So...whats for dinner?

Lacey: Yum on the dinner out! So great when you find a restaurant that has a good chef like that one!
Michelle: Hope your Xeloda is working...let us know the outcome of the test. Sending you prayers and positive energy!
Went to new doc for my eye injection yesterday, but no such luck. After two hours in the office...scans...paperwork, etc. I was told to come back next week because they had to clear the insurance...WTH! Anyway..I don't want to end up with a $2,000 bill so I said fine. I had psyched myself to have the shot so now I have to do it all over again...grrr!
Finally, some much needed rain here in NC! Now I can go out and pull some weeds that were cemented into the ground...lol!

Yes, that would be fun to meet for a good dinner, Michelle. You always have neat restaurant suggestions too.
Hope the appt goes well today!
Kaara, what a royal pain.....After being such a trooper with these injections, to have to wait another week?! Hopefully it will be covered w/o any further delays. Happy weeding!
Heading out for that much needed walk...destination...a spot where we get coffee and enjoy the water view.0 -
Lacey - your dinner sounds absolutely delicious. Would love to see some pictures of the Cape. One day I will visit that I promise myself.
Michelle - hope the Xeloda continues to treat you well.
Kaara: that sucks about your shot. There is nothing worse than mentally getting yourself prepared for something to have it taken away. Good luck.
Happy some of you are getting some much needed rain. After the wettest June on record here in the Okanagan, we finally have summer, today will be in the mid-90's. I am off to meet a friend for some shopping and lunch. Enjoy your days everyone, stay cool and dry whatever the case may be.

i am totally read to not cook tonite.. that middle eastern stuff is so labor intensive. it seemed i cooked all day.

I'm back from my MO appointment. My labs look good, Xeloda continues to be an easy chemo for me, and I should get the results of my tumor markers sometime this afternoon or tomorrow.
Kaara - all I can say is "yikes" - it sounds painful and the anticipation must be dreadful.
Apple - I hope you can rest this afternoon and someone whips up dinner for you!
0 -
Apple - it is labor intensive isn't it - but oh so yummy!! Rest up today and just snack tonight.
Last night we had taco salad - really simple and still very tasty. (I leave out the tortillas due to my allergy to wheat and hubby's to corn.... )

I've never cooked Middle Eastern food. Is it labor intensive because "it just is" or it is something that would get easier with experience?

let's see.. i pretty much cook from scratch
i soaked, boiled then food processed garbanzo beans
juiced 7 lemons
added a jar of tahini.. all in all, not a lot of work, but messy
for the tabouli, i soaked bulgar, chopped parsley, mint, tomatoes, onions and added lemon juice, olive oil and salt.
bought more lemons
for the tzatziki sauce, i finely chopped a couple cucumbers (they really need to be hand chopped altho you can produce a soupy product with a processor, added a couple cloves of garlic, 1/2 onion.. more lemon juice, fresh garden herbs (1 or 2 cups of thyme, oregano and parsley).
I make a gallon or more of hummus so i can freeze it for a couple more dinners. everyone loves it and it goes fast.
My son is an excellent grill cook. He made kabobs of chicken thighs, gr. peppers, onions and loves to help with dinner every nite. We had that excellent pita bread.
By the time i get done cooking i really don't want to eat. I told my onc. today i'd put back on the 3 pounds i lost.
pass the liquer cake.
I can pretty much always talk the son into cooking. We have pork chops, grilled veggies and I'll make a pasta with garden herbs, garlic, parmesan... sliced tomatoes.. i have a plethora. for now.

I'll go with the "just is" :-) Like I said, I've never tried it, so I had no idea at all....
I was looking at that tomato you posted about. I grow yellow pear tomatos because they do well in our short growing seasons. I've never seen them make odd shaped fruit.
I'm going to try some native desert food crop plants to see how well they do for me.... Saturday, if I go to Tucson, I'll stop at the Native Seeds/SEARCH place for advice and seeds.

kaara- Oh that is too bad they made you wait all that time only to tell you that you have to wait until next week. How many more tx do you have left on the shots?
Tazzy- Glad to see your summer is arriving finally enjoy your day out with you friend.

