9am and its snowing so hard I cant see out the window! YIKES gonna get 4 more inches on top of the 8 we already had. Just hope the kids can get back home on Sunday. Did I mention I hate snow?
Happy Birthday Bedo!! I think I could handle the toast.My daughter brought NYC bagels home with her with mediterranean cream cheese for us and jalapeno for my son, but the best part is she cooks them for me every morning...we share one because they are so big.

We also have leftover beef minestrone stew made in the crookpot with the leftover prime rib. This is so good and feeds a lot. Found in the wegmans magazine or Wegman.com or I can write out the recipe if anyone wants it.

Just made a baked apple pancake - haven't done that in a long time. Very yummy! And I need to hit the store before the snow hits us. No eggs, no milk (just used the last of both) and something easy for dinner. Oh wait, we have leftover eye of the round roast and meatloaf...need a couple of sides.

No room in my little freezer for custom beef, except by the meal. DH prefers his beef to have never been frozen - at least that's what he thinks. Says a steak is more tender if it hasn't been frozen. It could be true for grocery store beef.
Kay - my DH makes paninis all the time - he just uses his favorite meats, cheeses and condiments. Ruebens are really good. Fancy grilled cheese sandwiches are also delicious.

bedo - happy birthday!!! The breakfast sounds delish - hope you get some, or all, of it one way or another. I too am not a morning person - DH is - this presents problems, lol! Somehow we have made it work for 29 years though!
Went to a funeral yesterday - a leukemia survivor who had a recurrence 12 years later. It was a lovely memorial service, all of her children spoke, there was beautiful music from her DIL. It was sad because she was so well loved, but she made it to 79, and lived all 79 years well! I met her through the American Cancer Society - she helped me pick out a prosthetic from the gift closet and we laughed the whole time. She invited me to participate in a program that she ran called "Seek and Speak your Story" which encourages cancer survivors to develop a personal and inspiring story that is presented to those who are undergoing treatment currently. I was in a group with 3 others who had at least 10 years remission, and I was bald and in the midddle of treatment myself. It was a great experience for me because it gave me a chance to see how my friends were living with some distance from their diagnosis and give some support to others who were in the trenches - kind of like what we do here on this website! My friend was also very active in Toastmasters and during one of our meetings preparing for our presentation, knowing that I was an Air Force wife for 28 years, asked me if I knew a specific individual who had also been in the Air Force for a long period. It turned out that I did know this person, that they lived close by, and she told me his wife had just been dx'ed with BC. I gave her my phone number, she passed it on to them, and I rekindled a friendship from 25 years ago, and we have supported each other through our BC treatment. I will always believe she came into my life at that particular time to give me those gifts - I only hope I returned the favor in some way.

I got up really early today since I promised my neighbor I would let her house cleaner in while they are away and I was afraid I might oversleep. So since I was up, I started my own little cook fest. Made some pesto to freeze and have on hand, then cooked up some chicken, and now making two different kinds of chicken soup...my regular recipe from my mother with pastina, and an egg lemon soup for us tonight. Since this has been going on since 7AM, I'm about ready for a nap....and I don't nap!
Michelle, I think I remember when you made that special breakfast last year around this time...sounds so good! And more importantly it must mean that you are feeling well and having no SE's. Yay!!

OK - I just seriously had the best bowl of lima beans from the grocery deli. Anyone with a great recipe? DH loves them. These were mostly the tiny to mid sizes ones not the really big kind I find overly dry. I have (Now no faces, please) salted pork jowl for black eyes on Tuesday. Anything else? I could have eaten my weight in them but at $1.99 for a bitty, bitty container I won't. They have the Fordhook frozen I think at my grocery which is OK size for a small town.
Deal on dying eggplants. I have 2 to use with some kind of Italian sauce, macaroni, cheese combo tonight. Also packaged with it was 2 bunches of slender asparagus. This was all $2.00. Even if some is not so hot I feel I got a bargain. Course DH will not touch asparagus, eggplant, yes but not his favorite.
Kid carrying out my groceries gave me updated weather (???). Snow maybe again for Monday/Tuesday. Haven't heard this and hoping not. DD did not come Christmas because of the snow and is planning for New Years.

