    KAARA, you must have needed the nap! Lacy and Tazzy, let us know how the mint works out. Eric, oh, I hope they get ahold of any MO for Sharon to stop the pain. Carol, hate when that happens. Deb, chix recipe sounds good, but the rosemary powder had too many contraindications for Me, diabetes and all. To everyone I missed, much love.

    Hi!

     I've been a lurker for the past few days and  love your foodie conversations!  (Hi, SpeciakK!) 

    I have a question for anyone that is familiar with a vegan diet.  My niece is coming to visit next week and she is a vegan.  I am very comfortable with vegetarianism, but vegans are a whole different story!  I want to make a dessert for a party we will be going to.  Does anyone have a good vegan dessert recipe?

    BTW, tonight's dinner was turkey tacos.  Unfortunately, I was feeling too bloated to eat, but my family enjoyed them.

    Dang Laurie thats too bad DS is running a high fever! And with you working now it has to be extra hard when you dont feel good. there is a lot of crud going around I still have this terrible cough I've had for at least a month i sound like i have whooping cough or the croop I dont feel bad, just can't get rid of the cough. Dr gave me another round of antibiotics the other day this time a z pack of azithromycin hopeing it does its job, still wheezing and out of breath so don't know what it is. Hope you and DS bounce back quick. Probably being summer you want to be outside all the time so it is a lot harder to plan meals.Cool.

     Lacey- your right oregono is good but rosemary has that special flavor, i love to saute my zucchini with tyme and rosemary and garlic then put some parmesan cheese on it and stick it under the broiler until the cheese melts so good.

    Eric- Sorry Sharon is still in so much pain, its good to know the dr is available for the weekend should she need it.

    Kaara- I always get tired after a big meal but you probably needed the rest. glad you had fun last few days.

    Carol- Thanks for the chx recipe I will do it tomorrow since its getting close to dinner time now.

    Moonflrw- I will still use it but sparingly. I imagine every thing in moderation is ok but with Diabetes i would not take it either.

    Dinner tonight is pork chops in a brandy mushroom sauce. and spinach salad. The dressing is good. I mix 2 tbls of balsamic vinegar with 1 teas of dijon mustard, 2 tbls evoo. 1 tbls of blueberry preserves, mix well then drizzle over spinach leaves and mix in some walnuts, blueberrys and gorgonzola cheese. Yummmm!

    Watching the weather news looks like storms everywhere over there, everyone be safe.

      Hi marcia and welcome. My dad is vegan i make these brownies for him when he comes to visit they are really good but gooey. These are tofu brownies
    • 3 ounces
      firm silken
      tofu
    • 1/4 cup
      non-dairy milk (like e.g. soy) you could use almond milk too
    • 1/2 cup
      canola
      oil
    • 1 cup sugar or raw sugar
    • 2 teaspoons
      vanilla
      extract
    • 1 cup flour
    • 1/2 cup
      unsweetened cocoa powder
    • 1 tablespoon cornstarch
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt



     

    Directions:


    1. 1
      Puree the tofu, non-dairy milk and oil until smooth and fluffy.
      Transfer to a mixing bowl. Use a fork to vigorously mix in the sugar and
      vanilla.

    2. 2
      Sift in flour, cocoa powder, cornstarch, baking powder and
      salt.

    3. 3
      Use a spatula to mix batter until smooth. Transfer to an 8X8
      greased baking pan and smooth out the top.

    4. 4
      Bake in the preheated oven at 325°F/150°C for 25 minutes or until
      set.

    5. 5
      Remove from the oven and let the brownies cool for at least 15
      minutes before slicing and serving.

