Eric... Thanks, have no choice but to relax with these pain pills. Feels weird having DH and DD wait on me. I love cooking with rosemary - makes the house smell so fragrant.

Nancy... Your posts always leave me hungry! Would love a copy of your cookbook should you decide to go that root!

Lacey... So wonderful to hear about your DH's great niece! Studying for bar/bat mitzvah is difficult enough for any child, with Down Syndrome, only more complicated. I admire parents who expect the best from children and provide the support they need. I think too many kids are babied and don't have an opportunity to try to live up to their potential. (I'm speaking from personal experience: my step-son was treated like he was royalty, nothing expected of him just because he was a "miracle baby" with minor learning disabilities. When DH and I married, I made sure he was prepared for life after living with us parents, he's doing fabulous on his own).

And as for dinner, I slept through most of today. DH made teriyaki chicken bowls, was just the perfect meal for me.

Dh is cooking a beef stew for dinner tonight.  He has been wanting beef stew so decided he'd better make it himself.  I believe he's using a recipe from one of my America's Test Cooking cookbooks because I saw the book on the kitchen island.  It's nice to be relieved of chef duty.Smile

Disappointing news at my WW meeting.  WW Corporate has decided to eliminate all Monday meetings since they generally are not well attended.  The one I go to is very well attended with a great leader and some nice people.  This puts a kink in my schedule since Mon. is my free day to attend an am meeting.

    Lovely spring day here today.

Carole, your DH sounds adventurous. Mine would have no clue where to begin. Gravy is a magical substance to him. He can't believe flour and fat and liquid could produce something so wonderful.

Tonights dinner is chicken empanadas, some jalapeno cornbread and leftover Spanish rice. Carb heavy, but it's one of those days.

We arrived home from Georgia yesterday morning. It was an emotionally exhausting trip; compressing lots of family stuff into a very short time. Not used to eating out at Southern restaurants for every meal and all of us were getting some rumbling in our stomachs. Delicious BBQ, but how many meals in a row of BBQ can you eat? The services were beautiful as befitted this very religious woman.

Yesterday we went to Costco where I bought a HUGE spring mix box, 10lbs of carrots, tomatoes, and cucumbers. I wanted green things topped with the colors of the rainbow. We also picked up a pack of steaks. Mr. 02143 grilled one steak last night. I made a HUGE dinner plate-sized salad for each of us with all the veggies and some slightly pickled red onions and blue cheese. We each had about 1 oz of the meat. Ah..... lettuce that was actually green with a homemade vinaigrette was just the ticket. I had pulled out some of my Calabrian bread and made some bruschetta. The perfect meal for us last night.

Tonight will be a repeat with the remaining 2 oz of steak.

Dinner tonight is the naughty bacon and sweet and sour sauce topped meatloaf, with butter and herb mashed potatoes and some broccoli.  Very delicious, but very naughty.

Susan, there's nothing like traveling and eating out every meal to make you want a huge salad when you get home. Been there, done that.

Special k, what makes it naughty? Do you eat it nekked? ;-)

You guys are cracking me up!

We went out of town for the weekend and stayed with friends.  We had a great time and the kids plyed till they dropped!  Witht he nice weather we are having we spent a few hours at the park this morning.  SO nice to be back outside with the leaves trying to come out and spring spinging!

Tonight is roasted eggplant with Michelle's sauce.  Yummmmmmm!

OK, bring on the leek recipes.  Bought 3 bags of the frozen ones at Trader Joes.  Managed to restrain myself with only graham crackers, their orange/carrot juice, and the fruit gummies plus the leeks.  Probably the lowest bill I've had there.  I couldn't find any cheese I wanted but found a lovely recipe today for mac and cheese with Manchego cheese and leeks. Manchego is not something we have in local grocery.

Special K - I love naughty recipes.  We ate every bite of the meatloaf I made last week.  I do have one of the double pans so at least the fat drains away.  Tonight is chicken sausage, rotini, red peppers, broccoli in bit of Italian dressing.  Off the chicken sausage package.

