So...whats for dinner?

jenjenl - I did a quick google of "wine sauce for pasta" and came up with several choices top of list that did not have heavy cream. Can't address how good they are but recipes are out there. Do you have any alfredo sauce packages or cream cheese? or even sour cream? I know the cream cheese will work; I was going to make something like that last week like a chicken casserole.
I found some frozen boneless pork ribs. Think I will sprinkle with the McCormicks maple BBQ seasoning I bought last week and slow cook in oven. Dinner at our house on DH's work nights is about 10 pm. And maybe an exciting box of mac/cheese and salad.

Leftover pasta and veggies, I would make a pasta salad. Blanch the green veggies you want in the salad, dice the tomatoes, toss in a nice vinaigrette and add a bit of cheese. Toss and eat.
Mr. 02143 wants burgers, so we have pulled out the last of the house-ground burger and house-made buns. I will make a salad of some kind, maybe cole slaw without mayo. More than enough for both of us though my lunch salad is already missing in action.

It turned out fantastic. I sauted the onions, cherry tomatoes and garlic. Then added white wine and just 1 tbs of cream. Added the pasta and then 1 tbs of parm cheese. I was happy it tasted so good with such little cream and cheese. I am one happy girl!

Jen- Yay for it turning out great! I just saw in your signature you have a 3 and 5 year old....me too!

Carole, I have pretty much avoided avocados since my obsession about what I should and should not consume based on my estrogen receptive cancer and tamoxifen regimen. I have no idea how true any of it is....and about the soy, I met with a cancer nutritionist around this time last year and she said to avoid things that were derivatives of soy (soy chips, etc) more than the real thing, so really I do not now who is on first with this damn nutrition thing.
Here is one of the pages that I probably took to heart about avacado:
http://foodforbreastcancer.com/foods/avocados
I guess also the fat content concerned me even if it is a "good" fat. But boy I do like guacomole....:(
Decisions, decisions.....
Tonight we grilled steak and asparagus, to go with white sweet potatoes and garden salad.0 -
NO way am I giving up avocados. I think the "hidden" soy in processed food is a much bigger threat to our health. I figure that anything that I can eat the way it grows without any modifications is on the list of foods I can consume in moderate amounts. To be honest, we probably don't eat more than 10 of them a year.

I agree not giving up avocados!
Dinner was steak on the grill baked potatoes (Michelle I will never eat a baked potato without thinking of you!) and corn on the cob.
Lacey- Did you watch the Big C?
0 -
Yes, Laurie, I watched it, and hard as it is, I was able to manage it better this week. It seemed more blended. Several parts still heart breaking tho.....especially whenever they focus on her dealing with leaving her son... and his dealing with it...the scarf discovery scene tore me up. Is this slated for only two more sessions? Or am I confusing the number of episodes with another show. So well written!

Lacey, I think there are two more.

Unlike....:(

Liefie - welcome. This thread moves fast but you'll have fun here. At least reading & talking doesn't pack on the pounds.
I am also going to continue eating avocados - but that would be less than 10 a year for me too.
Dinner was on the road since I didn't finish w/my MO appointment until 7:15pm. Ate a big green salad (yes, it's a no-no on chemo but I've been so good eating nothing but BRAT & poached chicken for 20 days) AND two slices of pepperoni & mushroom pizza. I may be sorry tomorrow, but we only live once & I'll go back to bananas & rice in the morning.

Minus Two - my Dana Farber oncologists told me that I can eat fresh fruits and veggies unless I was neutropenic and that hasn't happened yet. I don't eat from salad bars because of potential contamination from diners, but that's the extent of my germ avoidance. I've been on chemo constantly since June 2011 and never had a problem.

Here's a (((hug))) for all you nurses out there. You are rock stars.

