So...whats for dinner?

Worked in the garage all day yesterday, taking advantage of the cooler weather. Everything is now looking a lot better and my car fits without a lot of manuvering...lol! Ran across old photos that held lots of good memories!
Last night I watched an old movie, Peyton Place, and marvled that it was scandalous at the time it first came out...lol! Not quite Fifty Shades! Wow...I've seen and heard it all!
Last night's dinner was angel hair spagetti with tomato bits and eggplant stacks with tomato bits and parm cheese...delicious! Sometimes its fun to just cook for yourself...anything you want! My new sweetie will be returning to Florida later this week, but in the meantime, I have lots to keep me busy.
Happy Monday everyone!

Kaara- Glad you had such a great family ski trip! Loved the pics on Facebook. Your dinner last night sounds good! I can't remember the last time I cooked for myself- well for only me and had just what I wanted. I loved the book Peyton Place, never watched the movie.
We had a kind of boring weekend, had take out Saturday night and last night had a steak on the grill with a baked potato, salad and broccoli. Tonight we are having steamers- because the boys begged for them- and a roast pork loin because DH begged for that. I am not in the mood for either. But I sent DH to the grocery store yesterday morning while stayed home and cleaned the house and these are the things he came home with.
Joyce- Because of your post earlier lasagna is on the menu for this week! Hope you are well, miss seeing your posts.

Last night was a salmon with yogurt, bread crumbs and orange slices dish. It was very good.
Kara, your pasta dish sounds just like the dish Sharon loves and is going to cook tomorrow.
Eric0 -
Eric -- recipe for the salmon please?

Having a "skinny" dinner tonight. Pan seared catfish, steamed broccoli and chopped salad.

Tonight is pork loin also. I fillet it out and stuffed it with herbed stuffing and then rolled it back up, secured and popped in the oven. Will do mashed potatoes and a mushroom gravy and some veges.
When I lived alone, one of my favorites was sauteed mushrooms on top of brown rice, or elbow macaroni with stewed tomatoes. Couldnt get anyone (except my son) in this household to eat as simple as that. I used to be very thin back then! Oh how things have changed.

Carrie- I couldn't agree more! When I lived alone my dinner more often than not was diced tomatoes, mushrooms and red onion, I would cover it with cheese and nuke it just enough to melt the cheese, add diced lettuce and have it as a wrap with salsa and sour cream. I was soooo skinny. Sigh...

Carrie, those simple foods you ate when you were single sound good to me. The important thing with pork loin is not overcooking it. I've had to cure myself of the old tendency to cook pork well-done, which equates with dry.

Carrie, your pork loin sounds yummy. Love stuffed rolled meats. I know what you mean about the expanded eating habits we develop due to feeding others. I was just thinking about that today....that if DH didn't have to eat so well/much, (and he has a fast metabolism, damn!) I would, most nights, be satisfied with sparse meals....like years ago when I was much thinner!
Tonight we had an asparagus/red pepper/onion fritatta to go with some soup I wanted us to finish up.
Aside from food.....
Today is the day I was to start my Tamox holiday.....but not without issue. I made the mistake of telling my DDIL about my plan....bad idea! I received an alarmist phone call from DS1 last evening (they are both surgeons....not oncologists, tho they do see patients with cancer in their specialties) strongly suggesting that I was being foolhardy to go this route to try to deal with sorting out my symptoms. OY! He was unrelenting in his opinion that I was putting myself at unnecessary risk for recurrence...for taking this short break.....AND he figures (worries) that if the three week hiatus goes well, I will not return to my standard of care treatment. So today I emailed my MO just to be sure that I am not being foolish. She definitely supports this diagnostic hiatus for me and knows that while I expressed my wish to bag the hormone treatment, she has convinced me for the time being to work with her around making it work. Lord is she a lovely person and smart doc! She also offered to explain all of what we are doing to my "know it all" doc children, but I think we will just drop it until the next phone call comes rolling in. Interesting to have this familial role reversal. I am suddenly the naughty child....competing with Bedo perhaps!? Suffice it to say that I did NOT take Tamox today.
Back to food....I signed up for a chili cookoff on Saturday at the local Produce Market in our town. Now all I have to do is actually write up the recipe I put together(as well as make it and bring it!)....that will take some discipline that I have been lacking in recent months.
Maybe I'll get on the computer and start that recipe right now!0 -
Today I came home from work early, as I was wiped out, and went to sleep. When I awoke, I saw my DD walking in with a 5-6 pound chihuahua. She then went to play practice. "don't worry, she's mine" she said, "but I don't have the money for the adoption fee etc. Hahhaa. Worlds biggest sucker.
I was to have a lovely canned salmon salad, but I see in the fridge that she mixed it with Tuna Helper. I will Not Eat That
Back to wasabi almonds and pomegranate water and working on my presentation..... still. I did get a good walk in with the dogs. The cats are acting like it's par for the course.
Tomorrow I will make the butter lettuce salad. Tonight I will make my mason jar salads for work. I've also started bringing cottage cheese or organic yogurt topped with canned pineapple in the jars and V8 juice. or seltzer water. I'm "kind' of on a health kick.
Hope all are well

