Carole, I've only had crawfish once and enjoyed it. Also had aligator and liked that too.
Today will be leftover lamb, rice and cabbage.

Happy Easter to those who celebrate it!
My Easter feast went pretty seamlessly. I think it was the best ham I ever made. Half of a boneless Sugardale ham, placed cut side down on a small rack on a roasting pan, with a glaze of brown sugar, mustard and gingerale over the top; then I poured half the can of gingerale in the bottom of the pan and covered everything with several pieces of aluminum foil sealing it tightly. Wow, the ham turned out so moist and tasted great. Worked even better than a cooking bag. Someone gave dh a couple zucchini so I made zucchini casserole along with the other sides and heated some Rhodes rolls which were meh but everything else was so good, it didn’t matter. I’m not a big bread with dinner person anyway.
Dessert went over big; I served the cherry pie with vanilla ice cream, which had been an afterthought. It was the perfect accompaniment as it really enhanced the cherry tartness.

Hi all - I know I have missed a lot, I have not been feeling well. Upper respiratory infection, not Covid. I have a wet cough like a two pack a day smoker, fever, congestion, pretty intense fatigue. DH was worried enough that we took a trip to urgent care yesterday. I think he also feels bad because he brought this home from work, had it himself last week, but much more mild. Now have antibiotics on board, and am using an inhaler, Tylenol, and Claritin D. I’m not hungry - also not cooking - but eating a small snack when I have to take the meds.
I hope everyone had a nice weekend - my ham is still in the fridge, we will maybe have a delayed dinner next weekend. I usually make au gratin potatoes, a vegetable, had thought about a Greek orzo salad, artichoke heart appetizer with crackers, and I considered a lemon cake for dessert. The mention of cherry pie (my fave!) by divine has me thinking though!
The last time I grocery shopped I did find a standing rib roast on sale and cut 5 good ribeyes from it and froze a package of two, and one with three. I also bought a tenderloin on sale and trimmed it, also cut into steaks in packages of 4, and froze them. I assume the beef was on sale to tempt for holiday dinners, but I thought it was too good to pass up even though I also bought a ham on sale.
I have also been having computer issues - my actual desktop, not the site here. I really need to do my taxes this week so I also need to feel better fast enough to focus on that tomorrow.

Special - so sorry to hear you are not well. At least I was glad to read that you are trying to take care of your self and not cooking. Your beef purchases sound like a great find.

Dinner last night was Campbell's Beef Consume & Jello chocolate pudding. Today I found a package of Stouffer's Mac & Cheese in the back of my freezer - so that was my Easter dinner. I cut up a banana in tiny pieces and tossed in them in lemon juice with a couple of canned peach slices - also cut in minuscule pieces. Then I mashed them in sour cream and a bit of powdered sugar. Not bad for something very soft. And for a finale - Haagen Daas Green Tea Ice Cream. But of course what I want is peanuts & potato chips - crunch & salt. Even ham, which I rarely cook because it's too salty. Two weeks is a very long time on soft foods since I'm only 3 days down the road.

We invited a couple that have been long time friends--her 37+ years and her husband 20+ years--over for dinner. So we had mom/MIL and our two friends.
Turkey, fruit salad, sourdough dinner rolls, gravy, mashed potatoes, and oatmeal raisin cookies. I made 18 huge rolls and all "disappeared". Sharon made three dozen cookies and I think there *might* be one left. :-)
The turkey bones are in the stockpot. I had two additional frozen bone sets and they were added in as well. It looks like I'm going to get a bit more than 1-1/2 gallons/6 liters of broth to can. I'm hoping I have enough jars here, otherwise we will need to go to town to get more jars.

Tonight was French Toast w/maple syrup. Soaked the sourdough long enough that it was really soft, then cheated by cutting the pieces as small as dimes.

About the only thing for canning that I buy new is lids and very occassionally the bands
We went for a walk along an "urban" trail in Snowflake and ended up eating a very late lunch, so no dinner tonight.

