    Treatment day here, so I don't cook. I am having a bit of nausea so I want soup. Pho to be exact. Nothing like a brothy soup to make me feel better. I will do a post over on the stage IV boards tomorrow, but this is my third year anniversary of progression with mets. Three LONG years, two years with no evidence of disease. Might get a medium Pho to celebrate!

    Carrie- Thanks for the well wishes.  I'm feeling better than yesterday and eating lots of vitamin C and D. 

    We hit the park this morning for a few hours with ALOT of friends.  There were 9 kids who are all friends and we played until they were all so hot that they asked to go home :)  The temps cooled this afternoon and we rode bikes for two hours.  All the neighbor hood kids did races.    I think they will sleep well tonight!  I haven't gone grocery shopping yet this week with not feeling well and play time.  So I hit a local grocery store down the street and picked up a steak.  We will have that with some asparagus and baked potatoes for dinner.  I NEED to go grocery shopping tomorrow- we are out of way too much.  But I felt I couldn't drag the kids to the store when it was so nice out.

    I made myself lemon caper scallops with veggies - It was my first time doing a wine sauce normally it's s cream....so my opinion on the outcome was meh it was ok. Tomorrow is spaghetti and meatballs - kids favorite!

    Woo-hoo, right on!

    Ok, here's a basic Vitamix green smoothie:

    three leaves kale or six leaves spinich

    handfull of grapes

    one banana

    three ice cubes

    about 1/4 cup water

    The recipe book will tell you to put soft ingredients on the bottom, ice on top. Also, don't fill the container too full, or the motor won't be happy.

    Oh, when summer gets here, Vitamix Gazpacho is divine!

    Two tomatoes

    one cucumber

    one red pepper

    little bit of gren onion

    some crusty bread pieces

    sherry vinegar

    olive oil

    three ice cubes

    Put soft ingredients on the bottom and blend (using your variable-one, turn up to 10, then flip to high.) This is great for a hot summer afternoon, very refreshing!

    Spaghetti and meatballs was my daughter's favorite '1st night home from college' meal!!! She didn't care too much for red sauce at all when she was little but, came around later!

    Ok, would appreciate some advice: have been juicing the last couple of months. The motor burned out yesterday on the Jack LaLane juicer my husband got a couple years ago. Looks like a peice of celery got caught and that ended that. Any suggestions for a new one? Thanks!

    About dinner: change of plans: originally planned on a pot roast with mashed potatoes and roasted veggies, but DD informed me this morning (as I was on the way to a dr appt) that she will be coming home tonite (no classes/work tomorrow) and she doesn't eat red meat. So, a little early for Cinco de Mayo, making chicken and beef (separately) tacos and fajitas. Would love a margarita with that....

    Susan, here's hoping NED is your slogan for years and years. 

    Leftover pasta with tomato sauce and Italian sausage for dinner.  Lots of fresh-grated Asiago sprinkled over portion.  Roasted baby artichokes with a garlic aioli.

    Oh how I love pho. I'm growing Thai basil this year just for that purpose.



    Haven't cooked much this week other than to throw stuff on the grill. My ds and ddil are coming for the weekend. Ddil requested homemade pasta so I'm making meatballs with a veal, pork and beef mixture and arriabiatta sauce. I already made fettuccini and angel hair, which I have frozen. Going to try lemon meringue pie again. I'm determined to get it right!



    Going to see my 87 year old dad tomorrow. He fell twice this week. He swears he's ok, but I need too see for myself. I'm 100 miles away so I can't check on him as often as I'd like.

    Dinner is a rustic affair tonight. Made a bowl of guacamole and I'm just eating it with a spoon. Can't have any chips with it. :(

    Yum on the guac!! And sometimes a spoon is all you need... For lunch I had a mix of romaine and spinach... Added some shredded carrot, sliced cucumber, garbanzos and a half of an avacado that I found in the refrig that I thought might be past prime but was good! Yayyyy!! A little dressing and a whole lot of black pepper and I was a happy camper!

    Dinner for DH is leftover sausage, oven fries and salad. I'll have a baked potato and maybe some salad. Been nibbling too much today. Have been out to cover up tomatoes/peppers and the few plants I've moved out. We're expecting a freeze tonight. Rainy, cold all day. AC was on yesterday and now the heat. Feels like January. Thinking of you that had snow. Hopefully this is our last spell. Soon the tomatoes will be blighted from heat.

    Susan - Love NED. Keep it up. I've never had Pho. Very poor excuse for Chinese in town; don't even bother. No Vietnamese food around local, in Ft. Worth.

    Bedo - Loved story about food/dog disappearing. I'm on ignore from DD right now. Phoned her earlier in week, messaged back she was busy but would call me back. I'm holding out until she calls me.

    Laurie - I would collapse in bed with your activities even when I was younger.
