    Hello all   I missed the olympic ceremonies, was out at the car show....did find a really fancy camaro though that is going on my bucket list...LOL  I owned a camaro in my early twenties, my favorite car of all time!!

    Thought the car festival woud have some good food vendors, but after reviewing them all, we all decided on cheeseburgers, boring!

    Laurie, hope the back feels better soon.  I remember the disappointment in my daughters face when I told her she was too big to run up and jump, expecting me to catch her....she always had to be on top of me every second.....ha  ha and still does at 25, still will sit on my lap on the couch.

    Outdoor barbeque tonight,  I have to make an appetizer to take...nothing in the house..need to get really creative.

    Breakfast this morning was soft stuff.....An omelet, sourdough pancakes and steamed apples with a bit of brown sugar and cinnamon.



    Lunch is likely to be a Vicodin for Sharon.



    I'm not yet sure what to do for dinner.

    Joyce- I love the little cafe's with homestyle cooking sometimes they can be better than the fanciest of restaurants. Hope you got some good sleep. Please keep us posted on your test1

    LoL Deb at the gagging picture! Sorry about DH knees, is he going to have both done at the same time? those surgery's can be pretty rough. Will keep him in my thoughts and prayers.

    Had crab cakes and ff's for dinner last night. Crab cakes were about a 6 but still good. Tonights dinner is the chicken i cooked yesterday. Iam going to take a blankey and go to the beach and watch all the kiters. Tons of people in town some kind of famous basketball tournament on the roof top of the mall about 50 different teams boys and girls. so lots of tall people in town. And tonight the Jackson brothers are singing at the casino- Wasn't sure they would make it with all the bickering going on. DH could get me tickets but decided to stay home, I am sure its going to be too crazy there.

    Yes, I have no potatoes, and am looking for a chowder recipe without them with frozen flounder.  I have milk, yogurt, onions, garlic, carrots, canned corn and canned tomatoes and some herbs?

    I was looking for "Yes we have no bananas" by Jimmie Durante, but couldn't find it on youtube. I love that guy, but this is a song that will bring you back to before you were born!

    Does anyone have any ideas for chowder without potatoes? ?  Or if not soup what to do with frozen flounder?

    Flounder is a delicate fish. Without some fish stock, fish soup is not a great option for you. I would thaw the fish on some paper towels to absorb the extra water, dusting with just a bit of kosher salt. Meanwhile, make some bread crumbs from some old bread [or use store bought] and add some finely minced fresh herbs. When the fish is thawed, do your best to get the fillet really dry. Rub some olive oil on the fish and press the bread crumb mixture onto the top of the fillet.

     Have a cast iron frying pan heating under your broiler until it is screaming hot. Take the pan out, drop your fish, breading side up, and put back under the broiler for about 4 minutes. Serve with some lemon if you have it.

    For a side, I would make a fresh carrot salad or quick pickles with the carrots, garlic, and onion. If you liked baked corn, you could drain the can of corn, and put the kernals into a small casserole. Add a bit of butter and some salt and bake until bubbling.

    Deborye, how wonderful to be finished with arimidex.  I'm looking forward to that day myself in a couple of years.

    Thought about the beet discussion today as I bought beets at the Farmer's Market.  Cooked them outside on a hotplate to keep cooking heat out of the 5th wheel camper.  Will pull out the electric skillet and use it outside, too, to cook a zucchini and ground beef recipe.

    Tomatoes are getting more plentiful.  Bought 10 organic tomatoes, med. size, for $5.  And 4 cucumbers for a $1. 

    Ate breakfast at an interesting restaurant out in the boonies called Logger's Camp.  The location was a logger's camp and the buildings are substantial log structures.  The Mess Hall is a large room with long tables set with metal plates.  Seating is wooden benches.  You take a seat and are served your breakfast on a platter:  eggs cooked like you like them, hashbrowns, ham or sausage patties, pancakes.  The orange juice and milk are brought in pitchers.  There's also a dish of logger's raisins--prunes.  I had forgotten that prunes are tasty!  The jug of syrup is warm, a plus.  It was quite delicious and price was $8.75.  I normally don't eat restaurant hashbrowns, but these tasted good.

