    Davey Jones was my imaginary boyfriend and we are having leftovers (pork loin roast and twice backed potatoes and brussel sprouts.. I might cut the pineapple up too.

    I just got home from my daughter's house.  Her endoscopy went fine, they didn't find anything wrong and she had already started feeling better.  So it's a "wait and see" thing.  It's snowing pretty hard and I am glad I left when I did.  Any later and the driving would have been scary.   We had spaghetti with homemade meat sauce and salad for supper, and the kids, once again, made a bet on finishing their dinner in exchange for me emptying the dishwasher.  It's too funny, they can actually eat when motivated! 

    I might make some popcorn in a little while - DH didn't eat dinner because he had a late lunch.  And I can always eat popcorn.

    How are you doing, Apple?

    Michelle- Glad they didnt find anything serious and hope she feels better. Funny story on the bet you made with GK's  the power of persuation really does work. (another word for it but cant think of it right now)

    Bedo- Sounds like a perfect evening! 

    Had leftover chx salsa tonight, i devided it up and put some corn in one pan since DH doesnt care for corn. Its yummy that way too.

    Britta water is all I drink also, but I cook with our awful city water. 

    I had my one year post BMX surgeon appointment today.  Mostly good.  Hope to resolve insomnia issues & lingering pain before I start working every day again in May.  MO tomorrow. 

    Haven't felt like cooking.  Lunch yesterday at Ruggles Green was thick bread w/black forest ham and two cheeses - chedder & provolone.  This was grilled and topped with an organic poached egg & water cress.  Dinner tonight is 1/2 of a California Roll with my favorite sauce - Robert Rothchild Lemon Wasabi.  I'm eating as I type.  The sauce is great on vegetables & turkey sandwiches.  I'll try it on just about anything.

    Good thoughts to all who have upcoming procedures.

    Our rental house on the lake has well water and came with a water softener/conditioner.  It died during one of the power outages and couldn't be repaired because of its age.  Our landlord had a new one installed, so our water is pretty good.

    Joycek and I are being blasted with snow, and I'm guessing Laurie and Deborye are also snowed in this morning.  Who woke up Mother Nature anyways?  Glad we are heading to Florida on Sunday!

    Well...we never got a drop of snow  it rained all day and now raining again this morning.

    Laurie  interesting to note that your Dh was a cook when you met him....does he still cook once in awhile?

    Kaara  I like to hear the success stories of Match.com  usually only hear of the negative.

    I did not go out for "hump night" last night, was a total slug and stayed in to watch Idol.  My DH went though, so I had a simple egg and cheese sandwich.  Love having a night where I dont have to think about cooking for someone else.....of course if I had gone I would have had a dinner out, but it wasnt worth it to me to get dressed and go out in the rain.

    Michelle  Please send us some sun from Florida!!

    mr. apple has requested some Mexican beef type of rollups.. ick.. Why did i ask?

    I am doing fine and thanks.  I started radiation.. 14 treatment days with a week off in between for my trip to sunny SanDiego.  complete hair loss.. but that's already happening with the Abraxane chemo I'm on. It will be a rough month (excepting my trip) but it will be over soon.  I can keep my jobs!  and that is great news.  I thought I might have driving restrictions.  (i have an 80 mile round trip to get to these 3 country churches)   - tomatoes are in my future that I won't have to grow myself since the deer eat them anyway and it is too mean and too much trouble to keep them off of my property.

    Apple - glad to hear you are doing OK.  I hope the rads and Abraxane do their fine work and foster a relationship with NED!  Funny thing about deer...when we lived in Blue Springs, we saw deer at dawn and dusk almost every single day.  There is an area along 39th street near Independence Mall that has a meadow area along the road, then woods in the back.  There were always turkeys and deer hanging out there, usually too close to the road.    I haven't seen a single deer since we moved to NH!!!  You'd think they would be more prevalent here, but apparently not.

    Wow what a lazy day!

    Apple- I am glad you are able to keep your jobs and that things are doing ok.  I hope it is all very gentle and highly effective!! 

    I actually see deer quite often around here and lots of turkeys.  This past fall there is a house at the top of my road that has a couple of apple trees.  There was a mama deer and two babies eating the fallen apples.  I turned the car off and me and the boys sat and watched them for almost 20 minutes before they took off.  It was very cool.

    So I have not done much today.  Made banana bread, played outside, some laundry- a nap:)  The boys did not last long outside, after 10 minutes they declared it was too windy and cold and wanted to come in.  Now they are asking to go back out, I think I'll have them help me with dinner instead.  Dinner will be pork chops and gravy.

