Still enjoying Christmas Turkey. I had a sandwhich for dinner. and DH had all the fixings, mixed together and soaked in tons of gravy.

Cream Chees Seafood loaf:
One solid loaf of Philly Cream cheese, press on shredded crab meat, pour on cocktail sauce. Eat with Wheat thins. Yummm.....sort of a snack, but makes for good dinner.

Laurie- Wow, you plan a whole week in advance? Im impressed, i barely know what im doing from one day to the next, do you watch the racheal ray show where she does the week in food show? She has great recipes for the whole week.

You too debbie. We are well away from the beach and pretty well protected from the winds.We should be ok but then sometimes there is that freak gust so you never know. No matter where you live there is always some kind of danger.

Chabba, we are right on the beach like 3 minutes away so we really feel it here the wind has not let up all day or night. suppose to be worse tomorrow. I was suppose to go to the communtity center tomorrow from 8 am till 3 to help packages food to take to the seniors i dont think i will feel safe enough to drive in this, we will see.

Good morning ladies! Yes, Laurie, the 3:40 timeslot is not so good. I'm really glad we'll be going back to 5:40 although we risk some heavy inbound traffic with Celtics and Bruins home games.
Tonight my daughters and I will go to a place called Finale where we'll have a dinner of light appetizers followed by the "grand finale" - dessert! We are celebrating the college graduation, so this will be fun. She is going to drive me so it's totally a "girls night out."
My itching wasn't too bad overnight. The cortisone cream and a couple doses of benadryl work pretty well. With six more full treatments to go (and then the five boosts) it looks like my chest will be an ugly mess. But the end is in sight!
SheChirple - love that crab spread! We made that back in the 70's...I thought everyone had forgotten about it. Another good one is to take cream cheese and mix in the cocktail sauce and shrimp, then use Ruffles to dip or spread it on crackers. Back in the 70's we made it with SauSee Shrimp Cocktail and it was those teeny little shrimp. Now I use good cocktail sauce and chop up some medium shrimp to mix into room temperature cream cheese. Yummy but a waistline killer for sure!

Debbie- I HATE planning my meals for the week, I can never think of what to make or what we will feel like etc. But with the boys the grocery store is a project and not one I want to tackle multiple times. They are fun to shop with, but just getting them in coats, strapped in the car, then in the store, they have to have a muffin, etc etc. Every week I ask my DH what he wants for dinners and he always says "what ever you pick is good. You do a good job." This does not help me at all. Or he says-"I'm almost out of deodorant" thats what he said today and I asked him if he thought that would be an appetizer? He laughed....but still did not suggest a meal!
I'm going to go start Michelle's sauce in a bit....looking forward to it.

I dont know about you all but i feel drained, dont know if it is from all the stress of christmas and change of weather but i just want to stay in bed all day lately. Or could be from my last drinking binge last friday, never had drank that much in my life, but you would think i would bounce back by now. LOL!

I missed the Belgian Chicken. Who posted it? I could go back through the old posts.
Tonight I'm making pizza including the dough for the crust. I have some printed recipes from Mary Ann Esposito's web site. I learned from one of her tv segments about quick pizza yeast. Not sure yet about the toppings but one will be Italian sausage from Rouse's supemarket. They make it themselves. Rouse's is a Louisiana company. I meant to go to Fresh Market and buy some asparagus but was too tired after walking 18 holes of golf. DH and I will probably each put toppings on our half of the pizza. I have a stone that I've never used and a new pizza peel that DH bought for me from Amazon. We'll also have a big green salad.
Laurie, I'm impressed with the week's meal planning. I helped my niece do that earlier this year. We made out the menu. Wrote a grocery list and then went to the supermarket to buy the groceries. I was hoping to help her become more organized. She has 3 children, 8, 6 and 2. The number of foods they eat is very limited because of the way they've been brought up.
One of my faults in grocery shopping is browsing and buying items I "might" use in some dish eventually. I need to stick to ingredients I'll use right away.

Laurie, thanks for the Belgian chicken suggestion. I will give it a try next week. I sympathize with getting the kids to the grocery store. When my kids were small, I used to go at night while my DH was home. I have never been able to get a week's worth of shopping in one trip. I almost always run in almost every day and always have. Wish I could be more organized with it.

DH is off all week and cooked the veggie chilli last night and made salmon tonight. Tomorrow he is taking dd out to an Indian restaurant for a buffet lunch. Indian is not my favorite. I'll have leftover salmon, and they will probably not have much of an appetite for dinner. Then Friday, we go to NY to see wicked and stay overnight. Won't be cooking again until Sunday, new years. German tradition is for pork and sauerkraut on new years. I think I will try to do that, then the belgian chicken on Monday. This is the furthest out I have ever planned meals. I hate thinking out like that too. I think if someone would give me the menu for the week, I'd happily shop and cook, but I just don't like to do all that thinking and planning myself.