The health kick here is to prepare food that I will enjoy. DH made a perfect burger patty with steamed green beans and 4 cheese mac&cheese (from a box). I ate almost every bite - that patty was 5 ounces or so and he cooked it a perfect medium rare. This is probably the biggest meal I've eaten in more than a week. I think tomorrow night will be Chinese Pie. Notice the pattern here - foods with lot of moisture.
Lacey - you're going to have to keep a few secrets or those docs will be all over you! It seems to me that a 3 week Tamox holiday shouldn't be that dangerous.
Bedo - LOL, your life with DD is always interesting!

Lacey, I would love to take a 3-wk holiday from arimidex just to see how it would feel not to take it. That's really dear that your son and DIL are so concerned about you.
Michelle, your dinner sounds delicious. Glad to hear you enjoyed it. I'll bet your dh was pleased.
My skinny dinner tasted really good. There's a lot to be said for being hungry!

Lacey- It sounds like your Dr is very in-tuned to how you feel and what is going on. You are so lucky! I also think it is sweet that your family is worried about your taking a break. I would probably do the same thing with my mom. But you and your Dr know best. Enjoy your break, keep yourself informed. You are a smart lady with a great doc- you will do great!
Carol- Glad you enjoyed your skinny dinner! I need more of them!
Michelle- I am glad you enjoyed your DH's dinner. Sometimes things just "hit the spot" glad it did for you tonight.
Bedo- You are making me feel guilty with your mason jar salads and health kick. I vow to have salad for lunch tomorrow.
So dinner was ok, I had about 3 steamers and a very small portion of pork. I am still bloated from eating BK last Friday. I swear- never again.

Let's see, when I lived alone meals were either cereal, ramen noodles, popcorn or hi power tamales in a can. it seems like I ate a hamburger every day of my life in my 20s. And of course, I was 50 pounds lighter. Where did that metabolism go?
For dinner tonight I had stuffed soft shell crabs and jumbo gulf shrimp with an Italian chopped salad. Last night was stuffed crabs, flounder and fried oysters. I think I'm finally reaching my seafood saturation point. Actually, I'm reaching my dining out saturation point. Looking forward to cooking my own meals again. Don't get me wrong, I could stay down here with the tropical vegetation, blooming azaleas, seashore, wildlife and mild winters forever, but I do miss my kitchen.0 -
Another lost post....damn! Giving up til tomorrow!

