    Tonight I'm making a healthier version to cordon blue, I actually like it better- I butterfly or pound out chicken put a piece of either jack or provolone cheese and 3 pieces of asperagus that had been blanced in salted boiling water- roll up chicken season w/ s&p cook in hot pan about 5 minutes on each side, remove to plate tented w/foil in same pan add 2tbls of butter, 2 tbls flour add 1 cup of chx stock 1tblsp of dijon mustard cook a couple of minutes just before serving I add 1/2 lemon zested and juiced and some fresh parsley pour over chx- Sometimes I add i slice of ham (optional) making a green salad with pear/vinegrette,

    debbie6122: I'll get the bran muffin recipe from my friend and post it. The chicken cordon bleu with dijon sounds yummy -- I need some easy ways to switch up chicken breasts.

    I am big on recycling but in this case, ziplocks were great -- froze flat, spread out initially and then 'filed' in a plastic storage container.   The flat shape thaws quickly and bag peels off easily so I can transfer to glass for micro or pan for stovetop.

    I gotta so try that chicken, Debbie....it only cooks for about 10 minutes?  or do you pop it in the oven for a bit more?

    PuppetLady- I usually put chicken breast in a zip lock and pound it with my meat pounder thingy (cant remember what its called) Untill its thin, not to thin but like cutlets then it dosnt take long to cook at all 3-5 minutes per side unless you keep them thicker than longer of course, and you dont have to put them in the oven.

    I bet you could bread the cutlets as well  :)

    Hi All,

    Been away for awhile because last week was testing week and, between all of the stress of the actual testing and the waiting for results,  I really just didn't cook much.

    I should get the last of my results tomorrow and the expectation is that they will be fine! 

    So I should be cooking and posting more!  Have to go back a few pages and see what you all have been cooking while I was gone!

    On the upside... We've just been making do for soooo long that whatever I make should be a HIT!!! LOL

    Puppetlady- lol@meatthingy!!- Yes, i bread mine as well or dust it with flour, but i was thought maybe i would post it a little more healthy just in case....

    mmmmm.. chicken and eggplant parm sounds really good right now, going to be making eggplant parm next week when my dad comes to visit as he is vegetarian.

    This time of year is always filled with tests (since I was diagnosed in May) but this year had the added twist of a potential GYN problem.  Those are the results that I will get tomorrow!

    I will go back and read when I have a couple more minutes but, WOW, Lago... As usual, you post the best pictures!!!!  I would take any ONE of those dishes for dinner tonight but, unfortunately, it's one more night of getting by!

    Bran Muffin Recipes:

    The first link is for a dark molasses bran muffins; my friend used vegetable oil instead of melted shortening, oat bran instead of wheat bran, and part brown sugar substituted for some of the white. They are dark and very bran-y.

    Tree- thanks so much for posting both of those recipes they both sound good, i would probably sub blueberries for raisin or dates, i dont care for raisins but when i make this recipe i will do half dates and half blueberry just so i can try out the dates, i never really cooked with them before so It will be a new treat for me. thanks again!!

    .Even though i have been trying to stay away from bread lately i had a good sandwich for lunch today, it was a french dip but made with crusted parmasan cheese inside and outside of the bread came with aujus and was really good.

    Last night we had a dish prepared in the electric skillet and cooked out on the porch, because the weather was too hot to use the oven indoors.  Pork country ribs browned in a little olive oil formed the bottom layer.  Next slices of raw potato.  Top layer was sauerkraut mixture of sauerkraut, diced celery and carraway seeds.  Seasonings used in dish were coarse black pepper, kosher salt, garlic powder and onion powder.  Cooked on 250 for an hour or so, then on 200 for a couple of hours.  Pork was very tender, falling off the bone.  Our dinner cooked while we watched the Master's golf tournament, which was great.

    This is actually what I oftern eat for lunch. A version of Tuna melt.

