    I grew up being served - but not really eating - liver and onions. My mom underestimated my staying power when she said "you will not leave the table until you eat that" haha! It is not on my list of faves, but I do like rumaki - the old school appetizer made with chicken liver.

    Dinners of late have included taco salad, black bean soup, and we grilled porterhouse steaks on Sat night with sauteed yellow squash and cucumber salad for DD's beau birthday celebration, spinach artichoke dip was the appetizer. Dessert was strawberry shortcake - we are at the front end of Florida's strawberry season already. I think tonight will be a sheet pan dinner of pork roast, broccoli, and halved small golden potatoes. Tomorrow night may be a late night snack as dinner - I bought tickets to Hamilton for DH as part of Christmas (I saw it in San Francisco in for my birthday in 2019) so we will get home late - he is coming straight from work to the theater.

    My mom did that, "You can't leave the table until you eat the brussels sprouts". They were boiled and I *DID NOT* like them. At 4:30 am.dad comes out and says I can go to bed. :-)

    Brussels sprouts, baked, are good, but boiled....not to me.


    I'm brewing coffee for continuing the electrical work in the garage. I have an old kerosene heater that I'm putting to use. It will not keep the garage warm when the garage doors are open, but the flat spot atop the heater, designed to be a cook top, is a wonderful place to keep the coffee pot warm. It's 34F degrees and the heater is also good for warming my hands. Also helping with the hand warming is the old navy watch standing (no handle) coffee mug.

    Special, enjoy Hamilton! We saw it in Chicago in 2018, and bought the live version on Disney+. In Chicago, Wayne Brady played Burr, but the night we went he didn't do his usual post-show improv. I grew up eating liver, but broiled. It was kinda leathery, so I wasn't a fan. But floured & pan-fried rare? Yum. Caramelized onions? Double yum. Add bacon? Yes, please! Unfortunately, the flour puts it off-limits for my diet.

    But I did cheat last night, to celebrate losing all the weight I'd gained over the holidays and then some. (Housework & cat-care is exercise for me, plus PT and 2x/wk strength training). Bob was working late (had a huge patient load besides office hours), so my dinner was leftovers from Calo: coleslaw to start; then garlic spinach and the remaining spaghetti aglio e olio with added grape tomatoes & basil. Unfortunately, I carb-snacked late and woke up this morning with double charley-horses (L calf, R shin/foot/ankle). So now I know my muscles are my "carb cop," the way my (now-absent) gallbladder used to let me know if I was overdoing fats. Funny how pain can be a more effective disciplinarian than the conscience.

    Tonight he's bringing home a Costco chicken, so I will make haricots verts almondine, a tomato-arugula salad, and (for him) quinoa. And back to the intermittent fasting. If I behave myself (except at my birthday dinner) I should show a net loss since Nov. at my March weigh-in.

    Last night we had the crab; I added baked beans and bought a mushroom assortment to pan fry for sides (trumpet, oyster and shiitake). YUM. Our elderly, unwell cat loves crab and last night was no exception.

    Tonight I'll either make bean nachos or a sort of Chilaquiles (which would give us leftovers and deciding on a new meal gets kicked another day, LOL).

    My allergies have started. In January. Devil Local news seems to think we will be colder than normal in the next 3 months, so a gal can dream.

    DH's PSMA-Pet scan was cancelled in Sequim and now we have to schlep to Edmonds. Dreading that trip. Sorry if I ranted about this already.

    Editing to add: I have never in my life purchased a rotisserie chicken. I guess I need to explore that.

    Sharon and I went to the gym today. She lifted weights and I did an easy cardio workout to compliment the intense cardio one I did yesterday. Today was 7 miles on a stationary bike and yesterday was 3 miles on the treadmill....both remind me of some days at work...work hard and not get anywhere.

    Dinner tonight is leftover chicken alfredo. It used to be prime cuts of beef were the "show off" foods. Now, it's chicken. :-)


    I called around some of the stores in Show Low, AZ to see if they had any einkorn flour and the reactions were either "no" or "what's that?". I even checked some places in Phoenix and I got similar reactions, so if I want to try it, I'll need to mail order it. One of these days, when things settle down a bit, I'll give it a try. I like experimenting with breads from different flours.

    Hello again!Catching up and checking in after a trip to Fl to be with family and celebrate my dad’s birthday. I was worried DH and I would pick up Covid, but so far so good.

    Dinner tonight was taqueria chicken with corn esquites. I love the combination of charred corn, Mayo, lime and chilli. A dollop of sour cream with lime zest and a sprinkle of cilantro makes this a favorite.

    I made a sort of chicken chilaquiles. Leftovers tomorrow.

    Eric, vitacost sells einkorn and if you wait for a sale, it is reasonable for what it is...if you use vitamins or other supplements, 50 bucks of an order gets free shipping.

