I still don't know if I'll need to leave or not...I got more info last night and my area of interest is the Red River in ND and MN...and the weather service/US Army Corps of Engineers is reducing the predictions for the severity of the flooding.

I'm the "head techno nerd" for one of several USPHS portable hospital emergency departments.  We (stuff and staff) are sent to areas that need extra medical capacity due to disasters, terrorist attacks or planned events.  Within a couple of hours of getting there we're set up and are seeing people....in tents, if needed....

We're only gone for a few weeks at a time, so it isn't that bad.  The only downside is that the warning times for leaving can range from none to a day or two.

Normally I work for Verizon Wireless and sometimes drive a school bus.  The military leave laws cover my being gone so I don't have to worry about being fired.  Verizon goes above and beyond and continues to pay the salary difference between the two jobs while i'm out..so they aren't too worried... :-)

Eric - best wishe if you do go.  OH and take your mosquito spray.  Metroplex is already spraying for West Nile virus.

Verizon is our home phone company.  Know you're with wireless end but nice to know of their service committment.

Carbery:  My 43 year old son puts hot chili pepper sauce on EVERYTHING.  Well, I haven't seen him put in on ice cream yet, but that would be the only exception.  Imagine making a good chicken pasta and he drenches it with hot peppers.  Or a nice roast beef !!

Luv:  Is the Sofrito sauce a tomato base?  Wondering because of the "white" chicken chili.

Laurie:  Echoing the others.  Hope all is well.

Minus, the Tobasco plant in south LA has a peppery ice cream to sample when you visit there.  Your son would probably love it!

I, too, hope Laurie and family are ok.

I am on that sofrito sauce...gonna search the stores for it.  Also wrote down the fritter recipe, love having something dif to do with zucchini.  Like someone else said, when the zucchini starts coming on in the garden, you need to get creative.

Dinner out last night at marina restaurant that just opened for the season.  Sooo good to see the staff and owners after a long winter.  Had a strawberry goat cheese salad.  they were serving fried chicken wings, free, to all the tables. Yummy but totally unnecessary in my diet. the men ate most of them, thank goodness!

Making chicken corn chowder for the days meal, anything else my husband wants will have to be made by him....ha ha  like that will happen.

There are two colors of sofrito. I much prefer the green: http://www.amazon.com/s/ref=nb_sb_ss_c_0_7?url=search-alias=grocery&field-keywords=sofrito&sprefix=sofrito,aps,194 Goya is everywhere here in the Boston area, so when I am too lazy to whizz some up in the food processor, that is what I use.

Last night's Greek-fest was delicious. I have never pulled the special muscles from a leg to make kebabs before, but this will not be the last time! Oh my. So delicious! Served with grilled onions, taramasalata, hummus, tzaikis, and some grilled pita. Oh, and spanikopita. There is enough leftover for two more meals, so no cooking today!

The lamb sausage was also very good. Will freeze those since our food plans for the next several days are set.

Hi everyone!  All week I have been trying to get caught up on the posts so I could respond to everything that is going on with you!  I have not succeeded so I give up and will just post instead.  I hope everyone who is dealing with treatment is feeling well and healing from surgeries.  I also hope that EVERYONE has had a great week.

This past week was school vacation week and the weather was amazing for just about the whole week.  We spent lots of time outside and had lots of play dates.  We went to a total of three parks and took endless bike rides with and with out friends.  One day we actually spent a total of over 8 hours outdoors and I even got a little sunburned.  Dumb mommy protects the kids and forgets herself!

I have kept dinners fairly simple this week.  Chicken Caesars one night, meatloaf one day when the weather was cool and last night home made fish and chips which turned out amazing thanks to DH.  The man can fry a fish!  Tonight neighbors are coming over and we will have a bon fire and do hamburgers and hot dogs with pasta salad and cole slaw.  Super easy.

It was nice having my older son home for the week.  I snuck in a lot of extra snuggles with him and we were lazy in the mornings watching cartoons and making pancakes.  It was nice to not have to be up and out of the house and I think he really enjoyed it too.  We would be lazy until 10 and then be up and out!  I even got the pleasure of taking a nap with BOTH boys one day- all three of us snuggled in my bed.  I won't have many of those left and I thoroughly enjoyed it :)

Laurie - Sounds like an absolutely delightful week. My DD is almost 26 and I will still snuggle some when she's around. Spent the morning trimming goat hooves and pulling weeds.  Sitting with TV on watching Out of Africa again. Have had a peanut butter/jelly sammie and a banana.