    Drain 1 can water packed tuna, mix with chopped cellery,banana pepper or green pepper,fresh italian parsley and 1 tablespoon of light mayonaise.Chop up 1 slice lofat swiss cheese and lowfat chedar cheese or what ever meltable cheese you have on hand.SandP Mix well and microwave until hot and goey.Searve over your favorite healthy bread. YUM

    Soft tacos last night - my first attempt at making dinner, so starting easy. Chopped tomatoes, shredded red cabbage, carrots, black beans, corn, sour cream, seasoned ground beef & shredded cheese. My arm and underarm area were sore; haven't really done any knife work since before surgery. My DH & son were REALLY happy to have something freshly prepared, even it if was only tacos. I usually make mine into a salad.

    My favorite is fish tacos: I take any kind of white fish, coat it with either taco seasoning or a blend of chili powder, cumin, etc. and pan sear it just till done. I make coleslaw with shredded cabbage, mayo and/or sour cream, a little sugar, and hot sauce to taste. Lots of shredded veggies and black beans and fresh cilantro on the side. A heated corn or flour tortilla, a bed of the coleslaw topped off with the fish . . . yum! If you like heat, add jalapenos (I'm a wimp, so none for me). I buy the bags of frozen white fish from Costco, so usually have some on hand and pretty quick to thaw, so fast and easy.

    Our favorite salsa (or pico de gallo?): Finely diced sweet peppers (any color), diced onion, fresh minced garlic, corn (thawed frozen is easiest and tastes fresher than canned), black beans, diced tomatoes, finely chopped cilantro . . . . toss and dress with fresh lime juice and salt (the kosher flaked kind, if you have it) to taste. I use lots of garlic, lime and cilantro. You can switch it up with just about anything . . .cabbage, diced celery, salsa instead of fresh tomatoes, you can use diced canned tomatoes (drained) if that's what you have on hand. Easiest to make in the food processor. Great as chip dip, salad, and a topping for tacos; great for parties. The key is the fresh garlic, fresh lime, salt and fresh cilantro . . . so just about whatever you have on hand can be tossed together if you have those basics.

    We are finally starting to get a bit of spring weather in between rain and sleet and hail here in the pacific northwest, so starting to think of warm weather food.

    Today is my son's 17th birthday, so french toast, fresh strawberries, and whipped cream and bacon and sausage . . . could it be less healthy?

    great recipes going around!  My dinner is very boring but thought I'de post since I haven't in a awhile.  We are having shake and bake pork chops with applesauce, the first corn on the cob of the season and some rice.  Pretty simple dinner, but hey, every night can't be fancy or exotic right?

    If you like fish tacos, google Giada's fish taco recipe...uses wonton wrappers in cupcake tins baked until crisp....very fresh.

    Hi All,

    I got my results yesterday and they were all benign!!! 

    Cooked for the first time in over a week and it was Debbie's Cordon Bleu... Delicious! Thank YOU!

    Went to the store today and tomorrow's dinner is is a take on Carolehalston's ribs with sauerkraut! 

    Trying to get back in the swing of things! 

     Laurie... I must say, I saw corn in the store today and it looked SO good but, it didn't fit my menu for the next couple of days so I didn't buy it!  HOPE I don't regret that move!  As we know in the NE, you really need to get the good corn on the cob when you can! 

    Still trying to catch up here!!  Keep the recipes and tips coming!!!

    Jennifer - that is great news!

    I've been away from this board for a while, dealing with a recurrence.  I had BMX yesterday with TE's and I am home now in my chair.

    We are eating the Chinese Pie that I made on Saturday...comfort food.  My DH and DD are taking good care of me.

    Thinking of you as you heal!  Let your family take care of you!  I know, from experience, even though it's not a role we often feel comfortable with, it DOES help our children/spouses to know that they are needed and able to help!

    I had the most wonderful fresh meal tonight.

    I don't know if this is a franchise eating place or not but it's new to our town - The Pita Pit.  It's run on the same order as Subway Sandwiches.

    You get your choice of a monster-sized pita, whole wheat or white, with a filling of your choice and then are able to chose from many fresh veggies, spreads and sauces to load it with.

    I had felafel, baba ganoush, spinach, onion and tomato with tsatziki sauce.  (Then I blew the whole concept with kettle chips and a macadami nut/white chocolate cookie!)

    Best yet, they deliver.  This will make a great alternative for our usual Friday night pizza and movie.

