    I did it!!!

    I found a way to eat all those zuccini. I'm going to "cook" and make refridgerator pickles I will read up in a bit

    Michelle I hope you get good news on your tumor markers. I'm taking the arimidex and looking for protein.  Thanks, Mom!  When is our next get together?

    Chilled Zucchini Soup with Purslane Contributed by Alain Coumont

    • VEGETARIAN

    Alain Coumont's cool vegan soup gets its creaminess from pureed zucchini, sautéed onion and garlic. It's brightened with purslane, a lemony weed that Coumont plucks from his Languedoc country garden; if purslane is not available at your local farmers' market, substitute baby arugula leaves instead.

    1. 1 small onion, thinly sliced
    2. 2 garlic cloves, thinly sliced
    3. 1 teaspoon thyme leaves
    4. 1 bay leaf
    5. 8 small zucchini (3 pounds), thinly sliced, plus long zucchini shavings for garnish
    6. Kosher salt
    7. 3 cups water
    8. 2 tablespoons finely shredded basil
    9. 2 cups ice
    10. Freshly ground pepper
    11. 2 cups purslane or baby arugula
    1. In a large saucepan, heat the 2 tablespoons of olive oil. Add the onion and garlic and cook over moderate heat until translucent, about 8 minutes. Stir in the thyme and bay leaf and cook until fragrant, about 1 minute. Add the sliced zucchini, season with salt and cook, stirring occasionally, until tender, about 10 minutes. Add the water and bring to a boil. Remove the saucepan from the heat. Discard the bay leaf and stir in the shredded basil.
    2. Working in batches, puree the soup in a blender until very smooth. Transfer the zucchini puree to a large bowl. Stir in the ice. Refrigerate the zucchini soup for at least 3 hours, until thoroughly chilled.
    3. Season the soup with salt and pepper. Ladle into shallow bowls and top with a small handful of purslane and zucchini shavings. Drizzle with olive oil and serve.

    Make Ahead The zucchini soup can be refrigerated for up to 1 day.

    Suggested Pairing

    The Grüner Veltliner grape produces crisp white wines that often have a distinctive green note, making them good partners for vegetable dishes-and ideal with this velvety zucchini soup.

    lacey - thanks - just hope I get the actual vaccine!  DS is actually a great cook himself, just doesn't have time.  He is a volunteer firefighter, works in the emergency room for 12 hour shifts, and goes to school!

    Debbie- I hope you are feeling better, sounds awful!  Also, I have my fingers crossed for Chuck that all went well.  Maybe a new adventure it sounds like?

    Michelle- As always it sounds as though you have been having lots of fun and going all over the place!  Congrats to your DH for all his hard work prepping and participating in the race!  I'm sorry about your tumor markers but as you said, it is probably too soon to tell anything.  As always you have a wonderful perspective.

    I am sorry for everyone else I am missing, there is just so much I missed!

    So work went well last week except Tuesday was really quiet so the money was not as good.  Thats the thing with waitressing, it isn't a sure thing.  But the other days made up for it.  My mother in law and her BF came to NH on Wednesday.  We borrowed our friends cottage on the lake and stayed there for 3 days- all of us- including DH's sister.  It all went remarkably well.  The kids had a blast and we even had a chance to head out on a boat on lake Winnipausakee.  The boys had never done anything like that before and they loved it.  I was very proud of them that they even jumped off the back of the boat and went swimming way out in the middle.  Of course now DH wants to buy another boat, lol!  Not anytime soon I am afraid. 

    Today DH took the boys to the Nascar race that is near our home.  This is one time being the beer guy will pay off.  He can get them into the suite and into all the private areas, the boys were soooo excited.  He will bring the boys back around lunch time and head back up onhis own for the rest of the day.  Having the house to myself this morning let me catch up on my cleaning and laundry.  I am pooped from the pace we have been keeping this summer.  We are even thinking we might head camping this coming weekend?!  I am on the fence....we may need a break.

    I hope everyone is doing well and keeping cool:)  Here is a pic of the sunset our first night at the cottage.

    Laurie... like you, it will take me forever to catch up on what I've missed here... but will try tomorrow when DH is at golf.  Have my DH's company bbq to go to today by the lakeshore - should be fun and the weather is hot. 

    Great pics laurie... the sunset is beautiful and your boys adorable.

    Michelle, I'm hoping for better markers.  Keeping on keeping on takes a lot of spirit and courage and you have both in abundance.

