Yup, the "will nevers" that haunt me….my brain goes from sobbing because I miss the great times to sobbing because I remember those last 6 months of pure horror. The dichotomy is overwhelming.

Leftover chicken enchiladas and salad tonight.
I just pulled a recipe for chocolate chip muffins I may make and freeze. Next week I take a meal to a mom of 2 young children going through cancer treatment and I think the little ones might enjoy a sweet treat with whatever else I make and take.

Last night the lightening-thunder was quite intense until about 1am and the dogs did not like it at all.
We had to drive though a dust storm on the way home from visiting MIL and at home tonight we are currently in the weather map's "red zone", but so far it's just wind, lots of lightening, lots of thunder but not a lot of rain. However, the raindrops that are falling are the HUGE "splat" ones that hurt when they hit us.
Dinner tonight is chili and corn on the cob. It's too rainy for the grill so we are boiling the corn.
When her treatment started another driver had to take over the school bus route that Sharon had been driving at the school DD was attending. The school organized a "meal train" and each day DD (in 8th grade) would get off the bus with another meal for us. It was very much appreciated.

Reader, How nice of you to provide a meal for the family. I don’t bake much anymore since there is always too much left over. The children will enjoy the chocolate chip muffins.
Carole, How exciting that your DH’s photo was on the golf course website.. It’s not often that someone hits a hole in one.
Eric, Driving through a dust storm is no fun. How is your MIL doing?

The meals that were given to us were very much appreciated and, Reader, I'm certain they will appreciate your meals. I'm especially certain the little ones will like the sweet treats. :-)
MIL is doing OK. Her next doctor appointment is September 10 and I'm hoping they will allow her to put weight on the "fixed" leg. We went over there yesterday to get her iPad going (again). The television in the room is placed where she can't see it well, so the iPad and streaming is "it". We also got her some headphones so she can hear the programming over the rather loud oxygen "generator".

Eric, Some of those oxygen concentrators can be really loud, especially if they are older with worn parts. The one I used for three months was new and very quiet. The headphones were a good idea.

I went to the waterfront festival at our marina/clubhouse. Wept, but no heaving sobs. Nice wine and had a cheeseburger there. Sat with good neighbors and stayed for several hours. SO hard, but I did it.

Our POTS landline went out due to crossed wires. The repair guy from the cable provider which recently acquired the phone company didn't know what to do and claimed our service was being discontinued. I told him to call a bucket truck with someone who knows how to fix copper wire. It then took about 3 minutes to make the repair. We haven't received any notice of service termination. The bucket truck driver told us we are on the same line as the local hospital which relies on land lines and can't be dropped easily like residential and commercial customers. We have kept the landline since both our cell reception and internet service are unreliable.
Dinner tonight was Tuscan garlic shrimp on cavatappi.

H & I am enjoying our 1st delicious, sweet corn from a local orchard this weekend.

Teka, It's great that you finally got fresh local corn. I don't think ours will be available until September.
Minus, We got Texas corn in June but it didn’t taste very good after traveling so far. The extreme temperatures this year have definitely affected the availability of fresh vegetables.
Dinner tonight was pan fried tilapia, cauliflower and tater tots for DH.

Dinner last night was fresh green beans and new potatoes cooked together in chicken broth with diced bacon. Very good. Meat was chicken cutlets breaded and browned in a skillet. One boneless chicken breast provides two cutlets. Canned cranberry sauce with berries.
Tonight I'll make a meatloaf with ground beef and ground pork as an alternative to Clancy's Meatloaf Monday. Meatloaf calls for mashed potatoes and gravy. Thank you, Dave and McCormick. Also a salad with farmers market ingredients. Plus, Mary's garden next door is providing tomatoes and cucumbers.
We just learned that our favorite restaurant, La Pasta, will be closing after this season. The owner, a woman, wants to sell the property. She is tired of running the very popular restaurant. We will make a point of going there once or twice before Labor Day, when a lot of businesses around here close for the summer season. They lose younger workers when they go off to college. There's another Italian restaurant in a different town, more upscale. We like it, too, but La Pasta has its own appeal.

Carole, Your chicken broth with bacon cooking liquid might get DH to eat green beans. He’s Irish so he’ll always eat potatoes. It’s too bad that your favorite restaurant is closing after the summer season.

