    My whole week was filled with taking care of all the stuff that got put on hold during the holidays and dh being on vacation during that time. Feels good getting back to a regular routine. SpecialK, your Colorado adventures of building a getaway home sound exciting! My dh will retire this year before summer, so I'm in the early stages of planning to redo a room in the house for my “getaway". It's a second living room of sorts where when ds was a teenager, he and his friends played video games and hung out. Time to lighten and brighten the space. Love hearing you're a Steelers fan! I'm an hour from Pittsburgh and have lots of connections to the city and surrounding areas. The 70s were an exciting and memorable time for the Steelers! Btw, your chopped Italian salad is right up my alley.

    Carole, glad to hear your husband is showing some improvement. Sandy, I hope you are on the mend from Covid.

    Goldie, yes, no to burgers for me!

    I made meatballs for sandwiches earlier this week and smaller meatballs to add to sauce for penne for the next day's meal. Today I'll make chicken stir fry with frozen vegetables and precooked chicken strips. Tomorrow I'll use the last of the left over Christmas ham in a potato casserole with pepper and onions.

    Hello to all! Hoping those who are experiencing health issues feel better soon. Enjoyed catching up on the posts of the many yummy meals people are having.

    Flew to LaGuardia on the 14th and returned on the 20th. No airport issues, and happy to say no Covid issues either. Stayed w/my sister in Stamford, CT. Lots of good meals! Her area has the most wonderful grocery stores, including Citarella and Balducci's, plus great pizza and Italian. We had a combo of foods purchased from these and eating out.

    Made a virtual repeat of Thanksgiving (roasted kosher brined turkey breast, sweet potatoes, roasted carrots & brussels, dressing) for Christmas. Hubs rescued herbs from the garden on the 22nd, just before the deep freeze happened here. I also made gingerbread. Leftovers lasted for several days, just prepped more carrots & brussels.

    Popped my Christmas present bottle of Moet for NY Eve and snacked on turkey summer sausage, truffle brie, port salut and dill havarti cheeses with water crackers. We had Chinese take away on NY Day. Moo Shu Pork for me, so I had pork & cabbage, which supposedly brings good luck in the New Year. Was naughty and also had Crab Rangoons. Hubs had Chicken Curry and Spring Rolls. We each had enough for a couple days of leftovers.

    Tomorrow will be roasted pork tenderloin, sweet potatoes and roasted brussels.

    Carole, I hope your DH can get some relief from his urologist visit. I hate when my DH is Ill. I’d rather be sick myself. Because he so seldom is, it’s very stressful. I feel guilty because I’ve put him through so much with my various issues but he’s always there for me.

    Sandy, I hope you continue to improve. My friend had the same gastric issues with paxlovid but she toughed it out.

    Last night was sharp cheddar cheese on multi-grain crackers. DH had canned tomato bisque, which I recently discovered. I find it better than canned tomato, which we like.

    I was not meant to be a nurse and caregiver is stressful. I don't think dh is the model patient. I am seeing the attraction of the boutique medical practice where the patients pay an annual fee and supposedly have access to medical advice 7 days a week all hours of the day and night.

    Leftover beef and vegetable soup for me for dinner. Maybe Ensure for dh. I tasted the vanilla flavor I bought and it really isn't bad.

    ((((Carole & DH)))) I hear you on the stress and agree with Auntienance, that sometimes, I wish it were me being the sick one because it is "easier." I still get PTSD going to doctors and it seems DH is always having some appointments. During the worst of covid, I was forbidden to be there unless he could not manage it himself and I am sad to say, I felt guilty getting a pass at some of those appointments.

    Is your DH not hungry or is his tummy too upset from the antibiotics? Smoothies can be gulped down easier than chewing food but if his tummy gets sick, that isn't going to cut it. Best to you both.

    Carole - we certainly understand about nursing. Exhausting even IF the patient is 'patient' & smiling & grateful (pun intended). I'm afraid I don't know many men who can handle being sick gracefully. Fingers crossed for continued progress. BTW - I always made Campbell's tomato soup with milk - not water. Is that the main difference with Tomato Bisque? If DH doesn't like the Ensure, I've been told that the new "clear" Ensure suits more tastes.

    I also agree with Wally & Nance - it's almost easier to be sick ourselves. How come we've been trained to feel guilty???

