    Happy Birthday Carol, I hope you have fun celebrating!

    Kaara and Ducky- I hope you and your eyes find something that works.  Makes me think I should have my eyes checked.  I haven't in 17 years.

    Joyce- Take care of yourself all alone down there.  Glad that Michelle and her Dh are there so you can catch up with each other.

    Debbie- I am glad you are making head way with the insurance company, but it is total BS that you are having to fight at all.  Hope today goes well.

    I just got back from the grocery store.  It is so warm here today, low 60's!  I bought so much summer type food it felt good!  Not one meal for the next week involves anything canned or mashed potatoes, yay!!  Too bad it costs so much.  For the first time in months my heat is off, the windows are open and we plan on playing outside all afternoon.

    Tonight we will have grilled chicken in a balsamic marinade served on top of grilled bread, sliced tomatoes and fresh mozzarella cheese and I am making a salad to go with it.  MMMMM...it's been too long!!

    Apple- That is one ugly looking spice LOL! Very interresting article i typed in asafoetida and where to buy and looks like you can buy it in the spice form on line or maybe health food stores i have a big health food store here that has bins of different spices i will have to check it out, the good news is if in spice you wouldnt have to look at how ugly it started out and the smell may not be so bad that way, I like the idea that you can use it in replace of onions, garlic and shallots the health benefits may be worth checking out.

    Kaara- I have tryed a salsa similar to the one you had last night that i bought at a gourmet store i really liked it

    Laurie- Glad you are having nice weather there and the boys can play outside i cant wait for grill weather here although today is 59% not to bad for this time of year.

    Hi Debbie,

    I have lots of veget. dishes. Are you familiar w/ mid east foods? let me know if you want a particular recipe. Baba Ghonoush, hummus, tabuli, lots of whole grains and beans. soups etc.

    Sasha, my furbaby is the love of my life. I'm sooooo happy I have her.

    Maureen- I have not heard of baba ghonoush, love hummus and tabuli about the only indian spice im not crazy about is curry but if i have a recipe that calls for it i just put a pinch in or leave it out all together. I would like to hear about the Baba ghonoush.

    You just made me think of my dog sasha that i had about 20 years ago she was a samoyed and i just loved her!

    Thanks to everyone for the birthday wishes.  It has been a very nice day.  DH bought beautiful yellow roses and arranged them in a vase.  My mom treated me and DH to lunch.  It was a heavy lunch so we will just have a sandwich or a snack for dinner tonight.

    The windy weather continues here, but it is overly warm for early March and sultry.  We have the A/C on. 

    Yesterday I bought a package of baby artichokes grown in CA.  I've never cooked the small ones.  Any suggestions?  There are nine of them in the package and they're cute.

    Laurie, I know what you mean by summery purchases at the supermarket.  I recently bought cantalope and watermelon, and they both are delicious.  I just got an e-mail from the local farm that offers CSA participation.  It's more expensive than last summer, up from $25 to $30 a week for 12 weeks.  That's a pretty big check, but DH thinks we should do it.

    HAPPY BIRTHDAY Carole!!  Love that you got yellow roses.  on valentines day my DH told me he was thinking of getting me red roses and I was sooo glad he didnt....do not like them, but looove the yellow and white ones.  He should know this after 35 years!! Hydrangeas are actually my favorite flower...I have several plants in my garden.

    Laurie I too got the bug for summer food...did hamburgers on the grill and made macaroni salad.

    Sorry that the insurance is continuing to be a pain in the arse but, looks like maybe things are turning around a bit and might work out. I swear sometimes it seems like they do this kind of thing on purpose so that, if it all works out, you're just so relieved that you got anything that you forget all the crap that they put you through!! Makes me very angry!

    (my first chef job was for an awesome Lebanese Continental restaurant and we catered to the middle eastern population.. quite wealthy and loving to party at the time.

    i love that food.

    anyway, we are having store bought (sam's) pizza.. i just don't want to cook.. I can truthfully say this is a first.