Kay- I am with you Indian is not my favorite to say the least. Good job on planning ahead for your meals! Even though it kind of sucks
I actually write on a calendar what I make for dinner each night to help me with meal ideas. So I flip through and see what I haven't made in awhile or what looks good. Check the freezer and see what I have for meats and frozen veggies and check the pantry. I usually have things on hand to do regular stuff like shepards pie, chicken and stuffing, salsa chicken etc. I plan five meals and then use two back ups of whatever I can throw together from the pantry/freezer. Dh should be home soon and the sauce smells goooooood! Thanks again Michelle.
Oh- Caro,l Debbie posted the Belgian Chicken- but I will try to find it in my e mail (I've shared it with a girlfriend)so I can copy and paste it for you if she doesn't do it first. I hate searching the thread for a recipe, there is so much to look through!!

Hi everyone! Home from #20 and our celebration dinner at Finale. OMG, the plate had 9 different desserts on it, plus my older daughter ordered a separate chocolate bourbon pecan pie. We didn't...couldn't...come close to eating it all!!! I've had more sweets in the past two weeks than I usually eat in a year, I'm ready for a break!
While I was out today, my DH took down the massive Christmas tree. The lights and ornaments are all over the place - we'll put the stuff away tomorrow. We will be gone for the weekend and decided the tree could go. It was getting crispy!

Laurie - I so remember those grocery shopping trips with little ones. I worked full time and had to be pretty good at planning meals, I don't know how I did it back then. Hope you enjoyed your spaghetti and meatballs tonight!
I'm in my pj's, I've lathered up my very red skin with cortisone and moisturel, and I took 2 benadryl. I wonder how long it will be before I'm snoozing???

Michelle, is the burn like a sunburn? That is what I was like. But I kept up with the Aquafur and some other cream they gave me, the only thing that I had to buy was cortisone for the foliculitis and that itched like crazy.

Bermuda was so wonderful now I am freezing. I slept like a log last night and got up at 6 to get ready for work. The day was busy so it went by fast, I will be busy tomorrow also.

I had 5 boosts also, you could see a brighter red around the template they use but you will be surprised how fast the healing process is when your done. With in a few days the redness was almost gone.

Carol- here is the chicken dish you asked about:
BELGUIAN CHICKEN <font>Belgian home cooks make many hearty one-dish meals using beer as the cooking liquid. Use Belgian beer if it is available in your area, otherwise use a full-flavored beer of your choice.
Belgian Chicken Braised in Beer (Kip en Bier, Poulet a la Biere)
4 to 5 lbs (1.8 - 2 Kg) chicken pieces
Salt and freshly ground pepper to taste
1 Tbs (15 ml) vegetable oil
1 Tbs (15 ml) butter
8 whole shallots, peeled
12 - 18 large mushrooms, trimmed and quartered
3 cloves garlic, finely minced
1 tsp (5 ml) sugar
4 carrots, cut into 1 inch (2 cm) pieces
2 Tbs (30 ml) all-purpose flour
1 - 12 oz (340 ml) bottle Belgian beer
1 cup (250 ml) beef stock
1 tsp (5 ml) dried thyme
2 bay (laurel) leaves
Finely chopped fresh parsley for garnish
Season the chicken pieces generously with salt and pepper. Heat the oil and butter in a large, heavy pot over moderate heat, and brown the chicken pieces on all sides. Set the chicken pieces aside, and to the same pot add the shallots and mushrooms. Saute for about 5 minutes, until lightly browned, and add the garlic and sugar. Cook for 1 minute, stirring constantly. Add the carrots, and sprinkle the flour over the vegetables. Stir to incorporate the flour with the butter, making sure there are no lumps. Add the beer and the stock, stirring to dissolve the flour and to scrape the bottom of the pan. Add the chicken pieces, thyme, and bay leaves, and simmer covered over low heat for 30 to 40 minutes, until the chicken is tender. Remove the cover for the last 10 minutes, allowing the sauce to reduce by about one third. Serve sprinkled with chopped parsley. Serves 4 to 6.0 -

Kay- I think the only reason why im not crazy about indan food is, i never did like curry i have tried to use it in some dishes but couldnt aquire a taste for it, i finally threw the spice out. They say it is good for you though.

I had a really good friend growing up that was Indian. When she asked me to sleep over I always asked my mom to drop me off AFTER dinner. Sometimes it couldn't be avoided and I would have to do dinner at her house and I ate and smiled and said thank you it's great. But peeeyew! I was young and it was stinky and the whole thing I think has stuck with me. I can't stand curry.

Today : Ne england clam Chowder Soup in Sourdough Bowls!! no crackers.....easy peasy and YUMMM...I'm on a seafood Kick! Need to boost my protein intake and lower my fat.
I don't eat much of the bread, just the soft innards that I can scrape out with the spoon when the soup is gone.

