in the Sequim mountain area. WOOHOOOOO. My favorite seasons..fall and winter. We'll see how many trees survived our droughts when spring comes.

    DH had his first of two zoom calls. This was for his cancer and there are several studies/clinical trials he may be eligible for but sadly, we'd have to schlep to Seattle...we are seeing his PSA rise so concern is the anti-androgen meds are starting to fail. Hopefully a few will come down and he can coast. His second zoom will be with a surgeon for his back pain. That would be in Edmonds. I may have to pack up the cat since he requires 2xday medicating. Getting old...not fun for any of us.

    Here are a few meals we had since I stopped posting...today, I am making a whole poached chicken and we'll have the quarters; the breasts will be used "in" something....I'm thinking a chilaquiles casserole of sorts or maybe chicken noodle soup.

    Yesterday, I made havarti grilled cheese. It has been ages since I've had Havarti. Costco had it so I bought some. I'm in love. It makes the best nacho melting cheese, the best grilled cheese. Heck, this may replace my need for mozz when I make pizzas. Nutty, super-melty, stringy but not rubbery. What's not to love!?!

    Other meals included:

    sesame crusted tofu with broccoli and red rice (a varietal not like red beans and rice); used the leftovers for egg fried rice w/ tofu.

    Frozen pizza

    Tuna melts (with the havarti Heart)

    Lamb shoulder steaks braised in red wine with butternut squash and broccoli,

    Grilled salmon with rice and sauteed cabbage. Used the leftovers to riff on a Kedgeree of sorts

    Mac and cheese

    Cod, zucchini/black bean/corn/red onion saute

    Frozen burgers with veggies

    BBQ chicken socca "pizza" (that is a 2 dayer)

    Peanut sesame noodles with a 1/2 bag of slaw mix

    Frozen pizza

    Crab quiche,

    Thawed spaghetti and meat sauce,

    Vegetable soup with some costco brats cut up as "meatballs" or meat...

    That's about all I can think of

    I hope the mods look at our whining and do something.


    No trick-or-treaters here...ever. Stopped buying candy since DH ate it all.

    Forgot to add, mInus, I check the circulars on line since I download the digital coupons anyway...qfc and safeway both have on line ads and you can few them after 9pm on Monday or anytime tuesday. I look at them to give me ideas on what to make, not always buy.

    Today was DH first cardio doc viisit. I think it eased his anxiety some finding out how common AFIB is and how much or little it should limit his activities. He's almost never sick with anything more serious than a cold so this has shaken him up quite a bit. He's doing very well but I know how he feels when suddenly you're looking your mortality in the face.

    We had a cool spell so I made vegetable beef soup with a small piece of chuck roast from the freezer. Tonight though is chef salad. I don't have much appetite after a week of doctor appointments. I'm just tired.

    Carole - I make a sheet pan dinner with apples, onion and fennel that's quite delicious too. It has an orange vinaigrette.

    Mae - those chimis look awesome!

    Sandy - thanks for the info about the Apple watch. Good idea.

    Eric - I'm sorry about your friend. Wishing the very best for her. sounds like your MIL is settling in nicely. How wonderful that you can accommodate her.

    I hope that people are just busy and not abandoning this thread. It's seen me through a lot even if I don't always hold up my end of the bargain. I enjpy every post.