Hi all! I have been M
IA due to DD's graduation, party, family in town, and some doc appointments!Deb - so very sorry about your situation with your DH, illness is hard enough without the difficulty of feeling like it could have been avoided, and dealing with the business and legal issues too - will be sending your strength.
Bedo - keeping you in my thoughts and hoping all goes well with your treatment.
Luv - congrats on the new DGGD - so cute - hope all goes well for the new parnets, I know it is worrisome. Yay for the Gemzar and ice cream induced drop in TMs - keep it up!
Susan - I laughed at your too much milk story - you may have overreacted, lol! Next time you buy milk call your DH first! Awesome on your NED status, although I know it must be a hard fought victory!
Carole - sorry about your IRS deal - they are not very understanding as a group are they?
Lacey - some statins have to be taken at night, specifically Crestor. I was on Lipitor and it had no time constraint. I took it at night anyway because that is when I take my stuff. Meds make me a little nauseous so I figure I won't know that if I am asleep. I started taking Lipitor after my hyst/ooph 13 years ago when my cholesterol climbed. I changed my eating habits enough after BC that I asked my primary care if I could try to come off and see if I could hold my numbers steady. I got down to 10mg dosing with excellent numbers so as of yesterday (doc appt #1 for the day) I am off with stellar numbers! Yay!
Carberry - Yay for the new job. My DSIL has been a nurse for about 35 years and would like to reset into a different job. She is married to a minister who receives a stipend so she must work but I know that after all this time active nursing is wearing her out.
Hello to everyone else! Enjoying all the Cinco de Mayo recipes - that was my mom's b-day and she always liked that people were partying on her b-day! The grad ceremony and party were fun. Here is a pic of the desserts, with the new grad and a friend. We had BBQ, chicken salad on rolls, tenderloin on garlic butter baguettes, mini reuben sandwiches, sweet and sour meatballs, an antipasto platter, veggies and yogurt green onion dip, lemon tarts, chocolate dipped strawberries, lemon cheesecake, peanut butter/chocolate cheesecake pops, mini cupcakes. Lots of food - probably 50 people. DS, who is in final exams and could not be there, made a 15 minute slideshow of her life from baby to now, not a dry eye in the house! Awesome!

Lacey, I am on board with not giving up avocados. Although my tumor was not estrogen receptor positive -- I wouldn't presume to judge anyone who is, and who has done research on this specific issue
However, my best friend is a nutritionist at a hospital. I ran this by him, and he says you're 'good to go' on avocados. He loves the 'good fats' they provide -- these fats actually fight cholesterol. I'm paraphrasing here, I am not a perfect nutritionist
Are you on an extremely low-fat diet? If so, I could understand not wanting to eat avocados...
I am so pro-avocado -- you have launched me into action:) PS -- now I want macaroni and cheese. Who is responsible? I'll give you a hint: it is someone who loves goats...
Laurie, your posts give me flashbacks! Mine are ages 7 and 8, as I have said. I remember all of that so vividly! Wish I were there to give you a little break..

Hi everyone! Welcome back Special K the party sounds wonderful!
Deb, Bedo and Debbie- thinking of you. Thinking of all of you going through treatment and struggles.
Today was a get things done day with the kids visiting my in laws for the day. I also had my one year check with the breast surgeon and go the all clear for another year. Dh is working late tonight so dinner will be whatever the kids want to have. I will miss having a real dinner and eating not great instead.
Only two more episodes left of the Big C Lacey for me one of the saddest moments was when the son was watching his mom go to make dinner for him and he was watching her struggle to walk. Made me think of my mom and how I hated to see her struggle with daily tasks like walking at the end. Also funny that back in the 80's my mom used to wear scarves all the time- hadn't in years but I kept half and my brother kept half. One of the few things my brother actually requested. They smell of her perfume and he actually has one under glass on an end table. Sometimes- it's the little things.
Bobo- Thanks for the offer of giving me a break! It is busy in this house all the time. But they are affectionate little buggers and the snuggles I get make the hysterics worth it at the end of the day. If only they would stop fighting!!!!

Minus Two, thanks for the welcome. I can see this is a busy thread.
Since my first post here I have not cooked anything, as we are still on the leftovers of that meal. Don't know why I made so much food. Lucky that DH does not mind what I give him, as long as I feed him. Lol.
Special K, the food sounds yummy!

That SOB won't give up, Liver is still a piece of SHIT but stable, kidneys have improved, platlet are dangerouly low, 15,000. Normal is 100,000 and over. He is so jaundice his color is in between a lemon and an orange, more alert at times but still in VERY VERY serious condition. He will have a CT scan tomorrow to see if there is any internal bleeding. If he stays stable they are talking rehab. He is still an asshole to me so I am sorry to say this, and I was told this is normal for me to say this but I don't know if I want him home. Sorry He has been in the hospital since April 20th.