Carrie - Like Susan posted there are 2 flavors of the sauce.  I still have part of the green one; not found as many places to use it.  Yes, the white chicken chili had both red and green sauces, though just 1 TBS of each.  I'm a wimpy Texan, can't take the hot stuff but neither are very hot.  We have Mexican markets here but the last jar I bought was at WalMart.

The stuffed roasted chicken was OK.  I'm not so much used to waiting almost 2 hours for chicken to cook.  It looked beautiful coming out of the oven, nicely browned and much nicer looking than most turkeys I've made.  Thanks Nancy, I did manage to truss it and the stuffing stayed in.  Way too much for the 4# chick and recipe called for 3#er.  I think I'll attempt Nancy's spatchcock method next with Maple BBQ seasoning unless I can talk DH into really BBQing it.

Today we are having Lacey's jump-ups.  NASCAR on at 6 and I'm planting my hiney on the couch shortly with a stack of old magazines.

I'm glad it was vacation that was keeping you from posting.....and that the weather was good.

I have the same problem keeping up, so don't feel bad.  I do read all the posts, but don't always get to respond to them all.

Tobasco flavored ice cream.  Hmm.  I like peppers and hot stuff, but I've never liked the sweet and hot combination like the different pepper jellys and, I suppose, spicey hot ice cream.

So far it looks like the flooding is going to be able to be contained and I won't have to go "up there".  I hope so.  Some of the first predictions were that the river water levels would rise above the dikes, but now it looks like they will have a foot or two to spare...if the weather cooperates...

Michelle, I'm guessing you're getting quite the sun tan!  Carefree, AZ and then Puerto Rico.....  You picked great weather times for both places. :-)

This morning a friend called and asked if I could help him take down an old TV antenna tower at a very elderly (even by my standards) man's house.  The man was a long time friend of my friend.  I guess he had moved "out into the country" and needed a big TV antenna (and the tower) to get TV reception.  The city grew up around him, and that brought cable TV, so the tower was no longer needed.  The elderly man was selling his house to move into an assisted living place and thought the tower would be an eyesore.  My friend and I have the gear and training to do this kind of stuff, which is how I ended up 50 feet in the air on a Saturday morning.  The tower was perfectly maintained, so it only took us about 2 hours to take it all down.

My friend asked me about my cast iron cleaning and the man must have heard that because when I came down, he said he had put some stuff in the back of my truck.  He went on to say he was needing to downsize a bit and would appreciate it if I'd help him out.  I had to look up the first one..an Aebleskiver pan (never heard of it before) and the other was a stove top cast iron waffle maker.

So I guess I have two more things to clean... :-)

I always wanted an aebleskiver pan! I see them all the time in antique shops. you'll have to make some aebleskivers Eric and let us know how they are.

Yah, what nance said. I don't know what it is but I'm sure I would want it.

Laurie, you have so much energy!  You way outshine me, even when I was your age.  You're kids are so lucky! And hubby too, of course!

    I made Hummus!

1/4C tahini, 1/4 C or less lemon juice, 1/2 clove garlic, minced, 2 TBS olive oil 1/2 tsp cumin and salt each, 1 16 oz can chickpeas, drained.  Puree each 2 things for a minute a piece before adding the next  add 2 or three tsp water or chickpea drained water if needed to thin.  Then I put in a plate and  added olive oil, paprika and red pepper flakes to top. So pretty and so much cheaper that stores. Next time might add olives (any type) sliced on top.

Success!  Will serve with Pita bread. DD grew up in Ga and also puts hot sauce or red pepper flakes on everything.

Second, I forgot to buy couscous! (Banging head on coffee table)

Bedo, did you cuss cuss when you realized you forgot the couscous?

I'm sure I'm not even in the first billion people that thought of that....

I guess i'll have to figure out how to use the pan. It looks like it was made for a gas stove. My stove is electric, but I'm sure the grill would work OK.

Bedo... Couscous can wait. Will be there when you're ready. Hummus sounds yummy, will need to pick up ingredients when I'm off meds and back to driving.

Eric... If no one has aebleskiver (Danish pancakes by the way) recipes there's plenty on Pinterest. Hopefully, you'll be staying at home. Love the pun about couscous.

