The food sculptures came from my fiancee. She had all sorts of things that were kid friendly, healthy and would meet whatever special need was at hand.
She was going to be a pediatrician and was almost finished with her pre-med stuff...had received the "thick envelope" from her first choice medical school. Thin envelopes were rejection letters. Thick envelopes had the application packets and other paperwork in them....
To gain some extra experience (and because she loved it so much) she "worked" at what was in the process of becoming a children's hospital.The ladybugs and the worms and the butterflies and similar things would show up when someone was going home all healthy again...or when a kid or their siblings needed a little "something to make them smile...if even for just a moment...."
I wish I could remember how to make the butterfly... I'd send one to Deb.

Deb, prayers for you. The angel food cake recipe is similar to this one : any cake mix, can of pumpkin. Mix together and bake. Tastes wonderful, serve with a bit of whipped cream. If you use white, yellow. Or spice mix, will have a pumpkin taste. If you use choc, all you taste is choc. This one is almost good for you. Also to make a mug full of cake for an individual, (so you don't eat too much) take two heaping tablespoons of your favorite cake mix, and a small individual cup of applesauce stir and nuke for about one and a half min . Done, a single serving for you. I live alone, so this has saved me many times. Ps, smells wonderful when in the microwave. I like to use the chocolate cake mix.

Yeah, I use the individual applesauce because it stays good for a long time . So does the box cake mix if you put the open box in the fridge. Lasts ad long ad you need it. If you open a can of pumpkin for individual servings, portion it out and freeze in bags so you don't Eastet it. The amount to use is equal to the mix, ie, two heaping tablespoons. applesauce or pumpkin, to two heaping cake mix, I have used up to four in a large mug.

Michelle- I have made dump cake before and it is pretty good. Please tell Joyce hi for me and tell her she is missed alot. I hope she gets her anemia back to normal. She may already being doing this but, i think it was Apple who mentioned taking a teaspoon or so of molassess every morning and suppose to help with that?

Zumbagirl- Your dinner sounds good and healthy i also do my broccoli that way except at the end i add zested lemon and parmesan cheese. Today on the coast is a bit misty, must be hot in the valley.

Just made macnut waffles for Dh with sausage and an egg/cheese souffle. Pretty good is i say so myself.

What the heck are Swai Fillets and why did I buy them? Actually I know why I bought them, they're really cheap. And frozen. And I have a bucket load of them. Has anyone had them? How do I cook them? Thank you.

PS now I've read about "swai fish" on the web as being Vietnamese catfisih, and having lived in Georgia I hate catfish and I am afraid to eat it because of all the web controversy. Would you throw it out? It came from Stop and Shop and is labeled a product of Vietnam.
I am an idiot. Maybe I'll eat the cat's canned fish.

Are they similar to basa fillets ? should've googled first I suppose. I like my fish with lemon and pepper and what I do with basa is brush fillets with flour and one side pepper and lemon - I have used a lemon pepper shake and works just as well, melt tsb butter in pan, place lemon pepper side down, med heat, then sprinkle lemon pepper over top side... use fresh lemon juice if on hand.
I really like fish so tend not to overdo it with seasonings/marinades as I like the taste of the fish.

Nasty fish. Do a google search. Eat these, but I would highly recommend based on your eating style, that you not buy this farmed fish in the future.

sorry Bedo but i agree, i dont think farm raised fish is very healthy, years ago they used to think they were better because of so much polution in the ocean these days, but they found that farm raised has more eccky things i wont go into here because after all it is a dinner thread. I have eaten farm raised before and probably have without knowing but now adays i ask when i go to dinner if its wild caught or farm raised. Swai fish is not bad tasting, its flakey with a mild taste, i would put some blackened seasoning on them to give more flavor or some lemon pepper and pan saute them in some pam or evoo. Only fish i get now at the markets is if is says from the pacific northwest or from fish mongers here in town. Now that we all officially scared the gahebbers out of ya, go ahead and eat them lol! really, it wont hurt.0

Unfortunately with the stae of our oceans and all the toxins and pollutants we are putting in it I think there is a pro and con side to wild vs. farmed fish. Its hard to win these days. But your posts have made me want to do a bit more research into it as I have eaten both knowingly and not

Saw the parents today, finally we are at a healthy point with them and all is good. My brother is coming up from Florida this week, so they will be entertained a little. Between us five kids, we try to keep them busy and "loved" so they never feel alone.
Hot here today but too windy to boat, doing little chores around the house, good to have captured my husband for a day to help me out. Burgers on the grill with corn on the cob and pasta salad.

The individual cake recipe sounds so good for when you just have to have a little something sweet! It would also be PERFECT for a college student!! carberry - pleased the parents are at a healthy point - mine are still in the UK so I try to skype them most days. Only have a sister back there and she does a wonderful job of looking after them when needed.
Fatigue has hit me like a train today - all that socialising yesterday. So I am thinking one of the frozen dinners I prepare on my good days.... unless of course darling DH wants to bbq something.