    Dinner will be heavy on veggies after that big breakfast, which was actually breakfast and lunch.

    Debbie- I hope you enjoyed the beach, it sounds so relaxing. Watching people fly kites and listening to the surf....only thing that could make it better is a Margarita :)

    Eric- I hope Sharons mouth is feeling better :(

    Joyce- Yay!  So happy to see you posting again.  I hope all of your tests go well and you get some answers with easy solutions.

    We had a quiet day for us today.  Ran errands this morning and bought the boys new bikes- not planned but they were so happy and it was needed.  DS #1's bike was too small for him and there was one on sale he loved.  I feel bad that DS #2 always has his brothers left overs,and I mean ALWAYS...so as he quietly watched his older brother pick his bike etc I whispered, do you want to pick one too?  OMG, over the moon does not touch how elated he was.  Dh says, but he can have the old one?  I said yha....but look at him!  DH agreed so we came home with 2 new bikes.  Then I walked in the rain with the boys for over an hour as they rode them.  A soft rain- it was kind of nice.

    We grilled a steak for dinner,some zucchini and salad.  Everything turned out yummy and hit the spot.  DH cooked as I gave the boys a bath so it was nice to just come down and eat.  I also cut up some of the fresh tomato my dad brought over and just ate it with salt and pepper.  Super yummy.

    What a great day you all had!! I think, from my own experience, sometimes the practical thing to do may not always be the right thing.... I think your DS #2 will not soon forget this day!!! Maybe you can donate your older son's bike and claim a portion of it on your taxes....



    Fresh tomatoes... Nothing like them... I have my very first one ever ripening on the vine and am sooooooo excited.... Still needs to get a little redder but we're getting close!!!

    I have a lot of tomatoes but they are all still green.  So I go to the farm stand not too far from me.  I have fresh Basil in my garden and love tomato, basil, mozzarella salad with balsamic vinegar.

    debbie, no he will have them done one at a time, the right one first because it is the worse. He is bone on bone no cartilage.

    Took my other half of my sub from last night and chopped up a little bit of vadalia onion, lettuce and tomato to put in it cuz the double dumb ass order taker screwed up my Italian sub.  I wanted everything but hots.  Got the meat cheese and mayo.Undecided

     Laurie- You painted the perfect picture of the kids and there biles with the soft rain coming down. How cute your youngest got so excited. So sweet! How is your back today? I started out having a good day at the beachh, I got some bingo scratch tickets and headed to the beach, forgot my blanket so parked myself on a log was enjoying the sun, surf, kites and all the people until I hear this voice saying, "Are you from around here"? I looked up and saw 2 scruffy looking biker dudes (no offense to bikers) And one of them sat down close to me on the log, smoking a thin looking cigar. His friend standing right in front of me, don't know why with all the people around I got nervous I pictured them saying come quietly with me or we will shoot you. LOLOL! I swear I am getting nuttier than a fruit loop! One guy says Iam going to get the camera. (they didnt' look like the camera kind of guys) As soon as that one left I said well, i have to go no, byeee, and took off as fast as my feet would take me. What's funny is the log was really close to the ground, and when I first sat down i was thinking how hard it was going to be to get back up, but I kind of jumped right up off of that old log with no problem. hehe! so much for my nice peaceful beach day. ;-))

    Deb- LOL@the double dumb ass" remark. Hehe! Ouch! Sounds painful, but glad he is only doing one knee at a time.

    Bedo-I just listened to Jimmy Durante even though it is before my time i love that song , got me kind of weepy. I also make a manhattan style chowder with a red sauce if you decide you want that too.

    Seaside- The best meal I ever had was from our fresh gardens while growing up, hated when all of us kids had to get out and weed but the end result was delish! Good luck on the tomatoes!

