     If your in the mood for a chocotini this is the best chocolate martini ever

    ngredients

    • 1 marshmallow
    • 1 small piece of chocolate from a chocolate bar
    • 1/4 cup crushed graham crackers
    • 1 orange segment
    • 1 teaspoon chocolate sauce
    • 3 ounces chocolate-infused vodka
    • 2 ounces chocolate liqueur
    • Ice

    Directions

    Using a toothpick, skewer the marshmallow and chocolate piece together. Set aside.

    Place the crushed graham crackers onto a saucer or small plate. Rim a martini glass with the orange segment, and then dip the rim of the glass into the graham crackers to coat. Drizzle the chocolate sauce onto the sides of the glass. Set aside.

    Combine the vodka and chocolate liqueur in a cocktail shaker filled with ice and shake. Light the marshmallow on fire and place into the martini glass. Pour the cocktail over top to extinguish the marshmallow and serve.

    Warning: Use extreme caution when working with alcohol and fire.

    debbie6122:  I could use one of those chocotinis right now as I prepare for my eye injection this morning:(  Actually, I prayed with DS and family yesterday, and now I have a sense of peace about this and no longer feel nervous.  This too shall pass.  I will check in later and tell you all how it goes.

    debbie6122:  Thanks for asking...it was uncomfortable but certainly not that painful.  The betadine they put in the eye to sterilize it prior to the injection burned for about two hours after, but that is now getting better.  It just feels like I have something in my eye like a grain of sand.  Will probably have to have about 7 of these a month apart.

    Kaara- Glad it went ok today though it doedn't sound pleasant, let alone 7 more!!  I hope you get some rest and treat yourself a bit.

    Debbie- How is Chuck doing?

    I have to just pop in quickly, with all the warm weather we have been having we have been outside so much I don't get on as often.  But I'll take it!  Saturday we spent too long outside and had makeshift dinner, grilled cheese and soup.  Yesterday we had a steak  on the grill, red potatoes and salad.  Tonight is grilled chicken seasoned with chili powder and topped with cucumber, avocado salsa with rice and asparagus.  I haven't had it in so long!  It's just wrong that I am already wishing for garden tomatoes.  In NH we won't get them till August:(

    Deb, I'm a big weirdo and never had facebook!  I will pm you so we can all get together in NH at pickity place and I can go with you.

    Computer not doing it's thing again all day.  Enough said.  Somehow I manage to make my clients happy.  Although the paperwork is rough without functioning equipment and I am always days behind in documentation.  It's ridiculous.  I do paper notes and then have to drive back to the office, sometimes an hour to put them in the computer and sometimes it doesn't even work in the office.  Still functioning on and off RI to MA.

    For dinner?  Oranges, Cottage cheese, carrots, grapes ,maybe a peanut butter sandwhich.  Slim pickings, Just tired.

    It was 80 degrees in Houston today.  Hated to turn on the oven, but had a pork roast waiting.  Marinated it in Bronco Bob's Apricot Chipotle Sauce - YUM.  I have leftever roasted brocoli & cauliflower.  Also left over Canatonese Style Rice from Italy w/no MSG that I found at Big Lots.  Dessert is Ghirardelli Double Chocolate Brownies - chocolate chips in the mix.  Not sure if I'm celebrating daylight savings or what.  Working tomorrow for the first time in a month so maybe I'm just fueling up.

    Kaara - glad to hear all went well.  Debbie - Maybe I can wait & maybe have the chocolate martini together.  I'm up for Las Vegas. But Oregon is on my bucket list for 2013.

    Irish Guinness Stew serves 6 

    2 tbsp. corn oil

    2 large onions, thinly sliced

    8 carrots, sliced

    3 potatoes, cubed

    4 tbsp. flour

    2 lb. braising beef, cut into cubes

    generous 1 3/4 cups Guinness

    2 tsp. brown sugar

    2 bay leaves

    1 tbsp. chopped fresh thyme

    salt and pepper

    Preheat oven to 325 degrees.

    Heat oil in flameproof casserole (or pot). Add onions, potatoes and carrots and cook over low heat, stirring occasionally, for 5 minutes, or until onions are softened.

    Meanwhile, place flour in plastic bag and season well with salt and pepper. Add beef to the bag (in batches, if necessary), seal the top and shake well to coat.

    Remove vegetables from casserole with slotted spoon and set aside. Add beef to casserole, in batches, and brown, stirring frequently. Return vegetables to casserole and sprinkle in any remaining seasoned flour. Pour in Guinness and add sugar, bay leaves, and thyme. Bring to a boil, cover, and cook in preheated oven for 1 3/4 hours. Adjust seasoning to taste.

    deborye:  That recipe sounds good...I make beef stew but never thought of adding beer to it.  Can't wait to give it a try.

