    I made flank steak for me and for DH Cooked elk meat, wont eat any game, but flank was really good- Also made pureed cauliflower.

     In the on-line knitting community I'm part of (ravelry.com, the very coolest place), there's groups for many things... and there's one called "Monkey truckers:  recreating profanity, phrase by phrase." It has nothing to do with knitting but the expressions people have come up with (largely to not use something their children might start using!) is roll-on-the-floor laughable!  It's my go-to place for a good laugh.

    OK, back to cooking:  I may try a puff-pancake (remember when those were popular -- the 80's or so, right?) but instead of a sweet version the recipe I have is for a savory version with lots of mushrooms.  Either that or leftovers.   Right now, I'm so happy to have finished my taxes and re-written my resume, I'm going for a long walk!

    I agree, you ladies have me laughing!  Naturgrrl- I'de love to know some of those words and phrases, I need them.  The other day my son asked me who Pete was as I said "For the love of Pete!"  I don't even know where that phrase came from or if I ever said it before?!

    Tonight I am making oven fried chicken and macaroni salad with some steamed pea pods.  This is our first pasta/macaroni salad in many months.  I know my husband will be very happy.  My favorite is a greek pasta salad with capers and feta- his is the old fashioned macaroni...he gets his tonight:)

    Sherrill I smiled as I read about you picking through your dinner that your husband loves so much.  I have learned to like a lot of things I never did or to cook things Iwould never cook for myself.  I love feeding my husband and showing him I appreciate him.  The trade off is when we order pizza he always insists that I pick the kind we get. 

    Naturgrrl- congrats on finishing your taxes and your resume!  No idea what the puff pancake thing is?

    In the interest of curbing potty mouth, I sometimes make up my own words or morph together 2 curse words. "Farg" is one I end up saying a lot, because I start off wanting to say f#%& and it turns to farg. Not great, but better for the kids ears :). Jackhole is a good one too !

    Puff pancakes were these pancakes you made in a cast-iron skillet... they usually had fruit in them, you pour the batter in the skillet and bake it; they puff up while they bake (but collapse some when they come out) and were served like a pancake, sometimes with syrup...  I'm going to see what I can find quickly on the internet (haven't made one in years).

    Read down to his part at the bottom about how to add the apples.  That's usually what I did.

    And in a quick search I see many savory options, too, I just didn't see those back in the 80's (and there was no internet so it wasn't so easy to find things).   Anyway, the mushrooms should be good, although I like the spinach ones I'm seeing, too.... hmmm... I'm hungry!

    Laurie- I looked up where that phrase came from, For the love of pete was originaly For the love of Saint Peter in the biblical form, then shortend to for the love of pete- Also for the love of peat was an irish saying while sitting around the peat fire- Wow! I just learned somthing new today! LOL!

    those are great.. those fluffy pancakes with any fruit.

    I am making a unique chicken soup tonite.. I got the recipe from Day who is making this facebook game for breast cancer that is NOT silly..  I have been waiting to make these for a long time.

    anyway, there are dumplings made with farina, cream of wheat.  and here's how she said to make them.

    ""Usually in that chicken soup in Romania we also make dumplings, which are different than the American ones. For one, they are made out of cream of wheat, not flour. You take one or two eggs (depending on the size of the pot of soup), separate the yolks and whites, then whip the whites stiff. Add slowly the yolk and cream of wheat until it gets to be like a soft sour cream consistency. Let sit for  about 15 minutes (to let the cream of wheat "fluff") then start putting in the very slow simmering pot about 1/2 teaspoon of the composition (they "grow" a lot when they boil a 1/2 tsp makes a tablespoon-size dumpling). When they are boiled, they rise to the top. Make sure you turn them over to make sure they are well boiled.

    tonight Im making breakfast for dinner- Making eggs florentine, Smoked salmon pizzettes, and raspberry crepes- I got these recipes some time ago and make this often, every one always ask for the recipes-

    Smoked Salmon recipe:

    INGRDIENTS:

    • Flour, for work surface
    • 1 (8-ounce) ball purchased pizza dough
    • Olive oil, for drizzling
    • 1/4 cup mascarpone cheese, at room temperature
    • 1/4 cup sour cream
    • 2 tablespoons capers, rinsed, drained, coarsely chopped and dried on paper towels
    • Kosher salt and freshly ground black pepper
    • 2 ounces smoked salmon, cut into 3/4-inch pieces
    • 1/4 cup chopped fresh chives

    Directions

    Special equipment: a 2-inch round cookie cutter

    Put an oven rack in the center of the oven. Preheat the oven to 450 degrees F.