Meals have been jump-ups (clean out pantry/fridge/freezer kind of things). No word from DD all week, didn't think she was coming home this weekend. Just got angry text that of course she is (it's never a given), she doesn't eat red meat so I need to check the options to figure out dinner and breakfast. And, oh yeah, she'll be here in about an hour, probably expecting her dinner on the table whenever she shows up, that's NOT gonna happen!

Snagged some veal the other day so tonight it's veal parmigiana, risotto and an Italian chopped salad.

Looking very forward to some unrainy weather.

I just got a Facebook message from Debbie and she says "hi" and promises to be back soon.  Chuck is using a walker but is still in a lot of pain.  She's trying to be strong for him and her dad, while finding moments to grieve.

I had a great birthday at my DD's house.  The grandkids made cards - so cute!

Hey Seaside, hey there everyone, I did get good news -- they said benign here -- but my BS in NJ is still not happy, and she is consulting, and they've ordered another MRI (?), and I have no explanation for that.  Sorry I haven't been on the boards.  I have been in the thick of it over here, plus back to my four jobs one week after surgery.

What did I have for dinner?  I had a bialy and two poached eggs.  XXX

I had a new cooking experience...preparing fresh baked mountain trout that was caught from our lake in the mountains...wow...it was awesome.  I baked it with lemon, butter and herbs, and served it with risotto and asparagus.  A delicious meal and nothing like a fresh caught fish!

Hope everyone is having a wonderful Sunday.

Oh Bobo  that is great news!!!  you need to slow down and get some rest after surgery! I guess be glad that your BS is very cautious in taking the extra measures for everyones peace of mind.

Well. remember I was going to the grocery store and gonna pick up some sofrito......well I went to the store but totally forgot to look for it.  If I only had a brain.

Yesterday was so beautiful and just tried to fit too much in.  Stopped at my parents and found my Dad struggling to get the canopy over the frame out on his deck.  Mom said he fell off the ladder earlier in the week. Geesh, he has three capable children all within calling distance, why doesnt he ask for help...he is 82 and should not be on a ladder! So I put the canopy up for him, only took a few minutes. My brother and his son will visit them next weekend to help with some man chores.  I still need to paint their bedroom ceiling...then the inside will be all done with fresh paint.

Today we will "babysit" our dear friend that is blind while his wife attends a bridal shower. Will take him boating and feed him lunch...he is sooo much fun...does an awesome Stevie Wonder impersonation. He is so amazing with his blindness and doesnt let it get him down....frequently offers to drive us home if we have been drinking  LOL

Hope everyone is enjoying the spring and the sunshine!

Bobo...  Good news!!!!  A relief...  4 jobs? I thought I was the crazy one with just 3 jobs... Smile. Use left and right arrows to navigate.

Carberry, I've decided older folks' worst nightmare is feeling useless/helpless. I will probably feel that way myslef

Michelle, tell Debbie hi for us all and that we're all here for her.

    Bobo- great news!

Carrie- Your Dad- I don't think any of us know our limitations and just want to do things for ourselves.  I know I am guilty good for him for still having the get up and go!

Michelle- Glad you had a great birthday:)

Even though the weather was beautiful today I spent it inside cleaning.  DH was out doing yard work with the boys all day with neighbor kids playing around him.  I spring cleaned our bedroom and attacked the boys dressers and hand me down totes and pulled everything too small from last year and put the new stuff in.  Just the clothes took me 4 hours!!!!!  I HATE it!  I am pooped and just took a nice hot shower and am getting ready to call it quits.  We are having BBQ grilled chicken thighs, cous cous and corn on the cob.  I am hoping I am smart enough to go to bed early tonight!!

    Hope everyone enjoyed the day.

Yaaaay Bedo on the hummus! I love it and could eat it every day! Haven't made it awhile... On my list to do soon!

Happy Birthday to Michelle (belated, not sure how I missed it) and Eric's Sharon! Thanks to Michelle for the update on Debbie... Debbie, if you're out there reading, we miss you!

    Bobo,

Glad that you got good news! Sorry that the BS has thrown a little concern your way but, better to be thorough and get things checked out... Just sorry that you are still in a little bit of limbo and waiting on another test/result... Stinks but will make the celebration that much sweeter when you get the next good result.. Thinking of you!!

    Carrie,

DH's parents are in their 80's and I sooooo hear you on it being frustrating when they won't ask for help and take these crazy risks. Sometimes it works out OK but, other times not so much... DH's Dad has fallen more times than I want to think about, luckily with no disasterous results so far, but why keep tempting fate?

