The chicken dish did not get cooked again last night. We had pancakes and crispy bacon instead. The only time I eat pancakes is during the summer in MN where the diners will substitute a "cake" for the toast. At our preferred diner, West Forty, dh always gets the "cake" with his breakfast and I share it.
DH cooked the bacon last night and I made the pancakes, using a mix with a hundred year shelf life. They were very good with warm syrup. The syrup has the extended shelf life, too. LOL.

LOL Carole, we had blueberry pancakes with bacon a couple of nights ago. DH is the cook using only Pearl (nee Aunt Jemima)). Buttermilk mix. I rarely eat pancakes because of the carb overload unless he decides to make them for Dinner usually when we have blueberries on hand. They are delicious.
Last night was red beans and rice with a piece of garlic toast. Tonight is anybody’s guess.

We had the italian sausage and pasta again last night. Still have more of it so we may eat it for lunches. I thawed what I think is a top round roast. I marinated it overnight and will toss it in the crockpot. I'm reading oven works better but I don't like keeping an eye on my cooking, LOL. Wish me luck, LOL.

I bought about 10 pounds of frozen blueberries. I'm wondering if it's time to "practice" making a blueberry pie in addition to "practicing" making apple pies. :-)
When mom was alive, I'd make up about 3 dozen saucer sized blueberry-sourdough-buttermilk-whole wheat pancakes and freeze them. Over the next week she could "zap" them in the microwave oven for a quick breakfast.
Our oven will hold temperatures as low as 200F degrees and that low temperature, combined with a dutch oven, does a good job for the slow cooking needs. However, when we are going to be gone for most of the day, the crockpot is our preference….like you said, Wally, there is little need to keep an eye on the crockpot cooking. :-)
There won't be much happening outside today as the wind is strong enough to get the dust and dirt airborne.

I like pancakes, especially the blueberry version, but they have too many carbs for me. I generally have scrambled eggs and veggies, blueberries or strawberries, and a slice of whole wheat toast for breakfast. If I could run like Eric I’d eat pancakes more often.
Eric, Blueberry pie practice would be a good complement to apple pie practice.
Wally, I hope your roast turned out well. I have a smaller crockpot but hardly ever use it since the dutch oven has always been there.
Dinner tonight was Angus strip steak, sautéed summer squash and tater tots for DH.

The roast turned out well. Not fabulous but better than I expected. A tiny bit dry (even though I marinated it 24 hours) but not tough. Whew. A little left for lunch tomorrow and I'll have the pasta stuff again for dinner.
DH has his dentist appointment follow-up tomorrow and I plan to redo my labs on Tuesday. Logically, I know freaking out accomplishes nothing, yet here I sit, terrified my MGUS may progress. Thursday, scans for my eyes (no glaucoma but high IOL). Whew…that's a lot. Oh, and hospice nurse on Tuesday. My labs can take up to 2 weeks for the MGUS stuff (they have to send it to Seattle) so I'll be a bundle o nerves. HATE that feeling.

We had the chicken/orzo/mushroom/marsala dish last night. I did prep during my morning kitchen cleanup. The dish was good. I added some fresh spinach, doubled the mushrooms. No leftovers.
Tonight will be catfish fillets.

Wally, how did the dentist followup go? You have a lot going on at one time…sending good thoughts your way….
I sometimes end up with "dry" roasts and I've never figured out what causes it or what to do to prevent it from happening.
I started an apple pie. I figured out a few more tricks for the dough that help a lot. I'm guessing I will have this figured out after another few hundred pies. :-)
I'm watching the news of Super Typhoon Sinlaku that is at category 5 (same scale as hurricanes) and heading toward the US Northern Mariana Islands. The federal disaster medical team I'm on is on-call this month and I'm hoping we are not needed. Like fire fighters, while it's good to be able to do the work, it's best to not be needed.

Eric, that sounds dangerous. Hope you can stay home. DH's dentist follow-up was good but not great. More gum/bone loss on the "healthy" side and small infection on the surgical side, even with the chlorhexidine and penicillin. As long as he can chew till he's dead, I'll be happy…and no pain. Love your pie practice.

Carole, I've never cooked the pasta with chicken and marsala but I imagine it would really absorb the flavor.
Eric, I'm glad you are enjoying perfecting your apple pie. I wonder how apple blueberry pie would taste? Hopefully you won't be called for a typhoon emergency. Those small islands can sustain devastating damage.
Wally, I hope your test results are good; the wait is always hard.

I was out of Louisiana fish fry so I used corn meal for breading the catfish fillets last night. First, I spread on mayo. They were delicious, pan fried to a crispy brown in grapeseed oil. The side was yellow squash.
I have fresh green beans to cook for tonight, a good way to use the leftover baked ham cubes in the freezer.

Carole, I use mayo for breading chicken but never thought of using it for fish. I'll have to try that.

We finally hit 70 today and had evening thunderstorms. They have forecast a couple of more more warm days before the cooler weather returns. The snow left in the yard is finally gone.
Dinner tonight was pan fried tilapia, sautéed zucchini and tomatoes with Italian spices,, and sautéed baby potatoes.

The fresh green beans were excellent last night. I cooked them in chicken broth from the freezer. Added the baked ham cubes and peeled red potato chunks. Onion powder, garlic powder, s & p. Leftovers for another meal. We also had Italian beef from the freezer. A very enjoyable meal.
I read a recipe in my email for a chicken and box stuffing meal. But I have eggplants in the refrigerator. And the leftover beans. Decisions to be made, plus it's Wednesday and I will be having lunch at the English Tea Room after exercise class with my three exercise friends. I have not been there before.