Dinner was with three friends and DH yesterday. We had traditional Polish white borscht, ham, potato salad, pickled eggs and beets with key lime bars for desert. We did an encore without the soup today, will have the soup with kielbasa for dinner tomorrow.
Will also try to tone down the fat etc. In meals the rest of the week. The weekend was a bit much. 🍽😊🐰
Minus want/need that French toast (although sorry for the reason why). Eric those rolls and cookies...oh my!

Eric, same here. Dozens of jars and bags of rings. Lids, the last few years, because of Covid, for whatever reason, were hard to find.
Minus, I don't see why French toast would be a problem. I assume they don't want you getting food in "vacant" area?
Made some parmesan crusted pork chops, cole slaw and a microwave Cracker Barrel mac n cheese. I don't care to eat processed, but will in a pinch.

There's nothing prettier than shelves of jars of home canned goods. We had one at home when I was growing up. I especially liked the canned tomatoes and some of our cousins loved my mother's sour pickles. I went through a canning phase and dh built me a nice shelf unit.
Yesterday was a tiring day spent at the hospital with dh, who had a venogram scheduled for 10 am but we were told to be there at 8 am. The procedure took less than an hour but dh had to stay in bed for 5 hours so he wasn't released until 4:30. Then there was nobody at the valet parking station to give us our key. So we had a 30 minute wait outside the hospital. The good news is that the venogram didn't yield bad news but I don't think it did anything to improve dh's leg circulation.
Dinner was leftovers from Easter meal. Now there's a ham bone to cook with beans.

I spent a couple of hours "taping and mudding" the wallboard (covering the seams and screw heads) in the garage. Tomorrow, if all goes well, I'll do the 2nd coat of the "mud" (drywall compound).
The turkey broth is ready to have it's fat skimmed off and be processed in the canner. I am hoping to go running outside (it's a nice day), so I don't know if I'll get to it.
Dinner will likely be Easter dinner leftovers

This morning was my last antibiotic. So tonight I had two Gin & Tonics. Still on 'soft' food for awhile. I got my salt fix yesterday with a dozen black olives carefully tucked on the opposite side. Meal today was red jello, a couple of slices of Muenster cheese pinched off in to very small pieces and a bowl of oatmeal. Lacey's cod is on the list, but I will be gone most of the day tomorrow & Thursday - so who knows if I'll cook. I'll probably just eat cottage cheese with canned peaches or chocolate pudding. But oh I am longing to chew.
Edited to add - Eric, I need some taping & floating done on my garage ceiling. I'd be happy to have you 'visit' anytime.

The boneless chicken thighs didn't get completely thawed but I "smothered" them in a large skillet with chicken broth and slices of lemon until they were very tender. Then I added cooked brown rice. The side was corn off the cob. DH ate very little since he has nasal congestion, thanks to all the pollen, and isn't feeling good. I really like the chicken and rice combo. Chicken is probably my favorite meat
I dug out the machine and medication for breathing treatments this morning. Also got out a couple of o/c meds. DH gets this ailment every spring and usually ends up getting a prescription from his PCP.
Minus, not surprised that you're coping with your eating limitation. The gin and tonics will help.
We're supposed to get a lot of rain and some wind. I need to go out and take down my wind chimes.

Hi all
We had a good Easter then got news that Mum wasn't well and sadly she passed away yesterday. She's had alzheimer's for about 8 years and was in care. We are glad that she doesn't have to suffer any more. She was 79.
Then today I ended up in ED with Kidney problems as I have a kidney stent. Thought that I might need surgery but I'm talking to the Urologist Friday who will let me know what he is going to do. I keep having infections then can't have chemo because I'm on antibiotics so needs to get sorted.
I told one of the Nurse's that although I'm in ED this isn't my worst day this week and that Mum had passed yesterday. I think they were a bit shocked at first but still were very sympathetic. The hospital was very busy but I still had great service from all the Nurses and Doctor's.
As I've been sick I still haven't been eating that well but now that winter is here hopefully will get more of an appetite for a good meal.

