So glad for all the lucky women whose husbands cook for them! Yay for them! And for Mr. Debbie who is so kind! Mr. W. Foods makes me many yummy things, but he want's money. Mr. Blender is my idol, and Mr. Mac, the Knife chops up good things. I am having my salmon chowder again, because I don't have to chop, or anything, except 1 TBs of onion. 1) Cook 1 pound Salmon, both sides in pan,( I talked the seafood manager into removing the skin because " I just can't do it!! ") 2)Dump 1- 15 oz can corn and 1 -15 oz can creamed corn and one can skimmed evaporated milk 2 cups or whatever into a pot with the onion till salmon is ready, then put that in in flakes or pieces or whatever and add salt and pepper if you want
PS I love Borscht cold beet soup, developed at taste for it when I lived with my BF from 18-21 ( He was Jewish)
I tied up a bag of zuccini and cherry tomatoes and hung it on my neighbors door rang the door and ran away!
Soon I will have about 100 cherry tomatoes, no kidding!
Oh, Mr. computer, for the Love of God.....
PS what is EVO??? Ive been wondering forever and what staion are the olympics on in the East Coast if you have verison? Thanks!

Bedo, EVO=extra virgin olive oil. Raychel Ray says that a lot.

Laurie: Sounds like you had a long tough day...relax and enjoy your evening, and by all means go to be whenever you feel like it...you deserve it!
Bedo: That recipe for salmon chowder sounds great.

Hello!
Dinner tonight for us is what LuvRV is having because, we are going to her house.
Nah, since angel-man went kayaking, he won't be cookiung when he gets in so we are heating up a meatloaf someone at his work made for us. Spinach salad, too.
Dang I wish I could exercise like some of you are doing! I can barely walk 1/2 a block still even though this is better than a month ago! Mets suck!

Laurie - I hope you get some good R&R!
We ended up with corn on the cob instead of waldorf salad and I have to say, buying it today at the farm stand was a good decision. And it's a good thing I bought just two ears, because it was exceptionally good and I could easily have overeaten!
We went for another 6 mile bike ride before dinner. This one kinda kicked my butt! This part of the trail had a few more little hills and they seemed to be mostly on the way back. I think we'll stick to the trail we did on Sunday until I build a little stamina. My sense of balance isn't very good, either. Need to work on that.
And for all you salad lovers, including the beet addicts, here's a link to 23 salads - some of them look really yummy!

Michelle- Ohh I know exactly where you mean on the seat, I had a bike that was very uncomfortable that hurt my thighs! wow you really amaze me with all your energy, hope you have fun on your ride today. Dh said he had a good time with George, but after 9 holes could see he was getting tired so took him inside for lunch, George wanted a Heffewizen beer and then ready for a nap so after DH dropped him off, he came home and napped himself. George told him he hadn't golfed that good in years i said it probably was because he was relaxed and had no pressure, George was golfing with other guys his own age for years and said he was getting embarrassed to golf with them now. So I was thrilled to see how much fun he had today!
Laurie- You might even run into michelle today! ha! Have fun!
Bedo- LOL! You never fail to make me smile or laugh! soup sounds good. Hey did i tell you the bad news about salmon?? Just kiddinggggggg! Made me think about the other fish you bought and we all told you not to eat it. lol!
Eff- Can I hitch a ride with you too michelle's house? lol!

Michelle- I love the site Livestrong, have it in my favorite links they give great medical advice too. I missed these salad before. OMG! The ruby red beet salad and the crab and corn salad had my mouth watering! Yuummm!

Eff - LOL! I totally missed your funny post, it must have hit the same time as mine. Yes, mets do suck. But for some strange (and very lucky) reason, I feel perfecty fine. So I'm going to enjoy it while it lasts. Last summer I remember trying to walk for 1/2 mile or just going up the stairs in our house and feeling my heart pounding!
And you're all welcome to come on down! I've got enough room outside for all of us. Inside, well, we'd just have to get cozy!
Did anyone see the corn salad that Michael Symon made on The Chew today? It looked spectacular and I'm going to have to whip this one up here real soon!

Oh...Bedo - this recipe calls for 100 cherry tomatoes so...problem solved!!!

Eff, I am about where you are in strength, but I don't have mets as a reason. Low blood counts, perhaps. I am doing chemo rehab as long as the insurance holds out. I think.I.get 30 visits. It helps, my pt keeps telling me baby steps. BUT WHAT I WANT ARE GIANT STEPS. guess I have to adjust my expectations! LOL!
Deb, that must have made your DH feel good. Michelle, thanks for the link, some.of the salad sound great. I love a salad they have as an appetizer at cheesecake factory. It's a simple salad, arugula, golden raisens, almonds parmesian cheese strips, with a lemon and olive dressing. It is my favorite.0 -
Moonflwr - we are about 30 miles from Cheesecake Factory, and I always hated that their portions were so big. The last time I was there, they had "small plates" which was a refreshing change. The salad sounds yummy!

