    The choral concert was delightful, but the dinner out didn't happen. The local restaurant wasn't open on Sunday. I made an easy dinner instead. Warmed the leftover thighs in the air fryer and heated Bob's mac and cheese.

    We may do takeout from the restaurant tonight.

    Maggie, your winter weather is hanging on. You must be ready for spring.

    Maggie, I've ordered purple, black (love that one), short, Parish (enjoyed!) and everything in between. The short grain Japanese won my heart.

    Leftover lamb chops tonight.

    Since rice is so integral to the Japanese diet it is not surprising that they would have gourmet varieties. It’s similar to how the Italians have so many types of pasta.

    @illimae, I hope you are enjoying your view while cooking delicious and photogenic meals.

    @maggie15 I’ll be enjoining my deck soon ( it’s currently cluttered with building materials for the cabin) but the weather is getting nice and my deck is calling me. I would like to share photos of meals but I was switched to omeprezole in December from GERD, which has caused the unexpected side effect of not being hungry at all. I eat something by 2pm because I think I need to, I haven’t felt hunger in months. Dinners have been mostly minimal and out of necessity. I’m trying to find some balance with that, as you all know, I thoroughly enjoy a delicious meal.

    I was out running today and at the 3 mile mark, a dog started "escorting" me. About ten minutes after he began my escort, he stopped and started barking while looking toward the ground in front of him. He was barking at a (guessing) 1-1/2 foot long western diamondback rattlesnake.

    I'll be taking the dog a treat. :-)

    Thinking of making cube steaks, dethawing some frozen roasted potatoes I made from the last bag of potatoes.

    Shivers/shudders on the snake.

    I take omeprazole and it does not have that effect on me.

    DInner last night was a stir fry with strips of pork steak, broccoli, yellow bell pepper, garlic, ginger, soba noodles and a homemade sauce. It was very good. Veggies not overcooked. This was the last package of soba noodles.

    I'm going to use up the last of my rice leftovers; I'll try a tomato-egg "stir-fry" over rice.

    'mae…I missed your post. I'm sure the weather there is nearly perfect for enjoying the deck. :-) Maybe the nice weather and being able to eat outside will improve your appetite.

    The weather is getting nice here as well.

    @carolehalston My local MO had to google my Omeprezole SE’s and found a few cases of anorexia caused by it, it’s pretty rare. I’m a big girl, so not dangerous at this point but it is challenging. I’m thinking of an easy dinner, corn on the cob and a hotdog probably.

    Illimae, Good to hear from you. I had an upper GI bleed with no symptoms to predict it so I'm on Omeprazole for life. Lack of appetite is one of the possible SEs but not mine. I have problems like anemia and low vitamin levels from malabsorption so I have to take various supplements and get blood levels checked. It's too bad you have that particular SE given what a creative cook you are. Enjoy your simple dinners and that view.

    Eric, It's a good thing that dog barked at the rattler.. In TN a neighbor's dog warned me of a copperhead completely camouflaged by dead leaves. The farmer who still ploughed with a horse told me dogs can smell snakes and the routes they follow.

    m0mmy, Nice to have the already cooked roasted potatoes ready in the freezer.

    Carole, That stir fry sounds like a good combination.

    Wally, I've had two of those Italian rice varieties. I'll have to try the others.

    We found another snake today. This one, unfortunately, was a dead "good snake"—a nonvenomous predator of rattlesnakes and also mice.

    It's been warm enough for the past few days to bring the snakes out…and today it turned "too cold".

    We visited MIL and ate a very late lunch, so dinner was a vending machine size bag of chips.

    I was under the impression that potatoes didn't freeze well. Apparently, a wrong impression.

    Last night's dinner was a large meatloaf, following Nastasha's recipe for the meatloaf and the ketchup sauce. Side was mashed potato salad. Leftovers for lunches for dh. We both enjoyed the meal.

    Last night was gyros, slices from Trader Joe’s , pita from Costco and tzatziki from me. I would have made pilaf but there are only so many times I can get DH to eat a rice dish (I could eat rice every day) so I made fresh green beans in the slow cooker with bacon, onions and tiny potatoes. They were delicious.