    Nancy,

We had really good weather here this weekend but I think the rain is heading our way :(. We got some fairly good corn on the cob that we had tonight with some grilled chicken... We have a couple of ears left! I'm hearing the zucchini and corn fritters calling my name...lol!

    Kaara,

    Fresh caught fish.... yuuuuuummmmm!

    2nd,

Lol on the jump-ups!! Hope DD got her dinner and you weren't ready to clobber her... Been there!

On the nights that I cook plenty, there's no one home except DH and I OR I plan on jump-ups and suddenly my 2 kids are here with a couple of friends thrown in for good measure...

    Really can't win sometimes..lol!

    Laurie,

Was getting worried about you! Glad you checked in and that all is well! That spring cleaning has a way of just snowballing on you and is just exhausting! But you'll appreciate all of your efforts after a good night's sleep!

Whew!!!!! I think this may be my longest post ever! I know I didn't get to everyone but, if I page back, I'm going to lose my post! Tomorrow is my meeting with my BS to go over mammo/us from earlier this month. I waited for results after the imaging and got the all good so not expecting any surprises tomorrow!

Seaside:  Can't imagine how you included all those replies.  Amazing.  Can I tag on & send the same wishes?  Even though you're not expecting any surprises, I'll be thinking of you tomorrow.  Let us know.

Had my first "gourmet" meal tonight off the BRAT diet.  Well...if you cheat & count poached chicken breasts & and stove top stuffing as gourmet.  Sadly cleaned the fridge & dumped green goddess dressing, salmon & cream cheese spread, cold asparagus, etc.

Seaside, always glad to see someone else doing a major post! :) Good luck with tomorrow's meeting. It sounds like all will go well given the good info you already have. Yay!

Laurie, congrats on your organizing day! Wish I were so motivated....but I can't complain about my day at TD Garden. Thought we would be saying good-bye to the Celts for the season, but were treated to a win and they avoided elimination from the playoffs.....and such a beautiful day to be in The Bean. Stopped at a local restaurant/bar near the Garden for an early dinner....steak tips, portobello mushrooms and salad. A fun day...nonetheless, I would have done well to get some spring organizing done at home!

Debbie, sending strength your way as you cope with so much! ((((((Debbie))))))

Bobo, glad you received good news, and have a BS really looking out for you. Not sure how one fits four jobs into one week.....yikes! Good luck with that!

Bedo, yes, the description of your hummus recipe and presentation was very impressive.

I like to make my own hummus....but have noticed that my Vitamix can really fuss at me when mixing that dense texture. I should probably use the food processor, but thought that VM was the all perfect "go to" appliance.....not so much!

Hope all I missed are enjoying the end of a good weekend with freedom from pain and/ or worry.

    Minus,

Glad that things are settling out a bit where you can branch out a little in the food department.... Hope that continues! And, yes, you are more than welcome to tag along with me in the well-wishes department anytime!

    Lacey,

Thanks for the good wishes for tomorrow! I'm fairly certain it's just a formality but I also know that, against all logic, anxiety will kick in tomorrow AM...

As for my post...Usually I read and read and then, when I try to respond, I just draw a blank so tend to respond to just a couple of specific people but always feel bad that I didn't respond to everyone....

Seaside... So understand - this thread moves so fast I had to go back & read a couple pages to try to catch up. Funny thing about DD last night - she came in so happy (there's a really long story about the past year and a half: senior year of high school, going on to college, lots of anger because life seemed unfair to her). Hubby had gone to get donuts in the morning, couple left over. Ditto with a taco run. I didn't know what to make her so I didn't do anything. DD came home, hit the donut, chicken taco, found something in the freezer and was so kind about it all! She even took me shopping today as I'm still on meds and even asked me to join her for a walk!! She's refused to have me come along in the past. Maybe my meds are making me hallucinate!

Luv... How's the new goat doing?

Bobo... Benign? Best word on this journey! Tell me the secret: how can you handle 4 jobs? I'm hoping to get 1 once all my healing and recovery are complete.

Susan... Didn't know there was such a thing as a SIMPLE samosa. Can you please part with that recipe?

Auntie Nance... Thanks for the zucchini corn fritters recipe! Saw it, forgot to copy, thread moved so fast I had to go back a bit to get it. Would love to try it this week as DH has been requesting corn fritters. Yours sounds like one I would like. Thanks for sharing.

Hope I didn't miss anyone else!
