Reader, Good to hear from you. For Sour Cream and Onion Chicken I use 1/2 cup sherry, 1/2 tsp chicken bullion, no broth and cook the dish for about half an hour at the end to get rid of the sulfites (migraine trigger.) Here is the recipe as I found it online.
2 TBSP olive oil divided/ 1 lb chicken cutlets/ 1/2 tsp salt/1/2 tsp pepper/ 1.5 cups halved and thinly sliced onion/ 1/4 cup sherry/ 1/2 cup sour cream/ 1/4 cup chicken broth/ basil fresh or dried
- Heat 1 TBSP EVOO in large skillet over medium heat. Sprinkle chicken with 1/4 tsp each salt and pepper. Cook turning once until browned (165*F) about 6 minutes. Transfer to plate and cover to keep warm.
- Add remaining 1 TBSP EVOO, onions, rest of salt and pepper to pan. Cook stirring until starts to brown about 4 min. Add sherry and stir to scrape up brown bits. Whisk sour cream and broth together, add to pan and stir, add chicken back to pan. Sprinkle with basil. Cook for about 5 min.

July 20…we had a tornado. It was about 1-1/2 mile from here and headed away from us so we had no damage. The tornado headed toward town and the town sustained some flooding, power outages and many downed trees. All of this is probably why the power was out the last time. The main (only) road into town was blocked for several hours due to flooding, downed trees and downed power lines. Fortunately we were at home and had no plans to go into town.
Today it rained ****HARD**** enough that visibility was under 100 yards for 30-40 minutes. The road out front is a mud bog.
On the bright side, I can turn off the garden's automatic watering system off for a few days.
It looks like another storm cell is inbound.

Wally - brave of you to venture out. The first time is the hardest. Hope your DEXA is OK. I'm still on Prolia every 6 months, but it's been 10 years so I have to find an alternative this fall.

At Walmart's yesterday I decided against leftover pasta dish for dinner and bought items for steak fajitas. I enjoyed the food. Lately I have wondered if I'm losing my taste.
Today the weather will start heating up again. The weekend looks like an advertisement for a/c.

Last night was "potato chips" and pizza. Sharon had gone to an open mic event and I stayed home in there was more severe weather. She ate the slice of pizza on the way home and I ate the potato chips.
Wally, it's good to hear that you are getting out. It took me awhile to do more than walk the 100 yards to the small grocery store get what I needed and head back home.

My DEXA results in this morning; lumbar density increased (shock) but femur and hip, decreased. Still in Osteopenia, so no treatment. I think if I had to do treatment, it would be Evista (a SERM) after seeing what Prolia did to my sweet husband's jaw.
No idea what I will have. I'm exhausted just thinking about eating.

Eric, Whatever is in the house is a good dinner when the weather is stormy.
Wally, Osteopenia is fine by my standards. When I dip into the osteoporosis range I stick with old fashioned oral alendronate since it clears your system relatively quickly when stopped. My siblings have tried everything else out there and had all kinds of problems.

Dinner tonight was salmon topped with Chinese 5 spice, potato salad and some not bad corn on the cob from NJ.

We drove to Bullwinkle on 34 in Nevis for dinner last night. About 25 miles. I had made reservations, which turned out to be a good idea. On a Thursday, the pub style restaurant looked full when we entered, and it also has patio dining. Our table was next to a large table with at least 14 people. There were tv screens. Also some music playing in the background and a hub bub of conversation. In short, noisy. We each ordered a tap beer from an interesting list of craft beers. The wait for our food was about 45 minutes. I had a walleye sandwich and sweet potato fries. Dh had a California burger (lettuce, tomato, onion, mayo) and onion rings. The food was good, though not as hot as Dh likes his food to be when served.
Like a lot of restaurants, I would probably go there for lunch in the future but not for dinner. I'm happy the new owners are making a success of the restaurant, which has an up and down history. There's another restaurant in Nevis that has been recommended to me by a Nevis resident that we may try. It supposedly has good broasted chicken and pizzas. We may try it another week.
It was nice not to cook.
