    Welcome back Laurie!!! Glad to hear that you had a great vacation!! 

    Oh how I remember those nights when Gramma took the kids....  Early on it meant a great night out and getting to sleep in!!!  As time went by it meant that we got to turn in early AND sleep late! 

    Now, with our kids being 17 and 22 they typically outlast us on any given night!!

    Mac and Cheese is a house favorite here!!!  I love it and, more importantly, everyone will eat it!!  I have not seen "Bitchin' Kitchen"  but it is a show on the Cooking Channel which is a spin-off from Food Network.  I will have to see what channel it is on here. 

    Funny side-story.... DH and I like to cook together when we get a chance on the weekends!  Most times we do OK but, ocassionally we disagree on something we are making... Quite some time ago we jokingly said that, if we had a show it would be called the  bitchin' kitchen.... Imagine how surprised I was to hear that it is the name of an ACTUAL show!!

    Have to check that one out!  Lol

    Laurie- What a great time you had! And all that fabulous food that sounds yummy! I know what you mean about you need a vacation from your vacation, especailly after camping, sunning and swimming it does tend to wear you out- I hope you feel better!

    Ducky- I love tomatoes, my DH dosn't but that dosnt stop me from cooking then at least 3 times a week- I slice my tomatoes about 1/2 inch thick top with garlic, basil, oregono, parmesan cheese and drizzle with a little evoo in a 400% oven for about 15 minutes then i top with some shredded mozzerella and cook until that melts- So good!

    Michelle- Hope your counts are good so you can finish your last chemo on wednesday I will be keeping my fingers crossed and saying a prayer for you.

    your mac and cheese recipe looked easy, i love that good old home cooked food. You will get a kick out of her on bitchen kitchen, she a little out there but fun to watch and she makes great recipes.

    I made a good chx dish tonight, What i did was put 1/2 cup of evoo in a sauce pan warm it up then add about 4 tablespoons of minced garlic (lots) let it simmer for 1 minute ( do not let it brown) take off heat, add 2 tablespoons of lemon zest, 2 tablespoons of lemon juice, 1/3 cup of white wine, 1 teasp of salt- 1 teasp of dried oregono, 1 1/2 teas of fresh thyme, put in a baking dish and put chicken breast on top, add s&p a little evoo and bake for 40 minutes in a 400% oven- if using skinless, boneless chx cook for less time, the sauce it great too you can put over noodles or rice ( i usually double the recipe) BTW this is a good sauce for steamer clams and scampi.

    Debbie - the chx sounds yummy, I'll have to try that.  My DH loves tomatoes more than I do.  He'll eat them in the dead of winter when they don't even look like tomatoes.  I like fresh, ripe ones so this time of year they are so much better.  I hate it when I get an anemic looking tomato wedge in a salad.  I do like the grape tomatoes, though.  I think they are much sweeter than most other options in the off-season.

    WOW  love all the great dinner ideas,  I do not make a good home made mac n cheese to save my life!  kids always liked it but DH did not...always a critic Ha. I will try the fannie farmer recipe and see how that goes...although I usually only make it in the winter. the tomatoes and corn are now coming in fast...we did BLT's and corn on the cob last eveing...so easy when it is sooo hot outside.

    Laurie your vacation sounds awesome..camping with the kids were some of our best vacations and memories...they sure do grow up fast!

    I really need to clean my grill so I can put all the veggies on and they wont stick....worst, dirtiest job ever.

    Glad you had a good time Laurie!  That sauce does sound good.  I am going to have to try that.  I also finally bought the wonton wrappers (kept forgetting - chemo brain I guess), can't wait to try the lasagna cupcakes finally!

    I don't know if I should post this here or not, but I am so sad about it.  My bil (my twin sister's husband) died on Saturday after fighting melanoma since Jan. 2010.  He was such an inspiration to me when I was DX.  He never complained about any SE's or anything.  He knew his chances were not good and he wanted to try anything that might be effective.  He really wanted to be around for my sister and their two kids (17 and 15).  I am so sad.  He fought so hard and so bravely and I just can't believe he's gone.  I can't believe my niece and nephew won't have their father there for their h.s. graduations and weddings and other things.  Just so incredibly sad.

    Kay - I am so sorry to hear of the loss of your dear BIL.  How tragic for that family!  I understand that loss - my brother died many years ago of a fatal heart attack when my niece and nephew were teenagers.  It's so unthinkable for the families when a parent dies at such a young age.