    Carol- I love yellow roses, sounds like you had a great day, i dont know about you but i have a birthday month LOL!

    I love baby artichokes and have cooked them different ways. prepare them as you would reg artichokes, cut stem off, peel back otter layers of leaves, put in bowl of ice water with lemon juice (keeps from discoloring)  at this point you can cut them in half and boil them until tender and saute them in a little evoo and lemon juice and top with parm cheese. You can grill them preparing the same as above and when done pour a mixt of lemon juice, evoo and a little dijon mustard, salt and pepper over them or you can bake them put them in a 350 oven bake for 20 minutes covered with a little white wine, lemon juice, evoo seasonings covered. take out of oven and increase oven to 425 uncover and put a mixt of bread crumbs, evoo, lemon juice and zest put on top of chokes and bake uncovered for an additional 10 minutes or until they are tender and breading is browned. YUUMM!

    We lived in Rochester, MN, home to Mayo Clinic, for five years...



    Many very wealthy people from the US as well as abroad sought testing/treatment there... I will never forget when King Hussein of Jordon was there... He and his entourage took over several floors of a hotel. They sent ahead a group of people to totally refurnish their rooms with brand new furniture for the duration of their stay. Then, when they left, all of furnishings were loaded onto a plane and flown home with them...



    Wealth beyond anything imaginable!

    What is the real date when you count for your cancerversary? When you were diagnosed or after the surgery?

    Carole, so pleased for you that you are having such a lovely birthday!



    Joyce, hope your DH is doing okay...so hard to lose a good friend.

    That wind in FL sounds really annoying...and we are having a really strong wind tonight here....but with such lovely temps, we have little to complain about. :)



    Debbie, am glad that the ins co is not playing hardball....keep on pushing, as others have said, they do back down if you don't.



    Apple, interesting article about that spice....not sure I'd ever be able to use it since I'd never get the raw smell out of my head. I feel the same way about fish sauce and that shrimp paste that is in Thai food, so I never make those neat recipes.



    So I had my meeting with the onc nutritionist today. She basically debunked the site that has had me terrified about eating sesame, black tea, pork, etc., etc. Not surprisingly, she talked common sense about what to eat. Of course alcohol is a culprit, and she suggested limiting oneself to one 5 oz glass of wine daily.....but that does not translate to three if you skip three days! ;) Dairy is something to be thoughtful about. She said that she was unaware of the grapefruit issue with people taking Tamoxifen other than the fact that grapefruit interacts with many meds. She's checking on that for me. She copied the AGS Guidelines on Nutrition and Physical Activity for Cancer Prevention, and I'll post that link later.

    She also gave me some info on soy and bc that indicated that eating up to 3 servings of WHOLE soy foods (tofu, tempeh, miso and soy milk) is safe, based on the most up to date studies, but that highly processed soy foods (soy chips, soy dogs, etc.) should be avoided....I guess like all highly processed foods. The info also said that isoflavone supplements (Genistein and Daidzein) should be avoided by people who have bc history, even tho those supplements are marketed as cancer preventatives.



    I stopped at Trader Joe's on way home and picked up a spinach, quinoa and bean salad with a ginger dressing. I have to say I am VERY relieved to learn that I can eat all of the healthy things that I always ate, and don't have to give up my morning black tea just because I'm on tamox. :)

    Laurie, your dinner sounded delish...and yes this Spring day has been wonderful!

    Basically the nutritionist felt that I was being overly cautious about what I was eating given that I was taking that site about the ER+ PR+ recommended foods too seriously...as she pointed out, the site is a .com, not .edu or .org, so it,in her opinion, is suspect in terms of authenticity/accuracy. Who knows....but I like this plan better! Except there is no real place for my m+m's! :(

    Joyce- Glad you had a nice time out with michelle and friends, the airlines used to have a berevement price when you book last minute but not anymore we found that out when chucks sister passed away in michigan it was so ridiculous. Im also thankful for this thread and all you wonderful ladies here, love you all!