    On a lightly floured work surface, roll the pizza dough into a 1/4-inch thick round. Using a 2-inch round cookie cutter, cut out 15 circles. Arrange the circles on a heavy baking sheet. Using the tines of a fork, prick the dough all over. Drizzle with olive oil and bake until golden brown, about 7 to 10 minutes. Remove from the oven and cool for 10 minutes.

    In a small bowl, mix together the mascarpone cheese, sour cream and capers until smooth. Season with salt and pepper, to taste. Spoon about 1/2 teaspoon of the mascarpone mixture into the center of each pastry round. Top with a piece of smoked salmon and press gently.

    Arrange the pizzettes on a platter and sprinkle with chopped chives just before serving.

    Yes, Laurie, I sometimes "take one for the team" and make things I don't really consider my favorites, but I make them for my husband because he likes them.  It is the least I can do.  He works extremely hard and is a wonderful husband, father and provider. 

    Debbie, I love hearing where phrases originate from and how they came to be!  I remember getting an email one time that had a slew of them and many were really interesting.  Of course I can't remember even one of them!  Is it too much of a stretch to use the "chemo brain" excuse (almost 18 months out)?????

    So I made a recipe from Allrecipes.com called Greek Orzo and Broccoli.   It was orzo, broccoli, kalamatta olives, feta, parmasean, basil, red pepper flakes, and almonds toasted in olive oil.  I changed it up a bit and added more basil and chopped sun-dried tomatoes for a little more color and flavor, but basically followed the recipe.  It was really easy, quick and tasty. 

    Apple, I saw the topic that Day started about the Facebook event.  I keep meaning to check it out, so now I will!

    Humidity absolutely matters when making pasta!! You can adjust the texture by adding more flour or more water.

    When the kids are young they change like the wind on what they will eat and won't!!! They really keep you guessing week to week!  Glad to hear they are expanding their horizons!  Are they still OK with tacos or has that ship sailed?  

    "Pete" makes an appearance at our house, too in that we do an awful lot "for pete's sake" and for the "love of pete".... Also, I tend to say "Jeezle Pete's"  rather than using Jesus Christ.  Not quite sure where the heck that came from!!

    That puff pancake is something I had not heard of before!  Even though most recipes seem to be sweet, I bet it would be really good with savory toppings!!! Thanks for that one!

    Congrats on having your taxes DONE!!! Each year that is such a relief when it is out of the way!

    I have been over to Day's thread and sent out many e-mails to friends and family asking them to attend the event... Looks like we are over 2300 now!!!

    Day was posting here for a bit and hasn't for awhile!  That soup sounds soooo good!  Was there a recipe she gave for the soup part in addition to the "dumpling directions"?  I would love the recipe if she or you would be willing to share!

    Breakfast for dinner is always a crowd pleaser!! 

    BOTH my husband and I love smoked salmon!  That recipe sounds really good and different from what we've had!   New Year's Eve I bought little pre-made potato blintzes and topped them with a bit of sour cream and the salmon.  the blintzes cost me an arm and a leg but, we're really quite good!

    Tonight it's broiled cod with fresh lemon, escalloped potatoes and cole slaw.

    The slaw is my husband's mother's recipe, an old depression era dish, from the days when you had to "make do" with what you had on hand.  We both love it because it's inexpensive, no-fail, lo-cal and keeps for all eternity in the refrigerator.

    Margaret's Cole Slaw

    One small head cabbage

    One small onion

    Two medium-sized carrots

    Finely shred the veggies. 

    In a saucepan simmer for five minutes:

    One C. sugar

    1/2 C. white vinegar

    1/2C. water

    Pinch of salt.

    When cool pour over cabbage and let sit overnight before serving.

    I love puff pancakes, I will either make a lemon/berry one or an apple, shucks now i wish i would of made that tonight instead of the crepes.

    Wish I could say that I made them but they were store-bought! 

    They were very good but I think I would like the pizza dough rounds better!  In fact, not sure why i had never thought of that before but, i think those rounds would be good with a lot of different toppings!!

    Tonight I'm making scrambled eggs w/ sauted onion, red bell pepper, mushroom, spinach and feta.  Easy and good.

