Laurie- I agree the left over chicken salsa i made a couple of weeks ago was even better the next day- My husband is out of town till next wednesday I dont have to worry about what I make or when I eat, even though i miss him when he's gone I kind of enjoy it too, ha!

Tonight was blackened cod and a great vegetable side dish, I wanted to use left over asperagus and marinated artichokes, and fresh spinach,
In saute pan with evoo and butter, I sauted some shallots and garlic (lots) till fragrant and translucent added the drained artichokes, cooked them for a few minutes, added some white wine, let reduce down about half, then added about 3 tblspoons of cream added cooked and cut in 1 inch pieces of the asperagus, added the fresh spinach some salt and pepper, lemon zest and juice, then right before serving i added some parmesan cheese, the flavors were excellent.

Dinner tonight is some leftover beef barley soup and a turkey sandwich! Nothing too exciting but, it'll do!
PS.... The only tatoos I have are from radiation... how lame! LOL

Glad you and your family enjoyed the Frijoles!! That dish was such a staple in our household when I was growing up! We still have it once or twice a month. It is a dish that BOTH of my kids like so that's a huge plus!!

Those veggies sound REALLY good! I bought 2 pounds of asparagus on Saturday expecting to have it for dinner when my in-laws were here and never go to it! They have since gone home and wasn't sure what to do with it all!
I'll have to go back and check but, I think it was Saturn that had a really great sounding recipe for asparagus soup... May use some for that and then try your dish with the rest. How done did you cook them? Crisp tender?

Seaside- yes it was me that had the asparagus soup recipe. It was so yummy, I wish I had some now!
I just got a pressure cooker delivered today so now I have to go experiment with it. Never used one before. Any ideas for something "easy" to break me in anyone?

Saturn - we use our pressure cooker all the time! I don't have the planning gene for slow cookers or the patience for that matter. I used my pressure cook for Seasides Frijoles, pot roasts and all kinds of flavorful soups. I have a great Lentil soup recipe I can post when I get home tonight if you would like...

Seaside- What I did with the asperagus the day before was put them in boiling salted water for just a couple of minutes then put them in a ice bath to stop the cooking and cool down then put it in a containter in the fridge, it will keep for a few days and is good for asperagus omlets with parmesan cheese- anyway, after heating the articokes till all the flavors absorb in them i add the asperagus, basicaly your just reheating them and then adding the spincach last i dont like my asperagus underdone so blanching first makes then al dente but not soggy,hope this helps!

Saturn- I found it thanks, what is green garlic is that when it looks like green onion growing out of it? Otherwise i dont think I have ever seen a green one, is it less garlicky? Im going shopping tomorrow and will get the ingredients to make it this weekend will let you know how it turns out. sucks, but we dont have a trader joes here!

debbie- we don't have a TJ's here either, unfortunately,but do have several "natural" grocery stores. I found green garlic at a farmers market-- it does look like a green onion with a garlic bulb on the bottom. Its flavor is just a bit different to me, maybe like a garlic with a light onion flavor. I liked that you could use the green part, I sliced it thin and used it mixed with brown rice and added toasted almonds, yum! I hope you can find it!

Hi, new here. Been reading some great receipies here. My go to breakfast almost every day ia green tea and fruit smoothies. I keep organic frozen fruits (cherries, blueberries, raspberries, etc) in my freezer all year around. I blend them with plain Greek yogurt, almond, rice, or coconut milk and flavored organic whey protien (I like Tera's Whey) my favorite is chocolate cherry with half almond and half coconut milk. I also use them for a snack for my nieces, they always beg me for them. You can also but the blended smootie in an ice-cream maker for a frozen treat.

I make mine similar, but do not include the whey powder, and use fruit juice instead of the rice milk, so I'll have to try it that way. I also add in a handful of spinach if I have it, it disappears in the other flavors. I love them! Where does the chocolate come in?

The chocolate comes from Tera's Whey Dark Chocolate Organic Whey Protien powder. I also use Tera's Whey Organic bourbon vanilla whey powder. There is no sugar in the powder just Stevia as a sweetner. I get it at my local health food store.

Finished ALL the recent leftovers today (both at lunch and dinner)....I ate the last of the spaghetti for lunch, and the last of the Italian Rainbow for dinner (with an apple for dessert). Been eating leftovers all week (accompanied with a salad and/or piece of fruit). So, cool, I haven't had to cook since last weekend! :-) It's not that I mind cooking so much as I hate cleaning up. When I have lots of leftovers, salad stuff and fruit, I don't have to wash the dishes for a couple of days, but if I cook, then there's pots and pans in addition to plates, etc. and it takes up more room in the sink faster than leftover containers, salad bowls, silverware and coffee cups -- so I have to wash dishes more often.
Well, since I ate up all the "easy stuff," tomorrow I'll have to start cooking (and cleaning) again.... Oh well....dunno what to make yet. I don't think that far ahead usually.