    Celia - SOOOO glad you've back. And Pork Tenderloin!!!

    Brunch today with my nephew & wife and 7 year old daughter and the wife's parents. They are from China & Hong Kong so conversation is sometimes difficult since English is not their first language and I don't speak Mandarin. They chose to meet at the Hare Krishna restaurant buffet. It's always vegetarian but Sunday is Vegan only. All the food was delicious. Final treat was vegan rice pudding made with rice, coconut "milk" and sugar. I goofed off all weekend reading. Tomorrow I need to get back on track with HOA & City business.

    Definitely on the mend today. Finished the Paxlovid this morning, Afebrile despite no Tylenol since Thurs. morning. Hoping to get my HK back, and that Bob doesn't start having symptoms. Tough enough to have to be an unassisted special-needs cat caregiver for a week--part of it while feeling really sick. I dread having another week of that AND having to take care of Bob (and remain on house arrest--perhaps it's okay for me to go out masked as long as I don't relapse/rebound). Heidi needs a vet tech appt. for her arthritis shot and nail trim; I noticed a tiny blood spot on the sheet, which means her claws are getting ingrown again. If Bob is home, I can't have my HK for yet another week, and I have nobody to take Heidi to the vet. Maybe they'll let me drive up in the car, have them pick her up and bring her back? Meanwhile, if I have to continue quarantine I will have to postpone my endocrinologist appt--which took four months to get. Ditto with PT--by the time I can resume it'll be back to square one. And will have to postpone the exterminator yet another week.

    Fri. he asked me what I wanted him to bring home, and I said "something mild & bland." So of course he went to Calo, had his fettucine monte e mare (sausage, shrimp, mushrooms) and brought me seafood risotto. He actually thought "rice is rice" so risotto would be okay on a "BRAT" diet. I did split it over three nights with no ill effects (except perhaps on my weight & glucose). I couldn't break his heart by criticizing him.

    Hi all

    Had roast vegies and chicken keiv for tea. I have a bit of an appetite. I have also been having ensure drinks, the dietitian at the chemo unit recommended them. I brought 2 packs of ready made ones and even got delivery and a good price for them. Ordering through the hospital was great.

    My bowel has been playing up the last 2 days and still not sure exactly which foods are causing it. I also get my toenail taken off tomorrow as I have a bad infection. Also on antibiotics for an infection from my kidney stent.

    I'll be glad when I can sort myself out and start eating and feeling better again. Since this is a food forum I haven't been eating anything exciting lately !!!

    It's been hot the last few days and a thunder and lightining storm just went through, a bit of rain as well. It was going to go around the city and just hit the outer areas so was nice to get the rain.

    Yesterday dh seemed like himself, alert and reasonable. A most welcome return. The antibiotics are doing their job even though one "job" seems to be reflux, despite his taking reflux med.

    So after days of not cooking regular meals I will plan to cook dinner tonight. Yeah for cooking dinner! The main dish will be hearty but bland. To be decided.

    Thank you for your concern and for tolerating my worry and complaining.

    Another off topic happening. We have a new baby in the extended family, a very happy occasion as the baby is much wanted by parents and grandparents. The mom is a great young woman, my niece Brittani. Her claim to fame is hiking the Appalachian Trail in her early 20's.

    Carole, such a great post. I'm so happy your DH is feeling better. Tossing in something you may already know...DGL. I buy it as a chewable tablet and found only one mfg that uses stevia/xylitol instead of sugar. It really is great. Dh used it a few times and I keep it on my night stand "just in case."

    Aussie, I hope you feel better soon and feel "sorted."

    Sandy, you are a good wife. I need to learn to zip my feelings sometimes, LOL.

    I'm making a peanut noodle dish tonight and will flake in any of the leftover sockeye we have.

    Gonna ask my PCP about that form of DGL, especially if he (and, on Wed., my new endocrinologist) wants me weaning off my PPI (which does inhibit calcium absorption). I tried it in capsule form back in the late '90s when my then PCP (into holistic/natural complementary medicine) insisted--it didn't work at all, maybe because I went cold-turkey on the PPI.

    Carole, glad your DH is finally on the mend.

    Having an egg-in-the-hole today (keto bread) along with a little prosciutto. Bob's bringing home mixed souvlaki & avgolemono soup from the Greek joint across from his office tonight. (Will eat around the rice and reintroduce myself to veggies).