Minus two Ochie! Likewise, Lacey!
Michelle I'm glad Xeloda is going well
Apple I could do Tabouli out of my garden except lemons, oil and Bulgar, looks good. Your tomato looks like a honey bee with antennas. All it needs are eyes in the front part and black stripes in the back. Maybe we should hire a psychiatrist to evaluate our interpretations of your Rorschach tomato
Laurie that's good money!
Sorry for everyone I missed! Long day. Back on Arimidex. yuck already feeling tired. For dinner, Greek yogurt. Throw together salad with greens, olives, black beans, cherry tomatoes, artichoke hearts, beets and cottage cheese and carrots. blue cheese dressing. I am a bad cook, but I love reading cookbooks and looking at your recipes. Too hot right now to really cook for me!
Tomorrow hanging out with DD and Dgrand-dog. We're going to a restaurant that will allow dogs on the patio Then the movie The Marigold Hotel. Sat maybe kayaking, dinner with friend and Sunday Fair Trade festival with indigenous artists from all over the world!
Pulled out the lettuce today. Oh oh the zucchini are coming!!!!

Been trying to keep up with everyone, but holy cats, we "talk" a lot. LOL. I am finally starting to feel stronger, been able to go to a store or two come home and not fall asleep. Have to put my feet up, because of my knees, but not actually sleep. Things are tasting better too. I still have gastro issues on the average twice a week, so maybe something else is going on, but I am also on a big dose of magnesium, which doesn't help. I am able to eat more veggies though, so maybe even that is better. Today, it was stuffed peppers from the local Greek diner. Have enough leftovers to eat tomorrow, or make stuffed pepper soup. Yum. Much love to all.

Hi everyone! Lacey, that dinner is making me salivate! Yum! Michelle, so glad you're having an easy time with X. I hope your tumor markers come out good too. I will keep my fingers crossed for you. Apple, I have to say again how much I admire your cookin prowess. Bedo, sorry about your troubles with arimidex. I can sympathize. I am on tamoxifen, but it's not much better. I lost a lot of weight on chemo and was always cold, now I have gained a little of it back, and am always hot. Having the hottest summer on record here is part of it, but the tamoxifen is not helping either.
Treated my DD to bertucci's tonight. I had their endless soup, salad and bread. I really love their rolls, but I did limit myself to 2. Had minestrone soup, it was delicious. For a chain restaurant, I think their food is pretty good.0 -
DH just got home from a 22 mile bike ride. I didn't think he had that in him, so I am quite proud. He's going to ride 20 miles on Saturday at The Prouty in Hanover, NH - a cancer fund raiser event.
I made a big salad and he's about to cook burgers. He just asked me if I could eat a half pound burger...lol. We've had this discussion before!!! I told him to make 3 patties out of that pound of beef, we will see what comes out of the kitchen. I told him I was going low carb for a few weeks and he said he'd do it with me. We'll see. He actually cooked bacon and eggs for breakfast this morning (I had to leave for my MO appt). If he could lose three bowling balls worth of weight, he'd have so much more energy. I think the bike riding has his attention, though.
I know the anti-hormones are tough medicine but it beats the alternative...trust me on this one. Bedo, I hope you can hang in there with it.
Moonflwr - so glad you are feeling a little better! Maybe I'll whip up some stuffed peppers next week.
Kay - I used to go to Bertucci's years ago. We didn't have one in Missouri. I replicated one of their dishes from a long time ago - sausage, peppers, pasta, basil and tomatoes, almost like a stir-fry pasta dish.
He paid attention - 3 patties going on the grill!

