    Oh my goodness Wally - every bit of that sounds absolutely delicious.

    I had a large salad with lots of greens - purple cabbage, carrots, cucumber, black olives and the last of my sauteed asparagus from earlier this week. My ex-DH has to pick up something in my part of town so called to buy my breakfast tomorrow. I suggested a delicious breakfast taco/burrito place, but he's a traditionalist and wants to go to Dennys. So grand-slam it is....

    Last night's dinner meal was pork fried rice that made use of leftover rice and the large cooked pork chop. Additional ingredients were celery, carrot, and yellow bell pepper. Also two eggs scrambled in the middle of the pan. Sprinkles of sesame oil and soy sauce. The result was delicious. We ate it all.

    I did the majority of my grocery buying at Walmart in MN. Since my return home, I'm shopping at nearby Winn Dixie and the prices are eye opening. $8 for my Hellman's Light and eggs for $5 a carton. I may be forced to go to Walmart's occasionally to stock up on some items. Yesterday the deli case at WD had empty spaces for many of the sandwich meats usually on display.

    Leftovers tonight. Glad I made the meal earlier because DH and I both got our bi-valent booster. He also got the flu shot. He's feeling just fine. I had mine in my left leg and feel like I'm carrying another body part. OY on the pain, never mind the exhaustion. I went to bed at 8:30 and got up at 7:00...may lay low for a few days.

    I may not stop here for a bit till they figure out this idiocy of having to sign in after every post. Maybe I'll feel better by then.

    I'm home and have filled out the travel expense report. Tonight I had a vege burger, a bunch of grapes and an apple.

    The fruit was the first I've had in a couple of weeks. It sure did taste good. :-)

    I had the Phizer booster and the flu shot yesterday, too, and don't feel good at all today. I didn't sleep well last. Dinner may be a sandwich.

    Carole - I did the Covid booster two weeks ago & my only SE was extreme fatigue. I slept for 18 hours straight. Had the flu shot today. So far the only problem is the soreness at the injection site on my hip. But I still had an easy meal. One can of smoked oysters and a 6" demi baguette from Central Market baked to order from frozen. Opened a bottle of San Gregorio Termperanillo. It's good but I like the San Gregorio Garnasha better.

    Today was food acquisition day - two grocery stores and a trip to Trader Joe’s. The Trader Joe’s resulted in tonight’s dinner - spinach and ricotta ravioli for DH, chicken and cilantro dumplings for me with a side of fried rice made from leftover brown rice and assorted veggie bits from the refrigerator. Dessert was two dark chocolate peanut butter cups. It was all very satisfying. It was hard to stop at two tiny peanut butter cups.

    Carole I hope you feel better tomorrow. I had my Pfizer shot along with the flu shot last week. Like minus, other than a sore arm the only side effects I had was some serious fatigue. After a good nights sleep, I was fine the next day. I hope you are too.

    I feel better today. I got very irritated at dh yesterday because he didn't show much concern and didn't do anything about dinner. At the last minute he offered to go and buy something. I had cheese and crackers and left him to his own devices.

    The injection arm, my left arm, is very sore. My pharmacist suggested a shot in each arm, flu and Covid, but my right arm is "protected," so I had both shots in the left.

    Dinner has been a bit haphazard, and I am always thrown off by a Monday holiday for DH. For some unexplained reason this time I kept thinking I was a day ahead instead of usually the day behind. I am easily confused it seems, lol! A couple of nights ago we had pork chops, which I broiled rather than pan cooked - didn't like them as much, but the sweet potatoes were great. Last night I just made dinner for DH as I had a late lunch. I had frozen cooked hot Italian sausage, half a jar of marinara, and a partially used box of angel hair pasta. I combined the marinara, sausage and added some vegan cream cheese, then added the cooked angel hair. I had also cooked some baby zucchini in lemon oilve oil and herbs and frozen them before we left for CO, so pulled those out for him too. I got a free bundlet from Nothing Bundt Cakes after my hair appt, for my birthday (last Sunday) so we shared that - raspberry white chocolate - it was yummy. So, I guess technically I had dessert for dinner.

    I think I may do an entree salad for dinner tonight - I cooked a lot of chicken and then froze it before the hurricane so I may use some of that. It is supposed to rain today, but so far that has not materialized. I always feel like cozy food when it is raining, so I may warm the chicken with some chopped green chilies and cheddar cheese over black beans and rice. No rain yet, but the humidity has returned... I am ready for fall.

    carole - I hope you are feeling better. I am making notes about everyone's reactions. My experience so far has been initial vaccination, sore arm, second vaccination, solid fatigue and bleh feeling for 24 hours and sore, first boost, 36 hours of really feeling bad and sore arm for a day, 2nd boost, 24 hours of fatigue but less than first boost. I need to plan ahead for the new boost (which I will do next month) and allow a couple of days with no necessary activities - I am expecting to not feel good. I don't do flu shots because of allergies to ingredients.

    auntie - were those the little TJ's peanut butter cups? I love those things and I have zero restraint - I can eat that whole little carton of them in a sitting. I have to look away when I am shopping there and pretend that they don't exist.

