    Ok, Laurie...I halved the amounts of everything and it seemed like there was too much cheese sauce vs. rice.  Is it soupy when you put it in the casserole dish?  I'm hoping the rice soaks up the cheese sauce, and it solidifies a bit.  We'll see!  I'm sure it will still taste good, I mean, cheese sauce on anything is goodSmile

    yes it is soupy when you put it in the oven, so you're doing it right!  It cooks down and firms up and turns golden on top.  You'll be able to tell it's done when it bubbles on the sides and the middle and most of the soupyness is gone.  I think you are the first person to try this that has never actually eaten it first.  Can't wait to see if it worked out for you!

    Debbie- WhenI was diagnosed I decided I wanted to lose some weight since I was having a BMX and the boobs wouldn't be helping me hide the belly.  I cut out wine, Cry and cut my portions in half.  I tried to cook as healthy as possible and I lost 20 pounds in 9 weeks!  I've also lost another 8 in the last year.  But the past couple of months I have been bad and not paying attention so I am back at it.  Thus why I was still a little hungry at the end of dinner last night.  I hate diets, when you go off them the weight comes back so I like portioning instead.  I'de rather have half a roll than none at all and binge one night eating three because I miss it!

    Laurie have you ever added veggies to your rice dish??? I really would like to try it but guilty conscious is saying 'what about the veggies?' Undecided

    Laurie, although I have nothing to compare it to, it was good! Just like I expected it to be (homemade mac & cheese without the mac!). Even with 1/2 the recipe, I have leftovers. The kids ate a little of it, hubby isn't home for dinner, and I wasn't very hungry so I only had a small scoop. You're right, though...eat too much of it and you'll be unbuttoning your pants at the dinner table! Thank you for sharing it!



    Michelle, I was thinking you could add a lot of stuff to it: sauted onions, broccoli, or whatever.

    Sherrill- Glad it came out ok, you'll have to try it with the right rice.  I actually make my mac n cheese the same way, minus the egg.  Because it's a family recipe I think I would be hung if I added anything to it, but I agree it would be good!  Also, Sherrill, in my house a regular batch is half eaten in one sitting!  Which is why I only make it on special occasion, every 3-4 months.

    Chicken Tagine with preserved lemon, olives and saffron
    ----------------------------------------------------------------------------------
    serves 4

    • 1 whole bone-in chicken breast, quartered (or use chicken thighs)
    • 1/2 preserved lemon
    • 1/2 red or white onion, diced
    • 1 Tbsp. finely chopped fresh parsley
    • 2 cloves garlic, minced
    • 1/2 tsp. black pepper
    • 1 level tsp. ground ginger
    • 1 heaping tsp. turmeric
    • pinch of saffron
    • 2 Tbsp. olive oil
    • 1/3 cup water
    • 1/2 cup olives of your choice (recommend black oil-cured olives)

    1. Separate the preserved lemon flesh from the peel, remove seeds.
    2. Chop the pulp; sliver the peel into thin strips.
    3. In a heavy sauté pan, add the following: the lemon pulp, onion, parsley, garlic, pepper,
        ginger, turmeric, saffron and olive oil.
    4. Add chicken pieces and turn to coat.
    5. Put the pan over medium heat and cook for about 15 minutes, turning the chicken
         from time to time as it begins to brown.
    6. Add 1/3 cup of water; reduce heat and cover.
    7. Cook for 15 minutes more, stirring occasionally and adding a bit more liquid if needed.
    8. When the chicken is done and the sauce is thick, add reserved lemon peel and
        1/2 cup of olives.
    9. Serve over couscous.

    Since I'm down with a nasty head cold, it seems like a good time to share a favorite recipe. I LOVE this soup!