Bedo: Try poaching the salmon (or any other fish) in the microwave. The skin just slides off.
Put the fish (salmon or any other) in a microwave dish - skin side down. Place the thicker portions to the outside. Add a splash of water, wine, etc. I love to sprinkle mine with dill. Cover with wax paper. Microwave on high power for 3-4 minutes per lb.
If I have a cut with a thicker middle, I do 2 minutes then cut in 1/2 and switch the portions. To avoid overcooking, remove fish when the outer edges are opaque but the center is still slightly translucent. A few minutes of standing time will finish the cooking.

Michelle....Thanks. I'll tell Sharon about getting comfortable. She's getting measured and marked this Thursday, so that's perfect timing.
When I ride a bicycle..after awhile, I'll look down to see if the seat is still there. So I'm in complete agreement about bicycles and long rides.
Sharon is feeling much better now. She says it's hurting at the 1 Ibuprofin level now..which is (in her words) nothing... She was at school today making maps of bus routes and paying bus maintenance bills.
She wanted to cook tonight. She's got some chicken cooking the dutch oven (the one in my avatar) and is going to put the chicken and some cheese in a tossed salad.
You're probably asleep Laurie.....if not, relax....
I guess Jesse (the cat) is hungry...he keeps walking across the keyboard...so I'm spending more time fixing the "mistakes" than typing.... To everyone else...good evening!

Hello everyone. Was so tired yesterday from the weekend I got outta bed at 8am and tried doing some schoolwork on the computer and could not hold my head up...layed down on the couch and went back to sleep till 11am. I just dont have the stamina post ca like I used to. moonflwr...good idea on the therapy...my arms have lost a lot of strength, I try to lift weights at home but have slacked off this summer.
Last night we helped our friends take their boat through the canal and navigate the locks, a 2hr trip, but tons of fun with the four of us. He is going blind and cant see to navigate the narrow canal, but they wanted to go over to the other lake for a couple of days..his wife is pretty good with the boat also. Tied up to a wall in a town, met friends at a local pub and had buffalo chicken salad, homemade pizza, and shrimp. for some reason this pub owner loves to see us come in and cooks for us at no charge....we tip him heavily.
Tonight meeting the same friends over on the other lake for an all-you-can-eat crab leg dinner. We were supposed to do this boat trip with our boat as well, but husband just cant ever take a day off from work, so we will drive over. Bummer
I have not cooked in FOREVER!

carberry: Sounds like a lot of fun!

But if you've got a nice piece of sockeye salmon, you need to learn to love the skin! It's the most nutrient rich part.
We didn't like it either, but I went looking for a good way to cook it. Gordon Ramsey's You Tube video is the one I found. I make it a couple of times a month and it is now a favorite. I think DH likes it as well as steak.
I have been tired too, sleeping 9 hours sometimes, with no excuses. No chemo, no rads. I'm thinking PTSD. I really, really need to start exercising again.
Carrie, I want your life on the lakes. Sounds heavenly.
I had to give up Lymphedema rehab. I don't technically have it (at least not yet) and it was costing me a $75 copay each time! That's the same copay as surgery.

haven't posted for awhile - been too busy working. But while I was out I made a black rice and mango salad that was delicious. I'll try to remember what all was in it...
1 c black rice cooked in 2 3/4 c water for 35 minutes. Remove from heat
1 orange (zest and juice)
1 mango - just ripe, still firm. If using champagne mangos, use 2
1 c walla walla sweets or vidalia onion chopped fine
1 jalapeno pepper seed removed minced
3 scallions finely sliced
1/8 to 1/4 c lime juice
2 T olive oil
1 c cilantro leaves chopped
Combine the orange zest, orange juice, lime juice and olive oil. pour over rice while the rice is still warm, mix and allow to cool, then place in fridge to chill. Once the rice is chilled, cut the mango in 1/2 in cubes, and add to rice along with the rest of the ingredients (onion, jalapeno, scallions and cilantro). Stir and serve.

Hi all! Have been busy so have not posted for a while. DD is going to a wedding in New Orleans so have been focused on helping her figure out what to wear to the many wedding events. Had a nice get together with Florida ladies from BCO on Sat. at the Cheesecake Factory - I had two "small plates" Greek salad and artichoke hearts, just the right portion size. We had a great time - there were seven of us. Here is a pic, I am in the dark blue top:

Have not been eating much that is exciting lately, although we did grill steaks and fresh corn. I need to think up some new recipes that stay within the confines of my eating plan - I am starting to get bored! I think tonight will be a shrimp salad with vinaigrette, corn, red peppers, red onion and romaine. I have been walking 4 miles each evening (we start out at about 7:30-8:00, when it is cool enough) with my neighbors so have to have dinner ready when DH comes home so I am ready for the walk.