    Debbie- I am so sorry you are still not feeling great and have the cough.  You must be so frustrated.  I know I am.  Whatever the heck is wrong with me has been going on for so long it is nuts.  This morning when I got up the pressure in my face was so bad I thought my eye was going to explode.  I was actually crying.  But some Aleve and I was better.  Jeesh.  Your dressing sounded good, different, I would never have thought of putting mustard and blueberry preserves together.  Whats it like?  I mean besides yummy:)

    So I got my dinner all prepped and started sauteing my chicken and realized I had no Marsala wine!  So I went online and looked around real quick and improvised it was really good!  I loured the chicken with flour, salt and  pepper and dried parsley pan fried it till golden on both sides and put in the oven to finish cooking.  Sauteed some mushrooms and garlic in the pan, added a cup of Madeira wine and a cup of vegetable broth (it's all I had) and a couple of table spoons of flour, reduced by simmering 20 minutes.  Put the chicken back in for a few and then topped with a slice of fresh mozzarella cheese.  DH walked in the door and said what is it?  Told him I had no idea, lol!  He said after dinner, your  no idea chicken is pretty damn good :)

    Seaside thanks for the heads up on the storms earlier.  We have been lucky so far and have just had rain.  THANK GOD!!! :D

    laurie.. ha ha ha on the dinner.  funny how a meal which we are improvising on can turn out so well.  In french No Idea chicken would be `Aucune idée du poulet`and they`d charge a fortune in a restaurant for it Wink

    Spices - Do look up Penzey's and request a magazine/catalog.  They do have powdered rosemary.  Descriptions of spices are amazing - along with recipes in every issue.  If you have a store close to your location you will think you've entered heaven.  www.penzeys.com or 800-741-7787.  I can spend hours just reading about all the spices & some of their histories.

    Beets - Del Monte makes canned "shoestring" beets.  I throw a handful or two into most green salads - along with black olives.

    Hooray for Trader Joes.  The first one just opened in the Houston area.  Unfortunately 40 minutes away from me but I made the trek yesterday.  Such wonderful goodies. Blueberry scones for dinner tonight.  Tazzy - your closest location is probably Spokane.

    Hope everyone who's sick is soon on the mend.  Working 5 days a week & doing water aerobics 2 nights & Saturdays has really cut off my computer time.

    Pickity Place has the ground Rosemary, it is ground so fine that it looks like powder.  I bought some.

    Had burgers and watermelon for suppa.

    Laurie- What did you do to loure the chicken into the flour LOL!! funny!  I was thinking since there are viral and bacterial infections maybe a different antibiotic different than what they were giving us  would work. I dont know, just a thought but agree it is so frustrating. The dressing was good wasn't sure i would like it but its good. I put dijon mustard in a lot of dressings you dont need much or it will be too overpowering and give a bite, so usually just a teaspoon is all you need for a great flavor. Glad your dinner came out good after all the improvising.

    Minustwo- Hi good to see you again.  And horray for the new trader joes, wish we had one here. your blueberry scones sound good.

    Deb- I agree with laurie love when you say, suppa or lobsta! haha!

    Sorry about the long recipe post on the brownies. dont know why the format came out that way.

    Hi Marcia!  I think you could do apple strudel and it could meet vegan requirements - just don't use any butter - but I think everything else is OK.

    Marcia, I remember a chocolate cake made with vinegar and baking soda. I can't remember the whole recipe. But maybe you can Google it.

    Laurie.  I can see it now.  You sneaking over to put the zucchini on the front seat of their car!  Innocent

    And for both you and Debbie, hopefully the sick goes away *real soon*...nothing worse than feeling bad when the weather is nice.

    Sharon is snoozing right now.  She's not quite at the point of Vicodin...Aleve is working for the moment.  They doctor's office didn't get back today. What's a bit irritating is that the doctor told her she could get the port out at any time.  I don't see how a port removal can be any more invasive than a tooth extraction, but then I don't have DO or MD after my name....

    There is a Trader Joes near where I work and an AJ's Fine Foods near home. I just looked and there are two nearby Penzey's--one about 20 minutes from home and one about 20 minutes from work.  I go to the others, I'll have to check the Penzey's...maybe this weekend.

