    Tonight was skillet pizza’s using a roll of pizza dough from my grocery store close out shopping spree. DH had salami and sausage, I made myself an Alfredo with spinach and red onions. Turned out pretty good for an experimental stove top pizza.

    Mae, that was quite a haul at the grocery store closing shopping spree! LOL.

    I baked a loaf of whole grain bread with the Einkorn flour yesterday. We enjoyed some slices with our dinner, soup and salad, and I will have a slice for breakfast.

    No clue yet about dinner tonight. The freezer is close to empty and I will be careful not to replenish the contents. Our departure date will be here in no time. May 21. Even though we have a house generator, I won't leave with food in the freezer.

    Yard work today. Groan...

    Hi everyone, still feeling sub-par, but slowly improving. A little too slowly for my liking, but,apparently, I am not in charge. I still have a scary sounding cough, but am less congested and can finally sleep.

    Dinner has been elusive this week, some nights DH wasn't hungry, all nights I have not been hungry. I did make one of my MIL's old recipes last night as I had a green pepper (I am an outlier - I like them! Lol!) that needed using. The recipe is called Mulligan Stew, but it is actually goulash. Easy and pretty good - it is a throwback fave of DH, so that is good. Not sure what I am doing tonight, but maybe a main dish salad. Will see if DH is hungry, sometimes he eats his lunch at 4pm and just doesn't want dinner. If I am being honest, I am really ok with that...

    I bought a new computer yesterday - an "all in one" which has the guts on the back of the large monitor, and a wireless keyboard and mouse. So far, so good.

    minus - glad you are finding things to eat, albeit in tiny pieces!

    aussie - condolences, so sorry about your mom, and I hope you are feeling better too.

    illimae - my parents were British and Australian, and my mom was a curry fan. I grew up eating it, but now really only make a curried chicken salad recipe - which is classic chicken salad with celery and onion, and curry powder mixed with the mayo. I usually add pecans and grapes, or apple too. I have omitted the fruit/nuts and also served that chicken salad on mini-croissants for parties. I also have a recipe for a hot chicken curry that uses chicken, veggies, curry powder, and coconut milk, which is good over rice. I usually add chopped cashews on top.

    Just waved goodbye a minute ago to the third AC repair guy to service our brand new units - first time there was a tripped float on one and one unit was left unplugged after the install. They sealed an area right after the inspection and forgot to plug it back in. SMH! Second visit, the pipes that drain the units were in the wrong position, which fixed one unit - they had not been effectively cooling. This visit - the main unit which cools our bedroom (it has been 80 degrees by the end of the day) had a pressure leak, so it was cleaned and re-soldered. Now seems to be cooling - yay! The temps are climbing as we get into spring and I was started to get really ticked after spending a small fortune for new AC and not getting any... hopefully the third time is the charm, and all will be well from here forward.

    When we finally build the house in CO and spend summers there I will have to learn to use up my freezer stuff before I leave here - I am a bit of a hoarder, so it will be a challenge!

    SpecialK, not sure how long you have been sick, I'm at 2 weeks! Cough is not as "productive", but still annoying. Still stuffy and congested, but would say I'm maybe at 80%, at least getting a little energy back.

    The only curry I usually make is either "drunkin noodles" or from my childhood - a friend of my Mother's always made hard boiled eggs swimming in a sort of white sauce w/curry for Easter brunch.

    Special - in your honor when I was going crazy at 10pm last night, I opened a can of black olives. I ate a few. Then a few more. And finally finished off the entire can. I have to say that was a first for me - devouring a whole can.

    Tonight was smoked oysters - obviously with out the triscuits. But I did include two Hawaiian rolls softened with butter in the microwave.

    Last night was a "bowl" with brown rice, thick navy bean soup and mustard greens. all leftovers. Not memorable but we didn't go to bed hungry.

    I plan to make a pizza for dinner tonight.

    Tonight was Kevin’s Lemongrass Chicken with pearl couscous and sautéed butternut squash.

    We invited our neighbor who we bought our lot from over for drinks on the deck tomorrow (he misses the great view), so I may not want to cook. If that’s the case I might be having popcorn or a hunk of French bread. We’ll see.

    A neighbor brought me a bowl of split pea soup she made with some leftover Easter ham pieces. She had also added potatoes & carrots. I added 3 soft Hawaiian Rolls. My first semi-balanced meal in awhile!! I think I'll try Lacey's cod in marinara sauce tomorrow.