    Carrie- DH cooks randomly.  If there is something that he is craving or he tends to cook when we have company over- again randomly.  I will have my meal planned etc, we'll have friends over and after they are here he will ask "do we have everything I would need to make stuffed mushrooms?"  See?  Random.  He is a very good cook though, probably better than me but now that I am at home all the time he never cooks dinner.  But last nights breakfast for dinner was a tram effort.  I did the potatoes and put the ham in the oven, while I scrambled the eggs he was the pancake man and did the english muffins. BUT, because he can cook he can also be critical of my cooking, he gives me tips onhow to tweek recipes....sometimes just a thnak you is nice instead:)

    Laurie You are very lucky that he "attempts" to help out.  My Dh likes to come into the kitchen to taste and criticize but has no idea as he has never made a meal in his life. After my surgery, he felt he had to come home from work to fix me lunch (open a can of soup) ha ha I finally told him I could take care of myself and he didnt have to come home,,,,he tried!

    Tonight doing simple jumbalya with kielbasa (chicken) peppers, onions, canned diced tomatos and packaged spanish rice.  Easy one dish, with a salad or some green vege.

    We have deer here in herds...find them standing in our yard all the time acting confused as to which way to go. the woods behind our house has a creek and I think they go to drink and then cross the road back to the woods on the other side where they live.  Then of course we have the old army depot up the road that is famous for white deer...they are gorgeous!

    Carrie- I did the same yesterday, didnt want to go out in the rain, hail and wind, we even had a water spout real close to us so i stayed in my pj's all day put my shoes on though incase i had to make a run for it from the funnel. LOL!

    We also have heards of deer running through our neighborhood, just walking down the streeet as if they dont have a care in the world. The golf course is about a 3 minute drive and ELK are always there they have to shoo them away so they can golf. My neighbor said she saw a beer last week a block away from us, makes me nervous now to walk around here. I thought about carrying a knife with me but dont think i want to get that close to one and it probably wounldnt even phase him LOL!

    Apple, I hope your treatment is gentle on you.  What a great job you have!  I wish we could hear you!

    Laurie, your husband makes me laugh, I think he expects you to say "Yes!  OF COURSE we have those ingredients!!! I have at least 2 of everything!"  Here is a site for him to play with where you list what you have and it tells you what you can make.  lol!

    Minus 2.  I found a brita that was left in the house I moved into.  It was clean, so I washed it, but I wondered about that filter thing that you drop into the pitcher top.  Do I have to buy a new one periodically?  Is it a filter?  I would like to use it!

    Momine, where are you from?  Bread without milk or eggs sounds intriguing. I know about Pita and bagels and other breads made without bread and milk from when I tried to go vegan.

    I met DH #1 at a college party.  He planted himself between me and a friend and started flirting.  (my friend was already taken)  I asked him later, who were you hoping for?  He answered, Either of you!  I met DH # 2 because my daughter was dating his son and they fixed us up. I didn't want to go out with him but after riding a motorcycle throught the North Ga mountains with my arms around him.  I gave him a chance.  I met SO through match. but after 4 years we parted. And live in #1 when I was 18. Does that make me a hopeless romantic?  I guess they were all perfect for the period in my life that I was with them, still keep in touch, but now enjoy my own place.  (I'm a twin, maybe that explains it!) but open to what life brings.

    bedo:  Nothing for dinner sounds good to me too!  Unfortunately boyfriend will not feel the same:(  Last evening I roasted a small turkey loin with cornbread and cranberry dressing, aspargus and a green salad.  We had the leftovers for lunch, so dinner will be something light.

    Laurie:  Getting the kids out to play in the cold reminds me when mine were young (I have four).  It would take forever to get them bundled up and out they would go...for about five minutes!  Then back in and reverse the process....yikes!  I was glad when we moved to Florida!

    Today was kind of a downer...app't with eye doc and found out that my macular degeneration is advancing so I have to see a retina specialist.  When it rains it pours!  The good news is they have treatments for it...the bad news is they are injections into the eye which sounds about as welcome to me as a root canal!  Oh well...it is what it is.

    Kaara- Im so sorry to hear this news for you. Im glad they have treatment for it. Just to let you know when i had my lens replaced in both eyes they did injections and i was freaking out over the thought of it, but what they did was put drops in so it numbs it really good and also gave me a light sedation, i didnt feel a thing. I hope this helps. sending hugs

    Thanks debbie...that helps!  I'm just glad they have treatment.  It runs in our family and my grandfather lived to be 106, but was blind from MD.

    (((Kaara))) - sure hope they can fix the MD without you losing any sight.  A friend of mine has been suffering through two retinal detachments in the last year and it has been brutal.  Unfortunately, he had permanent vision loss.  It's great that your doctor is diligent.

    And thanks, Lacey!  Could have done without this foot of snow in our driveway!  Poor DH spent more than two hours digging out.  Now Mother Nature can let it warm up and deliver this water right into the lake.

    Bedo - did you look at Stockbridge?  Isn't there a Red Lion Inn or something like that?  I lived in Lee for two years when I got married the first time...it was a nice area but I was too young to appreciate all the cultural opportunities - Tanglewood, Jacob's Pillow, Rockwell Museum, etc.

    Home-made pizza and garden salad for dinner tonight.  The pizza was delicious.  Home-made crust, low-sodium chunky sauce (Sal & Judy"s), Italian sausage, sauteed asparagus and baby bella mushrooms, little balls of mozzarella.  I ate a quarter of the pizza but could have eaten another quarter.  DH ate a half.  He cannot resist food.