You're getting there Michelle! After today, you'll be in the single digits. I didn't have any boosts, but I think I hear that your skin begins to heal while doing them. I was also shocked how quickly my skin got back to normal. I finished 11/11 and it is as back to normal as it is going to get now I think. Just a slightly different shade than the other breast and I hear that will always be the case. Hope you get through without any more difficulties.
That is funny about your Indian friend Laurie. I was such a picky eater as a kid. My mother cooked very plainly, and I didn't like anything much outside of what she cooked. I remember eating over my friend's once and they had meatloaf. My mother made it with tomato sauce on top, but her mother made it with a brown sauce. I tried, but I kept gagging every time I put a forkfull in my mouth. And my friend was Italian, should have gone on spaghetti night!
When do you leave for Hawaii Debbie? It's coming up, isn't it?

shechirple that sounds so yummy...we have a restaurant here, its actually a castle, and they serve a clam-corn chowder in a bread bowl like that, and its to die for. I get itevery time I go there.
Laurie funny story. I do love curry though in small doses. Love curry sprinkled on my fried eggs.
I am not into the meal planning either, if someone would just tell me what they want, it would be so much easier. Love it when I cook something and my DH comes home and says "oh, I had that for lunch" When the kids were little i usually just catered to what they wanted. Now if I dont feel like cooking I just dont!
went out to bar/restaurant for hump night, they have a steak special every Wed and it was terrible. All the meals (10 of us) came out sporadically and I didnt get my steamed broccoli until my dinner was gone. Very disappointing.

I'm making a beef wellington for friends for tomorrow.. and will probably have chicken breasts tonite with some sauce or other and plain rice.. my kids are not eating as much salad.. and i seem to have leftover salad for lunch everday.. get a clue and make less salad? it's hard to teach an old dog new tricks.

Debbie, thanks so much for the Belgian Chicken recipe. I will put it in my recipes notebook and try it. It sounds delicious. A bit similar to southern "smothered" chicken but with some additions like the beer. What is a Belgian beer brand?
Laurie, I did make the pizza dough, and it was so easy. You mix flour, packet of pizza yeast, honey, olive oil, salt, warm water. I don't have a Kitchen Aid mixer, so I mixed by hand with a wooden spoon in a bowl. A minute or two of hand kneading on floured surface. Chop the dough in two pieces. Pat it out into circle on a piece of parchment paper on a wooden peel. You're ready for toppings!
DH and I each did a half (about a 12 in. circle). I spread garlicky olive oil over the whole dough. Italian sausage cooked and broken up ahead of time. Tomato sauce on his half. Sliced fresh tomato, minus seeds, on mine. Sliced black olives over all. Shredded mozzarella over all. Into the oven, 450 degrees, onto preheated stone. Ten min. later. Voila! Beautiful pizza with browned edges and browned bottom. It was delicious. We had the little bowl of garlic and olive oil on the table and dipped the bare crust around the edge in the oil. On a bought pizza this crust is tossed in the garbage.
The whole process of making the pizza was no more than 30 min. I have a leftover ball of dough in the refrigerator and leftover sausage. Plus a couple of leftover slices from last night. We each ate two slices. WW would have recommended one slice!
The best part is weighing this morning and not being heavier on the scales. Bought pizza is salty and causes me to retain fluid. I put no extra salt on my half. Just fresh ground black pepper.
Dh loves curry. I wish we had a good Indian restaurant. I've never eaten at one. I'm sure there is one or more in New Orleans. I should do some research. Is the food hot with pepper? I have a recipe for chicken salad with some curry spice and it is good. But not exotic.
The clam chowder in a bread bowl sounds delicious. One thing we love about visiting New England is eating delicious clam chowder.
I must go walk my 3 miles. It's sunny outside. Later today I'll take my mom for her hair apptment and buy her groceries. Hope everyone has a great day.

We started to make our own pizza several years ago, and it really is much better. We usually make it with fresh tomato. I slice it thinly and chuck it in a bowl with olive oil, salt, pepper and garlic. When topping the pizza I fish out the tomato slices, leaving behind the seeds and juice.
Another topping we like is spinach and clumps of goat cheese, maybe with some sundried tomatoes or sliced portobellos thrown in.
Lastly, for a total carb bomb, there is Roman potato pizza. Simply top the dough with olive oil, and then very thinly sliced potatoes (I use the food processor) that have been tossed with olive oil, garlic, salt, pepper and rosemary. You can add thinly sliced onion as well.

Momine, those are some great ideas for toppings. Do you pre-cook any of the veggies? Our pizza cooked in 10 min. on the pre-heated stone. I recently bought one of those pizza pans with the little holes. You cook the pizza longer when you use those pans. I especially like the spinach and goat cheese suggestion. I have eaten bought veggie pizzas with artichoke hearts. I also want to try asparagus, sauted ahead of time. The potato pizza sounds yummy.

I am drooling over here.... I am eating a sandwich and reading about pizza. The sandwich is not cutting it. Love a pesto pizza too. Pesto with spinach, fresh tomato and Gorgonzola.....mmmmmmmm.
