    Carole, yes, if I use spinach I wilt (or thaw, depending) it first and squeeze out the water. The potatoes will need more than 10 minutes to cook, but not much. The trick is to have them sliced very thinly. The same goes for the portobellos. If you slice them thinly, they will cook ok.

    Laurie, for dough, I take a teaspoon of dry yeast, dissolve it in 1.5 cups of warm water, let it stand about 5 minutes for bubbles to form, beat in some flour, a splash of olive oil and about a teaspoon of salt. Then I knead in more flour until I have a soft, but non-stick, elastic dough. You can use it straight away, but if you make it in the AM and let it rise in the fridge all day, it gets chewier. Just punch it down well before using.

    Momine thanks for the dough recipe, I have such a hard time finding premade dough in the stores that I like.  i am going to try this recipe.

    Making chicken parm tonight with spaghetti.

    Pork chops and gravy tonight with mashed potatoes and zucchini.

    Apple- I am sure you know the salad trick, but just in case...did you know if you wet a paper towel and lay it on top of your salad in a sealed container it keeps is fresh for much longer?  When I worked out of the home I would make a huge salad on Sunday and do that and eat off the salad all week when I packed my lunch.

    Tonight is Pasta Carbonara, my husband's fave, made by my husband, which is my fave...lol! Not healthy at all but oh so good!



    Still had leftover rib roast and diced that up and froze it along with the bones... Will make beef barley soup sometime later in the month when I can enjoy it again....



    Love a good home-made pizza whether in the oven or on the grill..... The rosemary, potato combo is out of this world but definitely a once in awhile one.... A real favorite in our house is pesto, chopped artichoke hearts and sliced, black olives... Sprinkle with shredded mozarella and, OMG... heaven.... The best part of making it at home even if you buy the dough (which I do) is everyone gets the toppings they want!



    Going to make the Belgian Chicken this week!!

    Mmmm....all these pizza creations sound yummy!

    Another bit of a wait for rads treatment this afternoon.  I'll be glad to get back to the 5:40 timeslot next week!  Glad I have just four full ones to go, my chest is looking pretty nasty.  I won't be wearing any plunging necklines for New Year's Eve...LOL!

    Pizza- here is something to make you all laugh.  When I was pregnant with my first son I wanted pizza all the time for a few months.  And I mean ALL THE TIME.  DH complained about it, "pizza again??"  I recorded a special on the food channel talking and showing pizzas and the different kinds, deep dish, thin crust, Chicago etc.  I would put it on for when my DH would get home from work and ignore the tv and just be doing something else.  Within 15 minutes he would say, ooooh, pizza looks good for tonight, what do you think?  Worked like a charm ;)

    luvrving keep going, you're doing great!  1 month post and looking pretty good  That aquaphor or what you're using will do wonders for your feet if you put it on before socks at night.  So save it, soon you will want pretty toes. :)

    For dinner, nothing! It's my birthday so I did laundry at the laundromat, cried because my benefits ran out last week and I didn't realize it, stepped in dog shi$, got my free car wash for my birthday, told my bff and daughter that I was too upset about my financial situation to go to dinner, then at 7.00 pm got a firm job offer!  The director called me and told me he was instructed to call ASAP because I might get another job!!!  So, Im having a beer and greek yogurt for dinner, I know, weird me. So its a good birthday! :O

    Happy Birthday Bedo!  Glad you had an excellent end to your day!!!    I don't know how people sleep with socks on...lol!  My feet get hot and then my whole body is hot!  I use the Moisturel or Beautiful body cream and it works pretty well.  I'm planning to go to Florida in February and I'll get a pedicure before I go.

    Glad to hear you are getting to the end... Sounds like one tomorrow then the weekend to hopefully heal a bit and then 3 more... So hopefully things won't get much worse...



    I was one who got pretty burned during rads. Started with the prickly rash around week 3 and by the end of the regular appts my skin had begun to resemble the look of cooked bacon... yuck! However, I found the boosts to be not nearly as hard on my skin and saw noticeable improvement during that week! Ironically, the worst areas were not even in the actual field they were radiating but, were due to radiation 'scatter'... I found that my skin healed amazingly quickly afterward and today, other than having a slight tan, you would never know...



    Hope the remainder of your appointments go smoothly and that you aren't too uncomfortable!

    Bedo- Happy Birthday!  Congrats on your job offer and ending it all in a great way.  So sorry you had a rough patch in the middle, but it all came around :)  So happy for you, 2012 will be great!

    Kay-We leave on the 7th to drive to portland(2 hours) and stay in a hotel there then fly out at 630 am on the 8th will arrive in hawaii about 1130 in the afternoon. woohoo!

    Carol- I think the belgian beer taste more like an ale, i couldnt find that one so bought a germain one ( I think) and i believe laurie used bud light? So any beer would do but it does give it great taste and depth.