    Thai Yellow Curry Soup

    onion        celery        cooked chicken
    chicken broth or stock
    1 can coconut milk
    red chili paste and curry powder or yellow curry sauce
    fish sauce (optional)
    white pepper (optional)               salt and pepper 

    assorted vegetables; carrots, broccoli, cauliflower, peas, potatoes, zucchini, etc.
    rice or rice noodles, if desired

    Saute finely chopped onion and celery in a little vegetable oil in a med/large pan till soft and translucent. Add about 1/3 of the can of coconut milk and simmer gently. Add 1 Tbls.red chili paste and 1 Tbls. curry powder (or the yellow curry sauce). Simmer 5 minutes or so.

    Add the rest of the coconut milk, chicken broth ( I usually add two or three cups), 1 Tbls.fish sauce (this is optional; smells bad but adds flavor), cut up cooked chicken meat and whatever vegetables you want; I precook the veggies till barely tender, frozen veggies can just be thawed. The recipe calls for cubed potatoes, cooked till tender, and frozen peas.

    Add white pepper for additional flavor. Adjust other seasonings. Add a little sugar to bring out more coconut flavor. A little fresh chopped basil is good as a garnish is good.

    Good over rice or rice noodles or just lots of vegetables.

    The essential ingredients are the chicken broth, red chili paste and curry powder (or the yellow curry sauce) and the coconut milk.

    I buy roasted chickens at Costco, remove the meat and use the bones and drippings to make chicken stock; if you have the time and energy, it is yummy and a good deal.

    Hi all!  We had leftovers for dinner tonight.  DH and DS ate the stuff from the Japanese steakhouse.  I had a bit of leftover lasagna, a small can of V8 and half a grapefruit.  Kind of a weird combination, but there's no explaining my eating desires these days so I'm just "going with it."

    Had a good visit with the plastic surgeon today and yippee, the drain is gone!  I can wear a skirt or dress on Saturday, if I have one that fits at all.  Everything is just hanging these days.  I didn't get a fill because my skin is still bruised on the left cancer side, so that will have to wait until next week.  And I no longer have to wear any type of bra, so the soft camisole is on and it feels so much better. 

     Debbie  -  your poem is a hoot!

    Lago- your chicken tangine sounds great, I probably would leave out the saffron as it is so expensive in our stores right now.

    Treesprite- curry soup sounds good.

    o2bhealthy- I was wondering that too, might be good with broccoli??

    Sherrill- You sound like me i have been wearing sweats all day because my pants were tight ha!

    Laurie- I went to safeway this evening and couldn't find the river rice unless i just missed it, dh was getting impatient while i was searching all the rice names and lables, so i might try it with brown rice which i love. I know what you mean about diets, my dh and i started one last july after moving here on the oregon coast, we moved from the midwest dh got laid off and i was dx with bc so we both sat around feeling sorry for our selves and gained a bunch of weight, when he was transfered here we went on a diet and I lost 40 pounds i had gained from quiting smoking and chemo tx's dh lost 60, pounds we never felt better and ,loved our new life style change, then with all the travels and holidays these last few months i have been eating more than i did before my diet i think after a strict diet you crave everything you gave up,so now we are just going to eat what we want but in moderaion, i only gained 10 pounds but it can creep up on you so fast....

    I have to echo Debbie about getting your drains out...what a relief!  I had to have them on three separate occasions and each time I had them removed, I felt like doing cartwheels!  Michelle, I am happy for you that yours are out and you no longer have to be so restricted with your wardrobeSmile

    Tonight for dinner I am making wraps.  I breaded some thin-sliced chicken with flavored bread crumbs and cooked in olive oil earlier today and put in the fridge to get cold.  I'll cut up the chicken and toss with romaine lettuce, some lite ceasar dressing and a little fresh grated parm cheese.  Possibly add some roasted red peppers.  Spread a little roasted garlic humus on a whole grain wrap and add the chicken salad filling and wrap up.

    Debbie- Maybe its a North East thing with the river rice? 

    Tonight my husband was invited last minute to go to a concert so the kids and I are on our own.  I took the easy way out and made chicken quesadillas.  Both kids love them and there is no fighting to eat, I added tomatoes and mushrooms and they both ate a bunch.