    DH and I are enjoying our summer getaway in MN.  This area offers a lot to older folks with our interests.  There are numerous nice golf courses with affordable greens fees.  Then there's the Heartland State paved bike trail which runs for 47 miles through little towns spaced apart.  We're mulling over spending another month here.

    This morning we visited the Farmer's Market and bought fresh veggies.  Then had breakfast at a restaurant.  Now we're in the library using our laptops.

    Yesterday I cooked a white chili in the slow cooker.  It was quite good.  Browned ground turkey with onions, garlic, chopped yellow bell pepper, and chopped jalepeno pepper for a little heat.  Mixed with canned cannellini beans and frozen corn.  Seasonings were s & p, cumin, dried oregano, and powdered bay leaf.  Cooked on high a couple of hours and then on low for 6 or 7 hours.  Served with shredded cheddar and sour cream.  Didn't have any tortilla chips, where were suggested as a topping.

    We had leftovers but I'm saving them for another day.  Today I have a small pork butt roast cooking in the slow cooker.  Seasoned the pork with s & p, garlic powder and onion powder.  Poured a small amt of barbecue sauce in the cooker and more sauce on the top.  The cooker is turned on High.  I'm counting on liquid coming out of the meat.  At any rate the cooker is doing whatever it's doing while we're 7 miles away in Park Rapids at the library!  Side dish will be fresh green beans and new potatoes from the Farmer's Market.

    Carol your trip sounds amazing and relaxing!!  How long are you planning on being gone again?  Your white chili sounds good, I have never had white chili.

    Today I had a lazy lunch, but it wasn't half bad. I cooked close to a pound of frozen spinach with a bit of garlic and onion (just till it was thawed), topped it with a filet of sole, topped that with a mixture of a spoon of bread crumbs, two spoons of almond flakes, a little garlic, some chopped parsley and a bit of olive oil, salt, pepper. Then broiled it till fish was done and topping was browned.

    Lacey- You always have such amazing sounding feasts while dining out. Wish I could join your Lobster BD bash. Yummm!

    Bedo- That soups sounds really good and looks yummy tummy too! It def is a keeper. I love zucchini. I like to saute it in some evoo, rosemary, thyme and garlic after it is almost done and browned I put some parmesan on top and broil it just until the cheese is melted it is soooo good!

    Laurie- That picture of the boys jumping off the chair had me laughing that is so cute. The picture of the lake looks like glass so calm and love the sunset. Glad you will get a little time in for yourself this morning even if it is doing chores. You are right about tips not being a sure thing but then again you can have that one person who makes your whole night just a little more flirting and smiling will get you anywhere lol JK! hehe! 

    Just had some melba crackers with stilson blue cheese and dates Its what they served at El Gaucho's when I went to dinner for my BD so I bought the ingredients and had that for lunch soooo good I could of ate it all in one sitting.

    Hi all!  I don't have a lot of time to comment on everyone's posts, but I thought I'd let you know that DH did great at The Prouty - made all 20 miles and he's still alive...lol!  We are at a B&B, our friends are here and we are going out to dinner in a few minutes.

    Tonight I made stuffed peppers with a butternut squash sauce, white corn on the cob, broccoli, and a green salad.  We have leftovers for tomorrow...yea!

    Sounds like everyone is having a great weekend. Keep it up! LOL. Today we had fresh salmon on the grill. It is so good. Actually, that is all we had, no rice or veggies, just the fish and lemon. I.had two pieces. much love to all.

    That's great Michelle...do congratulate DH for us. Impressive!

    Laurie, what fun for the boys to jump in the lake. Our guys used to love to do that when we took the boat over to Winnipesaukee, and Lacey would be on the boat barking frantically since she wanted to follow them in but hated the water, so she would precariously balance herself on the swim platform. 

    I'm finally at my regular computer (since it is really hot in our house and we have this room air-conditioned), so am trying to post a photo.

     Oh drat....still can't get the copy and paste to work on this site. I probably need another tutorial when you return from your weekend Michelle. Thanks! what I did was emailed the photo to this computer, then copied it, but the paste just didn't happen!