    Today was cold boiled shrimp mid day. Then warm gingerbread with REAL whipped cream for dinner. I'm defrosting an almost 3 lb pork loin for tomorrow. I've decided to cut it in two pieces and cook half with tarragon and half with Bronco Bob's Tangy Apricot Chipotle Sauce. One of my neighbors has Covid so I'll take him some pork, frozen Olathe corn that I cut off the cob in the summer and a carton of instant mashed potatoes that he can nuke himself.

    Yesterday I hit stores for the first time since Christmas in my 'use what I have' challenge - WalMart for another sick neighbor, used book store, HEB, Total Wine, Costco & Kroger for an Rx and some fresh produce. The above mentioned neighbor wanted only what Costco calls 'shrimp cocktail' but which is actually a huge clam shell container full of cold boiled shrimp - so I had to get one for myself too. I also picked up a two pack of quiche at Costco - one cheddar broccoli and the other spinach artichoke. I'll cook one on Friday to share with the sick neighbor & freeze the other. And hooray I have salad makings!!!

    Yesterday's brunch was a couple of quesadillas made with almond-flour tortillas, provolone & sharp cheddar. Costco ran out of chickens so last night Bob brought home a shrimp tray (yeah, the infamous "clamshell") and a rack of (sauceless) spare ribs. I sauteed kale with garlic, lemon, EVOO & Tabasco; and for starch I made him garlic bread out of the leftover Italian bread from Calo. I gave him the BBQ sauce that came with the Calo ribs, and I had mine plain.

    Brunch today was an EVOO-fried egg and a small BLT on low-carb bread with guac instead of mayo, featuring the last surviving little homegrown tomato (which was perfectly ripe). Tonight, ribs & shrimp again. except I made haricots verts almondine; we both had sugar-free BBQ sauce on the ribs and I took the shrimp cocktail sauce and added mayo & Creole mustard to make a facsimile of remoulade. No starch for either of us this time.

    No HK tomorrow--her DH has a PCP appt. and then dialysis. She, instead of the neighbors, will take him so she can talk with the docs (and he can't b.s. her). I will be away from home (self-care/vanity appts.) from the cats' morning feeding time till 5:30 or maybe 6. So I will doubtless be cleaning up from the physical manifestations of their resentment. Then I have to do my resistance training (bands, dumbbells).

    Dinner last night was taco salad made with ground beef. I often order taco salad when I eat (very occasionally) at a Mexican restaurant.

    Dinner was microwaved frozen peas, a hash of ground beef, quinoa, onions and yellow bell pepper with a green side salad with tomatoes and cucumbers. I seasoned the hash with coriander, cumin and sumac. Good, quick (I had frozen cooked quinoa) and easy.

    Has anyone made “marry me chicken”? Thinking of making this one: Once Upon a Chef Marry Me Chicken

    After dividing the 3 lb pork loin before cooking, I ate the piece that was marinated & roasted with Bronco Bob's Tangy Apricot Chipotle Sauce. Absolutely delicious. And gave the rest of that piece to the neighbor who has Covid.

    Cyathea - I'll have to look up that chicken.

    Carole - your DH must be recovered if you're back to beef taco salad.

    Dinner tonight was a quick "make use of leftovers" meal of rice, beans, shredded turkey and marinara sauce. It actually was quite good.

    Minus, dh isn't completely recovered but is much better, following up with urologist and cardiologist. He is eating less than before but is eating. Last night he manned the wok shaped skillet and put together our meal. I had cut a pork tenderloin into slices and then cut the slices into smaller pieces. The veggies were yellow squash and zucchini and mushroom. The last ingredient was cooked brown rice. He sprinkled some soy sauce and sesame oil. The finished dish was "pretty good" but needed more sauce flavor.

    I had dh cook all the pork so there's leftover cooked pork in the freezer, making me think of SpecialK's great food organization.

    Never let it be said that I am not impressionable. Yesterday I ordered Einhorn flour and chickpea flour from Amazon. After reading some recipes for Einhorn bread, though, I realized there is whole wheat Einhorn and all purpose. The recipes called for the all purpose. Not sure which one will arrive at my door, though I can easily check.

    Tonight's dinner may be crab cakes out of the freezer or pasta with Italian sausage that is already cooked and frozen. Probably the crab cakes and roasted asparagus (not yet cooked!!).

    We very much enjoyed Hamilton, entertaining to see the ways in which each cast, San Francisco, the filmed original Boradway cast, and this one, individualized their performances. All are fantastic! We got home quite late so did not have dinner - or even a snack!

    Last night was a sheet pan dinner - broccoli tossed with olive oil, lemon pepper, and garlic salt, very tiny red potatoes that I cut in half and tossed with olive oil, seasoned salt, garlic powder and pepper, and sliced fully cooked kielbasa. Only took about 15 mins in a 400 F oven.