    Carole- Your breakfast sounded so yummy! The chicken was excellent too btw.

    Hi everyone!  We had a busy day today - met our son for breakfast then went to the outlet mall and bought some baby gifts.  Then we went back to my son's to borrow a bike for me.  We took it to a bike shop and I tried it out, but I couldn't get comfy on it.  The bike shop had a gently used ladies bike that fit me perfectly and was priced about the same as what we would have spent to modify the borrowed bike.  So I am now a proud bike owner.  DH and I went for a ride on a nice bike trail here - I did 6.5 miles, not bad for the first time in about 25 years!!! 

    Laurie - today must have been bike-buying day!  I'll bet both of your boys are super-thrilled!

    Kaara - the blisters were probably a side effect of the Xeloda (hand/foot syndrome).  My MO lowered my dose  from 1500 mg x 2 to 1000 mg x 2.  I'll need to be a bit more cautious about pressure on my hands and feet.  That's one of the reasons why we would have had to modify the borrowed bike.  It had me in the leaning forward position and it was too much pressure on my hands.  With the new bike, I'm riding more upright and it keeps the pressure more on my butt and less on my hands.

    Joyce - funny that your DH wanted to go to Carrabba's last night, mine mentioned it, too.  We ended up at Trattoria Amalfi instead.  I think we need to plan a Carrabba's night!

    Carrie - the car festival sounds like fun.  I never had a Camaro, but we had a red 1962 Chevy Impala convertible.

    Deb - I had cortisone shots in both knees just before we went to Paris.  It worked like a charm and my knees are so much better.  I hope it works well for your DH.  If not, he could try a Synvisc injection.  It claims to be good for 6 months.  My ortho said I could have it if the cortisone shot didn't work for at least 3 months.

    Apple - I hope you had some good casseroles at your pot luck dinner!

    Debbie - watching kites sounds very relaxing! 

    Eric - hope Sharon is now pain-free.  I've had a couple of root canals and I usually feel so much better once it's over.

    Carole - your breakfast sounds yummy!

    So many of you have had steak in the last couple of days, I think I am going to pick up a couple for tomorrow.  DH is playing golf so I'll have most of the day to myself.  I think a trip to the meat market and veggie stand are in order!  I have two large tomatoes begging to be caprese salad, too.

    Love the happy coincidental happy bike purchasing in NH today!

    Just wrote a little chronicle of our second day in NJ with "Daryan and the docs", and managed to lose it....Dang it! No energy to re-write it, but suffice it to say that we are constantly being amused and exhausted by the antics of this lively 19 month old. So much fun!



    Close your eyes beet haters...Made a great beet/berry/walnut smoothie for everyone this morning. Everyone loved it.

    Had a great Italian meal at a local restaurant tonight. Appetizer of Calamari with a wonderful homemade spicey chunky tomato sauce, and entree of large shrimp with eggplant, red peppers, artichokes, with mozzarella melted on top....roasted veggies on the side....Lots left for tomorrow, like three fourths of it! Enormous portions!

    Not writing another thing in case my fingers make another errant move and erase this!

    Had Mexican today at a small place in town. Then dropped my DH off at home and went to the Port Summer Musical. It was "Legally Blonde" this year. Fun, but they always are. First time in a Long time one of my kids or neices, or nephews weren't in it. My sister in law was in the pit band though.

    Laurie and Michelle, enjoy the new bikes. Michelle and Deb, the cortison works for 6 months at first. Then less. The Synvistic for about three months for me, but my knees are pretty far gone. The synvistic was good, but too shortlived, although it lasted for the recovery from my BMX! I had to get approval from the Insurance company before they would allow it. If is very expensive. Especially for both knees.

    Lacey I hate when I lose a post. To everyone. I hope you ate having a good weekend.

    Michelle- I saw your pic on FB on your bike you looked so cute! I am so thrilled for you that you did over 6 miles wow! I agree it must of been bike day!