We finished the roast last night. Tonight will be frozen pizza.
All my standard labs came in in the normal range; shocked. Even the fasting glucose and a1c…now I wait for all the Seattle stuff….hate this.
We head to Sequim tomorrow. DH needs his hearing aids looked at at costco and I'll be getting my eye scan…and shopping!

The English Tea Room is very popular. It was good that we had a reservation. I had cream of asparagus soup and a variety of party sandwiches, all good. Also, a tea recommended by our server. The tea menu was huge.
DH had lunch out, too, a giant hot dog at Sam's Club cafe. LOL. We had a veggie dinner. Leftover green beans and eggplant slices, breaded and cooked to crispy brown in a skillet in grapeseed oil.
Tonight he has a men's dinner at a good restaurant in honor of a golfer who is moving away. I plan to have a frozen veggie pizza with cauliflower crust for my dinner. The brand is Milton's.

The (freezer) cupboard was bare so I went meat shopping yesterday. Ouch. Of course none of what I wanted was on sale.
Inspired by Carole, and facilitated by the shopping excursion, tonight is Italian beef on sub rolls and a baked potato. I’m going try baking the potatoes using the oven air fry function. We’ll see how that goes. I wish I had thought to get a sweet potato instead.

Nance, Meat does not seem to be on sale very often these days unless there is a holiday coming up. I guess we have hotdogs and hamburgers to look forward to on Memorial Day.
I had to drive across the state for DH’s ophthalmology appointment. The route goes past two local ski hills. Amazingly people were skiing when the temperature outside was 73. We had so much snow this winter that the base is surviving the few days of warmer weather we are having.

My eye appointment was a bust. This OD is a jerk…seems the office expects you to allow them to do unnecessary tests (refraction every year is insane, and at the cost of $260) no doubt to pad the bill. Medicare covers glaucoma screening but not any other visual exams. They basically sent me home because I refused all the (total about $400) tests.
On a happy note 3 of the seattle labs came in, normal range.
leftover pizza. I'm making lamb chops again for tomorrow. And I hear you, Nance…price went up…
And gas hit 5.09/gallon at costco (cheapest place out here). Sigh.

Gasoline at the nearby convenience - hardware - feed - tack - hay store is $4.49 a gallon. This is a bit cheaper than in town and quite a bit cheaper than Phoenix prices.

Wally, Good to hear that more stable tests are dribbling in. My OD once repeated tests too early; Medicare wouldn't pay and said I couldn't be charged since it was their error. A glaucoma specialist might do just the screening but finding one would involve travel to a big city.
Gas prices like meat are way up and causing the cost of everything to rise.

Last night's dinner was supposed to be Italian sausage in Raos over linguine. But no Raos! How did this happen? I made a sauce with canned whole tomatoes. Not a big emergency.

Tried a frozen Rao's pepperoni pizza last night. It was pretty good. I meant to add black olives and mushrooms but got involved with a phone call & forgot.
Glad to hear labs are good. Unfortunately my ophthalmologist yesterday indicated a continuing trend for high pressure in both eyes. Not glaucoma yet but getting close so she wants me to start drops. She indicated I could go into any optical shop and the optometrist would test the pressure.

Glaucoma, much like MGUS (sadly) is a weird disease. Some people never develop glaucoma, even with high pressures…I seem to be one of them at the moment; other people can develop glaucoma with normal pressures…crapshoot, LOL.
I made shrimp, green bean, mushroom stir fry last night. I wanted to try my fancy rice I ordered that is grown in Japan. This company mills to spec, so you can have all brown rice, 70%, blah, blah. I ordered white. OMG. I never knew I could fall in love with rice. LIke little gems in my mouth.
Tonight will be lamb chops again; DH's request.

Glaucoma is a weird disease. My right eye has sight issues for which my OD referred me to the local cataract surgeon who referred me to a retina specialist in Boston who referred me to his glaucoma specialist colleague. It took one minute for the fourth doc to diagnose me with narrow angle glaucoma. He told me the others never found it because I'm the wrong demographic and it involves looking through a goniolens which other eye doctors hate to use. There is no preventative treatment and many people never reach the closed stage. However, I have been warned to get to their ER within 24 hours for laser surgery if I ever have really bad pain in my eye. If I didn't know this I would probably wait for a while hoping it would go away and lose my sight.
Rao's is always my first choice for Italian products but there are some other good brands out there.
Wally, I really like both shrimp or lamb so I would be happy with either of your meals. That fancy Japanese rice sounds amazing. What is it called?
Dinner tonight was stuffed peppers using ground chicken and chunky salsa.

Dinner was two large chicken legs, separated into thighs and drumsticks, marinated in a buttermilk solution and coated with seasoned flour and fried in the air fryer. We ate the drumsticks. My side was a large romaine salad. DH had a smaller salad and leftover mashed potatoes and brown gravy.
The fried chicken in the air fryer is a work in progress. Well-cooked and moist meat but not a real looker. Definitely less messy without the oil spatter.
We're attending a music program this afternoon. The performers are a choral group. I know two women in the group, one a golfing friend and one a member of our exercise/lunch foursome. After the program, dh and I will have dinner at a casual restaurant.
Maggie, scary thought that you might not have gotten your diagnosis.

Wally, Thanks for the Japanese rice link . After your description I'm tempted to splurge. We were able to buy fresh rice when we lived in AR where it is grown. It was better than the usual store stuff but it was usually basmati, jasmine or brown along with golden, red and purple.