Left over spesgetti tonight.
I can still tell the cellulitis is not completely gone, the tissue below and to the bottom left of my breast is still thick and I can feel an occasionally slight burning sensation. I'm keeping an eye on it to make sure no redness appears. That's all I need for it to come back just before the UK trip. GRRRR

My MO said my TM are stable, I didn't want to ask for the report. I ususally keep a journal with all results and reports. I will see her in December, every friggin 6 months.

Elggplant parmesan from the freezer and a huge garden salad. I had chipotle ranch dressing on my salad and dh had Vidalia onion dressing on his.
We bicycled 13 miles today on the Heartland State trail. Michelle, I'm impressed with your dh's 20 miles. We had lunch at a Mexican restaurant and I had a delicious taco salad.
I've been browsing through a slow cooker recipe book and have found some recipes that look good. It's heating up again in MN. Today's high was 86 and we have the A/C on in the 5th wheel tonight.
Healthy vibes to all.

Stable TMs is a good thing, Deb! You can get copies of the reports after the wedding festivities.
Carole - I'm going to test drive a bike, hopefully next week. Not sure I can go very far, but it might actually help my knees. I still am in awe that DH actually did the 20 miles. When he told me two weeks ago that he was going to ride with the kids on Saturday, I was afraid he might hurt himself. But now I think he'll be OK. Our friends (and his best golf buddy from Missouri) are meeting up with us in Vermont this weekend and the guys will be playing golf. I don't want him to injure himself so he can't play.

Moonflowr- Hope you get your energy back soon and feel better!
Deb- Glad your tumor markers are good.
Michelle- Woo-Hoo on DH riding 20 miles that is awesome he is doing the cancer run. He must be very fit
0 -
Debbie - actually, he's been a major couch potato except for golfing - using a cart, of course. This is a man who seems to have turned over a new leaf...or finally living up to the agreement we made when I agreed to fight this BC with all my might. I told him I wasn't putting up this battle to have him die of a heart attack because he didn't take care of himself. I am beyond thrilled to see him on that bike!

Michelle, you sure your DH didn't collapse on the couch when you weren't looking? Just wondering because once upon a time, my DH and a friend rode their bikes to and from work, over 15 miles each way. When they first started, my DH would come in, collapse on the couch and not move for an hour. He would say,"I don't know how John can do it, when we got to the point where we separate to go to our homes, he was peddling away like he just started. But I am beat." This happened three days in a row. On the third day, I called John's wife and said, "ok, tell me the truth, what is John doing", and she said, " he is collapsed on the couch like the last three days. " turns out that when they were with each other they powered through it so as not to lose face, and as soon as they were out of sight of each other, barely dragged themselves home, such macho men! LOL

Michelle- I think sometimes our DH's just need a gentle Push in the right direction. I really admire your husband for wanting to get healthier and be there for you. I hope and pray your tumor markers are good and so glad the chemo is not to harsh on you.
LOLmoonflowr!

Eric- Did you say you lived in flagstaff or maybe just visited there? Just wondering because there is a new casino there thats due to open soon called the twin arrows casino they contacted my husband for a interview and want to fly him out there. They seem pretty serious about hiring him. He has a lot of stress with his boss here and is thinking about it but I am not real keen on it. I was wondering how you like the town, is the elevation high there? I know they get lots of snow with my asthma I am not so sure its the place for me. I lived in Scottsdale, Az and went through flagstaff years ago but can't remember what it was like.

Good morning all, I guess if i want to watch the sun come up I have to stay awake all night and thats just what i did. Could not sleep a wink from coughing and fever. It sucks being sick when its so nice out even though its 7am and the sky looks so pretty. I just took a mild pain pill for my achyness so i am hoping it will help me sleep.
Hope everyone has a good day!