(((Deb))) I can understand your not wanting him home. Can he go to hospice?
0 -
Okay, okay, I broke my own no avocado rule and made and ate guacamole with a friend who stopped in to visit today. I guess I will calm down and be on the low end of moderate with them.
Special, your party spread sounds delectable....and I do love excess, as do you!
Thanks for the info on the statin. I'M only takng 10 mgs, and I bet with my current diet and recent exercise regimen, I would possibly not even need it. But my docs seem to want me to use this as an ins policy to avoid having any "event" in my seventies like my mother had. My current cholesterol is not very high at all, but my arteries do have some plaque that concerns the cardiologist. So far the statin is not seeming to bother me, so I will just take it, get my blood work done in eight weeks and go from there.
Congrats on eliminating yours! Always a thrill to avoid another pill!
Got a good work out with my trainer today....yikes! It is a lot of work! I wonder if I will ever really be in strong shape. What I like about doing this in the hospital gym is that the trainer is not so over zealous that she manages to overwork my fragile lower back. I will love it if I actually start to enjoy the weights work as much as I like the treadmill and bike work. Conditioning.....hmmmm.
Laurie, that scene between Mom and son you describe was one of the teariest in this house too. Of course it would bring up some strong memories for you.....along with the scarf sequence. A really powerful and well done show.
Re: the boys fighting, it's too bad there is not an invention that would allow a parent to become hearing impaired for the duration of the fight ...since most sibling squabbles get worked out anyway. I'm sure that some parents are good at this without the invention. Can't say I was.....always hated the noise element.
Deb, I hope you are able to take care of yourself during this difficult period.
Bedo and Debbie....hugs to both of you.0 -
Deb, our posts crossed....my question too, is hospice an option? It is totally understandable that you feel this way in this dire situation, with the added unpleasant experience of being treated badly. So sorry.....do vent here so you can do what is needed there. (((((((Deb))))))
0 -
Hospice is not an option, it has to be rehab, he can not come home until he can completly take care of himself. He is incontinent, has a tube in his rectum and bladder, he could not get out of bed on his own. I have to work and I don't want DD to have to care for him either.

Fish tacos with chipotle slaw topping and more corn off the cob with peppers, onion and garlic. I made a gooey butter cake this weekend when the kids were here and still have half of it left. Wish it was gone!
(((Deb)))0 -
Another composed salad for dinner. I pickled some red onions, boiled a yukon and tossed with a mustard/vinegar mixture, blue cheese, carrots, tomatoes and of course, lettuce. There are enough onions and potatoes left to make another salad tomorrow.
Deb, no advice [though the rehab place in Medford on High Street is absolutely horrid] just all my best thoughts. Tough situation for both you and your daughter.

Deb - agree, you can't have him home. Who has his health care POA and what about his directive to physicians?
Michelle - my MO said I could eat salad, but only at home after tripple washing. I asked him if I needed to use Ivory Snow (ha). Also said try to avoid raw veggies & fruits - my favorites. A friend who lived in Saudi Arabia at one time said they filled the sink w/water & some Clorox and dipped all veggies & fruits in that mix after extensive washing, then a last rinse.
My last day before chemo #2. Met a friend at PF Changs for LARGE lunch. Fried spring rolls. Pan sauteed pork dumplings. Shrimp Lo Mein. So only having 3 (three) York pattie peppermints for dinner.

Dinner tonight-salad with mango and avocado. I read avocadoes are an anti-estrogen. They protect us and regulate our estrogen. Avocadoes=green light for me!

Hi Liefie.
Hugs to Deb and Minus.
Sharon's MO was also a bit worried about her eating raw vegetables during chemo, but after seeing her white count ramain normal, changed it to just washing tne stuff like normal and to avoid the salad bars...which she said was good advice for even those not on chemo.... :-)
I watched part of one episode of The Big C and didn't want to watch anymore.
And for the best news. DD has been doing Ok in algebra....low 70% range...I tutored her as much as she would stand for the last test and she made 80%. This time I worked with her a few hours and she made 93% on the test. She wants me to help her for the final exam.0 -
Minus 2... While reading, was thinking, what a big lunch, especially before chemo. Your dinner made me laugh! Someone told me to eat light - boiled red potatoes and broccoli before chemo, that became my good luck charm. Wish I would have thought about the Yorks!
Eric... Good for you! Connections with DD so important! Kudos for being such a great dad! She'll remember this in later years.
Dinner last night was pot roast (Martha Stewart recipe from Pinterest); mashed potatoes for DH and kasha with bow ties for me. Tonight, I had a new bc support group meeting, used one of those frozen pasta/chicken meals (mostly pasta, little chicken or veggies like shown on the package) DH had gotten ages ago (I don't care for those things), I had leftovers, he liked the meal! Go figure.0 -
Eric- Congrats on your DD doing so well! It must make you and her feel wonderful!
While DS 1 was at preschool today DS2 and I planted seeds to start inside for a garden. I think it is way too late to do so but relented anyway. We will have to buy some plants and mix them up. This afternoon we spent it at the neighbors with the kids running wild and playing. Tonight's dinner is Bulogi- the pork madaliens in sauce with pineapple and white rice. We are expecting rain the next few days so I think I will take the biys shopping tomorrow. It will be chaos but they need summer jammies and sandles. I need some things too- but doubt I will get to look

Finally got the flowers and herbs off the front porch today and into the ground. Next week, the vegetables. Got overheated today, so not much appetite. A rather large chef type salad will be dinner I think.