I think we have to do what our instincts tell us...I take tamoxifen, but only half the prescribed dose because I read European studies that say it works just as well for those with early stage BC. I have little or no side effects from it. My MO would probably freak out if I told him. I think my healthy diet will have more to do with keeping me from having a recurrence. I lost all the weight around my mid section and my MO is very pleased with that. I try and exercise some every day.
It was funny...when my DD and I skied together this year, she marveled at how I was able to keep up with her and not get tired...lol! I wasn't out of breath once in the high altitude. She's actually starting to listen to me about eating well. DGS was suffering from altitude sickness and when I insisted that he have eggs and bacon for breakfast instead of his usual pancakes, he immediately got better. What he needed was some protein and a little fat in his system.
Today I visit my MO for my check up and don't expect any surprises...just a routine visit.
Have a great day everyone.

Lacey I took a break from the Tamox when I was having those bad headaches. Dr. suggested 3 week break but it turned out it wasnt necessary as we immediately figured out it wasnt the Tamox, but needed an adjustment to my BP med. Only had 1 week off. I think I am handling the Tamox pretty well without too much grief, but after 2 years of being in chemo induced menopause, I got a period last week! Now wondering if the Tamox is doing its job....I will be 55 this year...WTH?
Kaara You are an inspiration with the healthy eating. Cant wait for the summer veges here!
Last night pork roast was sooo good, the stuffing really made it moist. this was a huge $10 roast that I cut in half upon purchase...good bargain as we have leftovers from this half and the other in the freezer for future.
Michelle YAY on eating that yummy sounding meal. Your husband is a gem!
Auntie It would take me a long time to get to that saturation point with the seafood. But I hear ya on being in control of the meals.

Carrie- Did you post how you stuffed your roast? Maybe I missed it.
I just made a lasagna and put it in the oven- Joyce I will think of you tonight as you were my inspiration! They are saying more snow here for most of the week. Should make the week interesting...

Okay Laurie. Pasta with lentils for the kids -- it's in a fresh tomato sauce, lots of garlic, and some (vegan) butter. Steamed broccoli. I don't want to eat any of that, however.
What sounds good to you guys?

Been too busy to post.. but have enjoyed reading your posts. Work is sooooo busy hardly have anytime to myself these days.
This website is amazing... great food and its 'skinny' if you want it to be.
Taco's tonight I think.

I had tilapia baked with butter, salt and pepper and garlic. blech.
Lots of setzer water today. Lot's of clementines, yogurt and a range free chicken egg.
The chihuahua is terrorizing us. She runs around playing and the cats look at her like wth...? when she bounces up to them The old lady miniature poodle mutt looks at me like, "I'm tired grandma, can I go to bed?? Haven't seen the DD since this morning. 4 animals the largest being a toy poodle and the smallest 1/2 the size of a cat. Really? Really? DD sleeps on couch with poodle. New dog sleeps with me in bed with the cats. Creatures move during the night. I have a presentation to give again (sigh) over the phone to a bunch of people all over the country in the am. Time for the Inderal. (stage fright, as usual) Spelling is bad, sign of being tired, but spellcheck is"not working" ie " I can't make it work"
I hope everyone goes to their favorite land of thier dreams tonight during sleep.

Oh! More naughty puppy stories! More naughty puppy! Bedo, you must keep that naughty puppy.
I need another naughty puppy story today. Hope your presentation went well, but I am afraid that is secondary. I am the bad sister and I only care about myself.

Laurie yes just filet your roast out flat and add your stuffing of choice, I just did a basic thanksgiving type stuffing with onion celery and herbs, spread on roast and roll up and secure. Baked with chicken broth and lots of seasoning on top.
Bedo That is exactly how we inherited our lab...daughter wanted a puppy...brought one home....then moved out to go to college....fast forward 8 years and we are still taking care of dog. ugh kids!!
Definitely going to hump night tonight, I need to get outta this house! Will have a few drinks for ya all.
Hope the snow does not amount to much for the east coasters....it totally missed us.

Well we can't be good all the time...my dinner last night was a red velved cupcake and ice cream! It was so goooood! After my app't with the MO I treated myself to a late lunch at Calif Pizza, so instead of dinner I had dessert. That's my story and I'm sticking to it!

