    Michelle- I am so sorry about your recurrence.  I hope things go well with your surgery and recovery.  It's just horrible that you're having to go through that.

    Seaside- Good luck with your testing and the D & C.  I had a d & c done once as well after a miscarriage and it wasn't too bad.  I hope it isn't too rough on you.

    Kim- Im making meatloaf for dinner this evening I already did most of the prep and really like my recipe but yours sounds good too and more healthy I will try that one next time, I like the eating well site it has some good recipes on there, thanks!

    Tonight was really easy... Bought a couple of haddock fillets, dusted them with a bit of flour and pan-sauted until cooked through.  Served on a roll with arugula and tartar sauce with a little bit of cole slaw on the side. 

    Naturegrrl,  I think I would like that oatmeal as I do enjoy the chewy texture of wild rice and farrow!  And you are right... that instant oatmeal isn't really much better than eating regular processed cereal AND if you are having the "flavored instant" you might just as well eat a bowl of Captain Crunch as far as the sugar content (not that there's anything wrong with that...lol)!

    ScienceGirl.... Thanks for the link to the turkey meatloaf... Copied and pasted to my file!!!

    Tifj... Will dig out some ideas for the boneless pork chops and post when I can... They can be a bit tricky because they can go from not done to WOW overdone in just a few minutes!! But there have been SUCH great deals on them here lately.  I am inspired to try!

    Thank you so much for thinking of me.  We are really hoping this is all just "much ado about nothing" but, as we all know so well, it's probably nothing, can turn into something on the turn of a dime!  Just have to get through the testing to prove it's nothing!!  Back into the really crappy waiting game but not as terrified as last go 'round!  And I have the knowledge i have gained from all on this site to thank!

    Sending thoughts for strength and healing to those here who are experiencing difficulty.

    I dunno, Nature Girl.  We generally eat healthy food.  But since the last of our parents left us we've been on a comfort food kick.  I wonder if other people have experienced the same. 

    I've been making a lot of our Moms' old recipes.  And that doesn't always mean fresh, whole foods.  Or necessarily healthy.  They cooked with lard and butter and cream like their old country parents did.  And, of course, their work was more physical than it is today so they burned off the calories more than we do.

    Last night my chef daughter, son and husband gave me a birthday party.  Number 63.  (How did that happen?  I used to not trust anyone over thirty!  Far out and all that.)

    The meal was all from scratch and so very tasty.  Shrimp chowder with lots of veggies, spinach stuffed mushrooms, a tossed salad with bacon, cukes, radishes, bleu cheese topped with Green Goddess dressing, herb bread. And for desert, fresh and tangy lemon cake topped with strawberries and blueberries and honest-to-goodness whipped cream.

    Think I'm in trouble with my diet.  And enjoying every minute of it. 

    Uh-oh.

    Seeing someone mention mini turkey meatloaves on here recently, I decided to make those tonight.  I hadn't made them in a while, so it was an easy choice.  Mine have ground turkey, bread crumbs, worchestershire sauce, fresh parsley, oregano, egg, ketchup, and salt & pepper.  With it we had salad.

    Hugs to everyone, especially Michelle, Seaside, and anyone else having a rough time!

    Happy Birthday anjita!

    My husband and I had been trying to eat healthy and lost a lot of weight. I started to feel better than I had even before starting chemo, even gave up my chocolate ;((  The last few months i have been on a confort kick and eating starch, sugar, and pasta's again I gained 5 pounds this last 2 weeks, I'm starting to feel sluggish and tired again my skin dosnt look as fresh as it was looking, so i made up my mind im going back to eating healthy again, (starting next Monday) I would love some good healthy low fat recipes if you all have some to share.

    For the topping on my meatloaf I mixed some sugar free ketchup with some brown sugar and dry mustard its really tasty.

    I remembered this today from a deli I went to years ago in Duluth, MN... it's a simple veggie sandwich but tasty:

    A slice of good whole-grain bread

    Thinly sliced veggies of choice:  mushrooms, onion, tomato, peppers, etc.  Leftover grilled veggies are good on this.

    A thin slice of a good cheese

    Spread the bread with honey mustard (or other mustard), then layer veggies and cheese.  I sometimes put the cheese on top, sometimes in the middle.  A thin slice is plenty -- enough to give it some creaminess and flavor without adding too many calories.  Pop it in the microwave or convection oven for a minute or so. Lunch! or an easy dinner, and just add some fruit and you're good to go.