    Lacey- Your smoothie sounds excellent. I have to keep that in mind.

    Moonflwr-You must have a talented family! 

    Had oreo pudding for dessert, it was instant and so good. Never tried this one before but it is my new favorite!

    Michelle:  Good for you that you are riding a bike.  Great exercise!  Glad your blisters are under control and meds modified to make sure it doesn't happen again.

    Bedo:  My DDIL makes a great fish chowder without potatoes...she uses a lot of butter, cream and white wine, along with mushrooms fish and shrimp.  It's outstanding, but she guards the recipe carefully as it's a signature dish of hers and she doesn't want the rest of us duplicating.  I just know it can be done and tastes wonderful!  It's also great served over pasta.

    Lacey:  That smoothie sounds good...I think I'll give it a try.  Beets are very good for you as a cleansing detox.

    My BF won his golf game yesterday, so he treated me to dinner at Biltmore Park, an area here in the mountains that has a lot of restaurants and shops, as well as a movie theater.  We ate and walked around to enjoy the beautiful evening.  It was nice.  We both had cedar planked salmon with sweet potato fries and steamed veggies...a healthy meal.  We share a glass of wine.

    Today we'll either go to a movie or play nine holes of golf later if the weather holds.

    Just found out we lost another BC sister to this effin disease. I met her in Las Vegas at a Greet & Meet in 2008.

    Dreamwriter aka Regina Evans I will miss you.  My sincere sympathy to her family.

    Carol, where are you parked now? We hope to be full time RVers in a few years. And a good farmer's market will be important! I'd like to stay West Coast, maybe Tucson to Washington state, but gulf coast of Texas is supposed to be nice in the winter too.

    Kaara the fish chowder sounds delicious. Too bad you can't steal the recipe for us.

    We seem to be getting one tomato at a time. Not enough for a Caprese salad yet.

    Was going to make our favorite crispy salmon on potato salad tonight (Gordon Ramsey recipe) but I am the only one home this evening. So leftovers tonight, salmon tomorrow.

    This means I get the TV to myself and can gorge on the Olympics. I am the only one that likes to watch. Ryan Lochte is a cutie, isn't he?

    Diana, we're "summertimers" and are spending a couple of months in northern MN near Park Rapids.  The rest of the year we live in our house in south Louisiana.  A lot of people winter in south Texas and in AZ.  We have met quite a few fulltimers and they all love their lifestyle.

    Michelle, six miles on your first bike ride!  That's great.  DH is planning our next bike ride for tomorrow and we're going to push for a few more miles than our last ride, which was 19 1/2 miles.  Our bikes have hybrid tires, not the skinny ones.  DH bought me a new seat that is very comfortable.  My bike is set up for a partially upright posture.  I don't lean over the handlebars.

    I walked 55 min. this morning on a street with big sloping hills.  My legs and lungs got a workout.  For brunch, we had bacon and tomato sandwiches on slices of the delicious multigrain bread we bought at the farmer's mkt.  The sandwich was so tasty.

    Any ideas for carrots as a side dish?  I've only cooked them in stews and soups or grated in coleslaw or carrot & raisin salad.  

    It got warm enough this afternoon that we closed up the camper and turned on the a/c.  It has been off for several days.

    Hope everyone is having a good weekend.

    An easy and tasy way to cook carrots is to peel em and cut them into sticks or just halve them lenghtwise, depending on size.



    Heat a large saute pan with some olive oil, throw in carrots and a teaspoon of grated, fresh ginger. Saute until carrots start browning slightly, add some sliced garlic and about 1/4 cup of water and a little salt. Put a lid on and reduce heat a little. When carrots are almost tender, take off lid and let liquid evaporate. Add a handful of chopped cilantro before serving (if you like). You can switch up the spices but use the same approach. Dry cumin and a little chili is good as well, for example.