Great pictures, SpecialK - you look fabulous!
DH just complained that this "healthy" eating is a lot of work. In other words, you can't just make a sandwich and throw some chips on a plate and call it lunch Not sure why he was complaining - I did the work...lol. We had chicken salad, cole slaw, cantalope and fresh tomatoes. Too funny! But Mr. Ambitious announced that he wants to bike 20 miles tonight, so I will meet him at a restaurant that's at the half-way point, we'll eat, then he'll ride home unless it's too dark. This should be interesting, not sure how that timing will work out. I'm just happy that he's finally interested in his health.
Gardengumby - the rice salad sounds yummy. I don't eat much rice, it plays he$$ with my blood sugar.
Carrie - your boating adventures sound like fun! Wish I could sleep more, take naps. Even during the worst of chemo, I rarely slept more than 7 hours. And now, even with a prescription sleeping pill, I get 6-7 hours, that's it. One of these days, the fatigue is going to hit me like a ton of bricks and I'll be in for a rude awakening. But in the meantime, I guess I remain the Energizer Bunny!!!0 -
luvrving - thanks! I have been working hard with aggressive walking and restrictive eating! Do you have blood sugar issues with all rice, or just white rice? I noticed in the yummy (great recipe gardengumby!) recipe above it called for black rice and it made me wonder. Your healthy lunch sounds delish! My DH has been riding his bike after work several days during the week. He usually gets home at about 6:30-7:00, goes out and rides for about an hour on the bike trail by our house. I make some dinner so it is ready when he gets home, then when he arrives I go out and walk with my neighbors from 8:00 or 8:30 until about 9:30 - we do 4 miles minimum. When I get home he is getting into bed! We catch up on the weekends because we don't seem to be seeing each other during the week, lol!0
-
Specialk, I am so jealous! You guys look like you are having so much fun.
Luvr, white rice gets my sugars high too, brown rice works better, raises them slower.0 -
moon - we had a really nice time, but I behaved and didn't have any cheesecake!

White and brown rice seem to have about the same effect on me; I haven't tried black. I use brown when I make stuffed peppers, but it's a really small portion in each pepper so that works ok.

Specialk. I had rice with my dinner, but it was brown and only about a quarter cup, so I had to pass on the cheese cake too. But since it was on sale that day I got it to go! LOL! Luv, I don't know about black rice either.sometimes I make quina (sp?) For the times I really want rice.

Specialk- Great picture and your dress is gorgeous! Glad you all got to get together and meet!
Carrie- Sounds like you are having such a great time boating, humping (hump night) and enjoying life this summer! Yumm on the all you can eat crab legs! Any more news on your sister? Hope she is doing well!
Michelle- Your lunch sounded so good, all this healthy talk and I am sitting here eating Flamin hot cheetos

Diana, do you have that crispy salmon on potatoe salad recipe? I think my daughter would like that!
Debbie, you scared me for a nano-second about the salmon! lol ( I threw out the other fish)
Michelle I want that shrimp recipe now!
Kaara ,catfish grits and okra, reminds me of Georgia, but I hate the way the fish squawk when they come out of the water, so I let my husband deal with them, didn't eat fish at the time, but now I'm catching up. I watch them "noodling" for catfish on TV and see that man that catches things with his bare hands and think, "did I live there?" Really only for a short time, the rest of the time in Atlanta. I go to Whole Paycheck, but at least they're healthy and Peta endorses WF.
I'll be making succatash soon, I think that's what it's called

Argghh! Really dislike when that happens, sorry about the bold letters and even when you try to erase and start over it stays the same.

debbie - thanks! It is actually kind of a long shirt/tunic thing which I wore with slim jeans and sandals. When I look at the picture I am most excited about my hair - it actually looks like normal hair - finally!!! It will still take a while to look like my avatar pic but I am getting there!

Bedo- I have in my head how I use to make it but don't have the recipe right in front of me, fresh or canned (fresh is better) corn, lima beans, (You may have to get frozeen on the lima beans) onions, redpepper, okra (optional) and tomatoes. saute in some evoo or butter. and simmer until done.
I like to peel my tomatoes here is an easy way to do that. mark a x on the botton of the tomatoes, Put a tomato one at a time in hot boiling water for 30 seconds. transfer to an ice bath and let sit about 5 minutes then the skin peels right off.

Thanks for the carrot recipes.
Welcome, Eff.
I'm about "exercised" to exhaustion. Can barely lift my vodka martini. Yesterday dh and I bicycled 25 miles. My legs, butt, lungs, everything gave out on me before I reached the parking lot. I got off the bike and walked a while then pedaled and coasted the rest of the way. Went to bed about 9:30 last night.
Then today we played 18 holes of golf and walked. The course is short but has some elevation changes. It was humid and I perspired more than I could drink to keep hydrated. Afterwards we went to lunch at our favorite cafe in Park Rapids, The Good Time Cafe. I had a wonderful hamburger with lettuce, tomato, mayo, quacomole, blue cheese. I know that's a weird combo but it was so good I was in foodie heaven!
I think more biking is planned for tomorrow but it won't be 25 miles!
Dinner tonight is Hebrew National hot dogs on wheat buns and either chopped salad or cole slaw with cucumber and colored bell peppers.
Carrie, I agree that you have an enviable lake lifestyle. It sounds so cool to go to dinner by boat.