    Michelle-Im glad you slept in, i know you needed it.

    Im drooling too all this talk about pizza- I like to buy pizza dough and roll it out and cut it in squares then put about 12 slices of pepperoni and some mozzerella on one side then roll up( i dont miss the sauce in this at all) I put an egg wash on the dough and bake until brown. So easy and fast and my DH loves these.

    I thought of one indian spice i do like and that is tumeric i put it on my cottage cheese with lots of pepper, suppose to be healthy for you and i do like it.

    Chicago deep dish, if made from scratch is the most caloric, most delicious recipe ever.  This recipe is pretty close to what i make, in the summer use fresh herbs.  it is important to put a layer of mozarella on the dough first.. sometimes, i pop this into the oven so the cheese will briefly melt and the toppings will then not make the dough soggy.

    Jeff Smith (the frugal gourmet) explains the process perfectly in his book.  I used to manage a pizzeria and another restaurant owned by Hans Morsbach on the south side of Chicago.. While his pizza never got the acclaim Pizzeria Uno's did, his recipe (our recipe) was pretty close.

    Now I am wondering if I should put pate inside the Beef Wellington I am making for friends tonite.

    They are pretty plain eaters, but the pate, just makes the dish.. Last nite i prepared the duxelles with Corvoisier.. pretty fancy ingredients for the onbudget family we are.. but these are special friends.  They've been thru the year from hell.  They have sponsored/adopted 7 special needs kids.  The cutest turned on them last year, because she wanted to drink and do drugs and they are pretty conservative.. Anyway, she accused the dad of child abuse and the courts came in and turned the family upside down.. making Harry move out of the house, costing them so much in court costs that they had to sell and downsize.  Brittney has always been a bit of trouble but the child protective services can be of such dis-service.  Brittney had done better with them than the family she is with now.  She is now on facebook advertizing that the whore house is open.. egads. 

    Poor child, poor family.

    I wish they drank wine so I could break out this bottle of lovely port I've been saving.

    anyway, on a hungry - feed the masses day, try the recipe... it's awesomely delish.

    Laurie, yes, dry yeast comes in little envelopes in the flour/baking aisle usually. You can also use fresh yeast (in which case have the water lukewarm(m but fresh yeast is usually hard to get in the US.

    A request.  Does anyone have an easy recipe for plain old bread like you use in sandwiches?

    Maybe whole wheat?  I can cook, but can't bake at all.  Also, where do you put the dough to rise in the winter if there's no 80-90 degree place?  I haven't done this since I was a teen but I'm in the mood.

    Bedo, I use the same basic recipe for almost any kind of bread: yeast, water, salt, flour. Usually, for bread, 2 teaspoons yeast, 2 cups water, 2 teaspoons salt, 2 tablespoons olive oil and then a bunch of flour. I beat it in flour until the dough is too heavy, then knead in the rest. If I want WW bread, I just use WW flour, if I want some seeds or oats in there, in they go.

    For rising, you really don't need heat. If the room is cold, the dough may rise more slowly, but that is OK. I often leave bread to rise in the fridge overnight or all day. Take it out of fridge, punch down, shape loaves and then rise at room temp for 30 minutes or so before baking.

    Went out to dinner on Tuesday with my grandsons in from Chicago for the  holiday..............last night out to dinner with my daughter........just the 2 of us......................oh boy, wait till I go back to WW.......not good.........Tonight I am going to the show "Motherhood", with 2 daughters, and daughter-in-law, and just hoping we come straight home, no stops......................these holidays are tough, actually their not..............its just all the invites, and lack of will power................oh well it was fun.............

    OK, dissolve yeast in water (have it warmish), let stand about five minutes, add a little flour, oil and salt and beat with a wooden spoon. Add more flour until you can't use the spoon, then knead in flour until dough is smooth and doesn't stick too much. For 2 cups water, you probably need about 1.5-2 pounds flour.

    If you make two small loaves from the dough, figure on baking it about 30-35 minutes in a 425 F (200 C) oven. If you make one large loaf, 35-55 minutes. If you make rools, 15-20 minutes. The bread should be nicely browned and should sound hollow when tapped.

    I keep rolled oats, bran, sunflower seeds etc around and throw a handful of each in there as I am making the dough. You can also add walnuts or sliced olives, or herbs, anything really.

    Apple- Sad, terrible story for your friends, i use to be a Guardian AD Litem (GAL) in hawaii for a couple of years and the judges always looked to us more than the social services- They put children back in a home where the abuse it horrible but take them out of homes where it is not warranted. I praise the foster homes at least most of them.

    I think since you are such a great chef and know how to cook your pate would be delicious in the wellington, but then again you have to like liver. 

    My grandaughter called me at 7am this morning, just to talk, and to remind me her birthday is coming up. I didnt have the heart to tell her it was early and she woke me up.. LOL- I couldnt go back to sleep so im up early for me and the boards are still busy.