Hi everyone- once again this thread has been so busy! I read through it but won't try to respond to all of you as I know I will miss someone. I am pooped!
Happy Fathers day to everyone, Deb I am so sorry you had such a rough day and that your Dad's passing is so close to fathers day, I am sure it was a very sad day for you.
So, last night DH got a call late that he was going to have to go back to bike week and bring more beer. We decided since it was only two accounts to make it a family day. We loaded up our pick up at the ware house and brought the boys to go deliver it. Afterward we went to a place on the lake about 10 minutes away from teh chaos and had lunch at a nice Italian place that we love. DH and I got a pizza and split it. I had fresh tomato and basil on my half and DH had pepperoni:P Kids had pasta with meatballs and we all had amazing salads. We got home mid afternoon and went for a walk down to the river with the dog, came back and went for a swim. The kids (all of us) were exhausted. We had our left over lunch for dinner.
I am happy that the chaos of bike week is officially over and I can start cooking dinner again! Between DS #1 and his tonsils and bike week I have been eating next to nothing for two weeks.
Also, just a reminder to anyone watching the Big C- tonight is the season finale.

Had an obscenely good buffet brunch with DH and friends today....we ate, chatted, ate, chatted, ate more, chatted more, lingered, and finally left with full tummies and happy friend memories. It was especially nice for DH since DS2 was travelling back from Chicago today, and he is our reliable resident "celebration caretaker of parents". So he and DH are having a Father's Day business lunch tomorrow at the Seaport area where DS2 works and DH has a meeting. All's good.
I will be saying goodbye to all of my little clients, then packing and shredding 18 years worth of files, etc. (and there is a lot of etcetera in my office!)
Bedo I'm curious about that fish, may check it out at S+S, but won't be buying it! Hope it turned out okay.....0 -

Tazzy- Don't know if you heard on the news about that huge dock that floated here form Japan it landed right in our own backyard (not literaly) of course but about 7 miles from us, boy did it bring a lot of attraction to it and everyone is freaked out about our waters now. So it does make one think!

Thanks everyone for my birthday wishes! After all my talk about it, I didn't even have my red velvet cake and ice cream:( After dinner out and a movie with popcorn, I wasn't hungry, so decided to save it for today....I'll have it tonight while watching The Bachelorette! Romance and dessert...what could be better than that;)
Bedo...ugh on the frozen fish from Vietnam. I heard that they feed with human waste, so I would be very wary of eating anything from there. I too saw them in the store the other day but had second thoughts. My ND said only eat fish that is wild caught and small...this way they don't have a lot of time to absorb toxins from the water. Wild caught salmon is a good example.

my family is returning today. They've been gone since Friday morning so I am going to have to cook dinner. What to have.. what to have. Anymore, I'd eat peanut butter with butter on top and celery just for me but that's not good enough for the family. they want veggies and starch and a proper 'meat'.
so I'll start with chicken breast.. chicken breast is always a good start and since I have breast cancer.. it's oddly fitting.

I buy farm-raised catfish but the farms are in MS or AL. It's the only catfish available unless you catch your own. I don't buy salmon because DH doesn't like salmon, but I wouldn't buy farm-raised. I wouldn't buy ANY seafood from China or Vietnam. I try to support American seafood industries even if it's more expensive. Before I order a seafood dish in a restaurant, I ask whether the shrimp or crawfish or whatever is from Louisiana. Fish is a different story. I know Mahi Mahi wasn't caught in Gulf waters!
With modern transport, it's usually safe to order fish from another part of the country as long as you're eating in a good restaurant that serves a lot of customers. I don't often buy fish at a supermarket because I don't know how long it has been in the case. I go to a seafood market. The seafood counters at supermarkets have a fishy smell and fresh fish isn't supposed to smell fishy! That smell indicates bacteria have had time to grow.
So much talk of pork chops lately that I thawed out a couple of pork chops for dinner last night. Breaded them with panko crumbs and Italian bread crumbs mixture and browned them in a small amt of EVOO. Side dish of warmed up linguine from Sat. night.

Apple I agree...when I lived on my own I would eat sauteed mushrooms over brown rice...that was it Loved it and still do, and I dont need anything with it. Also lots of popcorn. I was also very thin back then.
Corn on the cob was sooo goood last night, not sure what state it came from but delish!
Lacey are you retiring? is this a good thing or are you having reservations?

carberry: I read on one of my health sites yesterday that popcorn is really good for you. It contains lots of antioxidants..even more than veggies...which I'm not sure I believe, but at least I don't feel guilty about eating it now! Mushrooms over brown rice sounds great!

Debbie... I think I did hear about the dock - your post nudged something in my chemo addled brain to remember. The West Coast here has had all sorts wash up...motorcyles, containers... so does make you wonder about the state of our oceans.
That is great news about popcorn... is that salted popcorn... or caramel covered popcorn.. ha ha !! And yes, mushrooms over brown rice does sound nice.