    Thanks everyone for the recipes. I print them out and stick them in my notebook.  I have a bunch in there from here and I also have a bunch from my college days--some were typed on a typewriter and some hand written.

    Tonight's dinner was the stuffed peppers left over from last night. I think this is another of the recipes that tastes better after its set for awhile.  It's got the salt, pepper, paprika, onion, garlic and orgeno in the rice that was cooked in chicken broth.  One thing I was thinking of doing was adding in a few raisens, but I didn't have any..(TMI alert) they had therapeutic value during chemo......

    I know, but that was my heritage speaking.  Have you ever heard a Norwegian start a dessert recipe without a pound of butter or at least a pint of cream?  Maybe if they had access to good lard! Wink  Joking of course, mostly.

     Eric- I think Sharon will feel a lot better after the port removal but not so much after a tooth extraction! I was asleep during my port removal and was so happy to have it gone! I think because teeth can get infected is why they are being so careful with her right now, but I understand what you are saying, she should not be having to go through this pain at all! Hmm raisons in stuffed peppers? Sounds interresting! I am not a raison person unless they are chocolate covered I use chocolate covered raisons in my oatmeal cookies!

    Specialk- I have used the vegan butter which is pretty good so maybe that would be a choice although don't know how it would cook up in a cake??

    Chabba- LOL! I agree butter and cream!

    Eric,  So sorry Sharon has to go through this now.  Nothing worse than a toothache or earache.

    Helping a friend paint her new house so she can get moved in quickly..going through a divorce.  So last night got home at 9 and had to put something together fast Did a  stirfry with all of the fresh veges in the house, zucchini, yellow squash, eggplant, onions, mushrooms, threw in some lo mein noodles (they come frozen already cooked)  some wine and butter and garlic Done in 20min.

    Laurie My sister is doing well, thanks.  She has Dr appoints in Aug and will make a decision and have surgery Sept 5  She wanted to wait till she has her big family reunion in Aug and her son will come home from Seattle  She will tell him when he gets here, then the surgeon is on vacation.  She is leaning towards a lumpectomy and radiation as her tumor is sm and stage 1

    Well  Off to paint some more and then a car show tonight.  Happy weekend everyone

    Debbie:  That wheezing doesn't sound good...you probably have bronchitis that has become chronic, and the z-pac should do the trick.  I did hear that there is an epidemic going around of whooping cough in adults...don't know if there is a test they can do for that.  That dressing for your spinach salad sounds wonderful!

    Laurie:  Hope DS gets better soon....little kids run fevers so easily.  My DGGD is now having seizures every time she gets an ear infection and fever.  They say that some young babies have these, but it worries me none the less.  DGD is taking her to an ENT for evaluation.  Her neurological workup was normal.  Always something with kids....now I have to worry about the DGC:( 

    Marcia 1111:  Welcome to the thread...I see you live in Boca...I spend the winters in Coral Springs, the next town south of you.  I'll be back there the end of August for my DGD's third birthday.

    Well, time to get back to my routine of exercise, and also some much needed housecleaning that has been neglected.  I did several loads of laundry last night, so am caught up there.  It rained while I was away, so the plants are doing fine.  Guess I'll have to break down and cook tonight.  We were so full from our lunch yesterday that we didn't even eat dinner.

    I am SO irritated right now!  This morning I got up and thought, hey my sinus' feel a little better maybe it's going to be a good day?  Then, after getting my boys dressed DS #1 decided to hang from my arm and threw my back out!!!!!  I managed to get us all in the car and to the chiropractor and it's a little better but jeez!  This is not what I need.  I still managed to go to the grocery store but I have no idea what I even bought.  Getting ready to lay down for their nap time with an ice pack on my back.

    I was going to head to the new outlet mall before taking my mom for a physical.  But the sky opened up with some much-needed rain, so I guess walking around outside wouldn't be that much fun right now.  I'm craving Italian food.  If I don't whip up something for lunch, we're going to an Italian restaurant for dinner.  I have decided...lol!