    Carberry - I have a couple of grill toppers that I use for cooking things like veggies, shrimp or really messy things.  They are not very expensive and they go in the dishwasher.  Here's a link to

    I have both of these - probably got them at WalMart or Lowe's.  They are both great for corraling smaller foods so they don't fall through the grill onto the burner.

    Kay I am so sorry about you BIL passing.  I can't imagine how hard it is for your family.  It is so sad when we lose someone we love.  I lost my mom when I was in my late 20's to BC, I am thankful I was at least a little older when she passed.  Those poor kids :(

    My friend e mailed me the recipe and it seems to simple to have been as good as it was.  She used no measurements etc.

    Cut zucchini into spears (like pickles) lay on the bottom of pan.  Fry hamburger in a skillet with  garlic salt and put on top of the zucchini.  Pour a jar of tomato sauce over it, cover and bake.  At the end top with cheddar cheese and melt.  Serve over white rice.

    Hi all!

    Popping in again to say "hello" to everyone!

    Ducky, I wanted to chime in about Jersey corn and tomatoes...I am a Jersey Girl (a REAL Jersey Girl...not anything resembling that awful Snookie character and her idiot friends LOL) and white corn and tomatoes are the absolute best here.  You can do so much with the tomatoes, but I find  simple is best, so you really taste how great the tomato is.  Sliced with a little EVOO, sea salt, and oregano is yummy, or caprese salad (fresh moz, fresh basil, EVOO, salt).  Many times I have made a meal out of just corn and tomatoes.

    Last night I went out with a bunch of friends to a tapas-type restaurant and we shared several brushettas, and apps.  We had BLT bruschetta (applewood bacon, arugla, tomatoes and asiago cheese), a Mexicana bruschetta (black beans, cheddar and pepper jack cheeese, tomatoes, corn cilantro, jalapenos) and a wild mushroom bruschetta (mushrooms and brie)- all delicious.  That is my favorite way to eat...just tasting a variety of things.

    Sherrill..............I remember as a kid (many years ago)...................slicing jersey tomatoes, and putting them on saltines with a little salt and mayo.......................also lunch for us were tomato sandwiches...................and I also remember eating tomatoes one after the other with just salt..............better then eating an apple...........................I still eat them like that today, only back when I was younger, with young kids, I remember tomatoes being 5lb for $1.00.............today they are $2.00 a lb. if your lucky enough to get them that cheap..................oh those jersey tomatoes.................

    Sherrill-  OHH i know, i dont like the girls on the show "Jersey girl" those girls are just awful, i would of never linked you to any thing like them LOL!  Those apps sound so good, im going to def try the mexican one, never had it that way, dont know why i never thought of it, but YUMMM!

    Ducky- I remember eating tomatoe sandwich when i was a kid too, i used to think we were eating them because we were poor LOL! Now i know its because they are so gooood!

    Tomorrow is DH birthday, we are going to a surprise party for him tonight, then tomorrow all his golf buddies are having a party for him after they golf so will be going out tomorrow too, im not as young as i used to be and cant party like i used too, so will have to drink iced tea tonight (not long island) ha! The place we are going tonight is the place that has the good mac and lobster, cant wait to eat that, i wish i was never introduced to it, it is sinful but cant help myself LOL!

    When I was a kid, my Dad and brothers used to eat tomatoes like an apple with a little salt and I thought it was disgusting!  I really didn't like tomatoes until i was maybe in college.  I also remember my Mom slicing them up and spreading mayo on them as a summer side dish

    I was so sorry to hear about your brother-in-law. Your post brought tears to my eyes when you spoke of the children he left behind. My cousin was diagnosed with Non-Hodgkins Lymphoma when his son was a little over a year old and he always said, he just wanted to live long enough for his son to remember him! He passed 2 months after his son's 10th birthday. No matter what the age, it is never easy to lose a parent! I will keep you all in my prayers!

    Thanks everyone for the well wishes.  I feel great and it would be almost unthinkable that I don't get that last AC tomorrow, and then be done with that nasty stuff.  I was telling hubby that although I've had it relatively easy compared to some, this last week I have felt great and been able to eat almost anything (except for the spicy hot stuff).

    The grandkids were here this afternoon, then we went out for Mexican food.  It was fun - the restaurant had a Mariachi band and balloons for the kiddies.  This place was miles better than the last Mexican place we tried.  I was actually able to eat the tacos (I was hoping they would be mild and I was right).  Then we went to ChuckE.Cheese and let the kids loose - there was one grownup per kid so it worked out great.  We were originally going to have tacos Tuesday at home, then there was a change of plans.  So I made spaghetti sauce from the ground beef that was ready to be cooked.  Three containers in the freezer, one to use in the next couple of days, DH is all set to take care of me!