    Just wanted to post a quick one to say that I am so glad that drain is GONE, Michelle!  You will look beautiful tomorrow (as you would have with or without the drain)!  And YAY for the soft cami's they were my best friend throughout radiation!

    Today I will comb my closet for something that looks respectable for our dinner gathering tonight.  If I don't find something, I'm going shopping!  I must have something that would have been too tight for my pre-BMX boobs, right?  I could always stuff my bra with tissues (I remember doing this when I was a kid and my mom was buying them a little big for me because I was outgrowing them too fast to suit her budget...lol). 

    Did I mention we have found a place on a lake in Southern NH?  We got the word last evening and I am so excited.  The house is small (1100 sq ft) but the decking is huge (900 sq ft) and we will be able to have some nice summer gatherings at our place.  We are moving in on 6/15.  And I have appts with Dana Farber with an oncologist (5/18) and Brigham&Women's with a plastic surgeon (5/17).  I'll be staying with family and friends starting in about 10 days.  We are moving my mom out to her place and getting her settled by 5/15. 

    It will be crazy but it will be done!  

    Laurie - we will be neighbors!!!

    Happy birthday, LuvRVing! 

    LOL at the story about Debbie and her brother sneaking to a McDonald's.  When I was growing up in rural Louisiana, no one had ever heard of a vegetarian.  Everybody had large gardens but we loved our fried chicken and pork roast and beef pot roasts with gravy.  My family had a milk cow and chickens and a few pigs to butcher.  We didn't have a home freezer but you could rent freezer space in a building in the nearest town, which was 12 miles away.   I can remember how thrilled my mother was when she got a clothes dryer and didn't have to hang clothes on the line or in rainy weather drive to a laundromat to use the dryers. 

    We roamed the neighborhood and no one every got kidnapped.

    Last night's dinner was pan-fried catfish cooked at a high heat in a skillet with a dribble of EVOO and a pat of butter.  We like our filets browned on the outside.  These actually came out a little "blackened."  Side dishes were sauteed baby spinach with a little fresh-grated nutmeg and a spash of balsamic vinegar and steamed fresh yellow squash.  DH likes tartar sauce, mayo with dill relish. 

    On May 17 we'll be departing on a summer trip to Canada and Alaska, travelling with our 1-ton truck and a cute truck camper with one slide.  Cooking will be simple.

    Carole- LOL I know back then people said vegetarian? what do you eat, i always said potatoes, didnt know what else to say, but i actually my mom cooked everything but meat, we always had great meals and she was a great cook, just every once in awhile i wanted a mcdonalds we always had fresh veggies from the garden i miss my moms cooking!:((

    Michelle- Your new place looks amazing, very nice inside and very peaceful outside.  Congrats to you!  Did you buy it sight unseen in person, or did you come to NH to check it out?  Just curious.  When my parents moved back to NH they would look at a place online and then send me to see if it was worth them driving up to see.  It was kind of fun!

    Saturn, I like the Sabra Roasted Garlic Humus.  I did make humus once before a few years ago, and while it was good, I probably wouldn't make it again.  Mainly because I bought this huge jar of tahini, and it ended up going to waste.  I probably should have looked into making other stuff with it, but I didn't and I ended up throwing it out.  If I every do make it, I'll try not to waste the tahini!

    Laurie - I sent my son with a Realtor to look at the place.  At first my DH was hesitant about committing to a place that we had not seen ourselves, but he agreed that we just needed to trust them.  The place looks terrific, totally redone, and I feel like we will not be sacrificing quality.  I really didn't want to move into a "tired" place.  It's really small - we have 2700 sq ft of house, but we've been selling off / giving away / donating like crazy.  Our next door neighbors came over today and took away a perfectly nice futon, a bookcase, about 15 games that our kids had left behind, and they'll take our living room sofa and our bedroom dresser and chest (which DH has hated forever). So we're paring down quickly which will make the move much easier.