    I have been staying fairly quiet - I had a skin cancer removed from the outside of my left lower leg 10 days ago and I normally have an elliptical wide excision with stitches that stay in for a couple of weeks, then are removed in the office. This time they felt that they couldn't safely close an elliptical excised area since the skin was tight without enough flesh underneath, so they had to excise the area and leave it open with a pressure bandage. This is going to take a long time to heal because it is low on the leg, so I have to be bandaged all the time. Bleh. The good news is that it doesn't really hurt.

    Dinner tonight I think will be chicken stroganoff type dish - I have some mushrooms, sour cream, and chicken breasts that need to be used up. My DH got me a Le Creuset 13" deep skillet for Christmas so I am breaking it in tonight! It is HUGE, but I love that I will not have to cook things in batches. Will accompany with roasted carrots, and either brown rice or mashed potatoes.

    cyathea - I love that corn/mayo/lime/chili flavor combo as well! Have not made the marry me chicken, but I have seen the recipe. I am not a huge fan of sun-dried tomatoes, but because they are in the creamy sauce rather than by themselves I think I would like it. Only because the post jarred my memory I also looked at Ina Garten's engagement chicken recipe too - a whole roasted chicken with onion and lemon. As she often says "how bad could that be?"

    I looked at the marry me chicken recipe and would definitely enjoy it. I like sun dried tomatoes but rarely eat them except in a restaurant dish.

    From all these comments, I had to look up the marry me chicken recipe and saw that I’ve made a similar recipe with basically the same ingredients served over pasta called Tuscan Chicken. It was generally very good, I tend to love most things made with heavy cream. It was the only time I’d cooked with sun-dried tomatoes and thought they were a little chewy and the flavor a bit too intense to blend with the rest of the ingredients. It’s been awhile since I made it but I think I decided I’d substitute a can of petite diced tomatoes for the sun dried ones if I ever made it again.

    I finally got myself in to see a nurse practitioner at a cardiologist’s office about my high blood pressure and elevated heart rate. She put me on bp medicine and yesterday I had a pharmacological stress test, waiting for results. I get an echocardiogram next month. My three brothers have all had heart surgery and my sister recently had three stents put in so it runs in the family.

    Carole, I bought the Parish rice you mentioned and love it; hope those 2 ingredients work out for you too.

    I have a love-hate relationship with sundried tomatoes. I use them all the time in salads because they keep and I never have to worry about how mealy the tomatoes are. I've never actually cooked anything with them.

    I'm going to use up the baked beans, flesh it out with baby spinach and make "shakshuka" (eggs) in the concoction. Thawing shrimp for tomorrow and I'll have to dream up a recipe to use up baby bok choy, the shrimp and a sweet potato.

    I guess I'm more of a "comfort" food cooker! I made a super easy chicken stroganoff tonight, served it over mashed potatoes in stead of egg noodles, as I had the mashed potatoes in the freezer. Plus, I only have a single electric burner to cook on, and my micro wave.

    Not the most appetizing looking in a pic, but quite tasty and I would make it again.

    I printed the "Marry Me Chicken" recipe. But I'm not a fan of sun-dried tomatoes either. I have to agree with Devine - I'd use diced tomatoes instead of sun-dried. The recipe is sitting on the cupboard right next to Carole's Stroganof recipe. Yup - anything with heavy cream or sour cream or BOTH.

    Special - I had a friend recently go through the same thing. Not enough skin to pull across/over. I understand being held hostage to an open wound. At least it's not summer on the beach.

    Devine - sure hope all you tests come back with good news!!!

    Goldie - for goodness sakes - you still don't have your stove installed???

    Today's meal was sliced pork sandwiches on Hawaiian Rolls. And (OK I'll fess up) a bowl of KETTLE ruffle chips with Himalayan salt.

    Edited to add - evening libation was bourbon & butterscotch Schnapps.

    Minus correct, I do not. I have the stove, but waiting on Lowes to send someone out to convert it to propane. It's been since mid August.

    A sheet pan with the thawed crab cakes and the asparagus and cauliflower was in the oven at 400 degrees when suddenly a message flashed on the electronic screen and the oven refused to go back to 400 degrees. Today I will look up the manual on the GE gas stove that is 30 years old plus a few years. DH replaced the electronic board some years ago.

    Dinner probably won't be an oven dish!

    Eric I do, but Lowe's is supposed to be out here Tuesday. I'm not in a hurry until the construction crew come and they take the wall out in the bedroom behind the stove, as the gas line runs in that wall, and I certainly don't want any leaks.

    Shrimp with baby bok choy, mushrooms, red onion over brown rice (japonica short grain).