    And we got our inflatable boat today.  DD and I got it inflated and in the water.  It has a wooden platform and a small electric motor - that's a project for DH to tackle in the next few days.   I'm excited - we'll be able to run around the lake.  It's 11 feet long, actually bigger than I imagined, so I'm looking forward to it.  Need to get some life jackets.

    Seaside - I'm glad you asked Laurie to clarify the tomato sauce; I wondered about that, too.

    Debbie - have fun tonight and enjoy that lobster mac & cheese!

    We have to be at the infusion center at 8:30 tomorrow morning, a little early.  But then I should be finished by 1:30 so that will be nice. I'll post an update as soon as I can, maybe before we leave for home.

    Quite a bit off topic but.....



    I was out running some errands tonight and a song that I had never heard before came on the radio... It was a new song by Martina McBride called "I'm Gonna Love You Through It"...



    I am not someone who cries easily but, wow! This song had me just sobbing to the point of having to pull over... I don't think the song is super sad but, I think it just hit a tad too close to home with my own experience....



    Was wondering if any of you have heard it and what you thought....

    As for the recipe- she says spaghetti sauce.  Again she never gave measurements etc.  And because she didn't cook the burger with the sauce, I didn't get a spaghetti sauce taste from it.  It was lighter somehow?  I am going to attempt it tomorrow night and I can let you ladies know on measurements (roughly since I am not a measurer either!)

    Also- tomato sandwiches, does it get better than that?  I still eat them every summer when the tomatoes start coming from the garden.  Also, with dinner I cut them up along with cucumbers and add salt and pepper and have them as a side dish.  When I met my husband he thought I was nuts, a sandwich without meat?  Plain veggies with salt and pepper?  Now he does it too.  The other day he stopped at a farm stand when he saw a sign for fresh tomatoes and brought one home for me.  I was so excited!! (ours are about 2 weeks away from picking)  As I ate I I said "it's kind of sad how excited I get about a tomato huh?" he just smiled.  That's how you know someone loves you- they get you a tomato :D

    Love RVing.. Price Chopper is my favorite commercial grocer.  I shop everywhere.. ethnic, Sam's the markets but do have to go to the grocer's occasionally.  I live near a HYv store and will gladly drive the extra mile to Price Chopper.. (this is a midwest thing).

    it's gazpacho season.. I read a very interesting article in Gourmet mag (now discontinued) about gazpacho's and the bread base of traditional recipes... so I have been having fun with that.  I ordered some VERY cheap saffron from ebay.  I bought a huge paella pan - very antique and very MidEastern.. so I am looking forward to making a huge paella.  yum.. actually one of the best things I've ever eaten (twice so far.. once in France and once in a restaurant here in KC).

    Hmmmm  did Martina McBride get diagnosed with cancer? or where did she get the inspiration for the song?

    Tonight we will be going to a Japanese steak house. Our dear friend has had a recurrence of his cancer that started in his neck and tonsils and is now in his lung and lymph nodes.  He will start treatment on Thurs so we all decided to go to dinner for his "last meal" before all the side affects of tx take hold. There will be a group of a bout 12-16 of us. These friends have supported me through all my treatments and now that i am doing well we are shirfting gears and concentrating on him.  Feels good that now it can be my turn to give.

    Good luck today Michelle and thanks for the links, have thought about those before, and I might just have something like that in our camper.

    Hi everyone!  I just got the news that chemo is a go!  I'm getting my hydration right now.

    Carberry - enjoy your Japanese steakhouse dinner tonight, and best wishes to your friend.  I love going to those teppanyaki-style places, it's always fun.  I don't know that Martina McBride has been diagnosed with BC, it could be family or friend.  She was involved in last September's "Stand Up to Cancer"  so maybe she's been inspired from stories she's heard.

    Oh Debbie, naughty, naughty!!!  LOL!

    Apple - paella is a great idea!  I need to get a bit of saffron.  I have bought things from eBay but I must admit that I would never have thought about looking for spices.

    I'll send you a bit of mine.. if it's any good.  tho.. it might not even get here.. it's been about a week since I ordered it from singapore.  I would buy mine at a reputable arabic of sorts grocers.. it's really pretty cheap there.. you can plant your own..  just buy a bit.. it goes a long way.. a tablespoonful is really all you need to explore saffron thoroughly.

    I knew saffron came from the stamen of a crocus but, it never occurred to me that you could grow your own!! I guess I learned my new thing for the day....



    I would love to try it!