Greetings to all! Returning to this thread after a lengthy absence & caught up with all the postings. As usual, lots of good eating posted on this thread.
Condolences to those who have lost loved ones (including fur babies); Happy Birthdays & Anniversaries to those who have celebrated; and healing thoughts to those with their own or family member's health issues.
SpecialK and Goldie - I am also recuperating from an upper respiratory infection (not COVID, Flu A, Flu B or RSV per PCR test). Started last Thursday and still feeling pretty puny. Lack of appetite - somewhat of a blessing since returned from a 19-day trip to Italy on 4/1.
Minus - I went with a one-tooth "bridge" after needing an extraction a couple years ago. Implant priced about $6,000 and 6+ months to complete, plus was not sure if "bone" would accept implant. Very happy with the "mini-bridge" and saved $4,700.
Italy - Too many wonderful foods, desserts, pastries, wines, limoncello, meloncello, etc.! Pasta with Shaved White Truffles pictured below was my favorite pasta. Surprisingly, had this at the Mercato in the Rome Termini train station - cooked to order, with a white wine/lemon sauce. Cost about $28, which seemed like a bargain to me considering the amount of truffles. Bye for now!

Minus, cheers to the gin and tonic! OMG, I could eat a whole can of black olives. Ya know what else I like and could sit and eat a whole can, is canned mushrooms. I don't cook with them, I just like them out of the jar. I almost always have fresh mushrooms on hand.

Tonight was my first attempt at a curry. It wasn’t bad (too milky and bland) so I’ll try again sometime with improvements. I don’t care for bell peppers but love broccoli, spinach and snap peas.

Mae - I'm not wild about most curry dishes, and I agree - I love broccoli & spinach, but not bell peppers. Goldie - hope you're back up to par. You'd have to fight my 7 year old niece, who can also eat an entire can of black olives.
Went to a B-day party where the "hostess" ordered & picked up burgers & fries from a local restaurant. I took my own strawberry yogurt - but oh the delicious smells!!!. I manged to eat the chocolate birthday cake by cutting it into very small pieces

Aussie, I'm sorry for your loss of your mother. I lost mine almost three years ago and miss her a lot. At first I thought of her daily and carried on conversations with her.
I haven't eaten truffles either.
Yesterday morning I remembered the beef bones in the freezer and asked dh if he would like some beef soup. He said yes. I also had a bag of the beef steak strips cut from the bones and the other ingredients, canned tomatoes, carrots, celery, frozen mixed veggies. The soup was/is delicious but I finished up the chicken and rice dish for my dinner, also some homemade cranberry sauce. I buy bags of fresh cranberries during the Thanksgiving season and freeze them for making whole berry sauce.
Mae, the whole subject of curry is interesting because the word itself was a British invention and also the mixture called curry powder. DH likes the curry powder flavor and I like it ok. Curry is very present on the British police shows we watch. It's a popular take out food that is a part of the food culture in England. Given the chance, I would like to try it.
Lots of beef soup left for dinner. Also a carton of homemade navy bean soup that I took out of the freezer prior to the beef soup inspiration.
I think I mentioned the "take apart" Mr. Coffee coffeemaker I bought recently. I took it apart and put the pieces through a regular cycle of the dishwasher yesterday, along with other dishes. It came out sparkling clean, like new. Of course, it is relatively new!

Carole, I watch a lot of British crime and mysteries too, they mention getting a takeaway curry like we mention ordering pizza. My 1st try didn’t go over like I expected but I love a brand called Kevin’s, it’s flavorful but not spicy. It came in a hungryroot meal but I found just the sauce on Amazon.

I love curry! Indian, Thai, all of it! with coconut or without.
I have had truffles and do not like them. Maybe that is a good thing considering their availability and price.
Aussie, so sorry for your loss. My parents have long gone and it was a mixed blessing.
Salad again tonight. I brought an avocado/ham sandwich with us. We are already back. One more day.