    I take pantoprazole which seems to have no effect on my appetite either. Although I had lost 10 pounds when I went to the doctor Monday. Like others, I find I can eat less these days, which I think is age related.

    Tonight is bbqd chicken with baked sweet potato for me and a russet for DH.

    As a kid, I remember frozen french fries (potatoes) being very good. :-)

    Carole, Meatloaf seems to be one of your DH’s favorite meals.

    Nance, Your green bean and potato side sounds delicious. Bacon makes everything taste better,

    Dinner tonight was cubed steak and parsnips cooked in onion gravy with mashed potatoes.

    I've shredded potatoes and frozen them; I didn't rinse and they turned brown but were still yummy.

    I made frozen burgers (grass fed patties from costco).

    Meatloaf is definitely one of dh's favorite foods. For dinner last night we had slices of it heated in the microwave with corn cut off the cob cooked in butter and leftover potato salad. I played 18 holes of golf yesterday and was too tired to be interested in cooking. The corn was very sweet.

    Nance, I would be soooo happy to lose 10 lbs without being ill.

    I just cut a few potatoes in chunks, toss them in olive oil, italian seasoning, dill weed and Mrs. Dash. Line a cookie sheet with tin foil and bake at 375 until they are slightly brown. I let them cool down before bagging amd freezing.

    m0mmy, Thanks for the recipe. DH will now eat some pasta and rice but being from Ireland he believes every meal should include potatoes. I usually make fried, boiled or mashed (he isn’t a fan of Bob Evan’s) so this will be a good addition to the rotation.

    Dinner tonight was lamb meatballs in ezme sauce on rice.

    I googled freezing potatoes and the advice was not to thaw. I once froze a meat dish with potatoes among the veggies and the potatoes were not edible. I discarded the cubes of potato and the rest of the meal was ok.

    We ate out at a Mexican restaurant with another couple last night. I had nachos. I enjoyed my meal but they weren't the best nachos I've eaten. The company was good. DH said he wouldn't order the same meal either if he went to the restaurant again.

    Maggie, I noticed that most of your meals include potatoes. How do you make your mashed potatoes?

    All this lovely potato talk…I microwaved potatoes and made "stuffed baked" potato. I used a can of chili and melted cheese. Not horrible.

    Carole, For everyday I cut a russet potato into four pieces, boil it until it is soft, drain, add a bit of butter, splash of milk, salt pepper and mash with a potato masher. If it's a special occasion or I'm making a topping for shepherd's/cottage pie I use more potatoes and more of the other ingredients and whip it with a hand mixer. I don't love potatoes so DH usually gets them all.

    Wally, I’ve done the same for speed but DH thinks the taste of oven baked is worth the time and heat produced.

    Dinner tonight was chicken in vermouth sauce, sautéed summer squash and mashed potatoes.

    Maggie, i just pop them in the microwave and heat until hot. Glad to help add something new to a meal for everyone. I find it can get boring making the same old thing.

    Last night I made a stir-fry with chicken, broccoli and cauliflower. Haven't made that in a long while and it felt good to change up.

    My sister Michelle makes really good mashed potatoes. She uses a hand mixer, I believe, and one of her ingredients is cream cheese. On baked potatoes, I tend to agree with your dh, Maggie. Oven baked potatoes are best. But microwave cooked are perfectly acceptable.

    We had one of our MN meals last night since I was at a loss for what to cook for dinner. The Nathan's hot dogs were on sale. I already had a can of Bush's baked beans and a cabbage. So hot dogs cooked in the baked beans and coleslaw with hand slivered cabbage.

    Tonight we'll have corned beef with cabbage and potatoes and onions. The corned beef was a large item in the freezer that has to be cooked.

    Carole, Cream cheese sounds like a good addition to mashed potatoes. I have corned beef in the fridge which II will have to cook sometime.

    m0mmy, I occasionally remember to make a meal I haven’t had in a while. I tend to see what’s in the fridge and then decide what to cook.

    Dinner tonight was strip steak, lima beans and sautéed potatoes.

    Dinner was a large salad with lettuce, tomatoes, and cucumbers and a bowl of boiled potatoes with butter.

    Prep items for later this week - coleslaw, potato salad, strawberries waiting for heavy cream, hard boiled eggs to eat as is or for egg salad.