     Our friend's birthday party was fabulous! They are a very interesting and generous retired couple who live in a beautiful setting with stunning grounds (I won't even mention the house which is basically a small estate) which our friend (the wife) weeds mostly by herself (lots of energy, and loves things to look perfect). So this should have been someone's wedding....but it was, instead, a great birthday party. Her daughters (who we love, told us that they were sure mom had this level of party for her husband since she has been dying to hold a wedding on their grounds, but no rings on their fingers yet!). This couple, DH and I are always hoping that their DD2 and our DS2 will get together....probably not going to happen...DS2 " gets' that we have those wishes and informed us recently that he would never date her because if it turned out badly, it would strain the family friendship...and ruin our Christmas since we spend it with them! He is so right! Our DS1 was supposed to have his wedding ceremony on their grounds, but it rained, so we had it indoors at the reception venue downtown....we were all very disappointed about that move indoors. So it was great to be at their place on a pretty day enjoying this event. Anyway, back on topic....There were lots of Mediterranean type hors d'ourvres, then lobster, mussels, a really interesting corn and pepper salad, potato salad, caesar salad, cole slaw, barbecued chicken, veggie burgers for those who would rather save the lobsters and chickens, lots of breads, and for dessert an array of cookies and decadent cupcakes. We brought some salt water taffy for "after dinner sweets"....ya know lobster, salt water...:)

     Our friend, the birthday boy, had everyone take home one or two of his favorite books, which he re-purchased for our favors (he wrote down a brief description of why he liked each book he was giving out). He hoped we would all move beyond our comfort zones and take a book that we would otherwise be unlikely to read (they were in all sorts of genre). Well, I have to admit, I did not do that and my "favor" was The Housekeeper and the Professor, by Yoko Ogawa. I look forward to reading it. A rare and wonderful party!

    Tomorrow I do need to get outside to deal with some weeding heatwave or not!

    I got back from my disaster job training about 45 minutes ago, so I haven't had a chance to read all the posts.

    The boys do look like they're having fun.  That's a perfect use for a chair.

    I'm a desert kid and that amount of water seems strange to me. It's not  that I'm afraid of the water/  I was a competitive swimmer from age 6 to about 16 and swam A LOT.  Rather the water was expensive and I was always told, "Turn the water off" and "Don't waster water".

    Eric- Funny I remember my parents saying the same thing "Dont waste the water" And " Close the door" Were you born in a barn! LOL! Of course when my mom said it we laughed at her, because she never really got mad at all. Awww memory lane!

    Apple, I also waitressed for years and still miss it. People come in tired or hungry, and they leave happy and relaxed. It is a nice job.

    Lacey:  The kind of party I would love to attend...very unique!

    Moonflwr:  The salmon sounds yummy!  The best salmon I ever had was one that I caught in Oregon...steaks were sliced from it and cooked fresh that evening.  The rest was smoked.  Very expensive fishing trip, but worth every penny!

    eric:  One of the reasons I could never live in Az...even though I love it....no ocean!

    I totally admire anyone who could waitress....such a difficult job keeping track of all those orders and serving, as well as putting up with customer's quirky attitudes!  Not that selling real estate was any easier...lol!

    Laurie those boys are adorable!  I want to jump into that lake!  I think I will make your picture of the lake my new "zone out" "relaxation" picture.  I usually watch one on youtube of a stream in Costa Rica.  You can hear the birds and see the stream flow, but yours is great

    Laurie  I love that pic of the boys jumping....action shots are the best...they will like seeing it when they are older. Your husband is so good to do quality time with the boys...it is so important..they will be great young men.

    I agree thaqt summertime, with all the activities is exhausting. Friends up with their boat from the other end of the lake for a week, muscleman triathalon going on ( a friend is participating) bands everywhere and someone had the nerve to say that we are celebrating my birthday all week....ha ha I feel a nap coming on.

    Bedo  let me know how that cooking works out for you....maybe I will be inspired.

    We cooked on the boat again yesterday...so much food we fed everyone that passed by the boat.  My GF did a shredded chciken cacciatore in the crockpot, used a rotisserie chicken from the store and added pepppers and onions and sauce and I think garbanzo beans...we ate it on burger buns. I did a potato salad with sourcream and bacon, chives and shredded chedder cheese (like a baked potato) burgers, sausage, pasta salad....soooo much food

    Whoever posted about the fish, that is on my list for this week...if we ever stay home long enough.

    SelenaWolf: Nice meal. I too am adding more fish to my diet. I try to rotate fish one night, meat the next and so on. We still seem to have more meat than fish...but definitely more fish than we used to.

     Michelle..hoping for lower marker numbers.  Sharon's numbers continue to rise, even during treatment, but the MO isn't worried about it. According to the MO, a good response to treatment can cause the numbers to rise for a few weeks.