    Tonight was a throw together meal of prepackaged seasoned Turkey meatballs with sautéed cabbage and onions. Better combo than I expected.

    My shot SE history (all Moderna): 1st shot, slight sore arm; 2d shot, body aches & slight fever for 24 hrs; 1st booster, same thing; 2d booster, nada; and bivalent booster, no fever but allover aches & crankiness for 36 hrs. Flu shot? Sore arm, period. I had the bivalent booster in early Sept., too early (per both my PCP and Bob) for a flu shot; but last week I got the flu shot now that Bob was given his at the hospital and Chicago has started seeing flu cases.

    Sun. night we walked to Regalia. Appetizer was a crabcake with mesclun salad; entree was branzino with cherry tomatoes & green beans. Mon. was leftovers: the crab cake and the rest of Sunday's brunch salad for lunch and the branzino & veg (extra couple of homegrown cherry tomatoes) for dinner. Tues. was Norwegian Arctic fjord trout (dead ringer for Atlantic salmon). Had planned on cedar-planking it, but the pouring rain put the kibosh on that. So I pan-seared it and served it atop black lentils (Melissa's cryovac, nuked). Accompanied it with sauteed snap peas and steamed asparagus with hollandaise. Last night, before leaving for the Who concert (first truly indoor concert since pre-pandemic), an Atkins brownie meal replacement bar; and upon returning home, four nuked chicken wings (today was my biweekly mani). Tonight will be surf & turf at home since Bob wants to watch the Bears game (Gordy is braving the chill at Soldier Field). Bob brought home a filet mignon from his dinner last night, and I'm going to make cod en papillote with peppers, yellow squash, tomato, red onion and herbs. Will saute mushrooms in Madeira & butter to go with the steak. Maybe also bake a sweet potato, of which I'll have less than half since it's pretty big.

    Special - happy belated birthday. I don't think there is anything in the world better than Nothing Bundt Cakes. (Oh well - maybe Sees candy, but...)

    Nance - I try to get to TJ's twice a year. They have such fun things.

    Carole - I think you have every right to be irritated. Cheese & crackers sounds like a good solution.

    Mae - I haven't seen the turkey meatballs. Are they a frozen product?

    Made a new 'salad' today. I already adjusted it a bit & will do more but it's pretty good. Cabbage, julliene Persian cuke & carrorts, green onions, garlic, cooked ramen noodles - marinated in low sodium soy sauce. rice vinegar, sesame oil & a pinch of sugar. Recipe called for cilantro but I'm one of those who gets sick just at the smell.

    Yesterday I made a hearty chicken and mushroom soup with onion, garlic, celery, carrots and orzo. The mushrooms were leftover sheet pan roasted mushrooms with a splash of balsamic vinegar. The chicken was breast meat from a Costco rotisserie chicken.

    Earlier in the week, I used the dark meat to make a quick coq au vin. I didn’t have pancetta or cognac from the “Once upon a chef” recipe, but sweet vermouth was a fine sub along with a smooth red wine. Since the chicken was already cooked, the meal was quick and easy. One night we had it with quinoa and the next with Israeli couscous. The sauce is delicious and I’ll make that again.

    Tonight will be black bean and roasted red pepper toastadas with fresh salsa and lime crema

    We went to a Mexican restaurant with our neighbors last night. They picked us up. We ate on the patio at a table next to a fountain. I had a margarita and a nacho plate. The conversation was good and we had a delightful time.

    Minus, They same in a hungryroot box, precooked but not frozen. I haven’t seen anything similar in my usual stores but wonder if Aldi might have something similar.

    We had baby back ribs finished on the grill and okra and tomatoes as the side. The fresh okra was nice. There was enough left over to freeze for use in a chicken gumbo in the future.

    Today's meal was at the B-day party for my 7 year old niece in a HUGE City Park. It was not lunch, just off the wall snack mix - cheetos, chocolate cake, Lays PT chips, Pepperidge Farm goldfish, vegan cupcakes, fruit gummies...well you get the picture. When I finally got home, I had a bowl of cheerios with a banana. I'm considering some Hagen Daas but honestly a large gin & tonic sounds better.

    Interesting that you mentioned ribs "finished on the grill" Carole. I'm guessing you started cooking them inside? I was just reading an American Test Kitchen recommendation for dry rub ribs - starting ribs on the grill for an hour or so and then finishing them in the oven w/some water in the bottom of the pan to keep them moist.

    Went to Eataly last night for its Oct. truffle & Barolo specials. It was cheat night. We shared both courses: Grande Piatto antipasto (several cheeses--I could identify the gorgonzola, Parm. Regg. and aged Provolone); mortadella, speck, prosciutto, porchetta, and salami; and savory zeppole (like beignets but not sweet--I had one of the three). Entree was bistecca Fiorentina: bone-in ribeye with oven-roasted parm-crusted potatoes and scallions, and a cream sauce. We sprung for the white truffle supplement--3 gm. shaved at table over the whole thing. We took home 1/3 of the antipasto and half the entree. Will supplement the latter tonight with Brussels sprouts, and salad left over from this morning's takeout brunch quiche. Likely Coravin some Chianti.

    chisandy, that sounds soooo good. I’m living vicariously through your post. 😁.