Michelle: Such good news on your tests! Keep doing what you're doing...glad you're going to try the low carb...it really does give more energy once you're into it and the lower glycemic index would be good for you. Good for DH taking up bike riding...the best exercise according to my son who studies nutrition and exercise. He's always trying to get me to do it and I just might.
debbie: Sounds like you have a good case of the flu. I had a milder case earlier this year and it took me about 10 days for it to run it's course. I ended up getting anti viral IV's from my ND which helped a lot. eric can give you the best advice on Flagstaff, but personally I love the town. It's north of Sedona and higher elevation, so I don't think it gets as hot in the summer. Yes, you do get snow in the winter, but it's so dry that I don't think you feel the cold as much. Worth going and taking a look see if it were me, but I'm an adventurer!
Carole: Your meals on wheels sound great! It sounds like you are having a really great vacation. I used to do that when the kids were small, but haven't gone RVing in a long time.
We're into our second day of damp rainy weather...much cooler! Frankly, it's a welcome relief. BF played golf yesterday through it all and I just took it easy at home and read my latest book. Last night we went out for asian food and watched a movie from netflix "My Week With Marilyn"...only so so. She was a very disfunctional person.
Hope everyone has a wonderful day!

Flagstaff is a great town, but too far from salt water for me. When I get inland more than a 100 miles I feel my webbed toes start to dry up... . I lived in Arizona for about 8 months (a long time ago) and just had to return to the coast.
For dinner last night hubby barbecued a chicken and I cooked up some brown rice and made a salad. (We ate late, because he had forgotten that it was his turn to cook dinner, but when I tried to talk him into going out - the barbecue won the day.) We ate out on the deck and looked at the mountain. This will probably be our last summer in this house, and boy will we ever miss the deck and the view. But the upkeep - not so much. House too big -yard too big - we both want less work and responsibility, so now that housing seems to be recovering, it will hopefully be an OK time to sell.

Kaara- I may have to go get some antibiotics and maybe an iv for fluids I always put that stuff off because i dont like going to the er. Thanks for the info on Flagstaff I dont mind the snow really just dont like the higher elevations, thanks for the info It helps alot.

Michelle : so happy for you that the chemo is continuing to look after you well. Good luck with the markers. 20 miles is a pretty good bike ride in my mind and good for him too - wish him all the best for Saturday.
Apple: that sounds a lot of work for dinner - but bet it was worth it. I still don't have the energy for that yet... one day.
Moonflwr... I agree - we are a real chatty bunch. I don't think I`ll ever catch up.
deborye... love leftover spaghetti Whereabouts in the UK you going?
Caroleh... I use my slow cooker all year round. Think it is a wonderful invention. Sounds like you are having a great vacation.
Deb: hope you feel better soon.... Take care hon.
Kaara - I saw that movie and thought the same as you.
Heres to wishing good days for everyone, with laughter and smiles and lots of memory making.
Still too early for me to think of dinner yet.

Flagstaff is more or less 7000 feet in elevation. It snows there half a dozen times times per year and the snow sticks awhile..but melts enough between storms that in town it doesn't "pile up" very much. They are good about keeping the main roads clear. It takes a big storm to get ahead of the plowing capabilities, but they catch up pretty quickly. You can expect 1 or 2 times per year that the pllw crews get behind for a few hours.
Winter time fahrenheit day/night temps typically are mid teens to low 40s. Summer time temps are mid 50s to mid 80s. The rest of the times are "mid teens to mid 80s" so bring a lot of light layers of warm stuff so you can adapt.
Except for July through mid September it's a fairly dry climate. July thru September..it rains many few afternoons for a few hours and then stops.
The town is pretty casual and comfortable clothes nearly always wins out over suits & ties.
Because it's close to Phoenix, it can be a bit busy during ski season (ski areas are yet higher in elevation and need snow making capabilities) and during the summer (when heat crazed Phoenicians are desperate).
Housing prices are higher than in Phoenix, but aren't crazy.
Eric0 -
Eric- Thank you for all that good information it is really helpful. I am thinking the 7000 ft elevation is a bit too high but i guess i could adapt if i had too. It's also good to hear that Flagstaff does not have the extreme heat that the phoenix and scottsdale get. Thanks!
