    Best cookbook I've ever used:  Martha Rose Shulman's The Very Best of Recipes for Health (from the NY Times). I am thrilled to have that borscht recipe!

    Lunch and tonight:

    Broccoli and potato frittata

    Quinoa and beans with tahini sauce

    Red lentil curry soup

    Debbie- It was easy to make which I LOVE.

    I am not a very good baker.  I like to cook but I am not always successful when I bake.  I just made dessert for Easter and thought I would share my easy apple pie recipe.  If I can't screw it up , no one can.  Also it is fast and different, it's considered a crust-less apple pie.  My mom always made it.

    Swedish Apple Pie

    4-5 apples per pie, peeled and sliced

    1tbsp sugar

    1tsp cinnamon

    1 1/2 sticks butter melted

    1 cup flour

    1 cup sugar

    1 egg

    grease 9 inch pie pan.  Fill plate 2/3 full with apples, sprinkle with cinnamon and sugar.  Melt butter- hold.  Mix flour, sugar.  Add butter to dry ingredients.  Beat in egg, pour over apples.  Bake at 350 for 45 minutes.

    I hope you didn't take my post the wrong way!  I understood that you were joking around!  I was just worried that others may think in order to post whatever you are making has to be fancy, or healthy, or any number of other criteria when really the only real requirement is that it be what you are having...  That's all. 

    I am all up for special requests, like Mumayan wanting some appetizers for a wedding...

    You make the best sandwiches!! The addition of the chili pepper sounds so good!  When I was still working one of the cooks would make me a special grill cheese whenever they had it on the menu.  He used a slice or two of provolone, tomato slices and a slice or two of pepper jack. Sooo good and made me feel so special... Of course I was much younger and he probably did it for anyone who asked but, who cares???!! It was delicious!!  LOL

    That Apple Pie sounds so good!  I must confess, that while I have made many apple pies (that is my father-in-law's favorite so I make it whenever the come to visit), I have NEVER made my own pie crust.  Don't know why but crust just really intimidates me!

    Does your pie come out like a custard or does a crust form on the top?  I can't quite picture it but, would I think I would like to try it!

    That just plain stinks!  For now, simple foods are really the way to go.

    Sure thing!

    I cook the quinoa in vegetable broth to give it flavor.  Separately, I cook beans of your choice: kidney, black, blackeyed pea, etc. (I don't do canned beans much any more). The tahini sauce is delicious for topping this recipe, as well as vegetables in general.

    3/4 cup tahini 

    3/4 cup water

    1 lemon juiced

    1 clove of garlic (adjust to your taste!)

    dash salt

    cayenne pepper (adjust to your taste)

    It keeps really well in the fridge.  Really incentivizes eating extra vegetables!  I often buy frozen veggies in the winter months, and experiment with healthy, protein rich sauces to make them more interesting.

    Marinated and Grilled London Broil (One less thing in my freezer!!!)

    Baked Potato

    Leftover panzanella salad from last night!

    Tomorrow's menu:

    Greek Marinated Boneless Leg of Lamb (would have preferred bone-in but we went to 3 places and they were all out... shouldn't have waited until the last minute)

    Mushroom Risotto

    Roasted Asparagus

    And for Dessert.... Strawberry shortcake with home-made biscuits!

    Tonight was whole grain pasta tossed with garlic, shrimp, spinach, broccoli, sun-dried tomatoes sauted in olive oil.  Grated parm cheese, salt/pepper and a few pieces of fresh mozarella tossed in at the end.   With that we had a chardonnay we picked up from our Napa Valley trip in December.  Delicious!

    I was so annoyed, though, because I was getting the stuff out to make the carrot cake for tomorrow, and I realized I forgot the baby food carrots at the store yesterday!  Thankfully my sweet husband is running out to get it now.

    Seaside, I know what you mean about waiting until the last minute...Thursday I realized that I hadn't gotten anything together for my kid's Easter baskets, so I ran to Target to get the standard chocolate bunnies and assorted easter candy, and I was left with slim pickins!  The only chocolate bunnies left were the no-name chocolate ones that have creepy little faces!  I couldn't bring myself to get those!  I ended up with a very small Reeces bunny for each of them, a marshmellow egg, and that's it.  I ended up getting them each a book and a few of those tiny herb pots to grow basil, tomatoes or strawberries,that you find in those dollar bins at Target.  They love stuff like that.

    Sherrill- I just put together my kids baskets and I was the opposite.  I picked up a little candy here and there and had too much!  Didn't realize how much I had gotten and only gave them about half and put the rest in zip locks for a later date.  I went to the dollar store and got some good stuff too.  One cool thing was magnifying glasses so they can examine nature and spring as it comes in, bugs and all:)

    Tonight was grilled turkey tips served on top of salad.  It hit the spot!