I got a request for the baked apple pancake recipe, so I'll post it here.
2 granny smiths or other tart baking apple, peeled, cored and sliced
2 tablespoons butter
4 tablespoons sugar (or splenda or a mix with brown sugar)
1 teaspoon cinnamon
1/3 cup flour
4 eggs
2/3 cup milk
1/2 teaspoon salt
Preheat the oven to 400 degrees
In a large oven-proof skillet (cast iron works great) melt the butter, add 3 tablespoons of the sugar with cinnamon and sprinkle evenly over the butter. Add the apple slices and saute over medium heat for 3-4 minutes. Remove from heat.
Beat together the eggs, milk, flour and remaining tablespoon of sugar and salt until smooth (perfect job for an immersion blender). Pour evenly over the apples. Bake until brown and puffy, about 15 minutes. Serve at once, it will deflate as soon as you cut into it.

It was so cold that after 15 minutes outside...I had to come in and put on my shoes.
Don't worry, you'll be able to laugh this summer when, in the shade, its nearing 120F (50C) outside.
Thanks for the pancake recipe Michelle. Suggesting that genitics may play a role in food preferences, DD also loves apples :-). The only problem with that right now is that they are a bit much for her braces. So, I look for braces friendly ways of preparing apples.

DD & SIL are traveling, saw the Grand Canyon and probably in Vegas for her birthday. 2:15 AM 37 seven years ago I spent New Year's Eve in the hospital. 6lbs 13oz, 19 1/2 inches.
Turkey with trimmings is almost done.

Michelle- I have made your apple pancakes a few times now and just loved it. Thanks for posting the picture of Bedo looks like she is having fun, I think its "Ride a cowboy and save a horse" LOL!
Kay- Holy cow is right, that is a lot of meat. I wish we had a butcher around here it would sure beat the grocery store meats.

Don't rub it in Eric! It snowed earlier, about 2 inches, but it melted some this afternoon. I hate winter! We did have a good soup which was nice in this weather though. My SIL gave me the recipe. I took one carton of Trader Joes tomato and roasted red pepper soup, 2 cups water, 1package frozen chimichura rice and one can Cuban style black beans. Put it in a pot and let it cook a while until a little thickened. Tasted like all home made!
I plan to try making paninis soon. Can you use any kind of bread?0 -
debbie - sorry to make you cry! It was very cute - her children spoke of her love for glitter and sparkly things - clothes, accessories, etc. They gave out little tiny bottles with glitter they found in her house, they said she put it in their birthday cards, and was so organized she had them labeled with years 20's, 30's, 40's, etc.

Well, this has been a big surprise of a day in the weather department... Woke up to, as Carberry said, snow coming down so hard you could barely see and it really didn't improve much all day until the last couple of hours or so... Last I heard this was supposed to be just a couple of inches but I think today we had more than the 6-8 inches we had on Wednesday when the weather guys were freaking out... Go figure!
Since we weren't going anywhere in this weather, dinner was whatever leftovers you could find....

Holy cow is right, it will probably last almost a year. Last year three of us bought half a cow, this year there are only two of us. It is unbelievable how good it is though, and very little fat. No matter what cut we used or what we did with it, it was delicious. Last year no one wanted the short ribs,so they gave them all to me. It was a pain getting the membrane off, but I boiled them and mixed them with som sweet baby rays barbecue sauce, and everyone said they were the best ribs they ever had. It was definitely the meat, not the cooking. This year I even bought a food saver so I can wrap it really well in the freezer. I plan to freeze some of the veggies we get if we do the CSA again next year with it too.0 -
All the talk about wonderful meat has me craving meat like I used to get from a little shop in Olympia 1965 through most of the '70's when the butcher retired and sold his shop. He bought his beef on the hoof and slaughtered it himself. He dry aged it, if I remember right it was for about 60 days. He had some pre-cut meat in his case but always cut mine to order.
Only once (well 5 times because I spent 5 days at my Aunt's house when I visited them in ND in 1963) did I ever taste any better. Two of her sons raised and sold International Champion Polled Herford breeding stock. One of her grandsons has bought a few of the culls from the herd to raise Kobe style, complete with messages and beer, to sell as meat. One of the steers he had butchered, prope4rly dry aged of course, and gave thee meat to the family. We ate his steaks every night while I was there. Heaven.

Hope you like your Food Saver... I have eyed them forever to use for freezing garden produce but my garden has been a bit of a bust the last couple years due to my wildlife friends...boooooo... , So haven't been able to justify it....0 -