    We didn't have the homemade pizza last night because I stepped on the wicked bathroom scales yesterday morning. Instead we had a big salad topped with chicken strips. It was very good even though it wasn't pizza.

    Tonight will probably be pork chops cooked with whole berry cranberry sauce. I made that recipe some time ago and have it printed out. Side will be turnips and maybe cabbage.

    The pea soup sounds good, Minus. The cod should be easy to eat.

    Lemon grass chicken sounds good, too. I never see lemon grass in the supermarkets here. Maybe I don't know where to look. Where does your dh find it, Mae?

    We had thunder storms and rain during the night but today will be clear and a wonderful temperature, in the low 70's. In New Orleans the French Quarter Festival is in progress. We heard on the news that this year was the festival's 40th year. What a shock because 40 years ago we happened to be in the French Quarter with friends and enjoyed the first year's festival. It was small and low key. Now it's a big event, though probably not as big as the Jazz Fest which brings in people from all over the world. We attended some of the first Jazz Fest events, too, back when you could bring your own cooler.

    goldie - I am at 13 days, and feel like I should be better than I am at this point. Coughing less, but still a rough sounding cough with sometimes the rattle even on the inhale before the cough, and definitely congestion. I'm getting things done - did my taxes yesterday - and moving around, but really just powering through, feeling bad while doing it. Bleh. Hope you and celiac are doing better than I am

    DH is with DD over at the east coast of FL today at an off-road event at the beach. Hope they have nice weather and a fun day. I don't know when they will be back so dinner is an uncertainty. I may rely on something quick like pasta with shrimp, or a main dish salad.

    minus - the most recent olive convo was goldie, but I’m a super olive fan also! Definitely put black olives on all fingers of both hands as a kid, then ate them one by one. When I was six we sailed to England on the Queen Elizabeth, then home on the Queen Mary after spending the summer with various relatives and traveling around GB. They had an assortment of appetizers passed on trays when you were just seated for dinner in the big dining room. Olives that were huge! Biggest I had ever seen! My favorite olives are castelvetrano, had them for the first time in Capri, Italy at a cafe on the main piazza. DH and I had a table, ordered wine, and the gentleman brought a bowl of these olives with the wine. I periodically left the table and shopped while DH sipped and people watched. I would come back, have more wine and eat the bowl of olives, which DH won’t touch - he is an olive hater. When I would return again there was a new bowl of olives. I’m like, this is paradise, I’m on an island in Italy, there is wine, olives, and shopping! I’m never leaving…

    goldie and specialk - I am also recovering from a respiratory virus - 10 days since 1st symptoms. Beginning to feel better, cough pretty much the same as yours, specialk. Hope both of you are also feeling better soon. It has been about 10+ years since I last had something like this, so guessing it happened due to vacay in Italy.

    Dinner last night was butternut squash gnocchi (TJ's, has a nice brown butter & sage sauce), added chicken/mushroom sausage plus sauteed shrooms, lightly sprinkled with shredded mozzarella. Yes, I am quite the mushroom fan, hence my enjoyment of truffles.

    Hubs is a Brit, so curry is one of our faves.

    Mae - Have been tempted to try the Kevin's lemongrass. Seems a bit pricey to me, so interested in whether it is worth the $.

    The lemongrass chicken sauce and Thai coconut are both Kevin’s, each were really good. I bought a 3 pack on Amazon for $15 and just add my own chicken. I just bought a combo pack that includes tika masala too, it’s the one I haven’t tried yet. It is a little pricey but totally worth it.

    I made the cranberry pork chops last night. The topping consisted of fresh cooked cranberries, chopped pineapple, fresh orange juice and zested orange peel. I browned the pork chops, topped with the mixture, covered and cooked in 325 degree oven.

    The side was large dice turnips flavored with melted butter. Very good.

    We're buying dinner for husband and wife neighbors tonight at a Mexican restaurant, showing appreciation for the husband helping dh load up a couple of heavy tree burls that a generous woman gave dh. He will turn the burls into bowls if they prove to be suitable for turning.

    I'm going to make spaghetti and meat sauce (probably use up an old tube of breakfast sausage, which with enough spices, tastes like Italian sausage). I'll add some spinach and our leftover asparagus.

    Editing to add, I skipped the asparagus and used Penne.

    Nuked some frozen Yakisoba. I had some Hoisin sauce in the fridge so I poured a bit on top. Really quite good. Dessert was 1/2 a small carton of Haagen Dazs chocolate ice cream.