    Seaside, I don't know how to describe the pie, I asked the hubby and he said it's like bread pudding, but I don't agree.  It still cuts and serves like a pie.  The filling actually falls to the bottom and the top and surrounds the apples, it's like an apple pot pie.  Not that that makes sense?  I'll have to think...

    In my house it's not a holiday until my husband has taken at LEAST 5 trips to the store to get items that did not happen to make an appearance on my very well thought out grocery list...lol!

    Last year we went to my brother's for Easter and forgot the Easter baskets/candy at home!  I really didn't want to duplicate stuff I had already bought so we went and just got a couple of bags of candy and made kind of a community bowl of candy for everyone!  Of course, my 'Kids" were 16 and 21 and my niece was 13 so it wasn't a super huge deal!

    Ahhhhh the magnifying glass!!! If they are like most boys they will use anything that you give them  with the intended use in mind.. for awhile.. and then.... they just can't help themselves, creativity takes over! 

    Even though we said they could not have toy guns, suddenly the Lincoln Logs and the Tinker Toys are fashioned into guns... The magnifying glasses.... Well, if you aim them just right on a small pile of leaves they will catch on fire!  Great if you happen to be on Survivor but, not so hot if you're 6 years old!!  And how do these little ones, who can barely brush their own teeth figure this all out? 

    It's just a big mystery! And we are left trying to reign them in but, yet, marveling at their creativity!

    I am definitely loving the pie idea and figure I can't go wrong... I love apple pie and love bread pudding! Can't lose!

    Seaside- I am now thinking I should take the magnifying glasses out?!  My oldest has a bubble wand that he pretends is a magnifying glass, it's what gave me the idea.  But fire?  Gulp!

    My daughter and her hubby made a homemade corned beef with veggies and red potatoes on the side.  It was also my grandson's 4th birthday.. Nice to see them before my 2nd surgery on Monday.

     Oh No!.... Not the message I was trying to send at all! 

    Your boys are quite young so the scientific learning value FAR out-weighs the risk of excessive creativity!  Looking at the ordinary things through a magnifying glass is and will forever be fascinating!  I went back to school at age 40 to become a Medical Lab Tech and can't tell you how absolutely amazing it is to see things under a microscope! 

    My intent with my post was to appreciate how truly creative their minds are at a young age even if, and perhaps, especially when, they use things that are meant for one thing and use it in a different way!  A few years down the road may be a bit different but, I'm betting they will be just amazed with all they can see with their magnifying glasses!  And you will get to experience it through their eyes! Priceless!

    Seaside- Ok, I am breathing again!!Tongue out  I do think they will like looking at bugs etc.  I was proud of my three year old the other day.  I had showed him buds on a lilac bush and was explaining how it would turn to leaves etc.  A few days later he SCREAMS  Mommy come look, quick!  I run to him, what?  And he points to the branch and says, it's turning to leaves, don't be too loud, you'll scare them. lol!  At least he was listening right?

    Gmafoley- I love a corned beef dinner, Happy Birthday to your grandson!  Good luck with your surgery.  Hugs to you!

    Love the lilac leaf story!

    What a great example of the little ones taking the things that we, as adults, view as "ordinary" and turning them into "extraordinary"!   My kids are older now, but I have much younger nieces and nephews.  They never cease to amaze me!

    Speaking of healthier foods    Wink, has anyone ever been to a Bickford's Pancake House and had their baked apple pancake (Laurie, I was thinking specifically of you).  Well, I make a "low sugar" version that my DH just loves.

    Mom's Baked Apple Pancake

    Preheat oven to 425

    2 Granny Smith apples (or your favorite) peeled, cored and thickly sliced

    2 tablespoons butter

    4 tablespoons sugar (or substitute - I use splenda and the fake brown sugar)

    3/4 teaspoon cinnamon

    4 eggs

    1/3 cup flour

    2/3 cup milk

    1/2 teaspoon salt

    In a big cast iron frying pan or non-stick oven-proof skillet (at least 10 inches) melt the butter.  Combine 3 tablespoons of the sugar or splenda with the cinnamon and sprinkle over the butter.  Add the apple slices and cook over medium heat for 3-4 minutes.  Remove from heat to cool slightly.

    Meanwhile, beat together the eggs, milk, flour, remaining tablespoon of sugar and salt until smooth.  Pour over the apples, then bake until brown and puffy, about 15 minutes.    Serve at once...I like a little sugar-free syrup on it.  DH slathers it with butter and syrup.

    This would be fabulous as a dessert with cinnamon or sugar-free vanilla ice cream.  Or whipped cream!

    Ummmm! LuvRVing that pancake sounds sooo good. 

    Tonight I tried roasting veggies including brussel sprouts.  Obviously I am doing something wrong because I cooked the veggies for over an hour at 400 degrees and the potato's were still under cooked.  It could be my sinus infection but there was very little taste too...