    I've started marinating the shrimp for a few hours in fish sauce (nam pla) and garlic, regardless of how I use them (asian, italian, cold for salad); they firm up beautifully, require no further salting and they taste like umami bombs. I've also found my "perfect asian 'sauce'" from Bon Appetite. So few ingredients but always hits the spot. I tweak as I wish but now have a backbone "sauce" for Asian stuff.

    DH and I both ate more than we needed to because it was restaurant worthy for both of us. I don't always hit it out of the park, but today was great.

    Thurs. night I got home late-ish in the rain after mani-pedi & hair-a-thon, then cat care. Bob was late too. I made a quick remoulade and we killed off the shrimp along with romaine. Bob had an entire can of chicken & sausage gumbo soup, and I had the toppings off the remaining tavern-style sausage pizza.

    Last night we braved dining out. I was nervous (first meal out since Jan. 2), but Bob pointed out that this is about as immune as we're gonna get. Restaurant Week began last night. We kicked it off with Publican Quality Meats' annual Cassoulet Fest. Been so long since we'd had cassoulet--about 7 yrs. ago at B'way Cellars. PQM (a butcher shop for the Publican restaurant, which shop closes at 6pm) reopens at 7 every night till 2/5 for a group cassoulet dinner. It had done so once a year through 2019. Its chef-butcher had traveled to the Gascony region of France in search of the fabled dish--and found the best at a little joint run by a pierced-and-tatted spike-haired punk chef. He made it with a type of bean grown only there, plus sausage and confits of duck & pork ribs. Unlike other versions, no tomatoes or bread crumbs whatsoever. Due to supply chain issues, they couldn't get the beans from Caracssone, so substituted a variety from California, which were even better.

    Best cassoulet I'd ever had (made sure to take home leftovers for brunch today). The beans were crunchy on the bottom (like the rice "socarrat" in paella) and toasted on top--so much so that Bob wondered what kind of nuts they were. Came with freshly-baked slabs of heavenly sourdough rye from Publican Quality Bread. Started with a Little Gem salad with pickled onions. Dessert was an apple gateau grand-mère topped with housemade yogurt (made from already-tart crème frâiche). They offered everyone extra beans to take home, but we demurred. Got home 9:15 with no desire to late-night snack on carbs or anything else.

    (Bob drove up from work, I cabbed it down--with a taxi driver blasting choral praise & worship music the whole time, singing along. I felt it best to keep my mask on and not comment, despite the street construction detours). We will walk tonight. (2-1/2 blocks).

    Heading over to Regalia tonight (probably for just soup, salad and an app). Tomorrow night to Avec (Mediterranean) in the West Loop for its Restaurant Week pairing menu (featuring sweet potatoes, bacon-wrapped stuffed dates, chicken shwarma, and semolina donuts) plus wine pairings. We will cab it.

    Yeah, the menus are carby, but if I don't indulge at home I'm fine at night. My recent health issues (lately, bloodwork indicating I'm "percolating" multiple myeloma a a decade or so down the line) has made me decide to eat intuitively (and stop eating when satisfied rather than full). Besides, cat duty (especially "doody"-duty, aka litterboxes), hauling groceries & hand weights are giving me exercise.

    At Regalia tonight, we shared a Mediterranean salad and an app of seared Wagyu beef carpaccio; my entree was three giant prawns with sauteed tricolor peppers & Brussels sprouts.

    Sandy, the cassoulet sounds wonderful. Also other foods you describe. Cassoulets have always had a great appeal for me when I see them made in cooking shows or read the recipes.

    Wally, I "need" that perfect Asian sauce! Also do you have a link for the Einhorn bread you made? It's ironic that my flour delivery and oven malfunction occurred almost simultaneously.

    DH corrected my memory about his replacing the memory board in the oven some years ago. Instead a repairman replaced it. There was a note in the stove manual. It must have been quite a few years ago because the house call was $65 and the cost of the part. The house call now would definitely be more than $65. DH watched the repair and noted how simple the process was and thought he could have done it himself. The memory board is no longer available because of the age of the stove.

    Dinner was especially easy and quick last night since the Italian sausage was already cooked and just required thawing. While the linguine cooked, I added Rao's marinara to the sausage and made a tossed salad. Good as always.

    We will probably venture out to Lowe's during the am and look at stoves. DH, our family shopper for big appliances, has checked out Consumer Reports recommendations.

    As luck, the bad variety, would have it, my hybrid car has been acting balky about leaving the carport. DH figured out the problem yesterday, the starting battery. We decided we would let Toyoto do the repair since Eric doesn't live nearby. LOL. There was a time when dh would have bought the battery and replaced it himself. A time when he was more flexible and we were more thrifty.

    Carol, I have a new stove (gas from Lowe's) and not yet installed, however the broiler is in the bottom drawer and not "in" the oven itself. I did not know this when I purchased it. So, something to consider when you and DH are shopping.