Went out with friends Saturday night for Mexican food to the infamous Joe T Garcias (known locally just at Joe T's).  We had 28 people at 3 tables.  Then over to one house for luscious coconut key lime cake.  Their DD is a pastry student in the culinary school in Ft. Worth.  Yum.  Have been trying (LOL) to diet some, not drinking soda (or at least as much) and passing by DH's candy.  I'm definitely a grazer.

Spring is here but cold front tomorrow and back in the 40s.  DH planted my tomatoes/peppers.  I may have to dig out tarp.  Still have not put out my houseplants.  Was 36 here Thursday night.

Keeping with Special's "naughty" theme, had BACON L, and T sandwiches on Trader's delish tuscan bread, squash soup with barley (love the crunch!), and naughty potato chips. Love to be naughty occasionally! ;)

Lacey - I did notice they seemed to have more breads than a few weeks ago. DH is not much of a bread person. Eats UGG white bread sandwichs. Is the Tuscan bread a loaf bread? Bakery bread goes bad so fast in this house and at the price it is makes me feel terrible. He will eat Naan on occasion.

Susan, I'm glad you're home. South tends to put Fat back in everything.  And "sweet tea? or regular" the first time I heard that I said, "I'll put my own sugar in, it's OK

    Goats, Mmmmmaaaaaaaahhhhhh! Hi!

Speaking of very naughty, for dinner cheese, wasabi peas, ( almost the whole can) some almonds with sea salt and grapes. Some study once reported that if kids are left to their own choices, their over all diet will be balanced. I hope that goes for adults

Eric, so happy for the Birthday you pulled off! It sounds wonderful and if I were the Birthday Girl I would have been so happy. Do you have a picture of the Birthday Girl?

    Were is our Bobogirl?

Still so much going on, can't explain right now.

I am sorry for anyone I missed. I'm going into Boston tomorrow to Beth Israel Deaconess for an appt I hope that I can get in. It is still guarded.

    Fast moving thread! Yikes!

We did naughty bacon on Sun for Dh birthday breakfast.  I let him have his bacon every once in awhile.

Grass is growing, going to take the mower for spin today to get the high spots. Making some goulash, some italian bread and will have a picnic on the boat with some friends. Boat in water, but not set up with the carpets and tables, will be very basic, but just so glad to be on the water!

Ha,ha!  Nope - don't eat it naked (nekked!), 'cuz really who wants to see that, lol!  It just has a lot of unhealthy stuff in it, so it is a naughty indulgence.  It is my DH's absolute favorite, so I do make it occasionally.  DD is graduating from college in two weeks and we are having a big shindig - will be having lots of naughty food for that too!

    specialk, don't forget the cake!

DH has requested chili tonight, so I guess that's what we're having. It's a cold rainy day, so I suppose that's appropriate. Yesterday I made some lemon custard cakes served with macerated strawberries which we can have again tonight.

    Eric - That's a cute name for a cookbook.

Michelle - CONGRATS on your awesome news!  You go girl!  So happy to read the wonderful update.  I'm doing a happy dance for you, and you know what ... our cat joins in on my dances (he will be on the couch and come running to dance next to me if I dance on the tile by the front door).  So we will both celebrate your continued victories!

Eric - per Amazon the writer also wrote "Ova Easy:  Egg Recipes You Will Flip Over". Will haunt HP Books looking for this.

I just absolutely love old cookbooks any and every kind. I'm on the mailing list for the Texas Booksellers. They know a sucker for sure.

Tonight is the leftover rotini from last night (cooked way too much for the 4 little chicken sausages) with a bottled vodka pasta sauce. Have makings of beef stew to add vegies too.  Also whole chickens on sale for 79cents/lb. Had 6# chickens in case, looked like baby turkeys.  Butcher found some 4 #ers. Recipe in grocery mag for stuffed chicken with walnuts. Using stuff up around kitchen.

Sad day. Had to have my oldest goat put down this morning. The last one of my original herd. It was just time. She had a coughing/choking spell and has been on the downward spiral. PLT DH was home to help me.  Did something to my back bathing dog and cleaning her crate on Sat. and can hardly move esp. in the mornings. Prob. from gen. "sit on my buttness". I have old nurses' back anyway.