    Carole - no man in my sphere (with the likely exception of Eric) is a good patient. Except when DH was in the hospital for the first time ever with AFIB the nurses all loved him and thought he was a model patient. Not my experience lol. Speaking of AFIB- thank you Sandy for suggesting an Apple Watch for DH I got him one for Christmas and he loved it and all it’s functions.

    Last night was chicken leek pie. Tonight is a whole leftover pizza with a salad.

    Carole, very cool of your niece to have walked the Appalachian Trail. I would have loved to do that in my younger years. And congrats to all of you on her new baby!

    My dh doesn't get sick often and isn't too bad as a patient. He had emergency surgery for a burst appendix two years ago and followed all instructions to hasten his recovery. He also did a great job taking care of me when I was in bed two weeks with Covid (while having less severe Covid himself) and I try to keep that in mind when he's getting on my nerves, lol!

    For Christmas, I asked for and got one of those pan racks for my various size skillets and am so happy with it! They're in a corner cupboard and now access to them is a breeze. After Christmas, I bought a set of four Pyrex bowls with lids that nest for storage. They're so versatile I love them. With these additions, I went through the cupboards and pulled out the odds and ends stuff I no longer use and donated it. Decluttering always makes me happy.

    I had two doctor appts along with other miscellaneous tasks to tend to today, so dinner was rotisserie chicken and broccoli salad from Krogers.

    I just got a call from the doctor. My LDL cholesterol is high enough that he wants me on a statin. So now I'm taking two pills......sigh.....

    Dinner tonight was Spanish rice for me and Sharon had a late enough lunch to not want dinner.

    Tomorrow I'll be changing the oil in one of the cars and then I'll begin to wire the garage electrical system.

    I have to agree with Nance about men and behavior when they're sick (although we may have to make an exemption for Eric). But yes, they can be good caregivers. My then 45 year old son took FLMA leave from his job and flew here to take wonderful care of me three times - when I had my mastectomy, and then again when I had implant surgery, and again 2 years later when I had ALND surgery for recurrence.

    I used the leftover poached chicken breast to make a delicious sliced chicken sandwich on pumpernickel bread. Accompanied by a huge portion of leftover green beans. And the last of the Ghiardelli salted caramel brownies. (Oh yum!!!) We're supposed to have 80 degree temps mid week, but when it gets back down to the 60s I plan to make some Gingerbread. Not sure it will be cold enough to cook my huge pork loin (again - I could kick myself for not cutting it in half before freezing) so I'll probably dig some other things out of the freezer that need to be cooked. I'm actually having fun foraging among the delicious possibilities on hand instead of running to the store every week. So tomorrow??? Ivar's Boston Clam Chowder or TJ's Mandarin chicken?? Although I do have 1-1/2 cups of leftover mashed potatoes. Hmmmm

    Tonight's dinner was lasagna. Tomorrow the plan is Grandma K's stuffed peppers. A ground beef and stuffing mixture that is surprisingly tasty. I use red and yellow peppers.

    Boy cat just meowed for me to let him in the bedroom. I'm a soft touch as is DH. When they were kittens we tried the "no cats in bedroom policy". Clearly unsuccessful haha. 🙃

    Last night's dinner was beef stroganoff made with a ribeye steak from the freezer. I restrained my WW tendencies and bought heavy whipped cream called for in the recipe. The sour cream didn't curdle thanks to tempering it with a little sauce from the pan before adding. The mushrooms were brown and fresh (name??). The sauce/gravy did not thicken as much as I would have preferred but tasted delicious. Why not with 3/4 cup of heavy cream? We spooned the concoction over egg noodles and have enough leftovers for another meal.

    Next time I would buy thinner ribeye, reduce the cream and increase the sour cream. Oh, crimini mushrooms! The words usually come after I draw a blank.

    Tonight's planned dinner is catfish fillets, probably cut into small pieces and breaded and pan fried. Also mashed potato salad, room temperature, made with boiled eggs, chopped celery and dill relish.

    I read an article in WAPO this morning about weight and timing of meals. A number of trials indicate that my parents' eating schedule was good for not gaining weight. More food in the morning and at noon and light meal at night. My pattern is the opposite. Light breakfast, moderate lunch, heavy late dinner.