YUM! the smoothies sound good i'm going to have to see if my health store carry's tera's whey powder i like the fact it has stevia instead of sugar in it too, choc/cherry caught my eye! I just got through eating some lindt choc truffles, wish i would of ate something a little more healthy.

Adapted from "The Indian Slow Cooker," by Anupy Singla.
She calls for 6 to 8 chilies, but cut back if you feel that would be too hot.Prep: 25 minutes Cook: 5 hours Makes: 8 servings
Ingredients:
3 medium eggplants, unpeeled, cubed (about 12 cups)
2 medium yellow or red onions, peeled
finely chopped 1 piece (4 inches) ginger, peeled, grated or finely chopped 12 cloves garlic
finely chopped 6 to 8 green Thai or serrano chiliesChopped 1 heaping tablespoon each:
cumin seeds
red chili powder
1 tablespoon salt
1 teaspoon turmeric powder
1/4 cup vegetable or canola oilDirections:
1. Put all ingredients, except oil into a 4- or 5-quart slow cooker.2. Drizzle oil over everything; mix thoroughly.
3. Cook on low, 5 hours. If eggplant begins to look dry while cooking, drizzle a little more oil into the slow cooker.
4. Serve with roti, naan or rice.

I make several kinds of fruit smoothies too (frozen berries, bananas with almond milk)
But a real treat is frozen bananas, dark chocolate almond milk, and a blob of peanut butter. Yum!
I haven't cooked anything exciting in a while and right now I'm in Santa Monica with my husband for a mini vacation and to attend a wedding. So I will enjoy eating out and having a few days off of domestic duty!

Have we talked about artichokes yet?
Prep artichokes (cut bottom stalk so it sits flat, cut very top and snip the ends of the leaves to get the little thorns off). Rub artichoke surfaces with lemon juice.
Put in a heavy pot with water (up to about 1/3 or so of the artichokes). Pull open leaves and pummel with garlic and parmesan cheese. Drizzle with lotsa olive oil and steam for a few hours (with lid on). Check periodically to add water and do more cheese pummeling.
My kitchen smells like heaven.
Want more decadence? Try dipping the leaves in original buttermilk ranch dressing :P

Puppetlady- I love articokes, just posted a recipe with them in it not to long ago, never put garlic in the pot while steaming them sounds like such a great idea! I always made a garlic/mayo dip but the buttermilk sounds yummy too, thanks!

We are still living on the soups and prepared meals I stowed away pre-surgery. I made large batches of beef barley vegetable soup and chicken soup and froze them in quart ziplocks, flat for quick thaw. I either thaw ahead or peel off bag and thaw quickly in micro. I make the chicken soup using Costco roast chickens, setting aside the best of the meat to chop and add back into after cooking down the stock, so froze the chicken soup with meat, carrots and celery. I made half into yellow thai curry soup and left the other half plain so rice, noodles, other seasonings, etc, can be added to switch things up. For the first few days after surgery, it was soup over mashed potatoes due to the thrush I had as a side affect to the antibiotics.
I asked a friend to make me super bran muffins and I'm still enjoying those; one a day kept the enema away (well, that and stool softeners!). I picked up frozen bagged meals and the Hormel precooked meat dishes from the fresh meat department; those worked really well - pot roast, meatloaf, beef tips . . . super fast and easy for my DH and I could eat a tiny bit with my mashed potatoes. I normally homecook everything and do a lot of healthy foods for myself but the reality is that my husband just doesn't cook and isn't likey to heat up a container of quinoa and roasted veggies. Everything that required preparation was untouched in the fridge . . . it cracked me up the other day when I finally got a look at what was 'growing' in there!
I am looking forward to getting back to my own cooking; I love this forum . . .one of the hardest things is coming up with ideas for dinner. I like easy, healthy and variety. My DH is coming around but meat, potatoes, and veggie is his idea of the perfect meal.
I am worried about getting my belly pooch back (3 weeks post DIEP) . . . my appetite is back and I'm craving all kinds of things and I'm not cleared for the gym. My biggest challenge is the evening tv watching munchies and boy do those pounds accumulate sooooo quickly with low activity! I have a flat belly but could stand to lose a few pounds from my butt and thighs! Some things never change!

Treesprite- Do you have the recipe for the supercharged bran muffins? I have always put things in ziplock bags for the freezer it saves on space to, I dont have a big freezer so makes a difference.