Excellent work Kaara!
Dinner last night for me: mug of squash soup and one piece of ezekiel toast. I may have a poached egg today because Bedo had one. Hmm. Don't know the code for Dear Lesbian Life Partner -- DLLP? -- anyway, she is eating very often with the kids these days. She loves whatever slop I'm ladling out for them. She's supposed to wait until I'm through with work, and eat with me, but last night when I ladled out the pasta with lentils and broccoli, when I walked by (I work from home office) I saw she had seated herself at the table with the kids, big plate of pasta in front of her (no broccoli, of course).
And don't give me that blah blah blah about Oh! Parents should sit down and eat with their children! That way the children will not be drug addicts! Of course she should sit. And I do too, when I don't have a class, certainly. But I request she does not eat the child dinner -- I want her to eat adult food with me instead
This is becoming a long story. Anyway, DLLP is eating with the kids now especially, since I am not eating much of a dinner. She does not like ezekiel toast.

Just got back from Dana Farber and breakfast at a diner. We have to be back to DF at noon - I am having a transfusion. My blood counts were off the chart low. So I need theWe transfusion if I am going to have treatment next week. It will consume the whole afternoon - we'll be heading back in about 15 minutes.
I had banana stuffed toast with strawberries and whipped cream...yum!

Kaara, sounds like you had some good reason to celebrate in unconventional ways....for you!
Michelle, what a pain in the rear (and wherever else!) to have to return for the rest of the day for the transfusion. Glad at least that you had a delightfully yummy, high calorie breakfast, and that you are getting this done today instead of being on the roads tomorrow. ((((((((Michelle))))))))
Saw Life of Pi in 3D last night....Wow! Exhausting to watch....and such beautiful cinematography! DH had been dying to see it....maybe he feels he is living with the tiger?!
Before the movie we went out for a quick dinner at a casual restaurant/microbrewery. I had a lamburger (always fun to see them on restaurant menus) with a feta dressing, accompanied by sinfully delicious spicey fries. Fortunately, I had only had a veggie smoothie earlier in the the day.
Am heading to the store to get the fixings for the shredded chicken chili I will make for the cook-off later this week (hope it doesn't get snowed out).
Hope your presentation went well this morning, Bedo. Not sure I'd be able to get any zzzz's with that much animal action in my bed!
Hope everyone stays safe with this crazy weather in the East!
I think I need to get out the thesaurus and look up alternatives for "hope".0 -
Michelle So sorry you had to go that route. but I think you will find your energy again after the transfusion. I got a zip outta mine way back when. Gave me some color in my cheeks.
Bobogirl Maybe cut her some slack....you know how hard it is to watch someone eat, but you cant, cause you have to wait, but someone in the house made something that is too good to resist? I would probably eat twice and that would not be good for the waistline.
Kaara that is the utmost perfect dinner!
0 -
I guess that's how she feels, Carberry... too good to resist. She always says to the kids, 'Look what mommy made! Mommy is the best cook.' But really it just looks like slop to me. You're so sweet to tell me to cut her some slack!
Right now she's getting the whole kitchen dirty making empanadas from scratch for the baby. Dinner should already be on the table. It's going to take her an hour to make them, and then all will be behind schedule. I'm in here getting ready for office hours, biting my tongue.
Not feeling too good about testing right now. Looking forward to hearing about everyone's dinner. XXX

Michelle- I hope the transfusion does put color in your cheeks and helps you to feel better.
Carrie- Have a happy hump night!! Jealous!
Kaara- Good for you for being bad! Yum!
Bobo- I agree with Carrie, she should just eat 2 meals ;P I am the schedule queen too, so I understand what you mean by going off schedule. DH never sticks to one and I bite my tongue too. It takes all kinds to make this world go round.
DS1 started running a fever- sigh- I am SICK of winter and germs! So tonight is going to be left overs so everyone can eat something that appeals to them. Sorry Bobo- nothing interesting to see here....I am debating on eating lasagna again. And I wonder why my waistline is struggling!!