    Finished leftover chicken parm tonight, with a pear for dessert (oh, and made the "good" tuna for lunch and had a tuna melt with it). Glad I had "easy" dinner (just throw it in the microwave) because today's spring cleaning made me really exhausted. LOL.

    My Pack Rat will probably be coming over tomorrow night. Originally was thinking since I'm not in the mood for "complicated" cooking, I'd probably just make one of the "simple standby dinners" I commonly make: chicken, beans and rice or maybe chicken, mashed potato and a salad, but now I come in here and see all this seafood stuff...Fish....yummmmmm.....I love seafood....but, the only kind of fish my Pack Rat will eat (other than tuna) is tilapia. I do have some in the freezer, though.... 

    Guess I'll have to post back when I finally decide. LOL

    Oh, you have a Pack Rat, too, Lena.  Mine watches "American Pickers" and I keep telling him he should be watching "Buried Alive." Tongue out

    The maple sap is running here and yesterday a friend gave me a pint of homemade maple syrup.  Just as good as gold.

    The syrup she gave me was a golden color.  I learned something new.  The lighter colored is the earlier sap and the darker is the latter.  Different people have different preferences.  So we'll give it a try and see what we think.

    So tonight it's blueberry waffles and sausage patties.  Lotsa butter.  Not exactly healthy eating but certainly enjoyable.

    I've always made my waffles the way my aunt did - folding in the egg whites.  Thought it made them lighter.  But online I found a recipe that's a lot quicker and equally as good.  It also keeps overnight in the refrigerator.

    I've been trying to balance out my husband's packratting by narrowing down some of my own belongings because he is close to retirement.  But I just had to go out and buy a new (and quicker) waffle iron.  Just once in my life I'd like to get a warm-off-the-griddle one. 

    It makes four squares and they're the perfect size to fit in the toaster.  So I'm going to whip up a batch and freeze them and see how that works.

    Here's a story about my husband's obsession:  Last summer someone broke into his wood- hauling trailer and stole two of his chain saws.  (We burn wood and he explained to me that he needed different sizes for different sized branches.  Riiiiight.)

    He was pretty upset.  And that night we were at a neighborhood party and I overheard him telling someone about losing two of his chainsaws but, "thank goodness I still have one in the garage!"

    Guy had six brothers and never had anything to call his own.  Now he needs three of everything "just in case."

    Edited to add:  Has he tried halibut or cod, Lena?  They are meatier than tilapia but both sweet and don't have a fishy taste.

    Has anyone ever tried Basa..........................it is so good.  very hard to get.........but it is great............Tonight for me and my daughter its Spaghetti and Crabs...............My son-in-law is on a 3 day field trip with my grandson, so they won't be home for dinner, so its just her and I, and my 10 yr. old grandaughter...............she will eat hers with butter and locatelli cheese cause as she says "On Nannie, I don't do crabs".............she doesn't know what she is missing.     Tonight is home made chicken pot pie.  It is a raw and rainy day here in the North East and I decided some comfort food was in order!

    Wow, I got a chance to go back and look at some of the recipes that were posted in the last week or so... You all have been busy!  They ALL sound so good!

    I don't think I have had fish tacos before!  That's one I will definitely try!  This year we will be home for Easter for the first time in years so I will have a little more freedom to make what I would like to have without worrying about whether or not my extended family will like it.  I do believe that we will be trying whole artichokes for the first time!

    I don't  have a large freezer so I do tend to freeze in ziplocs because they take up less space when stacked than containers.  Never thought to "file" them in a plastic container.  I would imagine it makes it easier to pull out that container to find what you are looking for!  Brilliant idea! Thanks for that tip....

    I have been eating tuna fish in one way shape or form every Friday for the last few weeks.  The addition of banana peppers for some zip sounds really yummy!

    If you all are having the same weather as we are, pot pie sounds like a REALLY good choice!  It was just sunny and in the 70's here on Monday... Today... Chilly and rain all day.  Yuck!

    Easy dinners and leftovers are perfect for those days when you have been busy all day!  That is another time when crock-pot meals are great!  I can dinner all ready early in the day, when I still have energy and when dinner time rolls around, it's just serve and eat!