    After sleeping all day from my 1/2 anxiety pill that I took before going to the eye doctor, I'm sure I will be up all night.  I feel much better though and the eye is no longer burning.  Hope I'll be back to normal by tomorrow.

    Laurie- Lucky you being able to be outside this time of year and grill, i would love some fresh tomatoes right now too the ones in the store look kind of yuckky and fake to me. Chuck is doing ok still fighting the ins today the insurance and Dr. office were playing phone tag they better get on the ball by tomorrow because we are suppose to leave here wednesday so he can have the gamma knife on thursday, chuck said he may just go anyway even if its not all strightened out, hes tired of waiting and wants to get it over with.

    Been having a crazy weather day so im trying to type fast before the electricity goes out again, heavy winds and rain today about 75-80mph winds the waves are about 30 ft high, chuck and i went to safeway to go shopping when we came out it was snowing like crazy still snowing 4 hrs later, weird weather!

    Minustwo- Wow 80 degrees right now, sounds so great to me right about now lol! When you make it this way i would love to getogether with you and yes def a martini or tow LOL!

    Kaara- Glad the burning is gone finally. Hope you are able to sleep!

    Bedo- I hope your computer worked for you today and it was a better day.

    It's another decent weather day here today, we are on a roll!  The sun has come out as of lunchtime and it's in the high 50's low 60's.  So we will spend the afternoon outside again.  I made the crock pot raviolis so tonight all I will have to do is make a quick salad to go with it.  I am getting my "chores" done while my youngest naps and the four year old is in his sandbox playing happily.   

    Hope everyone had a great day.  Michelle, I hope you had safe travels back to NH.

    Bedo  I feel your pain...could not get on the net today, called verizon and they said their 4G was down.  How can that be?  Waited till just an hour ago and my DS finally got us connected, all my schooling is online and I dread to think what would happen if I lost it completely.

    Kaara  Betadine in the eye?  i dont think betadine is made for that...gotta burn like crazy! Sorry you have to go through that.

    Sun is out here also, 65 deg today. Walked the dog the other day and actually was sweating profusely from heat....ha ha wore way too many clothes.  I just noticed that my tulips are up!

    Doing something on the grill tonight....trying to feed my son well while he is home.

    Debbie  thinking of you and your husband and hope his procedure is a success.

    Laurie   Dont ou just love the smell of your children after they have been outside in the fresh air? mmmmm those sweet kissable cheeks!

    Carrie- During mud season they are put straight in the tub!  Lol, no sniffing for me:)  But in the summer YES!  But my favorite is still right after their bath.  After dinner we give them their bath, except during muddy days, then it comes first.  But we give them their bath and then we pile into our bed and let them have one cartoon while the four of us snuggle.  With their damp hair and soft jammies and snuggles I melt every night, can't get enough of them.  Enjoy your big boy while he is home!

    DS #2 is still sleeping!  We are at 2 hours 45 minutes....time to start being loud and put dishes away or something!

    Carrie- would love a 65% weather right now its so cold here.

    Joyce-Thanks for the update on Michelle. What a pain in the arse these stupid ins companys put us through i think they fiqure you wont fight it and pay that extra money so glad you got that part taken care of though.

    Our power has been out all day, cable and phone were out too, when it finaly came on i checked my phone and although it didnt show anyone called my phone was beeping saying i had messages it was from the hospital i called and they said they finally got the approval (she thinks it will be fine) So tomorrow we drive to portland and wednesday he has gamma knife- I hate driving in crazy traffic so coming back i will have to drive not looking forward to that at all. But glad we finally got this fiqured out!

    Its snowing off and on, with thunder too how weird is that? Hope the weather clears up for tomorrow.

    Debbie, crazy weather patterns, eh? Sorry you are getting the butt end if it. It's over 70 degrees here and the sidewalks are crawling with grateful walkers.

    Laurie, I'll bet the boys are thrilled with this weather....your day-end ritual sounds so sweet.



    Have been cooking a lot to distract myself from our very empty feeling house...discovered how much harder it is to say goodbye to a loved family pet when the kids are moved out. Terrible! You totally do not realize how extremely woven they are into your life routine, so everything you do brings up the absence, again and again. Wish I could be a colder hearted person!!



    Anyway, thought I could post a pic of last night's shrimp stir fry with lots of veggies and cilantro over cappelini.....but it won't paste. Grrrrr



    So, I'm off to start some salsa cod for tonight....most likely no pic of that either! Will have some refried beans on the side.