    Minus, your son sounds like a good guy.

    Carole, there are mixed studies on the timing of meals and weight. I suspect like everything else with health and science, the nuances between us mucks up results. Sure wish we came with manuals. Glad your DH is eating and improving. The stroganoff sounds delish.

    Minus, I agree, you raised a nice man.

    Leftovers tonight...may flesh out the pasta with something but not sure what.

    DH's insurance approved the new PSMA-pet scan to see how much more cancer there is and if it would respond to Pluvicto (a ligand radioactive therapy). That's not till Feb 6th and I'm already stressing, never mind I get to redo my labs in a few months. ugh...

    I wonder if/when the new forum platform is EVER gonna roll out. Moderators claimed it would be sometime in the first quarter of this year but that announcement was made months ago and they’ve been mum ever since. The old platform used to allow members to add their location under their avatar. It was great to be able to see it at a glance because it is not something I’m able to retain in my memory. Knowing where different members hail from was just a nice bit of information to readily have.

    Thanks ladies. Well, I raised a responsible son, but his is still a "MAN" with all those innate tendencies.

    Since I've retired, I eat my main meal before 5pm. Whether I loose weight depends on whether I'm walking or exercising that month - but I do sleep better. I cooked the gingerbread and had a substantial piece covered with real, fresh whipped cream. I've been thinking about that for a long time. Maybe tomorrow I'll make some kind of lemon sauce with Limonchello.

    For you non pill takers, I'm right there with ya! Why is that? I don't like them, over the counter or scripts. If I didn't hate taking pills so much, I would take more supplements! But I feel like they just sit in my stomach, and I'll rattle when I walk!

    Devine, I'm SO WITH YOU on the new platform and I too miss seeing where everyone is from. Taking as long as they have is ridiculous, no website takes over a year to build, unless you have a child doing it!

    Minus, what kind of sauce do you make with the limoncello? And what do you put it on?

    Nothing exciting on my meals, still no stove. But hi to all. I read every day, so call me more of a lurker here!

    Real whipped cream. Yum.

    The catfish fillets went into the freezer and the potatoes sit in the pantry uncooked. DH had the last of the beef veggie soup for lunch and hinted that he would like me to make another batch. So off to Piggly Wiggly where I go looking like an escapee from a nightmare. Food is more expensive there but in and out is a big plus. So I made another big pot of soup.

    One discovery. The little golden potatoes I buy for dh to use in his breakfast skillet dishes are great for soup. They get tender but don't get mushy.

    I had cheese and crackers with my small bowl of soup.

    Good news from the urologist's appointment yesterday. An ultrasound on dh's kidneys indicated they are free of infection. He will be going for more testing next week.

    I didn't realize this web site was supposed to be improved. I thought what we have was the finished product. I'm fearful of what will be next.

    Nothing special for sure. Made some shrimp fried rice and tried to take a pretty picture like Illimae does. Well, I don't even come close, but here it is! Was enough for 2 meals, so I have leftovers.

    In reverse order: Goldie - love the shrimp fried rice. I don't have a Limoncello sauce but am considering experimenting. Lurk away - as you know I do that on the drinking thread. Wally interesting about the garbanzo flour. I just read a list of "healthy" grains that I plan to try. Spelt anyone?? Carole - hooray about DH's tests. Now it just takes time. I wonder if the 'little golden potatoes" are what Kroger is calling "petite potatoes"?? I've had good luck with them- golden or red.

    Midnight and time got away from me as I tried to consolidate 3 HOA meetings into one agenda for tomorrow night. URGH. So I'm having a 'pony' glass of Tuaca. Actually had to look up 'pony' and it's only 1 oz. Oops - I had 2-1/2 ozs - which is the size of my Grandmother's orange juice glasses that fit really well in my hand.

    We had our romaine salad with additions last night for the first time since dh got sick. It tasted wonderful. So did the warmed up beef stroganoff. That recipe is definitely a redo for the future. Still enough leftovers for another meal.

    I received the Penzey's herbs yesterday and threw away some outdated bottles.

    Last night was hot dogs. I managed to get Covid when I went to El Paso for chemo, so haven’t felt like cooking lately. Only two days were bad the the congestion and fatigue linger. Been craving salty stuff as usual when chemo affects my sense of taste, might be ramen noodles today.