    Half of the crust dough is left over so I'll probably make calzones tomorrow night.  I'll make DH happy by putting onions in his.  The man loves onions.

    Near-sighted people are in greater danger of retina detachment.  Something to do with the shape of the eye.  I was nearsighted before cataract surgery so I try to see an opthamologist once a year.  I need to make an apptment.

    Wow, you guys in NH got socked. We just have a sloppy slippery mess down here. I definitely prefer a true snow storm with actual accumulation....tho this is certainly easier on the lower back! And all of this is nothing compared to what folks in the midwest are enduring with those dangerous/destructive tornadoes. Safe thoughts to all of them.



    I was more tired than hungry tonight and DH not home for dinner, so I had the Quinoa, Tomato,Pesto Soup I'd picked up at Whole Foods yesterday. It was okay, but tasted a bit bland since I've been making my soups with so many spices. Nothing a little sprinkling of red pepper couldn't fix!



    Can't beat this fatigue of late. It just seems that two months post rads I should have more energy. Am wondering if it is the Tamoxifen. Annoying, if it is....



    Kaara, sorry that your MD has progressed, but the good news is that there are so many more eye treatments these days than there were even ten years ago, so you won't have to experience what your grandfather did. Good luck!

    Bedo:  There are several kinds of Britta systems.  I just have the pitcher with the drop in filter.  Yes you have to change them - frequency depends on use.  Costco has sales on the filters a couple of times a year.  Think they also have them at Target.

    Debbie:  Thanks for asking about the doc.  My MO is such a dear.  He listens to everything, even if I just sit & get weepy.  Physically things look good - go back in 6 months.  Emotionally we're going to try to break my insomnia cycle with some short term meds.  Has to be done before the job kicks in full time again in May.

    Kaara:  Hope you like the retinal specialist and he comes up with a good treatment.

    Lazy night.  Bag of of salad with an avocado & Hidden Valley Ranch.  Pugilese Petite Boule, Black Opal Shiraz.  Probably popcorn for dessert.

    Bedo- Sometimes you have to weed through the bad to get to the good which is what i did, I meant my first husband at the dairy queen, need i say more! LOLOL!

    Carol- Your pizza sounds yummy, if its good i can eat it any day of the week.

    Minustwo- Ahh, You drink the good wine! Good for you and with popcorn too! Love it!!

    Bedo, I am Danish, but live in Greece (also lived in the US for many years). When you get those nice crusty Italian loaves, for example, they are made from yeast, water, salt and flour. Traditional Danish rye bread is made the same way, just with rye flour instead of wheat. Pizza dough is made this way and so on.



    Breads with milk and eggs, like Challah, were for special occasions. In Greece, they make a bread like this for the Easter celebration, for example.

    Carol, that does sound really good. I like making pizza at home, because you know what is in it and you can make much nicer toppings.



    You could also make onion foccacia for your dh out of the leftover dough. Roll it out thicker than for pizza, about an inch, put it in some sort of tin, a pie tin will do, coat the tin in olive oil, put more olive oil over the top, then a layer of thinly sliced onions that have been softened in a pan, salt, pepper and rosemary. Let the dough rise 30 minutes in the tin, then prick it with a fork all over before baking.

    Momine, I've been baking Italian bread that has those very ingredients, flour, yeast, water, and salt.  The Tuscan bread doesn't have the salt and it's still very good.  This afternoon I'm planning to bake Olive Bread which has olives and 1/4 cup olive oil in addition to the basic 4 ingredients.  I bought some Italian olives at a specialty food store and will use them. 

    Thanks for the onion foccacia recipe.  I wish I could get over my aversion to onions.  It dates back to childhood.  I cook with onions but chop them so fine they disappear in the cooked dish.  

    Up at 6:30 this morning for an 8:30 tee time.  Too early.  I hate having to get up.  It's so nice to get up when you decide to get up!

    Carole - I have the same aversion to onions.  I have hated them since I was a child.  I've gotten better over the years and can enjoy french onion soup and onions that are caramelized, but don't put a raw onion on my salad or sandwich!  I have to chuckle at the description of onions as "sweet" - my taste buds have never met a raw sweet onion!!!   And the olive bread does sound good - I love that crusty peasant bread.

    I really love Fridays during Lent.  I make tuna salad for myself, altho son #1 is helping himself to most of it.

    mr. apple works at the Shrimp Dinners at the Knights of Columbus hall so I don't have to work.. If the kids aren't busy they help and eat so i LOOOOOOOOOOOOOOOOVE not having to cook.

    I don't know Debbie, that a beer (or two) would hurt you.

    I hate those pesky Beers.  I see them sometimes loitering on the corners around here in packs of 6 (or more!!).

    It scares the heck out of me!  Lord knows what's next?  Hineys lurking in the bushes?   Potatoe guts in the trees?!?     Bat wings beating against the windows at night???

    I get nervous just thinking of it.