    Laurie, sorry you traded one pain for the other! DS needs to realize he is a big boy now.

    Have not heard of Penzey's, will have to check it out when we are travelling. We were in Napa in May 2011, and I have to say their Whole Foods is the most amazing store I have ever seen. Foodie paradise. And the wine!

    Did not have steak last night. Went to our favorite burger place instead. I had a bison green chile burger on a GF bun. We'll have steak tonight. Then something besides beef for a few days!

    Speaking of dijon, the dressing we love is a vinaigrette with dijon too. I got a couple of glass salad dressing bottles from Amazon, and they have the ratios for different dressings printed on them. We are stuck on one, though. I use the California olive oil from TJ's, their wine vinegar, maybe 1/4 cup of flavored balsamic (usually fig), dijon, S&P, garlic and a bit of water. The balsamic makes it thick. The olive oil solidifies in the refrigerator, so you have to remember to take it out early. So good!

    It's so easy I can't figure out why I haven't been doing that forever. My next project is sprouting. I want to grow my own broccoli sprouts and maybe a micro salad mix. Anyone tried that?

    Laurie:  So sorry about your back....that's a bummer....sometimes the chiorpractor is the only answer.  Mine did that once on Xmas Eve when I was planning the dinner for the entire family.  A visit to the CP at least let me get around a little.

    Diana NM:  That dressing sounds really good, and that burger place even better.  I wish we had something like that in Fl and NC!  Apparently they do, but it's over in Raleigh.

    I cleaned house today..top to bottom...left the stairs and lower level for my BF to vacum when he gets home from golf.  Now I'm going to take a hot shower and relax a little before starting dinner which will be turkey breast, cornbread stuffing w/cranberries & nuts, sweet potato, and green salad with grapes and walnuts.

    Kaara- I was worried about whooping cough too, your right there is a big epidemic going around but the dr. heard me cough so i guess he didn't think I had it. Whooping cough sounds like a seal bark mine is more like the croup or broncittas.Seems to of settled down since i started the zpac. 

    Ooh Laurie thats aweful you certainly didn't need this right now!! Hopeful with some rest, ice and a pain pill it will help. I hear there is a miracle cure out there called a "Margaritta" have a few tonight see if that helps. Tongue out. Seriously though hope it gets better quick.

    Michelle- How are your feet doing? Hope they have finally healed.

    Dianna- Your dressing sounds really good, I love the fig balsamic its so good. I have not done the sprouting before I am sure someone here has be interresting to find out how.

    I am making Caroles chicken crock pot recipe, but added some carrots, yams and parsnips along with the onion decided to put a little chx stock in there since i have veggies and was afraid they might burn or stick. Smells yummy! Dh just called and asked if we were going to the Mist or the Sea hag tonight, I totally forgot it was friday our night out for dinner. Just have to put it in fridge when its done and eat it tomorrow.

    Lunch was dates (been loving them lately) with stilston blue cheese and crackers. I used to loathe dates now I crave them. Who knew!

    Debbie dinner sounds yummy!  I was thinking if getting something for the crock pot too...but had no ideas while in the store :/  I am with you on the pain!!  I won't take any meds being alone with the kids.  I tried ice and it didn't help so I switched to heat and an Aleve.  That did help:)  I just got Jake to vacuum and steam clean my floors!  LOL!  And I am contemplating a glass of wine right now....

    Dinner....I am thinking it will be pizza, I bought a dough at the store since mine never turns out right.  Some ceasar salad, something simple.

    Diana- those salad bottles sound great!  I should make my own dressings more often.  I never think of it and never have the right stuff on hand.

    BTW Michelle I couldn't agree with you more.  I actually yelled out loud, "Can I just catch a break here??"  As I stared at the ceiling....DS#1 asked who I was talking too:)