    Anjanita, happy birthday!  Ah, yes, I remember the don't-trust-anyone-over-30 days.  Cool   I know what you mean about that generation of cooking -- on my dad's side, German American farmers, heavy into meat, dairy, homemade butter, lard, all that heavy stuff. My grandmother made the best sugar cookies in the world but looking back, I bet they were made with lard.   On my mom's Southern side, way more veggies, but fried everything or pork fat in everything.    My mom made the best fried chicken in the world, but I could never duplicate it no matter how much she coached me and how many times I watched her.  Probably just as well because our favorite part was the skin.  Healthy, right?  Undecided

    I've actually been eating pretty well (winter always  brings on cravings for heavier fare but when the days get longer I crave lighter things) but very simple because I just haven't felt like cooking a lot.

    Seaside, keep us posted.  Michelle, how are you doing?

    Lena, here's a sweet potato recipe I love, don't know if it appeals to you or not but it's one of my favs:

    SWEET POTATO SALAD WITH MAPLE DRESSING

    Dressing

    * 2 T. extra-virgin olive oil
    * 2 T. pure maple syrup
    * 2 T. orange juice concentrate (not diluted)
    * 2 T. balsamic vinegar
    * 1 T. fresh lemon juice
    * 2 t. minced peeled fresh ginger
    * dash ground cinnamon
    * pinch ground nutmeg

    Salad

    * 3 pounds sweet potatoes
    * 1/4 c. diced red onion
    * 1/4 c. pecans, toasted, coarsely chopped
    * 1/4 c. golden raisins


    Cut sweet potatoes into large chunks and cook in boiling water just until tender. This step is important -- don't overcook the potatoes. They should be barely tender when you pierce them with a knife.

    While potatoes are cooking, whisk together dressing ingredients and set aside.

    When done, drain potatoes in colander and cool under cold running water until you can handle chunks to peel. Slip skins off. Cut potatoes into bite-size pieces.

    Place potatoes in bowl; add remaining salad ingredients, then toss all lightly with the dressing.

    Serve immediately or later -- either way, a nice twist on sweet potatoes!

    Excellent served as a salad alone or on lettuce leaves; as a light meal on top of cold cooked brown rice; or as a side dish with a grain-based dish.

    did someone say meatloaf?



    Yummm to cold meatloaf sandwiches with dill pickle, mustard, and ketchup!



    I am going with comfort foods for the time being due to nausea and antibiotics destroying my taste buds; everything pretty much tastes like sand, so I'm eating mainly yogurt, yogurt smoothies, and mashed potatoes.



    I had my husband get me some shaved corned beef at the deli but after tasting it, I'm saving it till my taste buds are better, which should be any day.

    Tonight was fish tacos.  Pan seared tilapia coated with blackened seasoning,  Cut fish in strips and put on warmed corn tortilla.  Added diced grape tomatoes, shredded romaine lettice, diced avocado with lime juice, cumin and cilantro, plain greek yogurt and a little shredded cheddar.

    Yeah I've done the 15 hour drive. Not up for it tonight. Husband is picking up middle eastern instead. I'm having Tilapia with lentil rice and hummus. Husband will probably order falafel.

    Hee Hee hee... I'm in NY and bet I could beat Laurie there...lol!  Honestly that sounds so good! 

     My daughter is home from college for the weekend and, at her request, it's home-made mac and cheese for dinner!  Last time I made it was when my son had a friend sleeping over!  We had to beat them both back with a stick so that my husband and I got ANY!

    Will keep you all posted! It's been a pretty rough week not with my own stuff but, some family drama.. sigh!  hopefully it'll all work it's way out soon. 

    To top it all off, my in-laws will be visiting this weekend!! On the upside... I was planning to bake a ham and I think your sweet potato recipe would be a perfect side!! 

    In any case, next week is going to be me taking care of what I have to (have a mammo/us on Monday and the D&C on Wednesday)... everyone else's stuff will just have to wait!

    I'm hearing you on the "really need to get back to eating healthy" . I feel like over this past winter I have turned into such a slug!  Especially the past couple of weeks!  I know I have been indulging in a lot of stress eating!  Hopefully, once that stress clears out, I will get back to good habits!

    Duluth is SERIOUS Minnesota country... We were in Rochester, MN for 5 years and, while beautiful, it was seriously cold in the winter!  I have a friend that just moved to Eli which, for those of you not familiar with MN is up by International Falls.  WITHOUT FAIL, International Falls is mentioned on the weather channel at least once per winter as being the coldest location in the nation!