    Kaara, glad the pain has subsided and that you were able to cope with the procedure.

    Ok Lacey, just rub it in on the weather LOL! Im glad you are having beautiful weather the sun just started peeking through the clouds may warm up to 35 today, yippee!  I hope the days get easier for you (((((hugs)))))

    Making pork chops and cauliflower for dinner tonight, i roast the heads with lots of garlic and right before i pull them out i top with parmesan cheese and some evoo!

    debbie 6122:  So glad you got that insurance mess straightened out and DH can get the kind of surgery he needs.  What a runaround they give us...but always glad to take our premiums!  Your dinner sounds great!

    Laurie:  Enjoy those little ones...they grow up so fast!  My little ones are now my GC and GGC!  I love them just as much if not more..they are so special.  DGD was over on Sunday and it was just a joy to watch her antics.  She  learns something new every day.

    Friends called and invited us out to dinner tonight..yea!  I made a nice vegetable soup for lunch with a salad, so I don't feel too guilty:)

    Kaara- I have 2 grand-daughters and your right you love them just as much, i do things for them that i wished i would of done for my daughter. Enjoy your dinner out to night its always nice when you dont have to cook and let some one else do it for you.

    Joyce- I bet your DH will be so glad to see you after such a hard week! hugs to you both.

    I dont know if i mentioned that my husband is a food and beverae director at a  casino, they fired about 5 directors in the last 3 months and last month they fired the General manager too, they brought in this new guys who is such a big D..K who no one likes, he has been nit picking chuck all week and today gave him a really hard time, he feels his job is now in jeopady, just what he needs to worry about with everything else that is going on he even knows about chucks tumor and acts like he dont care, i told DH well, we cant worry about that right now, lets jsut get through this and i told him we have been through hard times before and no matter what we will get through it again. But this just makes me so angry at this new GM for coming to him today knowing he is having surgery on Thursday, what a big, big jerk, its just so upsetting. Especially since he is 57 years old it is so hard to get jobs now, they are usually only hireing young guys these days. Could use your prayers again on this. thanks! Sorry to be such a Debbie Downer lately LOL!

    Thank goodness the insurance company approved the surgery even though they put you through the ringer to get to this point!!



    You and Chuck will be in my thoughts and prayers both for the surgery and for his job... Joyce is right.. Just what the hell is wrong with people these days that they just don't seem to care about anything but themselves... Seems especially prevelant with the younger crowd!!



    The two of you need to just focus now on getting through the next few days... You'll deal with the rest of it later.....



    Sending you the hug I wish I could give you in person!



    PS.... Do you want me to come there and kick that GM's @ss for you?? I've been working out and think I may just be able to..... lol



    PPS... As for the weather... It has been wonderful in the NE but, if it goes like it usually does, we'll be seeing what you are having now within the next few days!

    Hi everyone!  Just got home about 45 minutes ago and it feels so good to sit in my recliner!  I guarantee you my bed will feel really, really good, too!!! 

    Debbie - I second everyone's comments about Chuck and the insurance issue.  So glad it's straightened out and he can get the best treatment available.

    Laurie - I just read your comment about snuggling in bed with your boys and watching cartoons...I just love how you describe your special times with your family!

    Everyone else - I'll read and catch up soon.  Has Hauntie been around?  I might need to try and contact her about Pickity Place.

    Debbie, I am horrified at the crass insensitivity of your DH's boss. Seems like downright harassment to me. Your advice to him makes perfect sense. Right now you need to take care of his operation and that is that. You'll both be in my thoughts over the next few days. Best of luck!

    Debbie:  One thing for sure....that GM had better not fire your DH while he is out on sick leave at his age or you will have a major lawsuit against the casino.  Unless the laws are different there, your DH is considered in a protected class of workers at his age, and having health issues as well makes him doubly protected.  I know that's the last thing you want to think about right now, and the GM sounds like a real jerk, but he better check with his human resources department or he will be the one getting the axe!  Tell DH to just ignore the harrassment and keep doing his job as well as he always does.

    Tonight I made Halupki (aka stuffed cabbage)... Don't know what I was thinking because it took all afternoon and it was just gorgeous outside!! I did get the windows open and that fresh air was wonderful..... aaaaaahhhhhhhhhhh!

    What happened to spring?  Our weather has headed straight into summer.  Low 80's today and rest of the week.  Played golf today and got wet to the skin with perspiration.

    Dinner tonight was chicken breast pounded thin and cooked in the toaster oven.  Baked with delicious bottled sauce (Sal & Judy's Heart Healthy) spooned on top and then topped with mozzarella and parm-reg cheese.  Chopped salad and steamed veggies in a bag.