    Seaside- A kind wow! My sister and i were reminising a few weeks ago how when we went to arizona to visit my aunt and uncle with my mom and dad we wanted to go to a night club so my mom and aunt dropped me and my sister off and said they would pick us up even if it was late to call them when we were ready, a prince came in who was very, very handsome (sounds like a fairy tale) had his entourage with him as well, he wanted my sister and we sat in his little area they had blocked off and drank with him he paid for large plates of appetitizers and fine wine, champagne and drinks, when it was closing time we called my mom it was like 3 in the morning and when she came to get us he walked over to my mom and said i want to marry your daughter and take her back with me, but my mom said you cant have her, i mom was laughing about the whole thing but he was serious my sis didnt want to go with him but i said i'll go LOL! It was such a fun night!

    Deb- Not real sure about that i was thinking maybe last date of tx.?

    Lacey-Thanks for the info from your onc nuitrisonist, sounds like good advice and the ariticle is interesting too. I say go for your m&m's though, in moderation! i eat a small piece of choc for dessert everynight but it is 82% choc i wont give that up. I do only drink wine every once in awhile now and only use rice or soy milk.

    Hello Ladies,

    Thanx for the warm welcome. Its nice to be with foodies and share good food ideas. Inspiring. I am trying to stick w a healthy diet but I do fall off the wagon and submit to my old habits. Makes life worth living. I went out to dinner with GF's tonight and it was mediocur and over priced.

    Debbie122..........Baba is the same as hummus but you use roasted eggplant instead of chick peas and a little extra tahini. 

    ! eggplant roasted and chopped, the skin is full of vita you can puree it and add it. I never did til now add 1-3 cloves of raw garlic Pureed, juice of 1 lemon, salt pepper and cumin to taste, pinch ceyenne pepper, 1/3 cup tahini paste and mix well. EASY. serve with pita chips or bread or raw veggies. That reciepe for the baby atrichokes sounds yummy. I make stuffed artchokes in a similar way but with a lot of garlic but it is time consuming. baby artichokes are so tender. My DD's fav.

    I used to be known as the garlic queen. I use at least 3-4 heads of garlic a week.....for me and my DD. stinky but delish, I love it. I worked with the elderly and many would tell me "I'm alergic to garlic and onions" They didn't know how much they really liked it because it was in everything.

    Debbie6122 - can you really get baby artichokes in Lincoln City.. (I wonder if they'd grow in Kansas.. maybe probably not).

    I was catering one party for the Lebanese. Omygosh.. the women were SOOOOOOO so beautiful and of course were in the kitchen, catering and cooking too. It was so much fun.  They made the best rice dish I had ever tasted.  They had huge bags of dried dill in cellophone, a basmati type rice.  They sauteed onion and garlic in plenty of olive oil in a stock pan.... added the dry rice, and then water and 4 to 5 cups of this dried dill.   They slowly poured over the course of a couple hours, at least 2 cups butter down the side of the pan..  They's let this get crusty and fold it into the rice, scrape up the bottom.. change pans occasionally.. it was totally OCD.  But, it was the most delicious thing. 

    They also made a red and yellow rice with saffron to decoratively display with this green rice.  I'd make it but it had soooo much butter.

    I ran a kitchen during the day with less middle eastern influence. but when we had a party, my chef boy /boss and i would stay until midnite in the basement, making falafel, baba ghanoug, hummus, taboulies, harrisa, spanakopita type things..   those were the days, We have the best middle eastern bakeries in Kansas City and have access to awesome breads from Israel, Egypt, India  Iran.

    We are leaving on vacation, so I am emptying the fridge for dinner tonite .. it should be awful.. The Sam's club pizza was not all that bad but i went to a lot of effort to make it the perfect crispiness. 

    I am looking for to Cioppino on the beaches of southern California.. yum.