The meatloaf dinner was good. Tonight will be baby back ribs. Vegetable will be broccoli, not a favorite but I seem to feel obligated to cook broccoli every now and then. LOL. Same with cauliflower. I'll probably use the slow cooker to precook the ribs to the stage for finishing on the grill.

We love to what we call veggie meal sometimes. Take fresh green beans that snap and put in the crockpot to cook with a few bacon bits for flavor a little water. Good to even put in a few cut in half tiny red taters in there. We do not use salt in our house at all due to health issues for blood pressure. Boil a few ears of corn on cob we cut in half since half an ear is plenty for us normally. Slice a big tomato to go with it. Very yummy and leftovers will feed us a few days normally when we do this.

Carole, I rarely have broccoli since DH won’t eat it. I don’t really miss it. I do cook cauliflower but I usually sprinkle a bit of Parmesan cheese on mine.
bcincolorado, Making a dish that lasts for several days makes the days you don’t have to cook a bit more stress free. I grew up without salt because of my parents’ BP issues so I never add it. I have hard to control BP anyhow so it must be genetic.

Dinner tonight was beef tagine with green beans and olives on couscous. As I suspected DH ate only a few beans.

The dinner menu changed when dh came home with eggplant and zucchini from a farmer's stand with plans for grilled veggies. Worked well since he would be finishing the baby back ribs on the grill. First time all summer we have had grilled veggies, and they tasted good. Also good not to cook except for getting the ribs precooked in the slow cooker.
He also bought corn that will be on tonight's menu.

CSA love stories continue lol… I feel like I should write a book. This week we had Asian greens mix for salad, bitter and sweet such a nice combo, and for me with baked tofu and corn. DH had roast salmon cold with dill sauce. Heaven.
Semester has started, my MFA students ended our class with heart emojis .. feeling good. No stress yet…1 -

Dinner tonight was bacon and eggs. DH had an EGD this afternoon and felt like eating breakfast. I cooked some green beans to eat with mine.

The microwave/convection oven got a workout last night. Oven-fried chicken thighs, leftover mashed potatoes and gravy, corn on the cob. The chicken came out good, cooked for 30 min. on High Mix setting.

Last night was an improvised dish of smoked sausage, part of a cabbage that needed using, tiny potatoes, onions and a can of diced tomatoes. I seasoned everything lightly with Cowboy Seasoning and dumped it into the crockpot. It turned out to be quite tasty. We ate it all.
I’ve had to have another spot on my leg biopsied. This one appeared quite suddenly in a spot that I can’t see. DH took pictures so I could see it. It looked like a blood blister at first. Odd looking. The derm thought it a good idea to biopsy because of a previous basal cell. It’s always something.
Tonight will probably be spaghetti and meatballs.

I'm baking two more whole chickens and will make more chicken broth/stock with the bones. A lot of the stock gets used as the rice cooking liquid, so despite my making so much, the full jars don't build up too quickly. I saw the mention of chicken broth with green beans. I will try that. :-)
I stopped to go disconnect my ham radio stuff as the lightening is not far away. Most every afternoon, the clouds build up, it looks stormy, the wind blows, the lightening bolts abound…and little rain. So far today is no different.
I ate some sauerkraut "plain" and…wow…..it's SOUR. When Health & Human Services sent a bunch of us to Hawaii in case were needed in Guam (Typhoon Yutu) I had a chance have a breakfast of toast topped with salmon and either kimchi or sauerkraut on top of the salmon. At home I I cooked it one morning for Sharon and now it's "in the breakfast rotation". .I've not tried making kimchi, but the sauerkraut works well.
Aunte…hopefully the spot comes back "nothing concerning".
Wally…good you're getting out….as they say, small steps….thinking of you.

Eric, Rice tastes so much better cooked in chicken broth. Sauerkraut should definitely be paired with another food.
Nance, I had never heard of Cowboy Seasoning. I’ll have to try it. Hope that biopsy turns out to be benign.
I’m also in preventative maintenance mode. I had a cortisone injection in my knee two days ago and a filling today to try to extend the life of an old crowned tooth with a root canal. I’m counting down the days until Oct 2 when I get a fluoroscopy guided hip injection. I had an earlier appointment but it was scheduled at a pain management clinic by a temp worker hired when the Haitians lost their work permits. The delayed rescheduling at the IR clinic added a month’s wait.