    I am making the French Toast Casserole for breakfast tomorrow. Here's hoping my taste buds are awake Laughing

    Laurie, Your apple pie sounds very good and wihout all the extra calories. Cute story about the lilac leaft, liliac's were my moms favorite flower (she passed away) whenever I smell them I think of her! :)))

    Seaside- The picture of the rabbits had me laughing out loud that is just the cutest funniest thing! Your dinner for tomorrow sounds fabulous and elegant! I did end up putting tomatoes on my sandwich today ha!

    Michelle- I havnt heard of bickfords pancake house but your pancake recipes sounds yummy, I copy/pasted it to my files.

    Ok, so now I will tell you about my disater In the kitchen today, I was trying to do to much at once, and had eggs boiling In a pan while I was preparing other things and trying to clean at the same time totally forgot about my eggs, I smelled  something burning and ran in the kitchen the water was all evaporated, the eggs exploded, the bottom of my pan was burned, omg what a mess, I cant believe I did that!!

    Then my husband asked what we were having for dessert tomorrow I told him pumkin cheese cake he said arnt you making sweet potatoes? I said yes, he said why dont you make your tiramisu again instead, I told him he had to go get the mascarpone if he wanted me to make it, so I prepared everythig up to that point when he got back with the 2 containers of mascarpone I folded it in the cooked egg custard I had already made topped It with the whipping cream and dark chocolate, wrapped It up and put It In the fridge- It looks pretty- I decided to lick the spoon i had used to fold In the custard/mascarpone together and It was sour!! I cant believe my husband didnt look at the experation date when he bought It, My whole tiramisu was ruined, I was secreatly mad at him all day!

    So I was preparing my sweet potatoes, when I went to put the cinammon in there I thought It had a plastic lid on it with openings, It didnt, dumped over half of it in my sweet potatoes, luckily I used a spoon and scooped most of it out- What a day- So I grabbed a glass of merlot (wasnt drinking before this happened) ha! and decided I was done for the day. I hope tomorrows dinner dosnt suck! LOL! I'll let you know how It turns out.

    Debbie - your husband was a 'brave' man to ask you what you were making for dessert after the egg disaster.  And then the custard problem...I'd say that glass of wine was well-justified!

    Happy Easter everyone!  Hope the bunny was good to you!  My daughter posted on Facebook that her 7 year old and 3 year old were up at 2:30 this morning getting into their baskets.  She ordered them back to bed, but oh my...!!!

    LuvRving- Your daughter 2:30 wake up call trumps mine of 5:30!  It has been a long sugar filled day at my house. 

    I need to give my mother in law kudos, the turkey was great.  She cooked it perfectly, which can be hit or miss with her and the gravy was perfect too.  I really enjoyed it and I still get to make my ham later this week sometime, so it is a win- win:)  I am stuffed still from dinner at 2 and plan to have leftover salad for dinner if I eat anything.  Putting the boys to bed early as no one napped and I am pooped.

    I had a most enjoyable Easter day and Easter lunch/dinner.  I cooked the meal with some assistance from DH and we took the food to my mother's house.  There were seven of us, a sister and her DH, a brother and his DW, my mom and DH and myself.  We had boiled ham, potato salad and baked beans with pound cake and strawberries for dessert.  It's hot here in southern Louisiana so the A/C was humming, the sun shining brightly outside.  No children this year so no dyed eggs and Easter egg hunts, but the conversation and company were good.

    Hope everyone else enjoyed the day.

    We had a very quiet day.  I took mom to church, then hubby and I took her out for lunch.  I had a bowl of popcorn for supper - my favorite "non-meal" meal!

    Sounds like everyone had a great easter dinner, mine turned out good even with the mishaps yesterday LOL! And yes I did have more than 1 glass of wine ha! I'm sure I will be making ham and bean soup this week with ham and a nice ham bone that I cooked tonight.

    Michelle- Girl after my own heart (popcorn) IM addicted to It- I put franks hot sauce on It with chocolate chips, my friends think I'm nuts the way I eat It but I swear Its the best thing ever!!

    Debbie - do you put the Frank's in the butter?  Sounds interesting...I also like cajun seasoning on my popcorn.

    When we were kids, Sunday night dinner was popcorn and koolaid while watching Disney.

    Michelle- I buy the microwave movie theater popcorn  with butter then i just pour it on top and around the sides and then put a handful on choc chips in, but when I make popcorn from scratch  i do melt the butter first and add my franks hotsauce, i make my hot wings that way too with sauce and butter.

    Funny we did that too in fact when they still have drive in movies my mom would pop enough for all 4 of us kids and she made either kool-aid or made hot chocolate. I miss those days! :((