    As a an old cook, it's really nice to have the exposure to kids' food, casseroles and what normal people actually eat.  My daughter would eat Kraft anyday over some of the stuff that I prepare with son # 2.. .. He's great help as a little choux chef (just taught him that pastry).. but he burned his hands when he was a baby and will not use hot water in any way to clean up.  It drives me bats. 

    "Hot water MOM?  HOT water?  why?)",, things get greasy after a while.

    Never heard of that rice dish but it sounds sooo indulgent. 2 #'s of butter is a lot but just eat 1/4 cup of it, if you can stop yourself. pretend your cheating with a little pastry. a savory pastry. My kids also learned to cook. My son is a health nut and makes alot of mediterannean dishes. Its as important to teach them to cook as it is to balance a check book. I tell them to learn because all my receipes are coming with me when I go because their all in my head.........Ethnic cooking is a lost art.

    Enjoy your well deserved vacation. I NEED one. Do you really think your fridge garbage dinner will be awful? You sound like an awsome chef so you can make gold from crap..I bet your family will love it....stay well

    Just checking in with everyone...I read but won't take the time to address everything.  I need coffee!!!  The sun is out, I think I'll finally get my toes in the water today.  We had a very nice evening with Joycek and our friends from MA.  It's always good to get together like that!  We missed Joyce's DH but we've already made plans to get together with them when they come back to NH in April.

    Michelle and Joycek:  Glad you had a nice dinner last night.  I so hope the weather is better for you today...what a mess it's been this week!  At least it isn't cold, so you can still enjoy the warmth.

    Dinner last night was a throw together...I was still steaming from my bad experience with the long wait at the MO's office, so I was banging pots and pans around in the kitchen, scaring my boyfriend.  He keeps a low profile when I'm in one of those moods.  Ended up with mahi mahi sauteed in olive oil and lime juice, spinach sauteed with garlic, and a baked sweet potato.  It was simple but actually pretty good.  

    Yesterday was the day from he!!...cleaning lady didn't show (always the case when you're expecting company) then the thing with the MO's office, so today I have to finish cleaning the house and plan a menu for friends that are coming over on Saturday for dinner.  Good thing I have my energy back.  I'll keep dinner simple, but am going to make one of my blender soups for them to taste.  Any ideas for a light healthy dessert?  I wouldn't let her bring one because she makes them so rich and good!

    5 MINUTE KEY LIME PIE

    1/4 cup water
    1 package (4 serving size)
    sugar free lime flavor gelatin
    2 containers (6 oz) Light Fat-Free Key Lime
    Pie yogurt
    1 tub (8 oz) frozen reduced-fat whipped topping, thawed
    1
    Graham Cracker Reduced Fat Pie Crust
    Mix gelatin with boiling ¼ cup water
    until completely dissolved. Stir gelatin into yogurt and then fold in whipped
    topping. Pour into pie crust and refrigerate at least 4 hours.

    my favorite dessert?  you won't believe it but it is awesome and people absolutely love it.  I buy a 3 pound bag of frozen mixed berries and make 5 or 6 packages of jello.. (yes, jello) both artificially and sugar sweetened.. I had about 1/3 the amount of suggested water and stir the bag of frozen veggies into the dish.. Let is sit, stirring occasionally as the berries melt.. it will set up in about 30 minutes.  whipped cream?? oh yeah.  the artificially sweetened jello is kind of good because it compliments the tartness of the berries.. I suppose one could make this more healthily and just skip the jello.

    i could eat a gallon.

    The ethnic foods discussed in the recent posts sound wonderful.  I would love to branch out and wish you ladies could teach a class to get the rest of us started.  We have one "Mediteranean" restaurant in our area.  I've eaten there a couple of times and love their hummus, which is much silkier than mine.  Thais food seems to be popular.  We have several Thais restaurants and a number of Japanese eateries.

    Tonight is my birthday dinner.  We have a reservation at Sal & Judy's, which serves Italian and American food.  It's a northshore favorite that has been in business for a lot of years.  It's located in a small town out of the mainstream but people make their way there because of its reputation.