    Dinner last night was so fantastic.  First of all, one of the girls wore the same dress that I wore, which started the evening off with a ton of laughs!  I guess we have good taste!

    Why can't I post a picture on here...what's the trick?  I do it on my own blog all the time, and I uploaded my picture to Picasa hoping it would be easier.

    Anyways, if you can see this picture, I'm the one on the right. 

     There were 10 of us, and we drank wine and sangria, ate Italian food, had dessert, and shared lots of great conversation.  I had the evening special which was a very thick loin pork chop with a cranberry reduction sauce, with garlic mashed potatoes and fresh green beans.  My salad was spinach with dried cranberries and walnuts and a balsamic vinaigrette.  And for dessert (which I actually ate because I took half my dinner in a to-go box) I had chocolate and vanilla gelato which had a hard dark chocolate shell, with maraschino cherries and chopped almonds in the middle.  I've been to another restaurant that had something like this called Tartufo.   And it was prom night for a local high school, so we had a parade of adorable teenagers coming in for dinner.  It was fun to see them all dolled up and we all reminisced about our own kids' prom nights. 

    It was a bittersweet evening!

    Michelle, gorgeous home, beautiful setting! My husband had family in NH, but way up in Lebanon. It looks like Salem is a fantastic location - not too far from Boston. I was in Boston year before last and took the train up to Rockport for a day trip; beautiful coast. I really wanted to go to NH, but Lebanon was just too far for a reasonable drive in the time I had. I think living on a lake would be so relaxing, something about a water view is so calming.

    Beautiful day here today, FINALLY! Motorcycle ride today with my DH so a quick dinner; had leftover grilled chicken and brown rice from last night; I added lime & cilantro and a few other seasonings to the rice and made burritos. Flour tortillas for my DH and corn for me (I avoid wheat) and I pass on the rice and use beans & lots of veggies to up the fiber & veggie servings for the day.

    Now if I can just avoid sweets/carbs for the rest of the day! Hope I didn't already include this in another comment, but if so, I'll blame post-op/menopause brain . . .Nutritionist that came to my exercise & thrive (post cancer support group at Y) said if you are actually hungry, you'll want 'real food', if it is emotional/habit eating, then you'll crave carbs/sweets. We'll see how that works!

    Michelle- You are georgous!!. I cant believe you were so worried about what to wear, the dress was darling. What a beautiful house you are movng into the setting is stunning and the inside is beautufl as well. Is it a turnkey? Does all the furniture come with it? I want to come live with you and bq on your deck and go boating LOL! I'm so happy for you i think every ones prayers for you helped guide your son to find the perfect place for you.looks like a great place to do some healing! (((((((hugs)))))

    My dinner tonigth was so good if i say so myself- I made pork chops that came out so tender and full of flavor, I lightly dusted the chops with flour then dipped in egg wash then into an italian bread crumb seasoning mixed with parmesan cheese (seasoned with paparika and garlic powder- pepper) cooked 5 minutes each side in a little evoo then finished in a 325% oven for 25-30 minutes- then made some steamed broccoli tossed in a browned butter and garlic added balsamic vinegar at the end poured it over broccoli Dh loved it alot!  I also made some smores for dessert- I had some grahm crackers topped with leftover marshmellows from easter- put some dark hershersy chocolate on aa 4 sq pice of graham cracker put in the broiler till the marshmellows browned topped with another cracker- It was the bomb! It will be my last dessert for awhile-tomorrow I will start eating a little healthier.

    Sherril-I mae my hummus without tahini it is so expensive and your right you have to throw the rest out because i dont make it often so i make mine without tahini- Make it like you ususally do and if you want that taste add some sesame oil, i put lemon and garlic, pepper flakes evoo with the garbonzo beans in a blender. A lot less calories without the tahini.

    Treesprite- Your dinner sounds great! Its beautiful here on the oregon coast too, it was about 64 which is great for this area. Planted some flowers and bought a few plants today, cant wait for summer!