    Sherrill and all my DH found the most terrific sauce for fish taco's:

    1/2 cup plain greek yogurt

    1/2 cup mayonnaise

    1 lime, juiced

    1 jalapeno pepper, minced

    1 teaspoon minced capers

    1/2 teaspoon dried oregano

    1/2 teaspoon ground cumin

    1/2 teaspoon dried dill weed

    1 teaspoon ground cayenne pepper

    In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeno, capers, oregano, cumin, dill, and cayenne.

    OMG!!!! It is sooooo GOOD!!!!!  Now all we have to do is figure out how to cook the fish without frying it in batter!

    That sauce sounds sooo good!  This is the season for meat free Fridays for my family but fish is ok... fish tacos sound so good and that dressing sounds PERFECT!!

    How was your Vegas trip?  Hope it was fabulous!!!!!

    Vegas was GREAT!!!!  Came home with my First (and only) Tattoo!!!!!

    Actually all three of us got tattoo's and even though I could never decide on a tattoo before, this just felt right.  I posted pictures on the E-Lab thread page 113 Laughing

    Michelle, that sauce does sound good!  The next time I make the fish tacos, I'll definitely try it with it.  PS,  to cook the fish (tilapia, mahi mahi or whatever firm white fish) just brush a little olive oil on the fish and sprinkle with Blackened seasoning.  Cook in pan..Easy!

    The only tatoos I have are my nipples!  Otherwise I am a blank canvas!  Vegas,,,tatoos...Was there alcohol involved?LOL

    Naturegirl- Your dressing for the sweet potatoes sounds good, I think I might try that on my carrots when I make my glazed carrots next time.

    02b-I had a tattoo of a heart on my hand when I was about 16, had it removed a few years later that hurt worse than the tattoo itself- Not sure why I decided to remove it,because it was kind of cute. What is yours?

    Debbie, that dressing would definitely be good on carrots!

    I found some organic chicken patties that look and sound really good, so I'm having those tonight on pita with lettuce &... maybe a mustard dressing.  And cole slaw, but I got it in my head to add raisins, so I might go with a very light oil and vinegar dressing (rice vinegar) with.... I'm thinking some ginger... green onions... and toasted sunflower seeds, or toasted seseme seeds, or  walnuts.  I hope it turns out as good as it sounds in my head Undecided

    Seaside _ OMG I made your Frijoles Negros recipe last night (we tripled the cumin and used 4 onions cause they were on the small side) IT WAS GREAT!!!  We made burritos with the beans and just finished off the left overs for lunch...definitely a new family favorite!  Thanks!

    We are having fish taco's for dinner tonight(Thnks Sherrill I'll use your tips) with my sauce Laughing and yes Naturegrrl that sauce would be good on alot of things...  

    Laurie - it was so funny, my BF said let get tattoo's with "Live, Laugh, Love, Dance" and I immediately said "I get live" my BF said "I want laugh because I really need to remember to laugh more" another friend said she wanted Dance but would do it next year (she didn't want to spring a tat on hubby on such short notice) and the Love went to the only non tattoo virgin in the group so she was cool with it Smile  This was on Friday.  We all got pedicures on Sunday and the tat's on Monday just before we left Vegas, no alcohol was involved Frown

    Last night, I made a veggie pizza.  I shortcutted and bought the refrigerated dough--pressed it out onto the cookie sheet, and then put mozzerella cheese on.  Then I added fresh, chopped broccoli, cut cherry tomatoes, chopped garlic, onion powder, salt/pepper, and olive oil.  More cheese on top.  Baked it at 400 for 17 mins.

    My husband is out late tonight with work fun.  So I heated up left over chicken salsa and brown rice, made a cheese quesa and the left over avocado cucumber salsa.  It was actually fantastic.  All three of us cleaned our plates in record time!  I think I like the salsa chicken even better left over.

    Tonight is a "fend for yourself night" (but we do have some yummy leftovers so no one is starving!)! 

    Today was mammogram and ultrasound day for me so am feeling the after-effects of THAT stress... All came back perfectly normal (SO happy!!!) BUT I am also very tired from all the stressing out about it! Have one more exam on Wednesday and, hoping that is IT until Fall!

    Will try to catch up more tomorrow!  Hope you all are doing well!