    I agree the slaw sounds great.  Sherrill- so does your breakfast for dinner- love it!

    Tonight I am making a very easy chicken and stuffing dish.  chicken breasts in a pyrex dish, combine a can of cream of chicken soup with a 1/4- 1/2 cup of milk (I never remember how much and just kind of add milk)  combine and pour over.  Use 1/2 can of instant stuffing mix, add some broth, I leave mine pretty dry and bake @ 350 for 45 minutes.  We are having it with egg noodles, some corn and a salad.

    Um. OK. Had chicken and sweet potato (boil the sweet potato, mash when soft, thoroughly mix in 1 tbsp margarine and 2 tbsp brown sugar) tonight. I think a sweet potato "kick" is about to start...I might have that again tomorrow night. It's as easy as it is yummy and I'll probably want easy after the scheduled discussion of bad news at the oncologist's office.

    Easy is always good but, especially so when you know you are going to have a rough day! 

    Wishing you well with your appointment tomorrow!  I will be doing my pre-admission testing  tomorrow (bunch of blood work and stuff) in preparation for a d&c next Wednesday.  I'm thinking tomorrow's dinner will be an easy one as well!

    Seaside - good luck with the testing and D&C.  Hope the pre-admission tests go OK.   I had a D&C a long time ago and it was not too bad. 

    I got some bad news today (recurrence or something left over from original BC) and I will be having BMX with DIEP.  We went out for dinner - tacos Tuesday with margaritas.  It's an authentic Mexican place and the pork tacos are quite good.  And oh, the entire bill including a side of guac was $20.46.  Pretty damn hard to beat.

    Michelle I'm sorry to hear this. Sucks to have to go through rads for the lumpectomy then not get it all. I know they tell you this can happen but it still sucks. It also sounds to me based on the bill that you didn't have enough Magaritas. After news like that I think you deserve one more than usual.

    Seaside- I had a hyscopocy(sp) and a D&C last year it wasnt bad i woke up groggy by fine, Hope your test come out ok.

    Tomorrow I'm making a meatloaf since i havnt had that in awhile, roasted asperagus, spinach salad with strawberrys, almonds with poppyseed dressing.

    I am way behind on posts although Anjanita, your coleslaw caught my eye -- that's the way my Southern mom used to make it -- thanks for reminding me!   There seem to be some threads between the kinds of things you make and what my mom used to make.

    I wanted to post that I finally tried the cold oatmeal breakfast I mentioned some time back (muesli).  I had it this morning and I really liked it, although I can see where some people wouldn't.  The oats aren't cooked at all but they do soften up some -- but are still a bit chewy -- so some may not like it on that score.  I enjoyed it, at least as well as hot, and since you pop in in the fridge the night before it's something I have time for in the morning (I rarely have time to cook real oatmeal in the morning and refuse to eat the cardboard stuff they sell as instant) SurprisedSmile

    Here's how I did it, recipes are all over the internet:

    1/2 c. oatmeal

    scant 3/4 c. liquid (milk or milk substitute or even water)

    raisins (I used golden, about 2 T)

    cinnamon and ground ginger to taste, or other spices of choice

    Put it in a container, cover, pop in fridge, leave overnight, eat cold the next morning with any additions you like:  chopped apples, blueberres, etc., and some nuts. 

    I added blueberries and walnuts this morning.

    Yum!!

    I ate about half of what I fixed so I have enough for tomorrow; depends on your appetite but 1/4-1/2 c. oats is a general rule of thumb per serving, and more or less liquid depending on how thin or thick you like it.  Mine came out fairly thick.

    So... if it sounds at all interesting to you, give it a try.  If it sounds gross, don't! Smile

    Michelle- so sorry to hear your news. I hope your surgery goes smoothly and your recovery is quick! I am in Harrisonville and we have two Mexican restaurants, but they are both awful! Where do you go? We are in Blue Springs often. Take care and best wishes!

    I like your thread, I'm always at a loss for dinner ideas. Today I made a big batch turkey meatloaves (mini), I will put most of them in the freezer for later.  This is my absolute favorite recipe, I like to let it sit a few hrs or OVNT before baking.

    Michelle, I'm so sorry to hear about a recurrence.  That really sucks.  I agree completely with Iago...crappy news deserves to be followed up with MULTIPLE margaritas!!  Seriously, though, I wish you lots of luck and will be praying for an easy recovery for you.