    Lacey...regarding the cut and paste...My Firefox web browser doesn't allow, without some changes in the default setup, copying and pasting.  It was done to as a security measure as some bad software depends on that feature to accomplish its attack.

    And for those I didn't mention...wishing you all happy times.

    Sharon and Chrissy have been "up north" this weekend with the tent trailer--escaping the heat.  It got up to 54F degrees and was somewhat rainy, but they didn't mind.  This was a week where two of the three jobs "hit" so I was stuck down here.  I've been doing some more cleaning inside and yard work outside.  I know she'll want to do something when she gets home..and I'd just as soon it be "relax".  :-)

    With all the talk of salmon, I'm going to go over to the store and see if I can find some....maybe invite my mom and MIL over...If no salmon, then maybe some other fish...quinoa or brown rice and some zucchini....and maybe an onion bread.

    The onlion bread is a yeast bread made more or less as usual..don't use salt in the dough...instead add about 1/2 cup of onion during the kneeding...after it rises, roll the dough out in a buttered cookie sheet with sides to about 1/2 inch thick, sprinkle with dried rosemary and a TINY amount of salt, bake about 10 minutes at 400F degrees, brush with a lot of butter and bake about 10 more minutes. There is no 2nd rise, so the bread stays thin and dense.  

    But first back to cleaning...

    Eric - OMG that onion bread sounds awesome. We eat a fair amount of Naan from Walmart or the local store, national brands. I go to lots of ethnic neighborhoods even here in Ft. Worth, but it's too darn hot to carry around bread all day if I could stop/shop. With just the 2 of us would waste too much esp. since fresh to moldy is so short a time on bakery bread. Guess I need to plan and carry cooler.  Arlington and Mid Cities (out by DFW airport) areas have large middle Eastern populations. Don't know of any westside only an OK Oriental grocery. Love those, too. Naan isn't too bad frozen/thawed. WallyWorld has it occas. on the day old rack. Oddly enough I think my patient load is shifting further out that way but OMG that will add even more to my 45 minute drive time in, I live in Parker Co northwest of Ft. Worth. All the roads from North Ft. Worth east to airport under major widening project. Can you say we're 30 years behind the population growth?? May see DD more as she lives not too far away. Might be spending some Friday nights with her if she will tolerate me (LOL she's 25).

    I had salmon yesterday for lunch. Frozen fillets from, you guessed it, WallyWorld. DH not a fish fan.  I'll eat just about any but did buy some frozen white fish (?tilapia maybe) that was gruesome. It was like eating white glue not that it was spoiled just a waste for the money. And I season with pepper and McCormicks lemon/herb seasoning with olive oil. Maybe dog will like it cooked??? She'll eat anything.

    Glad Sharon & Chrissy enjoying cooler weather. Radar here has showers around. Thermometer on shaded east facing back porch says 97. Humidity high and hot enough to pop some pretty good showers. And it's early yet. Plenty of time for more!!! Need rain.

    Boneless chicken thighs and fresh brussel sprouts for dinner. Bought the brussel sprouts last week and forgot about them. And left the chicken out by accident yesterday when digging in freezer.  Found them a couple of hours later just beginning to thaw.  Popped in frig. for today. DH actually likes brussel sprouts and he's only an OK vegie eater but then he's not really the "meat and potatoes" kind either. Actually he's pretty easy to satisfy. Mostly he would prefer I not make a mess for him to clean up. After 36 years can't ask for much more.

    TTYL. That darned paperwork is calling. Told myself I would be working by 1:00 and it's 1:30 now.

    carberry, I make a similar baked potato salad but also add blanched broccoli florets cut into quarters and sunflower seeds--got those ideas for additions from a baked potato bar lunch restaurant.

    Tazzy- I agree I eat too much cheese too I always know I ate alot when my eyes get pufffy! Arrghh!

    Selena- Would you mind posting your recipe for the warm fennel salad please? I love fennel and like to bake it with parmesan cheese but would like to make a salad out of it.

    luvmygoats- Sounds like a real mess there on the freeway! My DH won't eat to many veggies either but does love brussell sprouts.

    Eric- Sounds like my Focaccia bread I make with Rosemary and olives been awhile since I made it though. 

    HI Chabba and everyone I missed!

    Going out to dinner with friends tonight. still hacking and coughing up a storm and havnt been out of the house since last Monday,I told them I did not think i was contagious but didn't want to take a chance  but they insisted and said, we just won't do much hugging.  I would think since my fever broke it will be ok, at least I hope so, I sure don't want to get anyone else sick.