Nancy, you are the busiest cook on this thread!  Or busiest in the kitchen, I should add.

    Eric, the link worked.

SpecialK, I can just imagine the shindig for the college graduation celebration.  Be sure and tell us about the food afterwards.

Luv, sorry about your goat.  One of my mother's neighbors raises goats.  The little ones are really cute.

DH's beef stew was delicious last night.  There's a big bowl of it left so we'll be having it again tonight.

Carole lol, it's because I haven't been able to get out in the garden due to the crappy weather. The only thing I have planted is potatoes and I barely got those in.

    Hi Everyone!

I was online looking for yummy vegetable recipes for the blender, and I came across this lady's Pinterest site that has a bunch of recipes, and one is called Carrot Cake!  Thought you all might like to view the link in case you are blending or juicing.  PS - The Carrot Cake one only has 4 ingredients - that's my type of yummy recipe!  http://pinterest.com/r3birdiebird/drink-it-juice/

Last night's dinner started out as a big snafu.  We have a hard time getting dinner on the table by any decent hour on Monday nights ... so I was prepared.  I put chicken breast in the crockpot earlier in the day.  My hubby was on time from work and we were on track to eat at 7PM.  I get to the crockpot, and do you know that I had the food on 'warm' setting instead of 'hot' setting all day!  Of course, I was worried that bacteria had set in being on 'warm' all day, so we threw it out.  We got chicken fajitas to pick up, and I put veggies in the oven to cook.  Before ordering the fajitas I called the restaurant to find out if they were chicken breast (and not thighs), asked who their vendor was, and if they could cook it without oil.

I'm hoping for better results tonight on me cooking.  I think it's fish tacos tonight, with emphasis on fish.

Luv - sorry to hear you had to say goodbye to your goat.  We get so attached to our pets.  I have a picture of a girlfriend and I standing in front of her house with the goat between us.  Her goat had been known to walk around inside their house even!

Debra - I have a very annoying 8 week old bottle baby who wishes she was in the house where she was raised.  But she has to learn to be a goat.  Finally today she has learned to open her mouth when bottle given rather than me prying her mouth open.  Sheesh!!

Thanks everyone for the goat sympathy.  Her name was CoCo Chanel and she was 12.  Rest in peace my sweet CoCo.  No I did not name her that.  She came her already named/registered.

Oh, sweet CoCo, what a sweet life you must have had.

Goats, she was lucky to have you as her Mama.

For dinner Cashews! Cheese! Cottage Cheese covered with French dressing. Orange Juice! No, this is not a recipe. Do not mix together.

Sorry for those I missed.  Am thinking of you all, as always

Luv, your goats have a great life....with their nurturing mom. Condolences on the loss your sweet Co Co Chanel.

I am officially sick of rain and cold. Froze all day. Am I being too impatient for a little bit of warm sunny weather?!

luv - sorry about CoCo but I bet she had a great life with you!

eric - I had a friend who wrote a cookbook called - Take One Egg and Crack Up - I kid you not!  She was a military wife and there are a lot of anecdotes scattered through it.  I also have one my MIL gave me written by a nun called Home on The Range - it is very cute and the recipes are great.

bedo - your dinner is funny - especially the instruction not to mix together, lol!  I sometimes have meals like that too - usually when DH is not here!

carole - I am having to restrain myself with the menu - I tend to be excessive - so I am limiting to half a dozen handheld heavy hors d'ouvres, and half a dozen handheld desserts.  I did something to my knee - not sure what yet but I have an appointment on Friday - but it is swollen and I can't walk well at this point - I am icing and elevating but it doesn't seem to be helping and I am actually in pain pretty much all the time.  I don't know if it is a complication from Arimidex, or I actually injured it.  A couple of weeks ago I walked into a trailer hitch when stepping behind a parked pick-up truck, and it hurt but it did not feel acute at that time.  All this is to say - I am going to have to take it easy on the party plans!

Luvmygoats.  It doesn't matter if person or pet..... they are missed.

Special K. You'll never guess how I managed to learn to pull the receiver hitch out when I'm done towing.....well, maybe you can....

I'll see if I can write more.....I'm being called upon to check a physics answer key and help with algebra.....