    Dinner was a frittata with mushrooms, red bell pepper, scallions, chives and Dubliner cheese. Sourdough toast with butter filled the rest of the plate. Dessert was pear slices with 1/2 an ice cream sandwich (Heavenfull)

    Last night was frozen pizza for dinner. Neither of us felt like cooking.

    Sharon and I recently went through the process to volunteer with the Sheriff's department and this weekend we helped staff an orienteering (map, compass reading and route finding) event.

    These events hone the skills of search and rescue teams, most of which are staffed by volunteers and are sponsored by some government agency. Hence the involvement of the volunteers to the local sheriff's department.

    Saturday was nice weather and the biggest problem Sharon and I had was staying awake while basking in the warm sun and cool temperatures. Sunday was an "embrace the suck" day with rain, cold winds, thunderstorms, and flash floods.

    Everyone made it out okay although most were quite happy to get out of the rain and into a warm place.

    I did get to see, for only the third time in my life, the beginning of a flash flood. A dry desert wash then a small slowly moving puddle of water a few inches deep and within 10-15 seconds the water is waist deep and moving 20-25 miles per hour.

    Eric - I love orienteering. Sorry the weather didn't cooperate Sunday.

    I made Korean Pork today. I think it was Wally's recipe? I couldn't get the liquid to thicken, but the taste was delicious. I served it over black rice, which was too sweet as a contrast. Next time I'll serve it over mashed potatoes or Korean Braised Potatoes. Tomorrow will be fried rice either w/leftover chicken pieces or leftover pork pieces and green onions, mushrooms & spinach. (or maybe peas?)

    Saturday night's leftover-fest was so filling that by brunch time yesterday my tummy was too full for anything more than coffee. Besides, the place we'd planned to go for brunch no longer is open on Sundays except for special holiday lunches. We went out for an early dinner to Bistronomic downtown (which we passed en route to Eataly). We split a country pâté appetizer and a green bean/chêvre/frisee salad. Bob's entree was a humongous lamb shank. Mine was half a duck breast with golden beets and turnips. Dessert (we had wine left in our glasses) was a hunk of Ossau d'Irraty (sheep) cheese. He had leftover lamb, but I shamelessly finished my entree. Brunch today was a small piece of avocado toast topped with an egg, over which I shaved some of a tiny white truffle I bought Friday night at Eataly. Tonight's dinner (for me, as he's eating at the office) will be his leftover lamb, and whatever salad I can throw together--or maybe search the freezer for cauliflower mash.

    I usually just lurk and want to eat everything you guys make.

    Has anyone mentioned the nightmare that has happened since so many people have gone to very specific diets. Not talking allergies. I used to like having several friends over and making a fancier meal than I would normally do for just the two of us.

    Coming out of 2 1/2 years of pandemic:

    One friend eats meat but hates fish

    One will only eat fish but not meat

    One wants fat free and gluten free

    One wants dairy free

    ....................the list goes on.

    I guess I could make a tomato sauce with chopped up veggies and serve it on gluten free pasta and pass around the freshly grated parm.

    When we have gatherings....If we all took into account everyone's allergies, preferences and "can't eats", all that would be available would be distilled water (with no lemon) and an empty plate.

    So, the gatherings are pot-luck. Everyone just makes dishes as normal and we all let everyone know the ingredient list.

    Eric great idea on having potlucks with posted ingredients. Whenever I offer to take something to a gathering I don't tend to ask too many questions but bring along my recipe for those who need to know, for health or preference reasons. Sort of a defacto version of your idea.

    Tonight was chili and cornbread night. Tomorrow will likely be a pork tenderloin and a leftover potato-havarti mix up from Monday, and vegetables of some kind.

    So much going on today I never got to a meal. Finally around 4pm I had some Spanish Peanuts. The fried rice I planned & prepped never happened. Finally at 7:30pm I settled for some delicious mushroom soup from Trader Joes.

    Dinner tonight was a chicken-vegetable-rice dish. Sharon got it ready to cook and I cooked it. I had the easy part.

    I had similar "problems" as Minus did with regard to getting a meal. I wasn't hungry for breakfast and I missed lunch because I was getting my electrical tools out of storage. They were, of course, in the back of the 10 foot by 20 foot storage unit and it took about 3 hours to get the tools and replace all of the boxes.

    Elderberry, I think I would rather go to a restaurant and let my friends deal with the menu!

    Last night was wild caught catfish fillets, pan seared. Yellow squash cut into chunks and oven roasted. Tossed romaine salad with favorite ingredients.

    I am, again, shopping online for a small rice cooker with a brown rice setting. Any recommendations welcome.