    Tomorrow is a 'field trip' to the Houston Police Dept. "tach village". Really looking forward to that.

    Tonight was baked chicken with a ranchy-sauce, pasta salad, fresh from a farm-market green beans, and tomatoes and cucumbers, sliced. Per my nutritionist I'm trying to incorporate more veggies; the downside tonight was (probably, mentally because I've lost 3 lbs.) I snacked on 2 cups of popcorn, a hollow chocolate sheep and a lindor carrot chocolate from Easter while streaming " Night Agent" on Netflix.

    Tomorrow we are off to see the Nats and Orioles play. We'll see what our dinner choices are ⚾️ 🥎 🌭🍿🥤🤩

    Lily, I saw that article about ball park food but didn't read it.

    Our dinner last night at George's Mexican Restaurant was most enjoyable. We sat outside on the little patio next to a fountain. I had a small margarita with top shelf liquor, no salt, and for my meal George's nachos with steak strips, beans, cheese, sour cream and guacamole. The conversation with our neighbors was non stop. They bought their property from us and moved there into the Victorian house they built, with four boys who all mowed grass for us in turn and now are all grown and on their own. They're good neighbors and interesting people.

    My only regret about eating out was that I have been closely watching my food intake since weighing on Saturday morning and was down 6 lbs yesterday morning. Primarily fluid since fluid accounts for about the first 5 lbs of weight loss. I didn't weigh this morning but today will continue to eat smaller portions and watch the carbs and sugar.

    Not sure about tonight's menu. Today is the Tuesday special at Fresh Market, $3 ground chuck and boneless chicken breasts. I will be in neighborhood for a dermatologist appointment and will go by there on my way home. I may also buy some fresh shrimp today.

    Reader - I consider popcorn a vegetable. Corn - right? Healthy unless there's too much butter & salt - both of which I apply liberally. But it's also high in fiber - promoting digestive health. I regularly made a bowl 2 or 3 nights a week & sometimes it was my dinner. That's another thing i REALLY miss with this tooth extraction. Post surgery visit on Thursday & I'll definitely ask about popcorn.

    Lily, I will look up that Ballpark food article! Alas too late now had Smashburger and fries 🙃. We rooted for the O's, our friends the Nats. All in good fun and a beautiful evening to be out!

    Last night was the first time I ever undercooked a meatloaf. I had to put it back into the oven to come up to 160 degrees. Our side was butternut squash cut into chunks and flavored with a little butter and brown sugar. I really enjoyed the squash.

    I like popcorn but seldom think about making it.

    Hi all

    Thanks for your kind words about my Mum. The funeral is tomorrow so will be a hard day but I didn't realise that it's a 2 week wait normally so we are lucky to have it so soon.

    Hopefully I'll find out soon why I'm having stomach pains and no appetite. I need to get it sorted. Last night I had Spaghetti Bolognaise, just sauce not with mince and tonight vegies and fish. Have been having cup of soups too. I've been a bit more hungry lately.

    Aussie, may your mother's funeral be a balm to the soul and that you continue to have fond memories of her. I have only attended 2 funerals and of people I did not know (but of friends). I hope all goes well.
    Do let us know if they find anything to figure out your stomach issue; hope that is sooner rather than later.

    I love popcorn. I missed it when I did low carb. I use a silicone type bowl and add oil (or you don't have to) and pop it in the microwave. The oil coats it nicely enough that I never feel the need for melted butter.

    The last of the penne sausage spinach thing tonight.

    aussie - so sorry about your mum. Hope your stomach issues are minor.

    Last night the Police Dept. invited one of our community groups to visit the "Tach VIllage" at the Police Academy. We got to see where all the officers are trained. It's really a whole 'mock' town - streets, school, gas station, convenience store, apartments, doughnut shop, etc. so they can train for any eventuality. We were perched up on the 4th story cat-walk looking down into this amazing set up. We also watched traffic stops & got to try the 'shoot/don't shoot' platform. Wow.

    But because that was early evening & my day was goofy, dinner was cottage cheese & canned peaches. I so admire those of you who are still making 3 or 4 course meals. I just can't eat that much anymore and am much more into one dish meals.

    Minus, did you shoot? That sounds fun. I enjoy target practice but I do not hunt (I love animals too much) and I’m a good shot but a little slow. Fun fact: DH calls me illi oakley, lol

    Tonight will be blackened chicken, white beans with spinach and cheesy cauliflower.