    Carole - I slice the carrots into "coins", saute them in a bit of oil or butter, cover for a few minutes to let them steam to your desired texture, then sprinkle with salt, pepper and a little nutmeg.  Sometimes I add a bit of sugar-free syrup to glaze them.  My bike also has the hybrid tires.  And I just ordered a better seat from Amazon.  I'm not thrilled with the seat that came with it, comfort rules!  A 55 minute walk is quite ambitious - good for you!!!

    We've had two days in a row of off 'n on rain, clouds and cool temps.  The a/c is off but I'm ready for the sun to make its return.  We are having steak for supper tonight.

    I too am so sad about dreamwriter, I saw this before I went to bed last night and prayed for her and her family and friends.

    Carole- I put my carrots in a pan with butter, honey and brown sugar pinch of cinammon. S&P and cover and simmer for an hour or two. I dont take the lid off to even peek. They are yummy this way.

    Carole, debbie's idea is one of my fav's.  Other ideas I like are glazes added to cooked carrots of; butter, honey and minced mint - butter, brown sugar and chopped pecans - lemon butter or just butter and  savory herbs or spices like parsley, garlic, thyme, taco seasoning or chili powder.  I generally test an idea by blending a tiny bit of the chosen flavoring with a tiny bit of soft butter and putting a hot carrot in to taste the mix.  Chose the flavor of the butter to compliment the rest of the meal. 

    Got the idea for the savory butter glaze from the asparagus with the lobster dinner on a cruise ship.  It had been finished with garlic lemon butter and was wonderful.

    My favorite carrots are the ones cooked with the meat in pot roast. I will eat the potatos and carrots and leave the meat, so I cook a whole bag when I make it. LOL

    Ok, I'm going to throw one out, since this is a BC board. Use ginger and turmeric for your carrot spices. Turmeric is a superfood for us. Unfortunately, it turns everything yellow so use a metal pot if you cook with it! 

    Looks like we are having salmon tonight after all, Dh's photo shoot got canceled.

    Carol- One of my favorite veggie medleys is carrots, zucchini and yellow squash with red onion.  I julienne them (sp?) small sticks and cut most of the pulp out of the zucchini etc, some Italian seasoning a little sugar and garlic salt and pepper  cook in virgin oil till tender.  Love it!

    Michelle- congrats on your new bike and that is one heck of a first ride!

    Debbie- OMG on the guys trying to chat you up and make you nervous, I would have beat feet too!

    Kaara  your day sounds great hope you enjoyed your afternoon!

    We just got back from taking the boys on a bike ride.  Dh and I talked before we left about dinner and neither one of us was craving anything.  So we decided we are going to make breakfast for dinner.  I am going to try to get him to make ham and cheese omelette's, he is way better at it than I am.

    So to give you all a chuckle, we live on a dead end street on a golf course- the boys were riding their bikes in the street and some car comes flying down the road. (at least doing 50.)  I FLIPPED!  The boys went right to the side, DH was in the driveway talking to his sister who was visiting and I threw my hands in the air and walked to go in the path of the car screaming for them to slow down!  :O  The guy came to a stop and said "sorry"  I said do you see my kids?  He said yes, I said thats because I stopped you, you could have hit them, seriously buddy??  The guy said sorry again.  We went back to the house and DH looks at me and says "psycho much?"  I honestly didn't even realize how aggressive I was until after, lol.  I don't think who ever it was will do it again.

    So sad to hear about dreamwriter...I don't go on the Stage IV forums any longer, so I missed that.  My prayers to her family..may she rest in peace.

    We just got home from our golf game..it was beautiful out.  We went for a drive earlier to a little town called Black Mountain, found a little french cajun restaurant and had lunch.  I had fried oysters with roumalade over spinach and red onions with chopped egg.  BF had grilled catfish over cheese grits with fried okra.  Very creative.  I'm still full and now he wants to know what's for dinner.  Leftover turkey! 

    Carole:  The carrots are good glazed with a little butter and rum if you have any on hand.
